Festive Flowers I read the article on Christmas cactus in your November issue (“Snappy, Seasonal Blooms,” page 26) and sent you a picture of mine. I leave this 50-pound beauty out during the spring and summer months under my carport, and water it occasionally. By October I bring it inside and do not water it until November. By then I can see the blossoms on the plant.

The Co-op Spirit of Innovation

Since the early days of rural electrification, co-ops have been innovators in our field.

Through our history we’ve found ways to bring service to unserved communities, ever improving access to reliable, affordable, safe electricity as technology has advanced. That spirit continues to drive us today, and in a time of uncertainty as our industry evolves, we are pursuing and applying new technologies that help us maintain reliable service while giving members better control of their energy use.

For example, at my co-op, Surry-Yadkin Electric Membership Corporation in Dobson, we’ve launched a partnership with North Carolina Electric Membership Corporation (NCEMC) and Hollar & Greene Produce, one of Surry-Yadkin’s commercial/ agricultural member-owners and the largest cabbage distributor in the United States. The eTRU (electric transportation refrigeration unit) This innovative project project has been a win-win for has allowed the Hollar & Greene Produce and cooperative to help a Surry-Yadkin EMC. member-owner reduce The eTRU project allows carbon emissions… the trucking company to use a hybrid refrigeration unit to cool its cabbage with electricity while in staging at the distribution center, reducing the diesel it needs to purchase and burn.

This innovative project has allowed the cooperative to help a member-owner reduce carbon emissions in order to meet standards set by their customer’s sustainability goals. (Learn more on page 6.)

Also in 2023, Surry-Yadkin applied for a Department of Energy (DOE) Grid Resilience and Innovation Partnerships grant. Our application was one of a handful of co-op projects awarded nationally, saving our member-owners more than $7 million to harden the grid and make our power more reliable.

This infrastructure work will include the installation of new innovative technology — called FLISR (fault location, isolation and service restoration) devices — which will allow us to locate and respond to outages more efficiently, reducing outage restoration

times. It will provide security monitoring in the field, as well as increase reliability and redundancy of electricity on some of our most critical circuits.

This means if the power has an interruption for some reason, such as a storm, in that critical area, we will be able to switch power from another area so there is little to no interruption to the member-owners. This is called a “self-healing” circuit.

The co-op has skin in the game, too. The $15 million, five-year grant project requires a little more than a 50% match from the co-op with the DOE covering the other just under 50%. We are investing in our infrastructure to benefit the member-owners and the community through job creation and economic development.

This year, Surry-Yadkin EMC will join other electric co-ops across the state in deploying a battery storage system at our newest substation. These projects allow power generated on the grid to be stored in a battery facility. During critical peak use times, the stored energy can be placed back on the grid to help offset the high demand. Ten such battery systems are currently operating at North Carolina co-op substations, with another dozen in the works.

Innovation continues to drive the electric industry, and North Carolina’s electric co-ops are always on the hunt for the best ways to serve our member-owners — whether that is through direct member services projects, grid reliability projects or other new initiatives. Together, we are building a brighter future that allows us to continue our mission of powering and empowering the people and communities we serve.

eTRU Project Honored with Innovation Award Surry-Yadkin EMC and Hollar & Greene Produce partnered on emissions-reducing project Surry-Yadkin EMC

Just six months after unveiling a solution to reduce carbon emissions for a major produce distributer in North Carolina, Surry-Yadkin Electric Membership Corporation and Hollar & Greene Produce have been recognized with a Cleantech Innovation Award.

These awards, which are hosted by the Research Triangle Cleantech Cluster, recognize initiatives and projects that have contributed to the growing cleantech ecosystem in North Carolina. Surry-Yadkin EMC and Hollar & Greene were selected in the transportation category for providing a more energy efficient way to transport produce.

“An award for innovation or an award of any kind never crossed my mind during the project,” said Travis Bode, manager of economic development at Surry-Yadkin EMC. “Being recognized for the award is a huge honor not only for Surry-Yadkin EMC, but for the whole partnership between Hollar & Greene, North Carolina’s Electric Cooperatives and our team.”

