PROVIDING OUTSTANDING SOCIAL EXPERIENCES THAT EMPHASIZE FRIENDSHIP, FUN AND GOODWILL WHILE ENJOYING THE CLUB’S PREMIER DINING AND RECREATIONAL FACILITIES.

A MINUTE WITH THE GENERAL MANAGER The holiday season is upon us, and the minute you step foot in the Carriage Club you know the season is here with all the decorations and events that await you throughout the month of December. Our events are outstanding, and we don’t clown around when it comes to providing a good time. Just ask any of the 320 members who came to our Halloween party last month! Please take some time to peruse all the holiday invitations. Holiday EVENT Invites: Santa has sent Special Invites to your home mailbox NOT your inbox for every event happening at the Carriage throughout the month of December. All events are also posted on the website in the Club Calendar. Pick out a few to make your holiday season this year extra special with your family and friends. As always, RSVP to invites on the website or by calling the club. The ICE RINK IS OPEN and ready for the 2023-24 season! This is always an anticipated event each year. Mother Nature cooperated with cooler temps and with the diligent work of James, Marco, Bret, and many others the ice was ready in just 2 nights. Well done! Dining Room Info: Prime Rib night has been the biggest hit so far on Friday evenings with a dining room full of members. It is always good to see the dining room packed! Reminder: The Main Clubhouse is open for lunch service, Tuesday-Saturday! The Main Clubhouse and Coach House are open for happy hour at 3PM. The Coach House is open for lunch on Saturday and Sunday. The Coach House will open for lunch during the holiday breaks when the kids are out of school (Dec 18-Jan 2) Our membership knows how to take care of their employees. The holiday bonus letter was sent out last month and I want to personally thank the membership for the collective goodness this provides for all the employees. This act of kindness means more than you know and helps each member of the staff. I sincerely thank you. December is a wonderful time of year. I wish you time with the ones you love and enjoy the magic of the season. See you at the club,

David North

A NOTE FROM THE PRESIDENT Greetings, Happy Holidays! The holiday season is in full swing. Events started off at Carriage Club with a highly successful Thanksgiving feast. I have personally heard several good reviews of in-person dining and takeout orders. Congrats to Chef James and his team on a job well done! December looks to be a busy month at the Club with a strong schedule for both member and outside events. Look at your invitation book or the website for information on various cocktail parties, the Santa brunch, a ladies’ luncheon, kids’ activities (including gingerbread house making) and a candlelight dinner just before Christmas. As you know, the ice is up and running. Carriage Club comes alive in the winter…it’s great to see all the kids practicing their craft on the ice while the parents practice their craft upstairs in the Zamboni Bar and Skybox! November/December also marks the time when the Finance Committee and the Board begin the budgeting process for 2024. Thankfully, inflation in the U.S. has come down to a much more reasonable level (just above 3%) as we exit 2023 than what we dealt with over the past two years. While still early, I would expect more modest increases in operating dues for 2024 and continued increases in capital dues (the smaller of the two buckets) to account for upcoming construction costs and continued need to re-invest in our facilities. Our capital expenditures to maintain our current facilities will amount to over $1.1 million in 2023, about $300k higher than our original budget as we completed mechanical upgrades to the Main Clubhouse labeled as high-priority in our campus-wide mechanical analysis (conducted by U.S. Engineering). Our ongoing need for mechanical recapitalization has been discussed at length in various town halls and previous member communications. Finally, please visit the “Resources” tab on the website (login required) to view some of the latest renderings tied to the Coach House project. Over the past couple months, more attention has been paid to the exterior façade. You will also see a tentative time frame for project commencement, phasing, and completion. As a reminder, we DO NOT anticipate losing any pool or ice availability as the result of our project. I hope you have a wonderful holiday season!

COOKING WITH Gingerbread Cookies

INGREDIENTS

Chef

3 and 1/2 cups (440g) all-purpose flour (spooned & leveled) 1 teaspoon baking soda 1/2 teaspoon salt 1 Tablespoon ground ginger (yes, 1 full Tablespoon!) 1 Tablespoon ground cinnamon 1/2 teaspoon ground allspice 1/2 teaspoon ground cloves 10 Tablespoons (2/3 cup; 145g) unsalted butter, softened to room temperature 3/4 cup (150g) packed light or dark brown sugar 2/3 cup (160ml) unsulphured or dark molasses (do not use blackstrap; I prefer Grandma’s brand) 1 large egg, at room temperature 1 teaspoon pure vanilla extract optional: easy cookie icing or royal icing

DIRECTIONS

In a large bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, allspice, and cloves. Set aside. In a large bowl using a handheld mixer or stand mixer fitted with a paddle attachment, beat the butter for 1 minute on medium speed until completely smooth and creamy. Add the brown sugar and molasses and beat on medium high speed until combined and creamy. Scrape down the sides and bottom of the bowl as needed. Next, beat in egg and vanilla on high speed for 2 full minutes. Scrape down the sides and bottom of the bowl as needed. The butter may separate; that’s ok. Add the flour mixture to the wet ingredients, and beat on low speed until combined. The cookie dough will be quite thick and slightly sticky. Divide dough in half and place each onto a large piece of plastic wrap. Wrap each up tightly and pat down to create a disc shape. Chill discs for at least 3 hours and up to 3 days. Chilling is mandatory for this cookie dough. I always chill mine overnight. Preheat oven to 350°F (177°C). Line 2-3 large baking sheets with parchment paper or silicone baking mats. (Always recommended for cookies.) Set aside.

Remove 1 disc of chilled cookie dough from the refrigerator. Generously flour a work surface, as well as your hands and the rolling pin. Roll out disc until 1/4-inch thick. Tips for rolling– the dough may crack and be crumbly as you roll. What’s helpful is picking it up and rotating it as you go. Additionally, you can use your fingers to help meld the cracking edges back together. The first few rolls are always the hardest since the dough is so stiff, but rerolling the scraps is much easier. Cut into shapes. Place shapes 1 inch apart on prepared baking sheets. Re-roll dough scraps until all the dough is shaped. Repeat with remaining disc of dough. Bake cookies for about 9-10 minutes. If your cookie cutters are smaller than 4 inches, bake for about 8 minutes. If your cookie cutters are larger than 4 inches, bake for about 11 minutes. My oven has hot spots and yours may too- so be sure to rotate the pan once during bake time. Keep in mind that the longer the cookies bake, the harder and crunchier they’ll be. For soft gingerbread cookies, follow my suggested bake times. Allow cookies to cool for 5 minutes on the cookie sheet. Transfer to cooling rack to cool completely. Once completely cool, decorate as desired. Cookies stay fresh covered at room temperature for up to 1 week.
