Mr. Caribbean International Heats Up Hedonism II The temperature in Negril, Jamaica is going to get scorching hot as the chiselledbodied and gorgeous gentlemen of the Mr. Caribbean International (MCI) competition descend upon the Hedonism II resort on October 1, 2012. This heat wave will not be short; the gentlemen will excite and tantalize their fans as they compete in swimsuit, talent, fitness, modelling and public speaking in a weeklong series of preliminary competitions that

will culminate with the grand finale showcase on the evening of Saturday, October 6, 2012.

The beaches of Negril and the uninhibited playground of Hedonism II serve as the perfect cooling stations for when things get too hot. MCI guests will be treated to funfilled pool parties, beach games, crazy nights in the disco, romantic blind dates and much more. This year’s event will also feature Taboo Raw Uncut Live with sexpert, comedian and host, Troy Rawlings from Los Angeles, California.

This year’s event marks the 10-year anniversary of the competition and will feature participants from Trinidad & Tobago, Anguilla, Barbados, and the USA just to name a few.

It appears as if the masses knew it right from the start. Not only was Forde crowned the overall winner, but he was also voted the favourite in the Peoples’ Choice competition. It’s been said that Forde bears a striking resemblance to legendary Jamaican Olympian, Usain Bolt. Just like Bolt, Forde ensured that he delivered as he won the competition’s rigorous fitness challenge with ease.

Forde flew the Barbadian flag high as he secured the island’s first victory in the 10-year history of the competition. Standing with Forde in the top three were 1st runner-up Andre Walker from Jamaica and 2nd runner-up Nathaniel Goodwin from USA. Walker was also awarded with the prize for Best Physique. Forde walks away with several prizes including $2,500 USD and a 5night stay at Hedonism II resort.

Miss Jamaica Humanity International 2012 LesaGayle Wee Tom Eyeing Prestigious Crown Lesa-Gayle Wee Tom will be representing Jamaica in the Miss Humanity International pageant to be held in Barbados. The pageant will run from October 14-20. With Jamaica celebrating their 50th anniversary this year, she feels it is of great privilege for her to be given the opportunity to be an ambassador for her country and hopes to give Jamaica another reason to celebrate by winning this prestigious crown.

She will present her humanitarian platform which is about the issues concerning children and women. In light of the tragedies currently happening in Jamaica, Lesa-gayle will have a lot to present to the judges. She wants to break the silence on the issues of abuse of our children and women. She feels that her Journalism studies and experience have prepared her to be a great spokesperson for the Miss Humanity International title. Miss Humanity International is an innovative pageant with headquarters in Bridgetown, Barbados. The First pageant was held in 2011. Its sole objective is to promote and raise awareness about humanitarian causes worldwide. The pageant is open to young ladies ages 16-27 who have a strong passion for community & humanitarian service. The pageant desire delegates to support charities that work to advocate against child labour, HIV/AIDS Discrimination, domestic abuse, genocide, sexual exploitation, human trafficking, hunger, lack of access to pure drinking water or discrimination, poverty. All national representatives are expected to engage in social activities with businesses and governments to benefit all of humankind through charitable causes.

Lesa-gayle is no stranger to competing; she has represented Jamaica in the Miss Caribbean World and Miss International beauty pageants. Also she was the winner of Miss Florida Caribbean in 2009 and Miss Jamzone international in 2010 but she feels Miss Humanity International holds a special place in heart because it's about doing good in the world and making a difference in people's lives. 4|P ag e

Miss Guadeloupe, Elody Pradel wins Miss Caraibes Hibiscus 2013

Miss Guadeloupe, Elody Pradel won the title at the 22nd Miss Caraibes Hibiscus Pageant from a field of 19 contestants which was held at the Casino Royale in St Maarten recently.

The 20-year-old also walked away with $10,000 cash prize along with gifts from Sports Gallery, L’Orangerie Boutique, Park Avenue, Touch of Class, UltimateJewellers, Hip Up, Shoppers Plaza and Anthony Quintana.