The eTRU project, which stands for electric transport refrigeration unit, uses electricity to power refrigeration units used for cold-storage shipping, instead of diesel. This new and innovative technology is the first of its kind for a North Carolina electric cooperative.

The pilot program has already seen success, with Hollar & Greene saving hundreds of dollars on fuel every month, along with reducing their carbon emissions and noise pollution.

“Projects like this are critical to putting us on a path to achieving our Brighter Future goals,” said Joseph Gadient, innovation and business development analyst for North Carolina’s Electric Cooperatives. “We already have a relatively low-emission generation mix in North Carolina that is getting cleaner by the day, so any opportunity to convert fossil fuel technology to electric will save emissions both now and in the future.”

Hollar & Greene is a family-owned business that has roots in the mountains of North Carolina since 1963.

They serve as one of the largest cabbage producers and distributors in the United States, with their produce traveling hundreds of miles around

the country. In their selection of the eTRU project, the Research Triangle Cleantech Cluster said, “because transportation sources account for 36% of NC’s greenhouse emissions this type of program has the potential to help meet the state’s carbon targets.”

Surry-Yadkin EMC says the ability to bring innovative technology like this to one of their members is a major win for everyone involved.

“It’s a great feeling to make this kind of an impact with one of our commercial and industrial members and ties directly back to the cooperative principles,” Bode said. “We’re excited to see how this pilot program continues to unfold, and looking at how we can implement technology like this in our service area and hopefully beyond.”

NC Zoo, Randolph EMC Partner to Deploy Electric Tractor A few years ago, the thought of plugging in a tractor to recharge after a long day’s work seemed far-fetched. Now it will be part of the everyday routine for the staff at the North Carolina Zoo. In a partnership led by Randolph EMC and supported

by North Carolina’s Electric Cooperatives, the Asheborobased Zoo added an all-electric tractor to its fleet this fall. The electric vehicle will not just cut out grueling oil changes and costly diesel fuel, it will have all the same capabilities as its fuel-consuming predecessor.

The collaboration was a natural fit between all parties.

The North Carolina Zoo is a member of Randolph EMC and has worked closely with the local electric co-op on a number of innovative projects over the years, including electric vehicle charging stations, and already has a number of electric vehicles in their fleet.

“The intention from day one was for this tractor to operate no differently than a conventional one,” said Jim Musilek, vice president of innovation and business development and strategic management for North Carolina’s Electric Cooperatives. “These types of tractors have been

used in greenhouses, municipal applications and livestock with great success. Once we get our hands on the pilot results, we will better understand how they function and where else we can implement technology like this.”

While electric cars and bikes have become increasingly popular in recent years, projects like electric tractors are still breaking ground in the EV world. Musilek says this pilot program will shed light on the possibilities that these machines have for not only the state zoo, but for businesses and consumers statewide.

“We are thinking outside the box with many of the projects we are working on these days,” Musilek said.

When it comes to talking about Southern foods, any list that’s fit’n will include Brunswick stew. And if not, you need a better list!

The “Battle of the Brunswicks” has gone on for centuries.

Much debate has ensued as to the origins of this hodge-podge of meats and vegetables. Depending on who you ask, folks in Georgia declare being first, and have even memorialized it with a “first pot” monument in Brunswick, while those in Brunswick County, Virginia, make the case for themselves.

Then, there are those who proclaim it was a favorite of Queen Victoria of England and they got it from Germany! This battle will likely live on forever in culinary history books. No matter where it was born, the fact is, some of the best Brunswick stew can be found right here in North Carolina — where you can go to 10 different barbecue restaurants and have it cooked as many different ways as a side, or a bowl unto itself with hushpuppies. There are as many recipes as there are stars in the sky, and there’s just no “right” way to cook it.

