From Our Readers Another Course for the List I really loved your “Golf in the Old North State” article (September 2023, page 10) listing several of the many fabulous golf courses in our state! I just wish you had included the most unique of them all — Star Hill Golf Club in Cape Carteret (starhillgolfclub.com).

Star Hill is a public course with 27 holes named for the ancient meteor crater and adjacent hill of impact ejecta that now forms a pond protecting an elevated hole #1.

The course is also unique in that it features a private airport with a grass runway across a couple holes.

Lineworker Praise We enjoyed the stories in the September issue of Carolina Country “Lineworker Training Critical as Field Grows” (page 7) and “Prayers and Support for Dedicated Lineworkers” (page 4). I know each April Lineworker Appreciation Day honors hard work that women and men put in to keep the power on, but to me, linewomen and men deserve more!

I think they are the ultimate first responders because without power, everything shuts down until power is back on. “Wichita Lineman” by Glen Campbell should be the theme song for all lineworkers — like the words in the song, “the Wichita lineman is still on the line.” That’s the same for all lineworkers!

We’re All Family Here

Family is arguably one of the most important things in life. This time of year we’re often reuniting and spending time with family for holiday celebrations, which has me reflecting on another family we’re all a part of: The Co-op Family.

Electric cooperatives are unique in that they’re born of the communities they serve. Most electric co-ops here in North Carolina have roots dating back to the early days of rural electrification in the 1930s and ’40s. During that era, the federal government set out to tackle a lack of electric service in rural areas — only 11% of U.S. farms had power in 1935 — by making low-cost funding In many ways, it was available through the family that firmly Rural Electrification Administration (REA). planted electric REA funds did the cooperatives in trick, and co-ops began to spring up around the communities the country and in North Carolina. But if they serve today. it weren’t for family, rural electrification likely would have taken a lot longer. Many farmers were skeptical of the concept in general, as well as using government funds to access an unknown resource. Many wondered if electricity was worth the expense. It took farmers’ wives to convince them that yes, it absolutely was. Family matriarchs understood the full range of benefits of electricity. Household chores, like cooking and wash day, would be vastly more efficient.

Children would benefit from lights for afterdinner studies. And refrigeration would change the game for meal planning and food safety.

So in many ways, it was family that firmly planted electric cooperatives in the communities they serve today. That legacy continues, and many who work at electric co-ops have deep local roots, or are the second- or third-generation to be employed by the co-op.

I’m a second-generation co-op employee, as it happens. My father, Darryl Gates, was the editor of Alabama Living magazine for decades — the counterpart to Carolina Country serving electric co-op members in Alabama, where I grew up. My first memory of a family road trip was a haul from Montgomery to South Dakota (a brave choice for my parents), where we saw wonders such as Badlands National Park and the Corn Palace. But our true destination, as I later learned, was a national co-op meeting.

That certainly wasn’t the last co-op meeting I’d attend, and as I grew up and came to know my father’s peers as my own, I realized how truly like a family electric co-ops operate.

They all share a very real dedication to their members, coming to know them on a personal basis through annual meetings or other community events. Their employees support each other and value personal connections.

I’ve brought my own children along to their share of co-op meetings, and we’ve created some great family memories on road trips to such events (though I dare not drive as far as South Dakota). Who knows — maybe someday one of them will be recounting tales of those road trips to their own co-op peers and members.

This holiday season, I hope you’ll all find comfort in the company of family and loved ones. You can also take comfort in knowing you’re a part of a much bigger family — the co-op family — built on a legacy of service and support.

NC Electric Cooperatives Join Pilot Battery Project ‘Long-duration energy storage’ project will use federal funding North Carolina’s Electric Cooperatives, the power supplier and trade association serving 26 not-for-profit cooperative utilities that collectively power 2.5 million North Carolinians, will use a grant awarded by the U.S. Department of Energy (DOE) to explore improved grid resilience and reliability through long-duration energy storage.