Elody Pradel, who no stranger to beauty pageants as she participated in the Miss United Nations and was recently placed second runners up in the Miss International 2012 which was held in Okinawa Japan. She

Mash together avocado and milk or oatmeal and apply it to your face. Leave it there for 10 minutes, and then rinse it off with lots of water. An alternative mixture is mashing avocado, add honey and lemon juice. Honey is a natural antiseptic while lemon juice helps with spots and discoloration.

Papaya Mask This fruit is great to clearing up whiteheads, boils and spots, as it contains the papain enzyme which is an effective in skin whitening agent. Papaya also contains alpha hydroxyl acids which help remove dead skin cells and reduce the appearance of aging.

Mash together papaya and honey and apply to your neck and face. Leave on for 15- 20 minutes before rinsing with warm water. Do not use daily because of the alpha-hydroxyl as it might cause dryness and irritation of the skins.

Banana Mask Bananas are rich in vitamin A, B and E and hence works as an anti-aging agent for the skin. Banana is also great for warts. If you rub the inside of a banana peel on the wart every night for a week and you will see improvement. Mix mashed banana and egg white until together and apply to skin for 30 minutes. Rinse off with warm water. Banana Mask.

Cucumber Mask Cucumber is good for treating skin eruptions and bulges and for whitening skin. It can also prevent pimples, wrinkles, blackheads and dryness of the face.

To make a great cucumber mask blend 4 - 5 leafs of fresh mint and 1 cucumber together. Whisk egg white and to cucumber mixture. Apply this evenly on your face for 20 minutes and then rinse it with water and pat it dry

Highlights from Caribbean Fashion Plus Week 2012

A

fter five days of intense focus on the plus size fashion industry, which concluded in

two major fashion runways, one can safely say that the league of pioneering Caribbean designers who took up the challenge of creating plus size collections fulfilled their mission and more. Most designers were presenting their first ever plus size collections at the fashion week, giving patrons who attended the first look of what can be considered a new ‘season’ of designs for Caribbean plus size shoppers, buyers and retailers. The Caribbean and host country Trinidad and Tobago can now stand with the big names in the international plus size industry as having a full season of plus size fashion from which Caribbean consumers can now select and purchase! Out of the 16 designers scheduled to debut at the Caribbean Fashion Plus Week, 7 were showcased at the “Pan In Style”event held at Sforzata Panyardon 3rd November, and 13 showed collections at “Runway Caribbean”,held at the Ballroom Cascadia Hotel on 4th November 2012. The collections at “Pan In Style”carried all the flair and colourexpected for a festive pan yard environment. Complimenting Trinidad and Tobago’s national instrument were collections from Jay Jay Designs, aptly entitled, “Colourific”as well as Carnival costume designs for Nottinghill Carnival by DVOG and Utopia mas 2013. A plus size swim suit line and clothing collection was also launched by designer Tennille FrankofPlus Express. Chinsy Designs by Chinyere Thomasmade a world premiere at “Pan In Style” with a bright array of fun and flirty swim wear and quirky swimsuit accessories, one of which included a full plus size ballerina tu-tu! Lesa Gonzales of Lesa G designs combined her famous jersey manipulation talent with her eccentricallycolour coordinated woollen woven designs to present a collection that seemed perfect for the more daring plus size shopper, ever-ready for any party or liming occasion. The

fashions were accompanied by the sweet strains of steel pan music supplied by Sapophonicspan side. At the grande finale, “Runway Caribbean�,there were a few surprise collections for the audience on the evening, which came in the form of a mini collection of evening wear from Robert E. Knight of Chicago USA as well as a gown from internationally renowned plus size designer brand IGIGI.

Representing from Guyana was Andrea Brathwaiteof Timeless Treasures, who presented unique applique, stenciled and hand painted designs with the well fitted garments of her collection.

Also presented was a mini collection of evening gowns from Heather Jones.DVOG and Plus Express presented again but with different collections at “Runway Caribbean�, both carrying the theme of island and resort wear respectively. In Collection swimwear presented its 2013 swimwear line for plus size which showed some interesting concepts in fit and styling for the more plump shape. So Esteem from London was warmly received with their teal-inspired collection of short jumpers, breezy above-the-knee dresses and asymmetrical hem lines.