Knowing our readers, we feel certain many of y’all have your own recipe and stand firm about what should and should not go in it. Perhaps we can all agree on the basics: There’s meat, it’s tomato-based, and it has vegetables. It should be thicker than soup and juicy — but not so thick you’d eat it with a fork.

by Wendy Perry As for the meat(s), perhaps the hunters in your life have been remiss in bringing home fresh rabbit or squirrel for stew cooking, the originals. Most folks spare those critters and use chicken and pork. Some just use pork barbecue from local restaurants.

Here in the South, stew is oftentimes cooked to celebrate some sort of event. Back in tobacco days, it was common for there to be a big old wash pot of stew cooked for farmhands to celebrate culmination of the harvest.

Communities had and many still have stew cookin’s, and in the fall especially you’ll be able to get some from your local church or fire department. Some cook their own and pre-sell tickets, leaving behind the communal sit-down fellowship I remember “back in the day.” While others get to sell from expert cookers.

One such a fellow, Mr. George Wooten — a member of Edgecombe-Martin County EMC — came to me by personal reference from several friends. From my first call, he felt like an old friend and welcomed me to spend a few hours, commencing in the dark of night, joining him and his stew crew.

White-fisted during peak deer season driving at 4 a.m. on unfamiliar backroads, I made my way through the fog to his stew cookhouse on the outskirts of Macclesfield in Edgecombe County. Upon arrival, my headlights caught his “stew today” sign at the road alerting passersby of

stew day and saw the neon “OPEN” light glowing from his cookhouse.

The stew crew would arrive soon. George puts the chicken on to boil in his ginormous cooking vats about 1 a.m., so when the crew arrives, it’s time to start adding the vegetables and stir — for hours!

(For food safety reasons, the non-profits George cooks for get one permit per month.)

Helpers arrived, and before stew making commenced, Mr. George gathered us all around to begin in prayer. Then, cans started getting opened, dumped and everyone took turns stirring the pots for about three hours. The stew is stirred with cherry wood paddles with holes like those used for making apple butter. They reach to the bottom of the pots to keep the stew from burning, and the holes offer less resistance. Stirring never stops.

Once finished and packaged by 8:30 a.m., the morning’s efforts yielded 848 quarts of stew — I’ve never seen anything like it!

On this day, he cooked for the Macclesfield Fire Department to sell at the town’s fall festival and United Church of Jesus Christ (Princeville), both who had presold tickets. Once quarts were picked up by the preacher and firemen for delivery, the pots were cleaned and the cookhouse put back as when we started, ready for the next cookin’.

Mr. George grew up helping his mama cook stew for

their church. In 1988, he started cooking Brunswick Stew for others. Fascinated at all that stew made at this one cookin’, I asked him if he has any idea how much stew he has cooked in all these years? Without batting an eye he said, “Oh I sure can tell you. I keep up with that in notebooks and can tell you who I cooked for, when and how much. I’ve cooked 230,000 quarts.”

People, that is A LOT of Brunswick stew — 57,000 gallons, to be exact! The most he’s cooked in one batch is 1,200 quarts, or 300 gallons.

Mr. George is an NC Brunswick stew cookin’ legend and has helped so many garner much-needed funds for their communities. You may have enjoyed some of his stew and not even known it.

We are grateful for folks like him, keepers of our culinary heritage, and for Brunswick stew — no matter where it came from.

Reliable power for today — and tomorrow Ringing in a new year sparks a sense of renewed hope and optimism about the future. As the CEO and General Manager of Carteret-Craven Electric Cooperative (CCEC), for me, it’s a time to reflect on where we are and where we’re going. At the heart of this reflection, I think about ways we can better serve you, the members of the cooperative.

Our team at CCEC is always looking ahead, exploring ways to innovate and utilize new technologies to improve our services. As our nation increasingly relies on electricity to power the economy, keeping the lights on has never been more important. We’re committed to powering CEO Jake Joplin — and empowering — our community at a cost local families and businesses can afford.

So how are we working to ensure reliable and affordable power while adapting to a changing energy landscape and our community’s evolving needs?

One critical component of reliable power is the mix of energy resources used to generate the electricity that keeps the lights on across our service area. You may not realize it, but CCEC doesn’t generate electricity.