The selected project is a partnership with North Carolina’s Electric Cooperatives, the National Renewables Cooperative Organization (NRCO), and four other electric cooperatives from across the country with a shared goal of bringing cutting-edge, long-duration energy storage opportunities to rural communities.

North Carolina’s Electric Cooperatives will locate the battery storage project within its existing Hamlet Generating Facility in Richmond County. This facility is one of two natural gas peak generating plants owned by the cooperatives to support reliability and is deployed at times of high demand, like during extreme weather events — the hottest days of summer, the coldest nights of winter.

By adding long-duration energy storage to an existing peak generating facility, North Carolina’s Electric Cooperatives can pilot the battery’s capability for augmenting capacity from the generating plant to further support reliability during high demand situations. The battery will be capable of discharging 700 kilowatts to 3.6 megawatts of electricity for up to 20 hours.

El Niño Could Bring Cooler Winter for NC This winter, a weather pattern known as El Niño is expected to continue through March, according to the National Weather Service. The climate pattern, where Pacific trade winds weaken and allow warmer ocean water to be pushed back toward South America, typically creates colder than average weather in the Southeast.

“Because the subtropical jet stream is more dominant in El Niño winters, this produces more low pressure systems, rainfall and clouds, and it is generally cooler in the southern United States,” the National Weather Service stated.

The outlook jibes with predictions from “The Old Farmer’s Almanac” (first published in 1792) for a “cold, snowy” winter in Western NC and a “mild, wet” season in eastern portions of the state.

Jones-Onslow EMC’s Jeff Clark Retires Gary Ray will serve as new CEO After a career in the electric utility industry spanning 50 years, JonesOnslow EMC CEO Jeffery Clark has announced his retirement, effective Jan. 31, 2024. The Jacksonville-based electric cooperative serves 82,000 members in Craven, Duplin, Jones, Lenoir, Onslow and Pender counties — Clark joined the co-op in 2000 and served as CEO since 2016.

During his time as CEO, Clark focused on deploying new technology, including an Advanced Metering Infrastructure (AMI) system to streamline processes and improve members’ experience with the co-op.

He also encouraged employees to find new ways to work together to overcome challenges.

“Always focus on the solution, not the problem,” Clark said. “It’s amazing how far we’ve come through that mindset.”

Jones-Onslow EMC serves coastal counties, and Clark, who grew up north of Tampa, Florida, is no stranger to powerful storms. He cites Hurricane Florence, which made landfall south of Wrightsville Beach in September 2018, as the worst he’s been through.

“We had 36 hours of rain. Our headquarters building got flooded. It took us a couple of weeks to restore power to all members, but it was a year before our building was back in service,” Clark said. He also noted the COVID-19 pandemic as another challenging time for the co-op. “If we can make it through those events, we can make it through anything.”

He will also serve the co-op in an advisory capacity during the CEO transition, as Gary Ray, former CEO of Albemarle EMC, steps into the role.

Embrace cozy moments at home As the temperatures drop and the evenings get darker, there's no better time to bond at home. Create a warm atmosphere with lit candles, cozy blankets and a favorite movie, or add spice in the kitchen by cooking up a delicious meal that requires teamwork. No matter how you choose to spend quality time, make it fun and meaningful.

Sharing these simple, intimate moments can bring you closer together.

Plan an autumn outing November offers a beautiful backdrop for romantic dates.

Try a relaxing walk through a nearby park to admire the fall foliage or visit a local pumpkin patch or apple orchard. Many places also offer moonlit trails in the autumn season.

Give them a surprise Big or small, surprises can ignite excitement and novelty into a relationship. A heartfelt note, a small gift or grand event your loved one would enjoy when they least expect it are all examples of a pleasant surprise. It doesn’t have to be extravagant. Plan for the holidays together From events and travel plans to free weekends and days off, fall is the perfect time to discuss your plans for the holiday season. Plan ahead Begin your holiday preparations early. Create a detailed to-do list and timeline so you can stay organized and avoid last-minute chaos. Start by creating a guest list if necessary, then outline all materials and ingredients you may need and set a budget.

