SALE DEPARTMENT Kicking off the summer for parents with school aged kids can be a bit intimidating. Coming up with an acceptable weekly schedule that our littles enthusiastically hop out of bed for can be a bit challenging. While hanging out at the very crowded Canyon Creek Pool over Memorial Day, a friend reminded me how great the summer is. It was the conversation I needed to get me excited about June and July! I’m now looking forward to: Sports! NBA Finals, Stanley Cup, golf Majors, tennis Majors and baseball. So many championships are won in the summer. Pool Time! Hanging out with friends sipping a cocktail while the kids slide down the slide or jump off the board for the 1000th time. Summer doesn’t get any better! Vacation! Have you checked the price of flights lately? Thankfully, in Texas we are just a short twelve-hour drive to the mountains or the beach. There’s something great about being disconnected and spending time with your mini-me’s.

Meet Pickles What breed is your pet? Pickles is a one year old Holland Lop. How did you get your pet and how long have you had him or her? In the spring of 2021, one of our neighbor friends was looking at pictures of baby bunnies one day and we asked her about them. We contacted a sweet lady in Blue Ridge who told us we could come meet her bunnies anytime. We went out one day and my kids each picked out a bunny they loved. She raises bunnies and her husband raises chickens and sells eggs. It was such a fun experience! We were going to be out of town the first few weeks of summer and the bunnies weren’t old enough to leave their mom yet so the timing worked perfectly and we picked up the bunnies after our summer vacation. We named them Pickles and Pepper. A few months later we realized that we had a boy and girl bunny instead of two girl bunnies. Thankfully our friends and neighbors the Pulliams were also wanting a bunny, so they took Pepper (and her girls renamed the bunny Reese). They still have Reese and we still have Pickles! Tell us about your pet. Pickles knows fun tricks, has unique talents and possesses a quirky personality. Pickles is very sweet. She’ll ride around on 4

your shoulder and she loves to run around the backyard and climb up on furniture and play with toys. She has her own little house on our patio but we let her out to play for a couple hours each day. How long have you lived in Canyon Creek? I (Chrissy) grew up in Canyon Creek. We actually live across the alley from the house where I grew up. My brother and I wrote our names in the alley when the concrete was replaced in the early 90s and our names are still there. Chad grew up in Weatherford, TX. We looked at several neighborhoods when we got married but Chad loved the trees and the character of each home, and I loved the idea of raising kids where I grew up. What do you love most about living in the Canyon Creek? We love the small town feel while being so close to all the things a big city has to offer. We love that our kids can play outside with their friends and that we can walk to school. I love that I still run into the parents of kids I went to school with and that so many people come back to Canyon Creek to raise their own families. Share with us a funny or awesome story of living in Canyon Creek? Just a few weeks ago, Pickles got out of her cage and was lost for a full day! Many neighbors helped look for her that day and thankfully she ended up in the yard of a sweet family that trapped her and reunited us before we went to bed that night! Pickles has several playmates… a cocker mix named Mowgli, three fish (Mac, cheese and Jeffrey) and a new kitten named Bandit. If you are ever looking for a petting zoo, you know where to find us.

Things to Remember About City Codes When Doing Home Improvement Projects by: Lisa Parelli-Monaghan

his time of the year is typically one of the busiest times for home improvement projects. But with the long waits for contractors and continued product shortages, homeowners are increasingly frustrated, and some have decided to attempt projects on their own or even end up choosing the wrong person to complete the project. Before you undertake a big project, you must be aware of the rules in the City of Richardson regarding permits. Believe it or not, Richardson likely requires permits on projects you would not have even thought about. Let’s run through a general understanding of the rules. It goes without saying the codes vary from state to state and even city to city. Generally, a permit is required for remodeling projects that involve changes to the building’s existing footprint, electrical system, or plumbing. When work is done to refresh an existing structure, a permit is usually not necessary. For example, flooring/ceiling coverings, painting/papering, tiling, or carpeting and interior wall decorations can usually be done without a building permit. However, even if a permit isn’t required, certain projects may require licensed professionals for structural, 6

