Braised Cabbage With Bacon and Nutmeg *When cooking cabbage, the trick to keeping it green is to cook it very briefly. To add flavor, add some bacon and nutmeg, just like in the following recipe for “Braised Cabbage With Bacon and Nutmeg” from Sophie Braimbridge’s “Stylish Mediterranean” (Kyle Books).

Braised Cabbage With Bacon and Nutmeg Serves 4 1 1/4 pounds Savoy cabbage 2 tablespoons extra virgin olive oil 5 ounces bacon or pancetta, sliced or diced 1 large garlic clove 1 heaped tablespoon chopped sage or rosemary leaves Good pinch of nutmeg Sea salt and freshly ground black pepper Remove the outer leaves of the cabbage and wash them if dirty or trim if wilting. Cut in half, removing any thick stems. Then finely slice. Quarter the remaining cabbage, remove the thick core and finely slice.

Add the oil and bacon to a large lidded saucepan and cook on a high heat until light golden brown.

Chop the garlic and sage, turn the heat to low, and add them to the pan.

Cook briefly, then add the cabbage, adding a splash of water if you think the cabbage might brown.

The Christmas Market at the Mundare Recreation Centre was one of the busy venues during the townʼs Christmas Extravaganza on Saturday, December 5th.

Servus Credit Union hosted Christmas ornament decorating while the Library Board hosted visits with Santa, offered delicious treats, there were sleigh rides, and an evening parade for one and all. It was a terrific way to celebrate the season, and many thanks go to the volunteers and participants who made the occasion so special.

Bake on the middle rack of a preheated 375 F oven for 15 minutes. While still warm, drizzle with honey.

Pistachio Honey Rolls Makes 32 rolls 2 cups shelled pistachio nuts 1⁄2 cup sugar 1⁄2 teaspoon ground cinnamon 1 teaspoon finely grated orange zest 16 sheets phyllo dough, rolled out and kept covered with a damp towel 4 tablespoons butter, melted 1⁄2 cup honey, warmed Place the nuts, sugar, cinnamon and orange zest in a food processor and grind until nuts are finely chopped. Transfer to a bowl.

Place a sheet of phyllo dough on a work surface.

Keep the remaining sheets covered with a damp towel after each sheet is used. Brush the sheet of phyllo with butter, top with another sheet of phyllo and brush with more butter. Lightly spread the sheet of phyllo into four strips lengthwise. Roll up each

Potato and Arugula Omelets; a brunch delight Holiday hosts who want their overnight guests to start their days off on the right foot should consider the following recipe for “Potato and Arugula Omelets” from Betty Rosbottom’s “Sunday Brunch” (Chronicle Books).

Potato and Omelets Serves 2

Arugula

2 1/2 tablespoons unsalted butter 1/2 tablespoon olive oil 4 ounces red-skinned potatoes, scrubbed but not peeled, cut into 1/2inch cubes Kosher salt Freshly ground black pepper 4 eggs 1/8 teaspoon cayenne pepper 8 cups arugula, stems discarded and leaves cleaned, dried and coarsely chopped* 1/2 tablespoon balsamic vinegar

1. Heat 1/2 tablespoon of the butter and the olive oil in a medium, heavy frying pan set over medium heat. When hot, add the potatoes and saute, stirring often, until light golden and tender, 8 minutes. Remove from the heat and season with salt and pepper. (The potatoes can be prepared 1 hour ahead; leave at room temperature.

Reheat, stirring, over medium heat.)

2. Whisk the eggs in a mixing bowl and season with a good pinch of salt and the cayenne. Place the arugula in another mixing bowl and toss with the vinegar. Place the Gruyere and the potatoes each in separate bowls. Have ready a ladle for adding the egg mixture to the pan.

3. Add 1 tablespoon to a 9-inch frying pan, preferably nonstick or sea-

soned cast iron, set over medium heat. Swirl the butter so that it coats the bottom of the pan. When it is hot but not smoking, ladle half of the eggs into the pan and stir with the back of the fork until they start to set but are still quite liquid on the top, 30 to 40 seconds.

With the fork or a nonstick spatula, lift an edge of the omelet and tilt the pan to let some of the uncooked egg mixture run underneath. Repeat this two or three more times, working your way around the pan until the eggs are cooked but remain moist on top.

4. Sprinkle half of the potatoes, then half of the cheese, and finally half of the arugula over the eggs. Let the mixture cook until the cheese begins to melt and the arugula wilts only slightly, 30 seconds. Using a nonstick or metal spatula, fold the omelet in half and slide it onto a plate.