Delegate responsibilities Don’t hesitate to ask for help.

Whether it’s cooking, decorating or cleaning, involving family and friends can make the workload lighter, more enjoyable and enhance teamwork and bonds.

Shop smarter, not harder Avoid the holiday rush by shopping for non-perishable items in advance.

Make a shopping list and stick to it to minimize impulse purchases. Online shopping and curbside pickup can also save you time and stress.

Simplify the menu Instead of an elaborate multi-course feast, consider a simple menu with your favorite dishes. Also consider a potluck-style gathering, where each of the guests brings a dish. This style of dinner reduces your cooking load and allows everyone to contribute.

Have realistic expectations Understand that not everything will go perfectly, and that’s okay. Focus on the moments of joy and connection rather than striving for perfection.

Lumbee River EMC has a strong track record regarding safety, prioritizing the well-being of our employees so that they return to their families each day.

The cooperative invests in safety training programs, equipment maintenance, and infrastructure upgrades to minimize the risk of electrical accidents and outages.

By adhering to strict safety protocols and fostering a culture of safety awareness, we continue to provide reliable electricity while ensuring the safety of our employees.

In 2022, our employees drove almost a million miles and worked over 225,000 hours without a lost time injury. Ò Transmission & Distribution Systems

Ensuring our members have reliable electricity is a primary goal of Lumbee River EMC. After all, reliable electric service contributes to a higher quality of life for our members. The cooperative performs regular, required maintenance on our electric system. This maintenance helps ensure that your homes remain well-lit, heated or cooled as necessary, and that appliances and devices function as expected.

Substation redundancy also plays a critical role in ensuring Lumbee River EMC can provide reliable service to our members.

Having redundant systems means that if one element fails or requires maintenance, the backup system can seamlessly take over, preventing power outages and thus reducing the possibility of service interruptions to our members.

Protecting our substations is also a top priority of Lumbee River EMC. Ensuring their security is essential to prevent disruptions in the power supply, protect public safety, and safeguard against potential acts of sabotage or terrorism.

Some ways we are working to protect our substations include adequate perimeter security, 24-hour surveillance, and adequate lighting.

Purchased power continues to be the largest portion of our overall expenses (69%). Still, our rates remain competitive compared to other electric utility providers in and around our service area. As we work to keep your energy costs affordable, Lumbee River EMC is dedicated to finding innovative ways to expand our programs to assist our members with managing their energy usage. We provide information to assist members in making behavioral changes to reduce their electric costs, including usage breakdowns, helpful tips, and smart technology devices. Capital credits are a unique feature of cooperatives like Lumbee River EMC. They represent the ownership interest that members have in the cooperative.

Instead of paying dividends to shareholders like larger investor-owned utilities, cooperatives allocate any excess revenue or margins back to their members in the form of capital credits. These capital credits are essentially the members' share of the cooperative's profits. Ò Community Commitment

Beyond our primary role of delivering safe, reliable, and affordable electric service to our members, Lumbee River EMC is dedicated to balancing the scales by significantly contributing to our community. Our outreach programs help members understand the cooperative business model, the importance of civic responsibility, and community involvement.

Annually, programs such as our Youth Tour allow students in our service area to travel with a group of other peer delegates from the state to Washington, D.C. for a week each June. These future leaders learn first-hand what it is like to be involved in politics, participate in community service, and learn about today's pressing issues in the energy industry. Students interact with our local elected representatives in the U.S. House and Senate and understand how decisions affect our industry.

Lumbee River EMC is committed to rewarding academic excellence and assisting the students of our members in their pursuit of higher education—our cooperative awards four $4,000 four-year scholarships and two $1,200 two-year

scholarships each spring. The selection process considers academic achievement, financial need, extracurricular activities, personal essays, and educational recommendations.