Rounding out the female designers was an impressive collection from Anne Marie Alexis– a study of pieces in red, white and black - a tribute to the 50th year of independence of Trinidad and Tobago. The well-constructed lines and the complimenting incorporation of the national colours in each garment, was off-set from starkness by a treatment of colour removal and addition in some cases, using a tie-dye technique. There seemed to be quite a bit of

brilliantly executed technique and finish in this collection, with capped red sleeves, and other little accented details which added completeness to each look in the series. There was also a secondary theme where the multicultural influences of the nation were highlighted. Included in the collection were Indian and Chinese-influenced details as well as a full African gown and head wrap in the same red, white and black colour scheme.

Even with such good representation from the ladies, the stronger collections of the evening definitely came from the male designers at “Runway Caribbean”namely, Orson Charterof Charter’s designs, Robert Young from The Cloth,Wayne Sankar

and Dexter Jennings of Concept Studios. Charter’s designs went for the extreme in fun, island colour with a collection of colour patterned shortshorts with solid colours on top. Robert Young’s collection opened with an impressive black and red gown, with his signature multi-fabric layered

sleeves of varying textures and colours of red. The collection continued with a deep nod to Caribbean roots, incorporating bold colour blocking, flowing and flattering fabric shapes for the tops as well as two selections of traditional shirts from‘The Cloth’ line.

Up next was Wayne Sankar, who in every way proved his title in the plus size industry as both, “The King of Custom Fit” and “The Bustier Specialist”. Sankar’s collectionwas an expertly tailored display of just how sexy a plus size shape can look when encased in the perfect fitted clothing. His collection included bust, waist and hip hugging bustiers, (up to a size 26!) long flowing skirts with slits up to ‘there’and fitted trousers with charming zippers stitched up the backs of the calves.

Dexter Jenningsand Concept Studios seemed to pull out all the stops for their presentation of “A Black and White Affair.” Accompanied by the music of Latin sensation, Shakira,the designs were presented with all the theatrical flair and excitement for which Jennings is fast becoming known. ‘A Black and White Affair’ was an interesting blend of clever inversions (black polka dots on white fabric, combined with white polka dots on black fabric) along with hand panted black bamboo on brown cotton with dramatic black and gold make-up. His pieces maintained this monochrome theme throughout, with the exception of three pieces, in which the depth of the black was broken by an iridescent threading throughout the three dresses presented.

The evening’s entertainment included smooth melodic vocals from baritone singer Stephan Furlonge, some welcome Christmas selections by saxophonist Ricardo Seales of Tobago and a mellow and spirit-filled acoustic set with a stripped down version of Nehilet Blackman and D’All Girls band. Queens of the Caribbean - Meet the Caribbean Contestants for Miss Universe 2012 The 61st Annual Miss Universe Pageant was held on December 19, 2012 at the Planet Hollywood in Las Vegas where over 70 beauties from across the globe were tested through multiple rounds, where 20 year old Miss USA, Olivia Culpo walked away the coveted crown.

The live broadcast was aired on CBS TV and hosted by Giuliana Rancic and Andy Cohen.

First runners-up went to Miss Universe Philippines, Janine Tugonon who will assume the duties of Miss Universe 2012 if the titleholder for some reason cannot fulfill her responsibilities.

Miss Universe Venezuela, Irene SofiĂĄ Esser Quintero, was second runner-up with Miss Universe Australia, Renae Ayris and Miss Universe Brazil, Gabriela Markus, rounding off the top 5.

The top five were: Miss Russia, Elizabeth Golonova; Miss Universe France, Marie Payet; Miss Universe Hungary, Agnes Konkoly; Miss Universe South Africa, Melinda Bam; and Miss Universe Mexico, Karina Gonzalez.

