n the Caribbean ham is a traditional Christmas food. We searched for a great ham recipe
that I am sure you will all enjoy.
Honey Glazed Christmas Ham
Ingredients 1 (10-pound) fully-cooked smoked bone-in ham 11/4 cups packed dark brown sugar 1/3 cup pineapple juice 1 cup honey 1/3 large orange, juiced and zest 2 tbsp. Dijon mustard 1/4tsp ground cloves 1 Small jar of maraschino cherries (optional)
Method:  
Preheat oven to 350F Stud ham with whole cloves then place on a roasting pan.

In a small saucepan, combine brown sugar, pineapple juice, honey, orange juice, orange zest, Dijon mustard, and ground cloves. Over medium heat bring to a boil while stirring occasionally for 10 minutes Bake ham in preheated oven uncovered for two hours. Remove ham from oven, and brush with glaze. Place the pineapples onto the top of the ham, and secure with toothpicks. Place cherries into the centers of the rings of pineapples, and secure with toothpicks also. Bake for an additional 30 to 45 minutes, brushing ham with glaze every 10 minutes. Let the ham rest 15 to 20 minutes before slicing.

Traditional Jamaican Christmas Pudding
INGREDIENTS FRUITS FOR BAKING 1 lb. raisins 1 lb. currants 1 lb. prunes Mixture of rum and port wine (Red label wine if possible)
CHRISTMAS PUDDING 1/2 lb. butter 1/2 lb. granulated sugar 2 tbsp. browning 2 tsp. vanilla 1 tsp. of almond flavouring 1 teaspoon rose water 2 tsp. lime juice 1 tsp. lime or orange rind 6 eggs 4 cups mixed fruits (raisins, currants, prunes, citron, cherries, dates)* 6 oz. bread crumbs 6 oz. all purpose flour 1-1/2 tsp. baking powder 1/4 tsp. salt 1/2 tsp. ground cinnamon 1/2 tsp. ground nutmeg 1/2 tsp. ground ginger 1/4 tsp. ground cloves 1 cup white rum 2 cups Port or Brandy 24
INSTRUCTIONS If possible soak raisins, currants and prunes for up to a year in rum and wine in a tight lid glass jar. DO NOT soak the dates, cherries or mixed peel
FOR THE CHRISTMAS PUDDING: Prepare tin by lining sides with 2 thicknesses of paper and the bottom with 4 thicknesses of brown paper and 1 of greaseproof paper. Or line with parchment paper bottom and sides of cake pan. Grease 9-inch tin with shortening. 1. 2. 3. 4. 5. 6. 7. 8. 9.
Beat butter and sugar until light and fluffy. Mix in browning, vanilla and almond flavouring, lime juice and rind. Add eggs one at a time and beat in well. Add soaked fruit, cherries and dates ( You can blend the fruits if needs be) Mix breadcrumbs, flour, baking powder, salt and mixed spice Add alternately with white rum and port wine/brandy. Pour into prepared baking tins or steaming basins 3/4 full. Cover and make steaming basin watertight. Place in steamer, or put over boiling water.
Continue to add boiling water until pudding steams, approximately 3 to 3 1/2 hours. Cooking time varies with size of container. If you do not have a steamer you can use the oven by setting baking tin in water or set a pan of boiling water below the pudding. Use remaining red wine to wet cakes while they are still warm. White rum may also be used. The amount of browning added is based on colour preference.