electrical, and plumbing work. If unsure, check with the City of Richardson or visit. https://www.cor.net/departments/buildinginspection/residential/permit-types Here is a quick list of projects that are more than a simple repair and likely require a permit in the City of Richardson: • Replacing the roof • Adding supporting walls or removing load-bearing walls • Building in-ground concrete pool • Backyard shed or storage • Concrete sidewalks, driveways, and slabs • Fencing • Carports • Foundation repair • Lawn irrigation • Patio cover or deck There are several reasons why a building permit is required with most of the above projects: 1. When a permit is filed, city officials will inspect the work completed at different stages to ensure the work complies with building codes. www.CanyonCreekLife.com

2. It protects the investment that you are making to improve the property. Building permits need to be obtained before the project gets under way. If city officials spot a project without proper permits, work could be stopped until they are obtained, leaving you with a fine. If you are using a professional contractor, they typically pull the necessary permits for your project and can make sure they are pulling the proper permits for the project. As professionals, they know what the requirements are in the City of Richardson. A homeowner often thinks they are exempt from obtaining a permit if they complete the work themselves. This is not true, and you will likely run into problems if you decide to sell or refinance. For example, if you decide to add or change square footage at your home and an appraiser’s square footage is different from county records, it triggers a search for a permit. In today’s housing market, illegal construction is a risk for a lender, and they will likely decline a loan. The lesson is easy…follow the rules and you can get those home improvements projects done with a peace of mind. Having to do re-do a project the second time is never fun!

Meet the Zelonys…

A Rabbi and Her Family call Canyon Creek Home by Patti Otte

anyon Creek is filled with a variety of fascinating people and our June family of the month is no exception. Rabbi Elana Zelony, her husband Adiv and their children Nesya and Magen have lived in Canyon Creek for almost eight years. Affectionately known to her congregants as Rabbi Z, Elana has been the senior rabbi for Congregation Beth Torah on Lookout Drive since 2014. Years ago, Elana and Adiv met in Jerusalem. By chance, Elana moved into the apartment Adiv was vacating. He had just finished military service in the Israeli Navy and was starting a job at The Jerusalem Post. Having just finished college, Elana was taking a gap year in Israel to study sacred Jewish texts at a yeshiva—a school for Jewish learning that doesn’t award degrees but instead exists for the sake of learning itself. The couple fell in love and have now been married twenty years. The Zelonys are a very family-oriented crew. Daughter Nesya, fourteen and a rising ninth grader at Vines, is an artist and loves taking classes at J’s Art Studio. Her design was chosen last year by 8

the Plano library system to be made into a bookmark. This summer, she’ll assist the younger children in the day camps at J’s Art Studio. Her name means “miracle of God” in Hebrew. Son Magen, whose name in Hebrew means “protector,” is twelve and will be a seventh grader at Wilson. Magen loves the oboe and takes Japanese classes for fun. Someday, he’d like to create video games and is always on a quest for the perfect climbing tree. Adiv works at Glass, Phillips and Murray as an estate planning and probate attorney. He spends his leisure time playing board games with Magen, walking with Nesya, reading, taking photos with his cell phone and researching their family’s genealogy. He says it’s nice being married to a rabbi, but since he knew Elana before rabbinical school, he thinks of her as his wife, not as his rabbi. The family also has two cats: Amelia Earhart, also known as Millie, and Prince Atticus Bigelsworth Pickles the IV, a.k.a. Prince. As a wife, a mom and a rabbi, Elena wears many hats. She is the first female rabbi in the Conservative Movement to lead a synagogue