Top Sixteen: Miss Universe Turkey, Cagil Ozge Ă–zkul; Miss Universe Peru, Nicole Faveron; Miss Universe Poland, Marcelina Zawadzka; Miss Universe Croatia, Elizabeta Burg; Miss Universe Kosovo, Diana Avdiu; and Miss Universe India, Shilpa Singh. Miss Congeniality Universe Award went to Miss Universe Guatemala, Laura Godoy Calle. This award reflects the respect and admiration of the delegate’s peers who voted for her as the most congenial, charismatic and inspirational participant. Miss Universe Mexico, Karina Gonzalez was the only contestant from Caribbean of which there were thirteen contestants to make it to the top. She was also placed second in the National Costume competition. Meet the Real "Kym Hamilton" - Back With a Vengeance It has been two year since Kym Hamilton, the artist formerly known as Gaza Kim, left the Gaza Empire.

Back with a new name, new attitude and new management KYM is determined more than ever to reap success. .

As a teenager the singer was discovered by Vybz Kartel, but she was no stranger to the public as she already had some success in televised talent Competitions in Jamaica like the famed Digicel Rising Stars, Tastees Talent Search and Magnum Kings and Queens of Dancehall. Before that she'd tasted local success winning medals as a member of her School Choir.

In 2008 KYM she was introduced to Kartel, where she was signed underhis management as a

KYM is known for songs such as 'Teenage Pregnancy', ' Amen', 'Bills' (also Ft: Lisa Hype), and a remake of Shabba Ranks' 'Twice My Age' with her then mentor, Kartel and 'I Love You' served to consolidate her promise as a hit maker.

Bounty Killer Alliance While at a nightclub in Kingston KYM was approached Bounty Killer – an artist renowned for recognizing and nurturing young talent. KYM become an affiliate of Bounty Killer's Alliance organization and released tracks like 'Haffi Come Back', 'Bubble', 'When We're Apart', 'Whine Pon It', 'Hush and 'Got To Go Right Now'.

2011 was a great year for KYM as was nominated for the Best International Female Artist Award at the British Reggae Awards with two of her heroes – Tanya Stephens and Queen Ifrica.

KYM is currently signed to Dejavu Records and label own by Jermaine Black who has produced Beenie Man's Sign Up and Junior Reid's These Streets.

CEM sat down with Kym Hamilton to learn more about this beautiful and talent young lady.

We know you as an Entertainer; tell us about the real Kym Hamilton I am a very jovial person, in my spare time I enjoy designing the weirdest things.

Many of your fans know you as “Gaza Kim” but you are now going by the names Kym Hamilton and Alliance Kym. Can you clarify the names? Ok I was a member of the Portmore Empire and was given the name Gaza Kim, After I left the group in 2010 I decided to go by my given name Kim Hamilton but I changed the "I" in Kim to 60 | P a g e

What made you first realize you wanted to pursue a career in music? I've loved music from an early age, but I made the leap in high school when I entered the high school choir, and everything just blossomed from there.

You have been in and won many competitions before you became famous. What were some of those competitions and what was it like? I entered contest like, All together sing with my high school choir, Digicel Rising Stars, magnum Kings and Queens of Dancehall and Tastee talent search. It was fun entering these contests but very nerve wrecking.

How did you get discovered by Vybz Kartel? I gave his Girlfriend Shorty a copy of my promotional CD he heard it and loved what he heard and decided to sign me to his record label.

You left “Gaza Empire” and you are now re-branding yourself what are your biggest challenges? The biggest problems I’mfacing now is getting air play and letting the fans know that Kym Hamilton is the same Gaza Kim.

You were working with Bounty Killer's Alliance, what was that like? Working with Bounty Killer and the Alliance family is fun. They are very professional and its music all the time. There is never a dull moment when you are at the studio with the alliance family Where do you draw inspiration from when writing your own lyrics? I draw inspiration from situations I’vebeen, family, the people around me and society in general the good and the bad.