Instead, we purchase it from our energy provider, North Carolina Electric Membership Corporation, and from there, we distribute it to homes and businesses throughout our community. Our current energy resource mix is made up of 54% nuclear, 19% natural gas, 10% purchases from the wholesale market, 8% renewables, 7% coal and 2% hydro.

We’re increasingly using more electricity generated from renewable energy sources, but we still depend on a diverse energy mix to ensure reliable power that’s available to our members whenever they need it.

In addition to managing a reliable energy mix, CCEC is using technology to enhance our local grid, limit service disruptions, and improve outage response times.

Advanced metering technology, also known as AMI, enables two-way communication between the co-op and consumers. In the event of a power outage, AMI helps pinpoint the exact location of the outage and can even analyze damaged or tampered meters. AMI helps the cooperative save money with real-time data and ultimately improves power reliability for our entire community.

Proactive tree trimming is another way we limit service disruptions. Scheduled trimming keeps power lines clear from overgrown limbs that are likely to fall.

Inspections of lines and vegetation have allowed us to reduce labor and equipment costs while bolstering reliability. With advancements in technology, we are building and implementing advanced mapping software to better track our inspection progress while providing more reliable service.

One of the best methods for improving our services to you is monitoring trends and leading practices from other electric co-ops in North Carolina and across the country. Learning from other co-ops is one of the many benefits of the cooperative business model because, for us, it’s about cooperation, not competition.

As we turn our focus to 2024, CCEC will continue working to provide the reliable, affordable electricity you expect and deserve — for today and tomorrow.

To maintain Carteret-Craven Electric Cooperative’s standard for reliable electricity and outstanding service, the cooperative’s board of directors has approved a rate change effective April 1, 2024.

Members on residential service rates and medium general service rates will see an adjustment in their facilities charge starting with April bills. The facilities charge is a fixed monthly fee that covers the fixed costs associated with providing electricity to members, such as the cost associated with poles, wire, transformers, and meters.

For the average CCEC residential member, the rate adjustment means paying $3.20 more per month.

Beginning April 1, a typical member using 1,000 kilowatthours per month will see an increase from $123.27 to $126.47.

Over the years the cooperative’s board of directors has worked closely with the management team to control costs, allowing the co-op to delay this difficult decision for several years despite fluctuating wholesale power cost, supply chain issues, and inflation that have impacted the cooperative. In 2023, the cooperative worked with a third-party consultant to determine future revenue requirements and develop the prudent rate adjustment for each rate class.

“The cost of providing electrical service has increased over 5% in the past five years,” said CCEC CEO and

CCEC announces new rates effective April General Manager Jake Joplin. “We have been able to mitigate a large portion of that cost increase by implementing new technology to be more efficient in our operations and how we purchase power. Unfortunately, we have gotten to the point where we need to increase rates to ensure the future financial strength of the co-op.”

Anthony Nelson, president of the CCEC board of directors, said the rate change will provide stability for the cooperative.

“As a not-for-profit business, we aim to provide service at the lowest possible price to our members,” Nelson said. “As a co-op, our mission is to enhance the quality of life in our community and look after its long-term interests. We love serving our members and our local community, and just like you, want to see it continue to thrive.”

Inflation and supply chain limitations are impacting every business and industry, and CCEC is no exception.

Some materials for building power lines and substations have more than doubled in price and lead time over the past five years.

“The co-op has been fortunate to operate without a rate increase for the past twelve years despite major increases in many of the costs associated with providing electricity,” Nelson said. “This additional revenue is needed to ensure CCEC is able to continue providing all of its members with safe, affordable, and reliable electricity.”

Five ways to safeguard your home this winter As the temperatures drop and daylight wanes, there’s a natural inclination to create a warm and cozy haven at home. Unfortunately, as we see increased use of heating equipment, candles and electrical items, the number of home fires tends to increase during winter months.

Here are five ways you can safeguard your home for the winter season.

è Ensure carbon monoxide and smoke detectors are working properly. If your detectors are battery-operated, replace the batteries annually.

