Miele Range Cooker

Range cooker or conventional oven? When planning a new kitchen, one of the biggest decisions a homeowner makes is whether to select a conventional built-in oven or a range cooker. Visually, a range cooker makes a statement by creating a focal point in a kitchen but the room needs the required space; conversely, many consumers prefer built-in ovens which are often more complementary to the overall kitchen design with its linear look. It is also fitted at a more user-friendly height.

Bank of Ovens: custom kitchens by Brandt Design

“Think about how much cooking you do in a typical week and what type of food you will be cooking. Are you going to need and use every single function or would a simpler model give you better value for money?” Mayhul Nandha, Studio Manager and Senior Designer at Brandt Design, Hatch End showroom, comments, “It is vital to consider what you really need from your cooking appliance, what you would like and what could perhaps be an added bonus. Also, be honest with yourself, as this will help you to refine your design ideas as it’s important that your choice serves your cooking demands adequately.” “Think about how much cooking you do in a typical week and what type of food you will be cooking. Are you going to need and use every single function or would a simpler model give you better value for money? Have you set your heart on a particular brand or are you open to suggestions? Do you like the idea of having a smart oven? Are there safety factors to consider like small children and/or pets?”

Mayhul added, “For this type of exercise, end-users usually fall into the following categories:” Home Chef: If you love to cook then a range cooker will complement your culinary skills and will make a superb centrepiece in your kitchen. There are models for both contemporary and traditional environments so there’s also plenty of scope to create a country feel or a stunning commercial or industrial vibe. People love the versatility of range cookers as you can have dual fuel options, gas or even electric ranges, which can potentially be relocated if you ever decide to move house or upgrade your kitchen! Family Focus: Maximizing space is vital if you’ve got a busy household so how about combining larder storage and your cooking zone with

a dedicated ‘chef wall?” The latest built-in ovens are designed to fit neatly inside dedicated housing units alongside kitchen units of the same depth, so you can enjoy floor-to-ceiling storage whilst providing, for example, for a dedicated steam oven for cakes sitting alongside a fan oven for roasts and more traditional fayre. Separate ovens for special dietary requirements are worth considering. Design Statement: Installing a set of integrated ovens at each end of your cook zone instantly adds symmetry and will help to frame the work area in your kitchen space. The dark glass finish of this style of oven can also provide a foil to a grey or white kitchen scheme, creating an eye-catching look which guarantees form and function. This can be particularly effective if you have a central kitchen island, as one side of the island can merge into the cook zone

whilst the other side provides a space for guests to sit and dine.

Single built-in Oven: custom kitchens by Brandt Design

Twin Power and versatility: There is always the option to install both a range cooker and series of built-in ovens for the ultimate luxury, achieving heat storage, the latest technologies and increased cooking capacity! To summarise, installing the correct cooking appliances for your lifestyle is a hugely important part of the design process of any kitchen, if you are in any doubt, the Brandt Design teams are always available to help you make the right choice for your lifestyle.

A quick guide: • Range Cookers offer up to 50% more cooking space with two or more ovens, selection of hob burners and a grill, As there are different compartments in a range cooker various dishes can be prepared at the same time, and at different temperatures which usually provides a much greater output compared to conventional oven.

Miele PureLine

• Bank or range of independent ovens: a combination of single and double ovens/microwaves, steam which are arranged at eye level height in independent housing units that are usually tall in nature, creating a stunning contemporary look and with versatility as there is more than one oven.

• Standard integrated ovens are also fitted ‘pillar style’ at eye level. More suitable for smaller families and perhaps for those who don’t enjoy cooking as a hobby or pastime. Definitely the least expensive of the three options

CASE STUDY

CASE STUDY

HIGHFIELD FARM Brandt Design, recently completed a beautifully presented country style kitchen and adjoining utility room in the rural setting of Ware, Hertfordshire.

Classic by design, the architecture of this home influenced the design of this kitchen resulting in a traditional furniture range that combined a mix of neutral shades with luxury hardware and appliances. The kitchen style had to work seamlessly through to the adjoining utility room, whilst ensuring that each space retained its own identity. In terms of space-planning, product selection, function and aesthetics, the homeowner gave us the freedom to work with a relatively open brief, however we knew we had to include a separate dining area in the main kitchen space. With that in mind, we chose to furnish this farmhouse style kitchen and utility room in Brandt Design’s Heritage furniture in Cornforth White, a mid-tone easy neutral shade by Farrow & Ball. Creating an atmosphere of tranquillity, the deep rich pigments of this understated grey finish responds to light throughout the day to make full use of the French doors in the bay window dining area. The focal point of the kitchen is a generous island unit that comprises Brandt Design’s Bianco Eclipsia Quartzite worktops, pictured with an integrated circular chopping board by Spekva that tops a round base unit, which protrudes from the island. At the opposite end, a cantilever breakfast bar is defined by a curved worktop edge, seating for three and a champagne trough. A state-of-the-art SubZero fridge freezer with integrated wine chiller is a