What is your favorite song that you have written? Got to go right now, it was produced by payday music of the Alliance on the luv mood riddim

How do you handle mistakes during a performance? I just keep going, because sometimes you make a mistake and it’s not noticed by the fans but if you stop to check yourself that’s when a little mistake becomes a big deal

If you weren't singing, what would you be doing? Designing, I love fashion

Who is your favorite artist that you have had the opportunity to meet, and why? Busy Signal, he is an inspiration to young up coming artist and I like that about him

What are you currently working on? I have a few riddims that I’m writing on right now and promoting my latest video "The Groove" ft the St. Lucian Artist Ieashaa

What advice do you have for a young and upcoming female? Hard work and persistence is the key. Never give up and you'll succeed, because has a female we have to work twice as hard.

Where do you see yourself in 5 years? I see myself travelling from all corner of the earth to grace the nations with my music and being able to use my music in all ways possible to help and create better situations for the less fortunate.

Moving forward and now being signed to Dejavu Records what can the fans look forward to hearing from your new image? I will be doing Dancehall, Reggae and some crossovers. I am changing the image but not the message so the music will continue to inspire. I want to make music that everyone can relate to on one or more levels.

What advice would you give an aspiring artist that is just trying to get into the music industry? Get connected to the right people. The right connections can lead to success avoid quick or two minutes buss, because it's gonna be for a minutes, find something that can last a life time.

“I wrote Daddy Where Were You with the intent to reach out to the fathers who play absentee roles in the lives of their children or, often times, no role at all; The absentee fathers are those who think that showering a child with gifts can make up for missing out on those important moments in that child's life”.

"Mr. Pedophile was written after I had read numerous broadcasts, via social media in the span of a week, about missing, molested, and abused children and teens; being a lover of children, I was saddened and irked. This is a worldwide issue that has affected children for many years and I felt compelled to make my voice heard. Music, being a universal language, was the only way I could get my message across to the masses of how I, as well as others, feel about this perverted and abnormal behavior. Pen was put to paper and the rest is history”.

Her debut album titled “Nostalgia”; a Sentimental Journey back to the Good Old Days of Reggae will be released by Signature Records via VP Records on January 1st of 2013. The album boast collaboration with Eddie Fitzroy, Michael Buckley and General Pecos has already gotten the thumbs up from music industry personnel who has given a listening ear thus far.

Meet New Artiste S.K - (Shakeir Kidd) S.K. born Shakeir Kiddto mother Yvaine Ellis and father Kenroy Kidd, originates from ST. Mary. He grew up in a single parent home with his grandmother, Donna Davis, as his mother died two months after he was born, and his father was inactive in his life.

S.K. grew up in the Barbican community of ST. Andrew and has been singing since the age of five years old. One day his great grandmother came home and heard a song and she believed it was the television, however, it was young Shakeir that was singing his heart out. She wasted no time. His great grandmother soon called a radio talk show on Love FM and got S.K. his first performance on a talent show, hosted by Nadine Blair in Winters Park. Soon after, S.K. had found himself in various churches singing his heart out. He joined the Barbican Baptist Church Children’s Choir where he sang for eight years at an annual function the church calls Cris Mas Fun Ting.

S.K. was also on his school choirs at Calabar High School which he attended for five years and also at Mona High School which he attended for a year. It was at Mona that he met Kimani Smith and Roel Powell who both appreciated S.K’s vocal ability. They then introduced him to Peter Harrison and Skatta Burrell, who were not hesitant to offer an opportunity to be in the Downsound environment.

There he has matured in his ability in the voicing booth and also his writing ability. He has written songs for G Warren, Motion and combination with G Warren and Harry Toddler. S.K. is also gifted with an ear for harmony notes, and he is the harmony singer in Nature’s World Peace. He believes that if opportunity comes knocking, jump at it and make the best of it, and that’s exactly what S.K. has been doing.

He was given an opportunity by Donsome Records to do a song on the Amore Riddim, and he didn’t disappoint. This resulted in his first release, a song titled Keep You Warm.

S.K. was reunited with his high school best friend, Micheal Farquharson who immediately offered his assistance to him. He offered to be his road manager, and once again S.K. didn’t allow the opportunity to pass.