Test the detectors once a month and give them a good dusting to ensure the sensors are clear of dirt and debris. è Clean the fireplace to improve safety and efficiency. There’s nothing better than a warm fire on a chilly night, but it’s important to maintain your fireplace for safety. As wood burns, a sticky substance known as creosote builds up in the chimney. When creosote buildup becomes too thick, a chimney fire can ignite. The chimney should be cleaned at least once a year to reduce fire risks. Regular cleaning also improves air flow and limits the amount of carbon monoxide that seeps indoors. è Inspect electrical cords. We depend on more cords during winter, whether for outdoor lighting or portable heaters. Before using any corded items, double check to make sure cords aren’t frayed or cracked. If you use portable space heaters, remember to keep them at least 3 feet away from flammable items. Use models that include an auto shut-off feature and overheat protection. Space

heaters can take a toll on your energy bills. Use them efficiently (to heat smaller spaces) and safely.

Never plug a space heater into a power strip.

Speaking of power strips... è Avoid overloading electrical outlets and power strips. When overloaded with electrical items, outlets and power strips can overheat and catch fire. If you use power strips for multiple devices, make sure the strip can handle the electrical load.

For a safer bet, look for power strips that include surge protection.

è Practice safety in the kitchen. Be mindful of potential fire hazards while preparing your favorite winter comfort foods. Never leave food that’s cooking on the stovetop unattended. Clean and remove spilled foods from cooking surfaces and be mindful of where you place flammable items like dish towels.

Empowering the future one student at a time CCEC and the Carteret-Craven Electric Foundation want to make college finances a little easier for five seniors heading to college in the fall of 2024 by providing scholarships valued at $4,000 for four years of study.

One student each from East Carteret, West Carteret, Croatan and Havelock high schools will be selected, with the fifth being the next highest scoring applicant and may include students from Jones Senior High School, early colleges, Gramercy and home schools.

To be eligible for the scholarship, applications must satisfy all of the following requirements: • Applicants should live in a residence that receives electric service from CCEC. • Complete an application which can be found on our website: ccemc.com/Scholarships • Be accepted into an accredited college, university, technical school or community college.

The deadline for applications is March 1. Judges will weigh the following in determining the scholarship winners: need, 50 percent; academic achievement, 25 percent; and extracurricular activities, 25 percent.

Since launching the scholarship program, CCEC and the CarteretCraven Electric Foundation have provided more than 120 scholarships to outstanding seniors. Who will be next?

Uncharted Water (Heaters) Know your water heater options before it needs replacing

Q:

When I followed last month’s advice and insulated my water pipes (“Winterization Tips for Energy Savings,” page 16), I noticed that my water heater is getting up there in age, but I don’t know much about the technology. Can you fill me in?

A:

Water heaters, especially when hidden away in a crawl space, attic or closet, can frequently get the out-of-sight, out-of-mind treatment. But to minimize surprises, it’s helpful to check in regularly with our home appliances. My own water heater celebrated its 18th birthday last August, so this topic has been top of mind for me as well.

According to the U.S. Department of Energy, water heaters represent 14% to 18% of a home’s overall energy consumption, up there with our heating and cooling systems. This amount, though, can vary based on the kind of water heater you have — there are several types and efficiency levels available.

One distinction is between storage and tankless water heaters. Storage water heaters are more traditional, relying on a storage tank to supply hot water. Alternatively, tankless, or on-demand, equipment heats water only when needed and does not have a tank. Tankless water heaters take up less space, but they tend to cost more upfront and may require a larger supply of gas or electricity.

As noted, the broad categories of storage and tankless water heaters come in gas and electric versions. Digging deeper, there are units specific to each fuel source, so it would be helpful to know what yours runs on. You don’t have to stick with the same fuel when you get a replacement, however, and newer technologies are making it easier to switch to electric, if that’s of interest.

Gas water heaters include atmospheric vent water heaters, power vent water heaters and direct vent water heaters. These differ in how they vent gases and other combustion byproducts to the outside, with the various mechanisms mostly connected to efficiency ratings.

Electric water heaters come in two main forms.