We also understand the importance of working together with our local teachers and educators to provide them with the tools necessary to "think outside the box" and bring the traditional classroom to a new level of learning. Once a year, K-12 teachers in our service area are encouraged to apply for grants of up to $2,000 from Lumbee River EMC to help fund in, and sometimes out, school projects that provide students with an innovative way of learning. The Bright Ideas program reflects the cooperatives' commitment to bettering the communities we serve, and we see no better way than by arming teachers with the materials they need to provide stimulating classroom instruction for our youth. In 2010, Lumbee River EMC awarded 13 grants, contributing $21,535.52 to teachers in Robeson, Scotland, Hoke and Cumberland counties.

And once again, working hard to support those who need us most in the community, Lumbee River EMC continues to fund programs like the LREMC Cares, which provide financial aid to our members needing assistance paying their electric bills. Fundraisers such as our annual golf tournament and monthly member contributions combine to reach out to members who need help. With the help of nonprofit organizations in all four of our service counties, Lumbee River EMC helped members in Hoke, Robeson, Scotland, and Cumberland counties in 2010 for the LREMC Cares Program. This effort and contribution of funds helped 228 members pay their electric bills and paid for and distributed 55 fans during the "Fans For Seniors" program.

These programs and events are just a snapshot of LREMC's commitment to the community and the lives and well-being of our members. Through our involvement with these programs, Lumbee River EMC can reach out to those who live and work in the community and exemplify our basic purpose as a cooperative…to serve our member/owners. Following that simple principle, we will always find the balance we seek and be prepared and steadied to meet tomorrow.

A Legacy of Service Lumbee River EMC's commitment to serving its community has been unwavering since its inception. In 1940, electricity was a luxury for many rural residents, and the cooperative set out to change that.

LREMC embarked on a mission to illuminate the lives of its members by providing reliable electricity to rural communities.

Over the decades, Lumbee River EMC has not only fulfilled this mission but has also embraced innovation and adaptation to meet the evolving needs of its members. As we celebrate over eight decades of service, let's reflect on the journey and look forward to what's to come.

As we look back, it is evident that change has been the only constant. The cooperative's ability to adapt, innovate and serve its members has been remarkable. The cooperative has consistently evolved from

upgrading infrastructure to adopting new technologies to provide members with the best possible service.

What's changed since you started at LREMC? Me! I am older, wiser and slower, LOL! A lot has changed since I started working at Lumbee River EMC. Computer technology and system upgrades have made the Cashier/Member Service Representative positions much more manageable.

Technology has changed the way we operate. I can recall working like a beast on the first and third of the month when the checks came out, taking payments in the offices. Now we have the SmartHub app, pay by phone, kiosk and payment centers to name a few, which have drastically reduced the in-office traffic. I recall going to the bank to make daily deposits, and now we have Loomis pick-ups. I remember having to make our way to the office during snow and ice storms to answer calls- now we can log in from home. I am sure there will be more changes that will improve how LREMC operates.

What are your plans after retirement? After I retire, my main goal is to relax and enjoy life. I will spend my days unwinding, doing hobbies and traveling. I look forward to exploring new destinations, experiencing diverse cultures, and creating cherished memories with loved ones. Retirement is the perfect opportunity to embark on some new adventures.

What's changed since you started at LREMC? I've witnessed many changes working at LREMC. When I first joined, we had 22,000 consumers, but now, we proudly serve over 54,000 members. That is a lot of growth. In those days, it was a routine for every lineman to climb utility poles daily. Now, we have the convenience of having many bucket trucks. There was a time when the company only had four.

Our work environment has also evolved significantly; we've moved into a new building and expanded our operations to encompass multiple locations. These changes reflect the growth and progress of our organization.

We've been able to adapt to meet the growing needs of our members.

What are your plans after retirement? I want to enjoy my family and spend more time with them. I have three grandchildren and another one on the way. I also love the outside, taking care of my flower garden and other plants. I need to play catch-up on things that never get done and maybe some traveling a little later down the road. There are so many people who don't make it to this point- I just want to thank God for his blessings.