His new road manager had started to promote him in the Maverly area, so much so that he wasted no time in getting another opportunity opened for the artist. He made a link with a member of Harsh Records, an England based Dancehall record label, who recently released their Riddim (The Harsh Riddim) which S.K. didn’t hesitate to show his vocal and lyrical ability, and his second song, Wine up Yuh Body was released.

S.K. continues to work with Micheal Farquharson, Kimani Smith and Roel Powell to get a break in the music industry, and with his vocal ability, he is a force to be reckoned with as he aim to be the best in Dancehall/Reggae.

The single, produced by Zj Dymond of Zip 103 Fm for his newly formed Fullchaarge Records label, is said to be the first single to be released on the label, and also the first project between producer and artiste, however, the public can look out for future collaborative projects both Octane and Dymond concurred.

Based on the response the song is getting preparations are being put in place for the video to be shot for the song in coming weeks.

Rihanna gets her own Reality Show “Styled to Rock” on Style Network Rihanna in venturing into the world of reality TV with her own show “Styled to Rock,” in which she will hand-pick 12 wannabe designers and give them the opportunity to create free outfits for “A-list celebrity talent.”. According to Style, Rihanna will hand-pick the designers and enlist the guidance of experts from the fashion industry to serve as mentors. Each week, challenges will push the designers to their creative limits when they are tasked with styling an A-list star. Each week’s celebrity guest will then determine which designer best achieves their vision and advances to the next week of competition. Faced with the threat of elimination, the remaining designers must meet with the mentors to discuss where they fell short and ultimately who will be sent home. Caribbean to the World (C2W) a music publishing company recently held a two day workshop at the Bougainvillea Beach Resort in Barbados.

The Jamaican base company seeks to bring together the industry’s biggest writing names with aspiring writing and music talents of the Caribbean, with the aid of Ivan Berry of Beat Factory Music in Toronto and Max Gousse of DefJam

Participants were handpicked for their talent and passion which includes Caribbean Nationals and counterparts from the U.S. and Canada who have been belting out songs that may end up on the albums of the biggest names in music like Rihanna, Beyoncé and Justin Beiber.

The eclectic mix of ages, races, gender and culture, which the more experienced writers said was an essential component in getting the right energy and sound for the contemporary artistes.

When asked why the Caribbean has been included in this elite mix of people, these writers made specific reference to Rihanna’s success as a source of inspiration, as the focus has shifted to the Caribbean as a hotspot for finding the “next big thing”.

Teddyson John aims for Groovy Soca Supremacy St. Lucia’s current Groovy Soca Monarch Teddyson John has been having a truly blessed and productive musical year since capturing the title this past July with his smash hit “Land of Wine”. The talented and humble vocalist now has his sights set on making a powerful statement during the upcoming 2013 Trinidad and Tobago Carnival season.

Tobago Musical Group Signs Distribution Deal With International Distribution Powerhouse

Things are definitely looking up for a musical troop out of Tobago who’ve secured a distribution deal for a riddim they’re on. The riddim is called ‘The Seduction riddim’ and was produced by Angel Music and JSIM Promotions in Tobago. The artistes whose music has obviously made renowned distribution company, Promo Only take notice, comes from radio personality Cederick Goodrich better known by his sobriquet- Angel Journey and budding artistes, KKay Joseph, NevaLegal and vocalist, Thea.

Conch soup or chowder is one of the most popular soups in the Caribbean. It is known in some part of the region as “Lambi�.

Enjoy this delicious meal

Ingredients 1 lb. Conch meat

1 spring thyme

4 Tablespoon butter

1 bunch fresh cilantro, chopped 12 cup corn kernels, fresh

2 green onions, chopped 2 tbsps. all-purpose flour 2 cups Okra cut in chunks 1 qt half and half 1 carrot, diced 14 ozs of coconut milk 1 stalk celery, diced 2 cups fish stock 1 sweet potato peeled and diced 1 green banana, cut into pieces 1 red bell pepper, diced

1 12 tbsps. Ginger root, grated fresh 1 teaspoon salt 1 teaspoon black pepper 1 12 tsps. hot sauce (optional

Directions Place conch meat in a pot with enough water to cover, and bring to a boil. Cook 15 minutes. Drain, and finely chop in a food processor.