in the state of Texas. According to Elena, in this context “conservative” is not a political or social term. Instead, as a conservative synagogue, Beth Torah “conserves” Jewish traditions. Elena’s rabbinate emphasizes inclusion of all people and lay leadership, interfaith work, spirituality, and involvement with the community. Beth Torah’s motto is “Large enough to serve you. Small enough to know you.” Founded in 1974, Congregation Beth Torah exists partially because its founders wanted to create a community in which all people are equal and deserve equal rights and opportunities. Hiring a woman was a natural extension of that value. While a few individuals were uncomfortable with the idea, Elana eventually won them over by demonstrating her competence and care. According to Elana, “I don’t think being a female rabbi is all that different from being a male rabbi. We both pastor, teach, preach and lead.” Since college Elana has worked in many interfaith settings. She loves looking for the common threads of faith in her neighbors’ religions and the beautiful practices that differentiate people’s forms of worship. According to Elana, “The Richardson Interfaith Alliance made it easy to get involved in the interfaith community here. I love sharing celebrations together like the Sai Baba Center’s twenty-four-hour music and peace vigil or its iftar dinners. It’s also meaningful that we support one another after acts of hate are committed. We never feel alone when we gather to comfort one another.” Elana manages her many responsibilities by putting self-care first. For her, that involves working out daily, meeting up with friends regularly, writing poetry and spending time outdoors. She feels blessed to live in such a beautiful neighborhood with a nice park. Says Elana, “When I take care of myself, I’m filled with energy, patience and compassion to be present for my family and congregation.” The Zelony family’s daily life is steeped in traditions. One such experience involves writing down and sharing favorite events of the week before lighting the Sabbath candles. Sometimes, share stories focus on big events like graduation. Other times, their writing may describe simple moments like enjoying the blooming pear trees and redbuds in the neighborhood. Then, just before they

commence the Jewish new year, the Zelonys look back through the fifty-two notes and reflect on all the sweet, good things that happened that year. They celebrate the Sabbath, the weekly Jewish commemoration of the completion of Creation and their day of rest, not only by sharing happy memories of the week but also by baking challah (a slightly sweet bread enriched with eggs and sugar). Says Elana, “The kids always want to tear into the loaves before Shabbat dinner, so we developed the tradition of making each of them their own little roll to eat when they get home from school on Friday and saving the big loaves for the meal.” It’s not unusual amongst Jews, according to Elana, but the Zelonys honor their Sabbath by not driving, spending money or using electronics from sundown on Friday night through darkness 10

on Saturday night: “These things help us slow down and focus on God, family, friends and community. It makes the day quiet and peaceful.” The Zelonys celebrate all the Jewish holidays. They build a sukkah (small hut open to the elements) for Sukkot and eat many meals in the sukkah with guests during the week-long event. According to Elana, Sukkot is a celebration of the harvest and of the Jewish people’s connection to the natural world. They make mishloach manot (gift baskets) for their friends and neighbors at Purim, the celebration of Queen Esther and Mordechai saving the Jewish people from genocide in ancient Persia. And they spend hours sitting around their Seder table on Passover. Adiv, Elena and the kids also make big Thanksgiving dinners and enjoy the Fourth www.CanyonCreekLife.com

of July neighborhood parade! In their free time, the family loves to watch movies together, especially on nights known as “Studio Movie Grill at Home.” They started this tradition during the COVID pandemic. It provided an opportunity to perfect their homemade pizza-making skills! The Zelonys also likes to read and road trip together, visiting New Mexico, Arizona and California last summer and Arkansas last fall. Elana and Magen enjoy camping together, but for the most part, the family consider themselves to be “quiet homebodies.” You may see this lovely family having dinner at Shady’s or ice cream at Sweet Firefly, two of their favorite neighborhood hangouts. They also love Turtle Bridge in Prairie Creek Park. Our neighborhood is truly blessed by this very special family.

Canyon Creek Fourth of July Parade A Slice of Americana…right here in Richardson!