Cayenne Pepper 1 Bunch Fresh Cilantro Picked 1 Avocado - Ripe Cornstarch (10oz) Crushed Peanuts (5oz) Thinly Sliced Red and Green Pepper (1 Each) Thinly Sliced Red and Green Pepper (1 Each) Thinly Sliced Red Onion (1/2 Onion) Fine Chopped Scallions (1 Stalk) Julienne of Green Mango (1 Mango) Fine Diced Red Onion (1/4 Onion) Sweet Chili Sauce (5oz) Thai Dressing (3oz) – See Recipe
1 Cup Fresh Lime Juice 3 Cloves Fresh Finely Chopped Garlic 3/4 Cup Fish Sauce 3 Tbsp. Brown Sugar 2 Tbsp. Sweet Chili Sauce 1/2 Tbsp. Rooster Sauce 3 Tbsp. Soy Sauce Mix until Sugar has Dissolved
Slice Lobster meat thinly and season with Cilantro, Cayenne and Salt and Pepper to taste. Set aside. Next Slice the Avocado thinly and season with Lemon Juice, Salt and Pepper and set aside. Place a Spring roll wrapper on a flat surface and place a small amount of the Lobster and 2 Slices of the Avocado in the middle of the sheet. Bring the bottom of the wrap up to the top, fold in both sides and roll upwards using the whole egg as the glue to seal it. Dust with Cornstarch and reserve in refrigerator. For the Salad, Toss all Peppers, Mango, Onions, Cilantro and about 2oz of the Thai Dressing. Top the salad with the Crushed Peanuts. Fry the Spring Roll in a Deep Fat Fryer at 350 Degrees until golden Brown and Crispy. Season and place on top of Thai salad and serve with a side of Sweet Chili Sauce for Dipping.

Directions 1. In a skillet, ginger, garlic, and onion in butter over medium heat for 2 minutes or until crisptender. Remove from the heat; set aside. 2. In a saucepan, bring broth to a full boil. Remove from the heat. Quickly stir in rice, celery thyme sweet peppers and raisins mixture, salt if desired and pepper. 3. Cover and let stand for 6-7 minutes. Stir before serving. Yield: 6 servings.

s a child growing up in the Caribbean Christmas was one of my favourite time of the year. I am sure many others share my sentiment. As I sit here I reminiscing on my childhood remembering the many good things I like about Christmas. Here are 12 reasons spending Christmas in the Caribbean is the best. 1.The smell of Christmas cake baking The smell of cake baking all over the neighbourhood. Most Caribbean cakes are baked the night or two days before Christmas day. 2. Making the house pretty Every Christmas everything must be changed within the house. New curtains, bed sheets and bathroom rugs must be out. Some people choose to repaint their houses, while others maybe to a few rooms.
for decoration purposes. 5. Going to grand market on Christmas eve All year we would save for this night. We would leave for the town in the evening to go and buy items on bargains. Stores are open all night, therefore will be will shopping and coming home wee hours in the mornings with our purchase. Most time these are Christmas gift we purchased for ourselves. 6. Getting a barrel from overseas This meant getting new Christmas Clothes, but my favourite part about getting the barrel was the smell of the soaps, which I think were Irish springs, but back then they smelled so good. 7. The chill of Christmas in the air In the Christmas season the weather was different , you could literally smell the freshness in the year. The mornings were cool and the wind blew gentle against your skin.

Holiday parties Knowing the colour that was wearing for the season was a must know. I can recall a purple Christmas everyone was darned in purple and different parties. Parties during Christmas were like a reunion for school mates, good link, and good vibes. 11. Exchanging off gifts Do you remember class parties, everyone selected a name and on that day your pixie would reveal who they are and present a gift, among staff members it was the same. 12. Christmas breakfast and dinner The smell of Chocolate tea and fry dumpling rocks the air as the cooks in the kitchen is busy preparing the Christmas dinner. Curried goat, gungo rice and peas, sorrel, Christmas fruit cake, Jerk pork, Chicken – baked, fried . A slice of ham defines the dinner. Household heads would reserve a portion of funds to purchase the best ham. Turkey was optional. Someone had to take out those special dinner- ware to create an ambiance . Then one by one everyone is ready to eat and laughter and joy fills the air. The food is always good

M
achel Sandy a very vibrant and positive person took the opportunity to be interviewed and his excitement grew when I asked him the first question. How it all started? He responded without hesitation by proudly exclaiming his mother is his main influence. Machel as a young boy among a dominantly female home was eager to learn from his mother’s natural gift. He admired his mother’s craft as one of the best wedding seamstress in Guyagagri. His love for fashion budded when he took his mother scraps of cloth and created his own ideas of creation. Apart from his mother his sister was quite active in the fashion and pageant world (Miss Trinidad & Tobago 2000) who also is his role model. It was at that pageant Machel felt motivated after meeting Heater Jones & Peter Elias for the first time.