significant feature in this kitchen and its stainless steel façade helps to depict the accent hardware, fixtures and fittings, which are designed in a similar finish. Utilising every inch of available storage space, custom fitted furniture spans the length and breadth to welcome a mix of low level drawers, wall units, personalised over mantel, sideboard and tall storage cupboard to hideaway kitchen essentials. Scott Davis, Director of Brandt Design, says “Having the additional utility room space meant we could go big on the island unit. By keeping the primary laundry appliances out of the kitchen, we were able to increase the level of storage by 20% and by virtue, create a kitchen that caters to all disciplines including cooking, leisure and dining.” TIP: I am a huge fan of well-designed kitchen storage, especially when it is designed to become part of a multipurpose island unit. I urge you to be honest with your kitchen designer about how you like to cook and use your kitchen space, as this will determine how much work top space is required and whether you are a ‘tidy-as-yougo’ or more compulsive home chef who prefers to spread out. Telling your designer how you like to work in your kitchen ensures they can plan in more tailored solutions, like recycling bins and breakfast trays, through to wine storage and perhaps integrated chopping boards like the island in this kitchen project.

Q&A

QUESTIONS & ADVICE In each issue of Brandt Life we want to bring you up to date with the latest product information plus tips and advice which we hope will be informative and complement your lifestyle.

My husband and I are planning to change our kitchen soon and have been wondering whether to opt for frost-free or auto-defrost for our cooling appliances, any advice? Nicole Andrews, West London Frost-free appliances are very popular as they circulate air to prevent the build-up of ice in your freezer, this means that you won’t have to defrost it manually and therefore you can forget about it once installed. Auto defrost is available on virtually all refrigerators and works by melting frost that accrues and then drains the residual water. For freezers, frost-free (sometimes known as no frost) have a dynamic cooling system which ensures that no frost will gather within the appliance; whereas, automatic defrost means that there will be a build-up of ice inside

the freezer walls and you will have to manually remove it from time to time. Frost-free cooling appliances typically cost more to purchase and operate than traditional models because they use a heater to melt gathering ice and it uses a fan to circulate cold air and uses sensors to monitor for any ice build-up. Our advice would be that if you think you can afford the extra cost of purchasing and running a frost-free cooling appliance, then the gain in terms of ease of use that you will get over the lifespan of the appliance is worth it.

My wife and I would like some mirrored wardrobes but want something a little more stylish than the standard sliding doors associated with this type of product because we feel that they are perhaps a little modern for our period property. Can you recommend an alternative please? James Palmer, Hertfordshire

There are many ‘off the peg’ products if you look online or visit a traditional department store, however, to achieve the look you desire, if budgets allow, we would recommend something bespoke as it will guarantee you the finish and performance you desire. Brandt Design has recently completed an installation at a home in Hertfordshire and we feel that the classic colours, door designs and matching cornice and plinths will work perfectly for you. If you take a look at the picture you will see that the design has a timeless appeal – and will complement perfectly your style of dwelling.

FOOD

RECIPE EARL GREY AND STRAWBERRY MACARONS These sweet treats are filled to the brim with a silky white chocolate ganache and delicately infused with the traditional flavour of Earl Grey. Try making the macarons with matcha tea leaves or use freeze dried fruit powder for different flavours.

Delicious

Ingredients | Makes approx. 20 Macarons For the Macarons 170g icing sugar 120g ground almonds 2 Earl Grey tea bags, (tea leaves only) 100g egg whites 70g caster sugar Purple food colouring paste For the White Chocolate Ganache 150ml double cream 200g white chocolate Lemon zest 100g strawberry jam, transfer to a piping bag

Method 1. Preheat a Miele Oven on Fan plus 130°C. Line two baking trays with non-stick paper and place a template with 5cm circles under the paper as a guide, if needed.

7. When the macarons are dry, transfer to the preheated oven. Bake at 130°C for 20-25 minutes or until the macarons have lost their “wobble” from the foot.

2. Blitz the icing sugar, ground almonds and Earl Grey tea leaves in a food processor.

8. For the white chocolate ganache, place the double cream in a small pan and bring to the boil. Put the white chocolate and lemon zest in a large bowl.

3. Using an electric hand beater, whisk the egg whites in a large bowl to firm peak stage. 4. Gradually add the sugar. Once all the sugar has been added, whisk in the colouring to make a light, pastel colour. 5. Tip half the icing sugar and almond mix into the meringue and gently fold in. Add the rest of the almond mix and fold in until you have a smooth macaron mixture. 6. Transfer the mixture to a piping bag with a 1cm nozzle. Pipe 5 cm discs (either freehand or using the template) on to the non-stick paper. Transfer to a Miele Gourmet Food Warming Drawer and leave to dry for 10-15 minutes on cup setting, first temperature square (40°C), or until the macarons are dry to touch.

9. Pour the cream over the white chocolate. Stir until the chocolate has melted. Leave to chill in the fridge, stirring every now and again. 10. Once cold and thickened, transfer the ganache to a piping bag. 11. Pipe a circle of ganache around the inside of one macaron shell. Fill the centre with jam then top with another macaron shell. Repeat until all macarons are filled. Appliance Tip: If cooking the macarons in a Miele Steam Combination Oven, use combi mode with 0% moisture to give a crisp finish to the macarons. 25