What's changed since you started at LREMC? It is a very exciting time right now at Lumbee River. In 21 years, we have changed so much. We went from a small office in Red Springs that leaked whenever it rained to a state-of-theart, multi-million-dollar HQ office in Pembroke.

Becoming our own ISP is also in the works as we speak. We all realize the importance of fiber in our community, and this move will be better for all of us.

I feel like our current talent and expertise have never been better. With the inevitable changes coming down the pipeline, I am confident that Lumbee River is ready for whatever comes our way.

What are your plans after retirement? I plan to travel and spend more time with my kids and friends.

What's changed since you started at LREMC? When I started at LREMC, we read meters with handheld devices.

This meant that a meter reader read every meter as they drove along defined routes—the members' billing period was based on where they lived. We were evaluating an automated meter reading system that would allow us to read meters over the power lines, thus allowing us to bill neighbors at different times of the month. Now, we are evaluating the next generation of reading capabilities that will use our fiber optics backbone to capture these readings and other information about the health of our network and usage patterns across the entire cooperative.

We no longer employ meter readers but seek the technical staff needed to maintain all the new technologies. The tech being deployed has increased tremendously. The changes that will be realized in the next several years from renewable energy applications to electric vehicles, are remarkable!

The Board of Directors, your fellow employees and our members wish you a Happy Retirement! Your service and dedication to Lumbee River EMC were seen, felt and made a significant impact on the community and cooperative.

Watermelon Walnut Currant Chutney

Try serving this versatile dish over brie with crackers or simply dip with naan or baguettes.

Watermelon Bourbon Glaze with Grilled Flank Steak

Serve this delicious entrée with mashed potatoes and grilled vegetables for an ideal fall meal.

1½ cups watermelon juice (approximately 21/2 cups chopped watermelon, blended) 2 tablespoon minced garlic ¼ cup soy sauce ¼ cup brown sugar

2 teaspoon hot sauce ¼ cup bourbon (optional) 2 pounds flank steak or London broil ¼ teaspoon cornstarch

In a medium saucepan over medium-high heat, reduce watermelon juice to 2/3 cup.

Toward end of reduction, add garlic. Remove from heat, cool 10 minutes then add soy sauce, brown sugar, hot sauce and bourbon. Mix well.

Place watermelon-bourbon glaze in large zip-top bag. Add steak and massage to cover meat. Close bag and refrigerate 3–4 hours.

Heat grill to high heat. Remove steak from plastic bag and gently shake to remove excess glaze.

Grill steak 4–6 minutes; turn, then grill 4–6 minutes, depending on thickness of steak. Remove from heat. Steak should be pink in center.

Allow steak to rest on platter or cutting board 10 minutes.

Mix small amount of watermelon-bourbon glaze with cornstarch. In small saucepan over medium-high heat, add cornstarch mixture to remaining glaze and simmer 3–5 minutes. Reduce to medium heat until mixture thickens. Remove from heat.

Cut flank steak on bias into thin strips.

Drizzle watermelon-bourbon glaze over top.

Yield: 6 servings

4 cups watermelon, juiced 2 cups watermelon rind (white part), diced small 2 tablespoons apple cider vinegar 1 ½ cups packed brown sugar ½ medium white onion, sliced 1 tablespoon minced garlic ½ teaspoon nutmeg ¼ teaspoon cloves, ground 1 teaspoon lemon zest 1 lemon, juice only 2 tablespoons currants 2 tablespoons roasted walnuts 1 wheel brie cheese, for serving Crackers, for serving In a saucepan over medium heat, reduce watermelon juice to 2 cups. Combine watermelon rind through walnuts; simmer until almost dry.

Chill and serve over brie with crackers.

Yield: 16 servings

Upgrading Heat Pump Efficiency Learn the latest in HVAC tech

Q:

We have a heat pump that has served us well, but as we start gearing up for winter, I’ve been wondering about the latest and greatest in the technology.

Can you tell me more about that?

