Across the weekend of 6th, 7th and 8th May, our care homes, Care South at Home offices and Assisted Living communities will be celebrating the Coronation of our new king with lots of Food, Fun and Friendship. We have put together this Coronation Edition Newsletter, packed with activities, so whether you’re a resident, Care South at Home client, relative or a friend, we hope you and your family enjoy this booklet during the celebrations.
The Coronation Big Lunch inter-home competition
As part of our long weekend of celebrations, we are running an inter-home Care South Coronation Big Lunch competition – and everyone’s invited to join our celebrations!
Neighbours and communities across the country will be joining in with this national celebration of Food, Fun and Friendship. See page 3 for more details.

Food
No matter what age, food sets the rhythm of the day for everyone. At Care South we understand the importance of healthy, fresh produce – an integral part of our Food, Fun and Friendship ethos. We take pride in sourcing, where possible, ingredients from producers which are local to our care homes.
Our chefs prepare fresh, quality meals that look great, taste even better, and are based on what residents enjoy. Good nutrition and hydration are vital parts of the care we provide, which is why we produce homely and enjoyable food that supports the health and wellbeing of residents.
We focus on the overall dining experience in our care homes, as meals are more than just the food on the plate – they bring people together and never more so than for a big national celebration like the Coronation of a new king.

The Coronation Big Lunch
– how to take part
Everyone is invited to join in with our Care South Big Coronation Lunch celebrations, and be a part of our inter-home competition.
Your planning, preparations and menu for the lunch should encourage everyone to get involved – the judges will be looking for the most creative and inclusive ideas – with a focus on using fresh, local ingredients.
You could use our recipe for Coronation Chicken as part of your lunch – why not come up with your own, modern twist on the traditional recipe?
• Plan your lunch to take place during the Coronation weekend – the suggested day is Sunday 7th May, but you’re welcome to be flexible on timing
• Think about how all residents can be part of the event
• Invite families and friends to your Big Lunch
• Send details and pictures including your preparations for the Big Lunch to caresouth@mckennatownsend.com by Wednesday 10th May

Reminiscence activity
Many residents and Care South at Home clients will remember the coronation of HM Queen Elizabeth II in 1953 –why not organise a Royal reminiscence session as part of your Coronation weekend activities?
Coronation Chicken
Coronation Chicken was created by Constance Spry and Rosemary Hume, both principals of the famous Cordon Bleu Cookery School, for the banquet of the Coronation of Queen Elizabeth II in 1953.
This classic, versatile recipe could make a tasty and nutritious centrepiece for your Coronation Big Lunch!
Ingredients
4 x skinless chicken breasts
2 tbsp coriander seeds
1 cinnamon stick
1 tsp black peppercorns
30g fresh ginger, sliced
For the sauce
250g mayonnaise
100g Greek yogurt
2 tbsp medium curry powder
A pinch of cayenne pepper (optional)
65g mango chutney
2 x celery sticks, diced
80g sultanas
1 tsp lemon juice
3 tbsp chopped coriander
Method
1. Place the chicken breasts in a large saucepan and cover with cold water. Add the coriander seeds, cinnamon stick, black peppercorns and sliced ginger
2. Slowly bring to the boil and simmer for 15-20 minutes until the chicken is cooked through. Drain and leave to cool completely
3. In a large bowl, mix together the sauce ingredients, except the chopped coriander. Season to taste and add more lemon juice if needed
4. Once cooled, chop or shred the chicken and add to the sauce, along with the coriander. Mix, ensuring everything is well coated
5. Serve with warm boiled rice, salad or in sandwiches – delicious!

Our care homes are not just places to live out your later years – they are places to enjoy life, with support on-hand and peace of mind that everything is being taken care of.
We put residents at the heart of everything we do, and know that they are all unique. We get to know residents and their life stories, hobbies and interests, helping us to create events around their likes.
No two days are the same in our care homes. Our Activities Teams promote variety in their engaging activities programmes, whether it’s a pamper day in the salon, reliving cherished memories, getting active, or welcoming special guests, entertainers and performers. Care South at Home services can also help those less able to keep active and join in with their community. Our carers can assist with the fun things in life, such as organising visits to friends, the theatre or concerts, as well as the every-day.

Coronation facts & figures
• The offical Coronation emblem was designed by Sir Jony Ive, former Chief Design Officer at Apple, who famously designed the iPhone
• St Edward’s Crown, the crown historically used at the moment of coronation, was last worn by Queen Elizabeth II in 1953
• King Charles will also wear the Imperial State Crown during the Coronation service – the crown is made of gold and set with 2,868 diamonds, 17 sapphires, 11 emeralds, 269 pearls, and four rubies
• St Edward’s Crown was made for the Coronation of Charles II in 1661, to replace the medieval crown melted down by parliamentarians in 1649, after the execution of King Charles I
• Charles will be the 40th monarch crowned in Westminster Abbey – every English and British coronation since 1066 has happened here

We want residents to continue living rich and fulfilling lives and doing what they love. That’s why we encourage residents to meet friends, enjoy visits from loved ones and take part in activities as much or as little as they wish.
Loneliness can be an issue for many people as they get older and become less mobile and active, leading to problems with mental and physical health.
One of the advantages of moving into a care home is that we can support residents to come out of their shell and forge meaningful relationships in their new home.
Our care homes provide a safe and homely space for residents to continue friendships and make new, lasting relationships, based on care and kindness.
Care South at Home can also provide companionship for lonely people in their own homes and help them to keep in touch with their local community.

Why not ask your friends or family to join in with our Coronation activities and celebrations?
The King and Queen Consort are well known for their dedication to public service, and on the last day of the Coronation weekend, they’re encouraging members of the public to try their hand at volunteering in the community.
This is a great opportunity for us to renew our ties with community groups and invite people to join in with the celebrations.