Machel’s first design was constructed at age 13 for his cousin’s graduation. Thereafter he added his designs to his village Emancipation shows, Cari Vogue. It was not long after he became passionate about designing for pageants which out of four pageants he captured three best evening gowns. Machel got so excited talking about his journey he said the audience reaction to his pieces is what motivates him.
At this time Cari Vogue showed a tremendous amount of interest in him and offered him the opportunity to go to London to train him. His options were thin he had no choice but to finish secondary school. One of his disadvantages was the stigma as a young male designer. It added some peer pressure but Machel boldly past that phase without being discouraged. His education is a priority he is presently finishing his Business degree at the University of the Southern Caribbean. In 2006 La Revier was the talk of the season; his anticipation was taking a very positive turn in his life. It was his first national showing of his work, at this point he was competing against top local designers. Social media became the new marketing tool for Machel which actually was like a re-birth to his vision. It was time to give a name to his brand. Fascinated with Japanese culture Masheru was an abstract combination of Machel and Japanese.
Now working out of Sande Grande, he describes his designs as urban chic� cross between urban & couture. His bathing suits line delivers a beautiful fuchsia array of colours with deep and daring cuts

Mr Sandy is seemingly the wonders of fashion he not only culminates the talent of designing he also can do make-up artistry, hair stylist and the Managing Director of modelling agency Image Caribe’. Machel felt if he did not attempt his passion he would have living his life full of regrets. He has worked local photographers such as: Sancho Francisco, Randy Paradox, International photographer - Lang Xiao of LX Studio Machel admires local designer Peter Elias and international designers such as Alexander mac Queen, Roberto Cavali and Heatherette. Machel currently produce every Fridays at a popular spot downtown Port-of –Spain Trinidad themed type fashion shows called Elite Fridays. His advice to young upcoming fashion designers is to “be you no matter what” Don’t allow people to break your spirit. 51

Born in the sub-urban area of Valsayn, on the 2nd August 1990, Mr. Rampersad possesses a profound wealth of artistic competencies in all spheres. Mr. Rampersad is currently a full time practicing artist. He is the recipient of a first class honours degree in Visual Art from the University of the West -Indies (U.W.I). In addition, he possesses certified knowledge in Graphic Design at the School of Business and Computer Science (S.B.C.S) as well as Mehndi (U.W.I). Mr. Rampersad`s thorough exposure to workshops in Puppetry, Painting, Ceramics, Textile Design, Wire bending, Costume making and Stilt walking bombarded him with a melange of artistic abilities that cannot be disputed. Richard Rampersad is indeed a promising, pervasive and all- encompassing artist, whose works merit close watching. "

The relationship between an image and the reality it purports to represent is, according to many contemporary critics, inherently political. This stems in part from the work of poststructuralist theorists, who have identified a connection between images and power. In my exhibition, each piece seems to indicate something specific and contributes meaningfully to my visual language. The highly sophisticated spatial organization, negative space treatment and non-orthodox idiom in the figure rendering supersede naturalistic accuracy. My artistic expression goes beyond pictorial representation and becomes the affirmation of one whose ontological foundation expresses the will to use the media as a vehicle to convey an idea or narrative. I seek to make advancement in the visual understanding of the figures and in how they may be rendered.
This body of work reflects my personal journey in exploring the idea of cleansing. I draw, paint, create and strive to find fulfillment in my ability to translate thoughts and visions on the canvas without words, instead, with the ripeness of colour and texture. The body of work seeks to interrogate the notion of "wash-in to wash-out" and examines the narrative of cleansing. The context of cleansing is not used in its literal sense but in the context of applying symbolic genres and dynamic structures with in which the human experience, meaning and value are stimulated and emerged. Figurative drawing/painting has been a practice since time immemorial. The simple figures inscribed on the walls of prehistoric caves are eloquent testimony that this is an activity that is virtually as old as humankind itself. There is an incredibly amount of diversity in this genre, but plenty of challenges when it comes to painting figures with power and depth. My fascination with the human figure propelled and accounted for the choice of subject matter. More so, the female form. This body of work seeks to utilize the female figure as the main "motif" to illustrate women and the plethora of issues and challenges they are bombarded with, particularly violence.