A:

You’re probably not alone in your curiosity, since over 65% of homes in North Carolina are electrically heated, according to the U.S. Energy Information Administration, and more than 40% of housing units have heat pumps — ranking us second in the nation. And although it’s rare to proactively replace a heating and cooling system before it dies (and they ultimately tend to fail us at the worst possible times) it’s certainly a good idea to know what’s out there before getting in a pinch.

In previous winter-oriented columns, we discussed no- and low-cost steps to prepare your home (September 2020, page 22) and explored how to get the most out of your thermostat (January 2021, page 22). These articles touched on heat pumps, but it’s been a while since we zeroed in on this big-ticket item and its mechanical motor parts.

To get everyone on the same page, here’s a quick highlevel reminder of how heat pumps work. Rather than generating their own heat, heat pumps absorb it into refrigerant from one location and move the refrigerant to another location where that heat is then released.

We’re focused here on heat pumps that use the outside air to absorb and release heat (air-source heat pumps, the most popular type), but there are units that use the ground or water instead. In the winter, an air-source heat pump takes heat from the outside air — even in cold temperatures — and disperses it inside your home; in the summer, it takes heat from inside and dumps it outside, similar to your refrigerator.

Advanced heat pumps in the market today can attribute their improved performance in part to the way their fans run. More common models can typically only operate their fans at one (just “on”) or two (“low” and “high”) speeds; newer, high-efficiency models use variable speeds, like your vehicle’s accelerator pedal, which provide more gradual heating and cooling along with reduced noise (since the blower isn’t constantly at full speed) and better comfort and humidity control.

High-efficiency air-source heat pumps also come in ducted (relying on existing ductwork) and ductless versions, so they can be deployed in spaces with varying needs and levels of existing infrastructure. Furthermore, some can operate at colder temperatures without needing to rely on energy intensive auxiliary strip heat, which

can save additional money and reduce overall demand on the grid. You can read more about different heat pump options in the article “Which Heat Pump Option is Right for My Home?” (October 2021, page 26).

When you are ready to upgrade your system, the typical recommendations remain: try to do research when you have time, get quotes and references from a few contractors, look for Energy Star® certified equipment for added confidence and efficiency, and find out if you qualify for any incentives from your electric co-op, or search for other sources at dsireusa.org. Since you already have a heat pump installed, you likely have the necessary electrical connections in place, which should cut down on your expenses. And with tax credits and rebates becoming available across the country from 2022’s Inflation Reduction Act, now may be a great time to consider a replacement.

Christmas on the Farm In November, Kersey Valley kicks into high holiday gear

‘“Lights, Santa, action!’

— that’s our tagline,”

explains Tony Wohlgemuth, who co-owns Kersey Valley Christmas with his wife, Donna. Each November, the 80-acre tobacco farm opens as a holiday wonderland for children and adults of all ages in Archdale.

As you walk through the outdoor grounds, you hear Christmas classics including Eartha Kitt’s “Santa Baby,” Thurl Ravenscroft’s “You’re a Mean One, Mr. Grinch,” and The Ronette’s “Sleigh Ride.” The fragrant aroma of fresh caramel kettle corn and apple cider donuts sweetens the air.

“It’s family oriented, with lots of different things to do around every corner,” says Greensboro resident Tiasha Hairston who came with her family, including her husband and 5-year-old daughter.

Donna says the experience is about memories and family fun.

“We created a place where people can go and buy mementoes,” she says. “We sell ornaments, and things people can treasure for their rest of their lives.”

A spooky start

Tony was born in High Point, although his family was from Zurich, Switzerland.

For years, his family’s farm has been known for Spookywoods, deemed by the Travel Channel as one of the top five haunted attractions

in America. The “haunted” spot has been a seasonal hit for 38 years, and features movie-quality sets and soul-shaking special environmental effects. But the farm’s roots were anything but spooky.

“My father immigrated here to work for a furniture company. They bought the farm in 1979, and it was used to plant Christmas trees.”

After his father moved back to Switzerland, a close call one summer led young Tony and his school friends to come up with a more profitable idea.