ip hip hooray! The annual Canyon Creek Fourth of July Parade is just around the corner. Festivities will be held from 10:00 am – 12:00 pm on Monday, July 4. Spectators will take their places on either side of Lookout Drive from the Canyon Creek Country Club entrance to Tam O’Shanter Lane. Parade participants will begin lining up in the II Creeks Shopping Center parking lot at 8:00 am. Shady’s will once again be selling breakfast tacos and providing live music. Once the parade ends, the festivities will continue in front of Canyon Creek Country Club. Participant prizes will be awarded while neighbors enjoy live music, bounce houses, snow cones and lots of fun! The first Canyon Creek parade was held almost twenty years ago with a dozen or so bicycles and a tiny crowd. The original parade went from the country club tennis courts down Lookout to the club entrance. Parade chair Peggy Thorburn and Angie Conard were instrumental in getting the parade started and it has grown in size and enthusiastic support every year. Angie spearheaded the event for fifteen years before turning it over to Kyla Obert, followed by Susan Kassen and now Julia Porter. These dedicated women and many other CCHOA members, Canyon Creek residents and Richardson leaders have been longtime supporters: judges Doris Benner and her daughter, musician Rob Barker, Jay Dalehite, Don Bouvier and too many neighbors to name, mayors and city council members, our local fire department and all the parade participants themselves. It’s truly an event not to be missed. As the years have gone by, the parade entries have increased in size and creativity. Coley Chambless and her family create floats that are fan favorites for their bold, intricate decorations. Says Coley, “Lots of tissue paper is involved when making the floats. It is time-consuming to create those poms of tissue, but the kids have always loved hanging out together while working. Watching the kids’ excitement when a parade float finally comes together is my favorite part of it.” She continues, “The kids feel a proud sense of accomplishment that only grows when they see the reactions of those watching the parade. It keeps them coming back for more each year!” As always, parade organizers encourage bicycles, tricycles, strollers, wagons, pogo sticks, scooters, skateboards, roller blades, golf carts, vintage cars, pets, floats, singers, dancers, merriment makers, horns, bells, whistles and anything else participants can dream up to help celebrate our great country. The parade truly highlights the best aspects of small-town America…Canyon Creek style! Faith Frantz

Tell us your name and what school you recently attended. My name is Faith Frantz and I just graduated from JJ Pearce High School. What other schools have you attended? Growing up I went to Prairie Creek Elementary, Trinity Christian Academy and North Jr. High. Tell us what sports or activities you were involved in and why you enjoyed them. My biggest involvement has always been dance. I was a member of Tuzer Ballet’s junior and senior company during junior high and my freshman year of high school, and then transitioned to drill team when I made Pacesetters my second semester of freshman year. Pacesetters made the biggest impact on me in high school because it was where I got to know some of my best friends and future roommates. Plus, it really taught me so much about discipline and time management, not to mention that it gave me some really fun memories I’ll hold on to for a long time! Brag on yourself: Tell us your honors and awards in school. During my senior year, I got to participate in the University of Alabama’s Early College program, through which I had the opportunity to take a ton of great college classes online while still taking AP and dual credit classes at school. While taking part in Early College, I was listed on the Fall 2021 Director’s list and I earned an Academic Achievement award from the College of Communications & Information Sciences. What’s your favorite subject in school? My favorite subject is definitely English. I love to read and write, as well as speak and present. Tell us about your plans after graduation. I’ll be a freshman at Oklahoma State University in the fall. I hope to pursue a degree in strategic communications and then possibly earn a Juris Doctor in graduate school. 18

Outside of school, what do you do for fun, hobbies, work, etc.? I’m currently hostessing at The Fifth Fireside Patio and Bar and also managing the front desk at BEYONDPilates Dallas. Outside of that, I love to spend time on the lake with my family in the summer, walk my dogs around the neighborhood and read whatever good book I can get my hands on! How long have you lived in Canyon Creek? I’ve lived in the same house my whole life, so Canyon Creek is all I’ve ever known! What do you love most about living in the neighborhood? This neighborhood has so many special characteristics that my family enjoys. I love to look back on the way my dad used to drop my sister and me off at school in the golf cart, catching firef lies in the park, “hiking” around the creek with my friends when I was in elementary school, and riding my bike with friends to Sweet Firef ly nearly every day in the summer when I was younger. These are a few of the things I remember loving about Canyon Creek as a kid.