Melt 2 tablespoons margarine in a skillet over medium heat, and mix in the green onions, carrot, celery, sweet potato, green banana, red pepper, and corn. Cook and stir 5 minutes.

Melt remaining 2 tablespoons margarine in a large pot, and whisk in the flour to create a roux. Pour in the half and half, coconut milk, and fish stock. Mix in the ginger, and season with salt and pepper. Stir the conch and vegetables into the pot. Bring to a boil, reduce heat to low, and simmer 15 minutes. Mix in the hot sauce, cilantro and thyme. Continue cooking 15 minutes, or to desired consistency

Curry King Fish Recipe A while back while doing one of those internet “20 Questions” I was asked “what would be your last meal?” and without even blinking my eye I said “my mom’s curry king fish”. Every winter before our parents head back down to the Caribbean to revel in that wonderful Caribbean sunshine, it’s my dad’s job to search out a huge King fish at the local Asian grocery stores and mom’s chore, is to ress ah curry on it.

My dad is very picky when it comes to choosing the ‘right’ King fish, so he starts his search about a month in advance. Maybe I’ll get him to share his tips with us in a coming video in the Food FAQ channel. After making a huge pot of curry king fish, she them place a slice along with some of the rich gravy into freezer containers (yup, we have special containers just for this yearly tradition) and they’re then sent down to me to last the winter. That woman’s curry fish is absolutely divine and though I’ve tried, I’ve never been able to really duplicate her recipe as she does.

You’ll Need…

4 slices King Fish (about 1.5 lbs) 1 onion 1 tomato 1 tablespoon Caribbean green seasoning 2 cloves garlic 3 leaves shado beni (or cilantro) 1/2 scotch bonnet pepper 1 cup water 4 tablespoon flour

2 tablespoon curry powder 2 tablespoon veg oil oil for frying the fish 1/2 teaspoon salt 1/4 teaspoon black pepper 1/2 cup bell pepper (optional) 1 scallion (green onion/spring onion) 1/2 teaspoon amchar masala

Notes: You’ll need the juice of half a lime or lemon to wash the fish as it’s typically done in the Caribbean. The King fish slices will have a center bone, so do let your guests know when serving. The bell pepper is not a traditional ingredient, but I’m making use of it before it goes bad in my fridge.

To make your own amchar masala, toast the following in a dry frying pan… 4 tbsp coriander seeds, 1 tbsp cumin seeds, 2 tsp black peppercorns, 1 tsp whole fennel seeds, 1 tsp brown mustard seeds, 1 tsp fenugreek seeds and then grind in a coffee grinder or mortar and pestle.

Wash the slices of King fish with the juice of half a lime or lemon and some cool water, drain and set aside as you chop the onion, scallion, garlic, tomato and scotch bonnet pepper. As we’ve discussed in the past try not to use any of the seeds in the scotch bonnet of you don’t want that raw heat, remember to wear gloves if you’ve sensitive skin and don’t forget to wash your hands with soap and water immediately after handling them. Give the shado beni a rough chop as well and set aside for later.

Place the fish slices in a large bowl and season with the salt, black pepper, tomato, scallions, scotch bonnet pepper, amchar masala, 1/3 of the curry powder, 1/2 of the onion, green seasoning and bell pepper if you choose to use it.

Seal the bowl with some plastic wrap and place in the fridge to marinate for at least 1 hour. After which it’s time to quickly fry each slice of fish as part of this tasty curry fish recipe. I basically had a small station set up. The seasoned fish, a plate with the flour, the oil for frying (about 2 cups veg oil) and a wire basket lined with paper towels to drain off extra oil after frying. Shake off any extra marinade on the fish, then dust in flour and place in the hot oil. Be gentle when placing the fish in the hot oil, so it doesn’t splatter and burn you. Cook on each side for 3-4 minutes (until you start getting a bit of colour) as we don’t want to overcook the fish. We will be cooking it further when we create the curry sauce. Place the fried pieces of fish on the paper towels to drain as we create the tasty curry sauce