“The property had several unused tobacco barns, a farmhouse and the main residence,” he explains. “The farmhouse was remodeled in 1982, and my mother taught European knitting classes there as part of an off-campus program for the local community college. My friends and I used to pull power from the farmhouse via a drop cord to one of the tobacco barns behind it. We hung a chandelier and used it as our main light.”

The farm was a popular place to spend summers hanging out, and Tony and his friends would camp in the barns.

“One summer night, just past midnight as we were about to fall asleep, the chandelier fell and stopped a few inches from smashing us in the face,” Tony says. “We were lying in sleeping bags directly underneath. The end of the drop

cord, caught on the windowsill, was the only thing that kept that heavy iron fixture from hitting us. It scared us half to death and spawned a dare between us to see who would enter the old house to restore the power. I took the dare, and when I came back, we kept challenging each other to see whose dare could be the scariest.”

The idea for Spookywoods was formed and has been growing ever since.

Christmas in the air

Kersey Valley Christmas first came into being in 2008, with a focus on selling real Christmas trees.

In 2021 — once the world began getting back to normal after the pandemic — Tony and Donna launched the bigger “reboot” of the Christmas festivities.

The idea was a hit, and now, after Halloween, Kersey Valley shifts into

Christmas mode. It employs 300-plus part-time employees and 10 to 12 fulltime employees year-round.

“There was a need for Christmas,” Donna says. “We wanted to create a different experience than the mall.

Here, we get immersed in the lights and sounds, [and holiday treats like] roasted marshmallows at the Roasty Toasty Village.”

Christmas activities abound. In addition to holiday concessions and a walk-through light display, there are giant jumping pillows, a train ride around the various displays, massive wagon rides with a John Deere tractor and a cow train ride pulled by fourwheeler. Meanwhile, Santa and the Grinch walk around the farm and are ready to take a picture with anybody who wants a photo with them for a price.

Snappy, Seasonal Blooms Christmas cactus secrets revealed!

While Christmas cactus in bloom is such a pretty sight, it is also a plant with secrets, which, thanks to the crack Carolina Country investigative team, can now be revealed: The “Christmas cactus” you see during the seasonal shopping frenzy of late fall might not be a Christmas cactus. There is also the Thanksgiving cactus, which has a similar look but blooms earlier. Both have snappy displays dripping with complex, long-lasting flowers that come in bright colors such as pink, red, yellow, orange or white, but if you want to be precise with the plant you are buying, the main difference visually is their leaves. The Thanksgiving cactus has pointed stem segments, while its close cousin has more rounded segments.

(And just to muddy the waters, there are also hybrid creations that exhibit similar eye-catching blossoms.)

Whether you buy a Thanksgiving or Christmas cactus this year, neither is guaranteed to bloom exactly during the holiday season next year.

Having them in full flower in time for Yuletide festivities requires 14 hours of continuous darkness in a cool area

(around 55 to 60 degrees) each night for six weeks. Personally, that is more effort than I care to put into ANY plant, so I just let my pretties bloom when they dang well feel like it, which usually occurs anywhere between October and February.

Despite its name, the Christmas cactus is not a typical cactus because it originates from the tropical rainforests of South America, meaning it doesn’t like desert conditions such as full sun or dry air. This pretty performs best in a container of quality, well-draining potting mix and an indoor setting bathed in bright, indirect sunlight. It also enjoys humidity, so keep it away from air vents and, to help create a mini-moisture zone, set its pot on top of a tray filled with pebbles and water.

Butterfly bush bloom going to seed.

For sight and scent, it’s hard to beat a butterfly bush in full bloom. But many older cultivars, especially from the popular Buddleia davidii clan, can be seedy, weedy, invasive brutes in the landscape. One good way to prevent their spread is to cut off seedheads that develop from spent flower clusters before they start to scatter their progenies hither and yon. Since this dispersal typically begins in late autumn, now is a good time to remove the seedheads and give them a one-way ticket to the dump. And don’t go crazy with clipping—save any major limb pruning until late winter.