Tell us a favorite story or two about a big or fun moment during high school. Most of my favorite high school memories have a lot to do with Pacesetters, my top favorite being getting to perform the Pacesetters’ traditional homecoming field routines and other dances in the stands at football games. Performing with the Pacesetters for the first time was a feeling I won’t soon forget, and performing for the last time was so bittersweet because of it. Share with us a funny or awesome story of living in Canyon Creek. My sister and I attended Trinity Christian Academy from the time I was in first grade up until fourth grade. I then came back to Prairie Creek for my fifth and sixth grade years. My sister and I both grew up watching our friends’ families drive their golf carts all around the neighborhood: to school, to ice cream and to the pool at Canyon Creek Country Club. We wanted one more than words could describe. The day my parents sat us down to break the news that we would not be returning to TCA the next year, they told us we should go get ice cream as a family afterward. When we opened the garage door, our very own golf cart was sitting in the driveway waiting for us. Evening family golf cart rides very quickly became our favorite thing, and even though it’s had its share of breakdowns and low battery life, it’s still a Frantz family favorite!

fter a two year hiatus, Wildflower is back! For your intrepid reporter, the music was merely the soundtrack enhancing the unalloyed joy at seeing so many old friends in a festive setting. If you were able to attend Sunday afternoon, you will likely agree it is worth leveraging a healthy amount of credible influence to inspire the City to hire The Wailers again for next year. The Bob Marley Reggae was balm for the soul and ushered a galvanizing sense of Irie! (Jamaican slang for “to be at total peace with your current state of being”). By the time of publication, Memorial Day will have come and gone but shouldn’t every day be Memorial Day? In fact, in the year 2000, Congress passed The National Moment of Remembrance Act that encourages each citizen to pause each day at 3:00 pm to ref lect on the sacrifice of the men and women who gave the last full measure of devotion in service to our Nation. Did you know that Amtrak engineers collectively sound their horns at precisely 3:00 pm? And in another much needed and heralded return to the customs and institutions that bind us together, we will again honor our great Country with a 4th of July Parade like no other! It represents an opportunity to pass on our heritage to the next generation and is a respite from excessive screen time for both adults and our kiddos. We could have a few fun surprises this year, just sayin’. Details to follow…. I commend and congratulate all the candidates who ran for our local offices and boards for it is at the local level that the proverbial difference may be made. Whether officially in

office or “just” placing your elderly neighbor’s newspaper on the porch, if we collectively leave everything in our sphere of inf luence just a little bit better than when we found it, we will prevail. And it is here at the local level that something far more important must occur. We need to revive our culture and learn to love each other again. The degeneration of our collective civility has been occurring for some time but has escalated in the last two years as the pandemic and response have accentuated and sharpened the differences between us as citizens and humans. Disagree with your Brother and then suffer together in shared misery as Dallas Cowboy fans. A fine beginning for such a Restoration would be for us as individuals to strive to live an outwardly directed life. Please notice the QR code signs at Prairie Creek Park that will open the e-gateway to a plethora of City data about the upcoming project. Will it be perfect? Can anyone please everybody? These are rhetorical questions that add up to a big “No” but the City reached out and has engaged to make this necessary infrastructure project more ref lective of our collective will while still addressing the engineering realities. COR Animal Shelter Update: WE NEED YOUR HELP! ADOPT. Consider adopting a shelter pet! we will be waiving all adoption fees to thank those stepping up and opening their homes to our homeless pets. You can view our adoptable animals on our website. FOSTER. Even if it's for just a few days, fostering one of ours dogs give us more insight on the animal, which in turn, makes them much more adoptable. Are they potty-trained? Do they like cats? Are they a couch potato or wiggle worm? These are all things that potential adopters want to know, and questions that could be answered with just a weekend at your place. You can learn about all the ins and outs of fostering on our website. TRANSPORT. The numerous shelters in our DFW metroplex often work together to transfer/take back animals that originally came from their facility. However, once we get the "okay" to transfer a dog back, we run into the hurdle of staffing that drive. With a shelter and dispatches to run, our officer's plates are very full, and it can take days before the time is found. If you are willing/ open to transporting these short distances, please contact amber.norman@cor.gov to get added to the list.