In a deep saucepan, heat the 2 tablespoon of veg oil on med/high heat, then toss in the remaining half of the onion and garlic. Reduce your heat to low and let that gently cook for a couple minutes. You should have a nice flavor base started at this point, so it’s time to toss in the remaining curry powder (I used a madras blend from the Caribbean) and stir well. It will start to go darker and grainy. Stir and allow to bloom for 3 minutes! Your kitchen should have that ‘wicked’ scent by now. It’s now time to empty all the marinade (chopped stuff) into the pot and give it a good stir. Turn your heat to medium and bring to a boil. In the same bowl you had the fish marinating, add the 1 cup of water to is and swish it around to pick up any remaining marinade.

Pour in that water into the pan and bring to a boil and allow to simmer for about 3-5 minutes to allow all those flavors to marry and make good things happen in that pan.

It’s now time to gently add back the pieces of fish to the pot to help complete the curry fish dish. I simply used my hands to do this part as I didn’t want the fish to fall apart and I had to shake the fish pieces so they would make it among the lovely sauce. Allow it to simmer for about 5 minutes and if you can.. flip the pieces of fish. If not, spoon some of that curry sauce all over the fish as it simmers away.

The sauce will start to thicken up, the fish will be infused by all the wonderful flavors we created and your curry fish will now be ready to serve. Rice, roti, ground provision.. even on its own, this curry fish will be a hit! As you turn off the stove, top with the chopped shado beni (or cilantro) and place the lid on the pan. The remaining heat will heighten the natural flavor of the shado beni and it will add a lovely undertone.

Captain Barkey and Female Companion Shot Dead Outside Bronx Hotel Veteran deejay, Wayne ‘Captain Barkey’ Hamilton was shot and killed outside a Bronx motel in New York on Saturday along with a female companion, Tracy Bennett.

According to the New York Police Department (NYPD), Captain Barkey and 38-year-old Tracy Bennett were fatally shot by Bennett’s ex-boyfriend at the Holiday Motel.

Reports are that Bennett recently filed a restraining order against her ex-boyfriend before the shooting. However, at 3 a.m. on Saturday, witnesses and law enforcement officials stated that both victim were about to leave the motel in Bennett’s white Toyota Camry when the gunman sprinted out of the darkness and shot them.

According to the Daily News, "Hamilton hopped from the passenger seat and tried to escape the hail of bullets that cut him down just outside the motel office". "The suspect then turned his 94 | P a g e

One Witness reports “I heard [her] plead for [her] life and then heard gunshots,” “She was begging,” said Keshia Barrett, 36, who was heard the mayhem from her bed.

Jamaican born rapper "Heavy D" is dead

"Heavy D" whose real name is Dwight Arrington Myers, died today at the age of 44. Reports are that Heavy D, who returned from shopping was waking up the stairs to his Beverly Hills home when he began having trouble breathing.

According to TMZ, a Fashion Designer named Adam Mills, saw Heavy D in distress and called 911. Adams said Heavy D, was saying "I can't breathe, I can't breathe." He was rushed to hospital at noon, and died shortly around 1 PM pacific time.

No details have been release regarding the cause of death, but there are speculation that he might have died of a heart attack or pneumonia, as a close friend of his reports that the Rapper had pneumonia.

Law enforcement does not suspect foul play and so far they only know the cause of death was "medical."

It was a very exciting year for Montano having won the Road March, Power Soca Monarch and the Groovy Soca Monarch. He also won Clamydia song "Clamydia" and he won the Groovy Soca Monarch with his rendition "Mr. Fete". In May 2012 the singer launched the music video to his hit single "Bottle Of Rum".

Machel Montano also made headlines when he was found guilty on five criminal charges. Montano was found guilty on four charges of assault against Gerard Borwin, Brandis Browne, Janelle Lee Chee and Russell Pollonais. The other charge was that he was also found guilty of using obscene language during the same incident.

His sentences will be on January 17, 2013. Indeed 2013 will be an interesting year for Machel.