Standard models call on electric resistance heat, and there are also super-efficient heat pump versions. In our November column, we discussed heat pumps functioning as a heating and cooling system. Here, the heat pump is using electricity to absorb heat from the surrounding air and using that to heat water in a storage tank. This equipment is two-to-four-times more efficient than electric resistance water heaters, but has certain temperature and space constraints.

Other more niche water heaters exist as well, such as solar water heaters and combined heat and power (CHP) water heaters.

As with any appliance, efficient water heaters generally cost more initially, but given the technology’s expected life span and its role in your monthly energy bill, operating costs — in part based on efficiency — may be worth considering.

Keep in mind that heat pump water heaters and other higher-efficiency models are eligible for incentives from the Inflation Reduction Act, and maybe from your electric co-op, too. So, when you’re in the market, remember to see how you might be able to take advantage. Asking neighbors about their experiences or contractors they used is always a smart idea, as well.

Ken Peacock built a legacy by putting students first

“People will forget what you said. People will forget what you did. But people will never forget how you made them feel.” There is debate on who said it first. I’ve always heard it to be Maya Angelou. That’s more than fine by me.

And I feel these words-to-live-by sum up another big-spirited North Carolinian, former Appalachian State University Chancellor Dr. Kenneth “Ken” Peacock.

I’m not sure how I got so lucky; Ken took a liking to me. A first-generation college student himself from Rocky Mount, I think he appreciated my stories about a family who knew four-part harmonies and singing in churches, juxtaposed with stories about bootleggin’, lawn mower racin’, and, dear reader, my adolescent pyromania.

Ken delighted in the idiosyncrasies of life. Light mischief was a welcome element to time spent with him. He loved a well-timed one-liner. Sometimes one had to wonder if they’d entered an alternate dimension and were in a scene from the The Bob Newhart Show or Sanford & Son with some of his antics. Our shared appreciation for pranks kept us passing a grotesquely packaged chicken foot back and forth.

Beyond the hijinks and laughs I think he saw a kid who needed a little guidance. Ken showed me to how to properly wear a suit. Gave me pointers on tying a solid Windsor knot. Taught me how to conduct myself in a boardroom.

Ken and his wife, Rosanne, took me, my brother Josh, and another App State buddy, Tyler Hunsader, to a fine-dining restaurant in Boone. This was my first experience having a meal where the sides were individually priced from the entrée. I was either 21 or 22. While my eyes frantically danced around the menu seeking the cheapest options I could find, I’ll never forget the steady

hand extended my way from Ken, tactfully done while Rosanne, Josh, and Tyler were engaged in conversation, and done so to say, “It’s okay. We’ve got you.” Again, something perhaps a young Rocky Mount boy who stood on the shoulders of giants before knew to do for a young Alleghany boy, knowing he’d eventually do the same.

We talked about our faith. We shared a special affection for the hymn, “Precious Memories.” Our regular phone calls covered, again, the important things: family. He always told me the latest tales of his grandkids: Jacob, Piper, Allie, Price and Reynolds. He enjoyed his view as a grandpa, telling me, “You know, I’m getting to watch Brian and Chris do things with their children that I did with them. And that’s special to me.”

And, in those moments when I felt like I was less than I hoped to be, Ken was there for me.

Ken passed away in October at the age of 75. He belongs to the ages now, but, as is the nature of Appalachian folklore, his legend lives on.

So, North Carolina, as we head into 2024, let us stand on the shoulders of some fellow giants of North Carolina history, who, in their own way, always served something a little bit bigger than themselves.

As for me, in July I left North Carolina for the U.S. Virgin Islands, and life on St. Croix is good. I decided to go back to teaching for a bit and have accepted a position with the Virgin Islands Dept of Education as a reading specialist for kids with autism. To be totally candid, I think I’m going through one of those personal and professional crossroads. We’ll see what happens. As always, thanks for reading, North Carolina.

Sweet Heat Sticky Belly Burnt Ends Did you know pork belly is just unsmoked, uncured bacon?! So if you eat bacon, you eat belly. Cook up a bunch of this “pork candy” to nibble during a football game or anytime.