□ Frost is not completely unwelcome in the veggie patch, especially when it comes to cool-season crops such as cauliflower, broccoli, collards, Brussels sprouts, cabbage and kale. A light frosty morn will turn some of the vegetable starch in these plants into sugar, making them taste sweeter.

□ Cut down spent cannas and trash the debris.

This helps prevent bad bugs known as leaf rollers from overwintering in the faded foliage and emerging next spring to continue their dastardly canna-chewing ways.

Mushroom-Noodle Bake This recipe was inspired by noodle kugel that’s served at Jewish holidays. Traditionally, kugel is sweet, but mushrooms make this savory version a side dish suitable for all kinds of holiday meals. Use white, cremini or baby bella mushrooms, or a combination.

1 bag (16-ounce) wide egg noodles, cooked and drained 6 tablespoons olive oil 1½ pounds mushrooms, sliced 1 cup onion, chopped 1½ cups sour cream ½ cup milk 3 eggs, beaten 1½ teaspoons thyme ½ teaspoon paprika ½ teaspoon black pepper 1 teaspoon salt Chopped parsley for garnish

Ginger-Cilantro Corn Pudding Put the cooked egg noodles in a large bowl and set aside. Preheat the oven to 350 degrees.

Pour the olive oil into a large sauté pan over medium heat, and add the mushrooms and onion. Add a pinch of salt and cook, stirring, until the vegetables are soft and most of the liquid from the vegetables is gone, about 4 minutes.

Add the mushrooms and onions to the noodles and toss gently to combine. In a separate bowl, combine the sour cream, milk, eggs, thyme, paprika, pepper and salt; then stir into the noodle mixture.

Spray a 9-by-13-inch baking dish with nonstick cooking spray, then pour in the mixture, spreading it evenly. Bake for about 1 hour or until the casserole is cooked through and lightly brown on top.

Let cool for a few minutes to let it set and garnish with parsley before serving.

Yield: Serves 8–10

1 stick butter 1 cup sugar 2 eggs 3 teaspoons vinegar 1 teaspoon vanilla 1 cup chopped pecans 1 9-inch unbaked pie shell (or your favorite pie crust recipe) Preheat oven to 350 degrees. Melt butter. Add sugar and mix well. Add eggs, one at a time, and beat well.

Add vanilla and vinegar and mix. Add pecans and pour into unbaked pie shell. Bake for 40 minutes or until golden and crunchy on top while insides are slightly jiggly.

The nontraditional flavors of this side dish pair it perfectly with lighter holiday feasts, and it’s suitable for vegetarians and guests who don’t eat dairy products. Baking time will depend on the depth of your baking dish, but a taller dish, such as a soufflé dish, gives the pudding a fluffy texture. You can make it a day ahead, refrigerate, and reheat to serve.

1 tablespoon olive oil ½ cup chopped red onion 2 cups corn kernels, thawed and drained if frozen 1½ tablespoons fresh ginger, grated 2 tablespoons fresh cilantro, chopped 1 teaspoon salt ½ teaspoon black pepper Dash of cayenne Dash of mace or nutmeg 1 can (14-ounce) unsweetened coconut milk 2 eggs 2 tablespoons cornmeal Cilantro leaves for garnish Preheat the oven to 350 degrees. Coat a 6-quart casserole or soufflé dish with nonstick cooking spray and set aside.

Put the olive oil in a small sauté pan over medium heat and sauté the red onion until soft but not brown.

In a large bowl, combine the corn, ginger, cilantro, salt, pepper, cayenne and mace or nutmeg. Stir in the cooled onions.

In a medium bowl, whisk together the coconut milk and eggs. Add to the corn mixture and stir well, then stir in the cornmeal. Pour into prepared dish.

Bake for about 1½ hours or until lightly browned and cooked through. Test by inserting a thin, sharp knife in the center; it should come out clean. The time will depend on the depth of your baking dish.

Let cool until set before garnishing with cilantro leaves and serving.

Yield: Serves 8–10