In the conceptualization and execution of this work I thought about the use of media and technique as well as how it can symbolically and meaningfully relate to the idea. Consequently, the gesticulations and manner in which paint application methods were manipulated lends itself to the nature of my narrative. The paintings are large, on a scale considerably greater than life size. When one stands in front of them it is possible to feel surrounded and enveloped by the colour and monumental scale. These large scaled-figures are by themselves on each canvas with their heads turned gracefully sideways, or blocked from the observer. This bodily posture is emblematic of the aforementioned social-ill women are subjected to. As well as representative of how these women are ostracized, alienated and isolated by society. Splashing, bleeding and dripping of paints onto the canvas are a symbolic approach to illustrate and simulate cleansing, i.e. the behaviour of water while bathing. These techniques were predominately utilized on the background or negative space which carries the same weight as the positive space. The slender dripping effect of paint on the background surmounted by the portrait orientation of the canvases echoes the vertical starts of the figures. The results are immense bright, joyful and abstract patterns that created a context for the figures. There is indeed a strong awareness of the contrast of tone and always a conspicuous depiction of light, whether subdued or intense. There is the brilliance of colours and tones, shimmering in the vivid finger strokes of the impressionist technique. These graphic statements are capable of speaking very clearly to us about our current concerns and are a joy to the observer. Colour was used for emotional expression and the direst effect it has on the spectator. Generally speaking, colour directly influences the soul. Colour is the keyboard, the eyes are the hammers, and the soul is the piano with many keys. The artist is the hand that plays touching one key or another purposively to cause vibrations in the soul. The colours used on each panel have been orchestrated in harmony as if they were instruments performing in a concert. The paint application method of finger painting was executed to paint the actual figures. This was the chosen technique as it attempts to create a link and dialogue between the finger marks and the physical effects of domestic violence. Predominantly an analogous colour scheme was utilized for the mathematical colour harmony of the compositions, for the monumental stillness of the figures and for the limpid clarity of the light that bathes them. Notwithstanding, in some aspects of the composition, there is a delicacy and unity of colour in the handling of paint, and a sense of great simplicity, warmth and directness. The remarkable use of colour adds greatly to the suggestive and symbolic air surrounding the works and assists immensely in the beauty, economy and emotional fluency resonated in each piece. In the background of the painting, colour has a more translucent quality and in the foreground it is more opaque. 66
Sensuous pleasure was taken in painting of the figures. The sheer nakedness of my subjects is representational of women in need of attention, love and support. On the same level, my conceptualizations deduce more than what meets the naked eye. It is looking into the deepest recesses of the human heart, a heat that is consumed with vulnerability, defenselessness and susceptibility; however, there lurks a strength and empowerment within these women that surpasses all sadness, weakness and failure. At the same time, I confidently and decisively attempt to bring alive the female form, portraying them in a fashion synonymous with sophistication class, elegance, lust sensuality, charisma, inner and outer strength and most importantly a sexuality worth displaying. The tasteful use of metallic on the figure seeks to achieve this. Embedded in the work lies a profound craving for beauty to be appreciated, of the woman to be treated fairly, and of the woman to be loved and wanted by someone.

Some people tend to call all sparkling wines champagne, but, the only wines that can be called champagne are the ones that are produced in the Champagne region of France, hence the name. Wine produced anywhere else in the world must, therefore, be called a “sparkling wine”. The primary grapes used to produce champagne are Pinot Noir, Chardonnay and Pinot Meunier. There are now only five family-owned champagne houses in France, and LaurentPerrier is the largest of the three. Champagnes price typically range from around $45 and more. Prices of sparkling wines will depend on the amount of time spent aging, the grapes used in the bottling and the process used to produce the champagne or sparkling wine.