4 pounds pork belly (unsalted), skin removed and cut into 1½-inch cubes ¾ cup vegetable oil 2 teaspoons paprika Dry rub 1 tablespoon kosher salt 1 teaspoon cayenne pepper ²⁄₃ cup brown sugar, packed Zest of 1 large orange 2 teaspoons chili powder Warm Sticky Belly Drizzle 1 tablespoon granulated garlic ½ cup honey 1 tablespoon granulated onion ½ cup melted butter 1 tablespoon crushed brown mustard seeds Juice of the zested orange 1 tablespoon black pepper 1–2 teaspoons crushed red pepper Lightly coat belly with oil. Drain excess.

Combine dry rub ingredients in a large bowl and toss with belly cubes. Refrigerate for several hours or overnight, tossing periodically.

Sit out for about 30 minutes before cooking. Heat wok or cast-iron skillet over medium-high heat. Lightly coat with oil. Sear belly in small batches, turning as each side gets nicely charred and a little burnt, being careful not to crowd in skillet.

Combine all drizzle ingredients in a small bowl. At serving time, drizzle burnt ends and serve extra for dipping.

Yield: About 8 servings, depending on your crowd and other foods

From Your Kitchen Baked Pumpkin Donut Holes Soft and lightly spiced, these little donut holes are technically mini muffins, packed with the power of pumpkin, and baked rather than fried. We tried them with powdered sugar, but recommend sticking to good ol’ cinnamon/sugar.

1¾ cups flour ½ teaspoon ground cinnamon ½ teaspoon ground nutmeg ½ teaspoon ground allspice ¹⁄₈ teaspoon ground cloves 2 teaspoons baking powder ²⁄₃ teaspoon salt ¾ cup pumpkin purée ½ cup milk ½ cup brown sugar ¹⁄₃ cup coconut oil 1 large egg 1 teaspoon vanilla extract ½ cup granulated sugar 1 teaspoon cinnamon ¼ cup butter, melted Preheat oven to 350 degrees. Lightly oil a mini muffin pan.

In a large bowl, combine flour, spices, baking powder and salt.

In another bowl, whisk together pumpkin purée, milk, brown sugar, oil, egg and vanilla.

Pour mixture over dry ingredients and stir just until just moist.

Scoop the batter into the muffin tray.

Bake for 10–12 minutes, or until a tester comes out clean.

Combine cinnamon and sugar.

Cool for 2 minutes and dip into melted butter. Roll in the cinnamonsugar mixture and finish cooling.

Juicy Beans & Greens Ladled over toast

Nothing like spooning up a rustic dish of simply prepared beans for a hearty meatless meal. Or add a scoop of our pork belly burnt ends — this is stick-to-your-ribs wintertime food!

6 tablespoons avocado or olive oil 2 tablespoons butter 1 medium onion, thinly sliced 3–4 large garlic cloves, minced ½ teaspoon cumin ½ teaspoon sage 1 teaspoon white pepper 2 cups vegetable broth 1 can (15-ounce) navy beans, undrained 1 can (15-ounce) cannellini beans, drained and rinsed 1 can (14-ounce) diced tomatoes with peppers and onions 1 package (5-ounce) fresh spinach, roughly chopped Juice and zest of 1 small lemon 1 loaf rustic bread, 1-inch thick slices Additional oil Fresh cilantro, chopped Cheese, grated (we used smoked gouda) Heat oil with butter over medium heat in large skillet until butter melts. Add onion and cook 3 minutes. Add garlic and cook 3 minutes more until lightly browned.

Stir in seasonings, broth, beans and tomatoes. Increase heat to medium-high and bring to boil for 2 minutes. Reduce to a slow simmer and cook for about 5 minutes. Turn off heat and stir in spinach, lemon juice and zest. Stir until spinach is wilted. Taste and add salt if needed.

Brush both sides of bread with oil.

Toast until crispy.

Spoon juicy beans over toast in bowls.

Drizzle with oil. Scatter with cilantro and grated cheese. Enjoy immediately.