ATTENTION:

After much anticipation and 21 years of good use, we are thrilled to start construction on the complete renovation of our dog kennels. This upgrade is going to drastically enhance the lives of the furry citizens living under our roof in various ways. ✓ Replacing the chain-link with solid walls to improve our safety, security and disease control and to resolve the outdated openview-floor-plan that allows all the dogs to see each other (talk about stress!). The privacy will relieve the kennel stress seen from extended, mass housing, especially for our more timid "tenants." ✓ New acoustic panels for sound absorption (barking sure does echo). ✓ Improved drainage system that will allow us to finally distribute toys. ✓ Improved insulation for the extreme heat/cold of our lovely state. ✓ Improved, user-friendly kennel latches and locks. ✓ Colorful walls because ✓ Mounted water bowls to fix the spilling/wet kennels caused by our old water buckets.

What this means… The construction will come in three phases, starting on the adoptable dog run. Because of this rapid (temporary) downgrade in size, we are going to need to lean heavily on help from our community. From June to September, we will have our kennel space cut by 57%. We typically operate at nearly-full capacity, and that is with 44 dog kennels. Once construction begins, we will need to operate with just 19 dog kennels.

If you find a stray dog... Please try everything you can to get it back home before using our facility. We understand that it is not always possible but have seen a lot of success in finders doing some leg work before bringing a stray to us. • • • •

Walk them around the neighborhood - home is nearby! Post on social media (Nextdoor, Pawboost, Facebook) File a found report with us online Take them to a nearby vet/shelter and have them scanned for a microchip

If you need to surrender...

You will need to find other avenues and resources for rehoming your pet. Starting June 1, we will not be taking any owner surrenders until construction is complete (September). We simply do not have a place to put these unwanted animals, and do not want euthanasia to be the forced outcome. This is going to be a very difficult line to draw as we get upwards of fifty phone calls a day with metropolitan residents wanting to get rid of their pets. The majority of surrender reasons are due to a solvable problem. We ask that you are open to finding resolution for the behavioral, time, life, financial, or housing concern you have encountered into. You are welcome to call and seek advice on how to keep your pet.

Our successful Flag Lease Program is available to only to current dues paying members. Subscribers get a 3’ x 5’ American Flag on a 10’ flag pole placed at their curb on four Patriotic Holidays (Memorial Day, Independence Day, 9/11 Observance Day and Veterans Day). The Flag Lease Subscription is $35 a year, and it can be paid with your dues payment (total $50.00). After each holiday, the Flag Lease Subscription charge is reduced, so check with our Membership and Flag Lease Headquarters in the Canyon Creek Postal Company at 508 West Lookout Drive for the exact amount after Memorial Day. The annual $15 Membership Dues is not reduced since it is based on a calendar year basis. But must be paid to subscribe to a Flag Lease.

What is your name and the name of your business? My name is Delaney Vanderpool, and my business is Balloons by Delaney. When did you open your business? I started Balloons by Delaney the summer of 2020 during COVID quarantine. Tell us about your business. I make garlands, arches, pillars and custom balloon creations for any occasion! I do jobs mostly for people in Richardson, but I have gotten requests for balloons all over the Dallas area. What inspired you to do what you do? During COVID quarantine, my family and I were looking for a fun way to celebrate major events in our lives. Because I had nothing else to do, I bought some balloons and started watching YouTube! Through trips to Home Depot and trial and error, I was able to perfect my balloon masterpieces. I can make almost anything now; all I need is a picture and a location for set-up! 24

Tell us a favorite story or two about your business. At the very beginning of Balloons by Delaney, I hadn’t nailed down how to transport some of my bigger balloon creations. I had to deliver a garland to someone in the neighborhood, so my dad took the doors and roof off his Jeep, and my sister and I held on to the balloons. We drove down the street with the balloons coming out of the Jeep. I’m sure it was quite the scene. Tell us about your family. My parents are Katelyn and Matt Vanderpool. I have a sister named Reese in seventh grade at North Jr High and a twin brother and sister who are eighteen months old. I’m sixteen years old and finishing my sophomore year of high school at JJ Pearce. In addition to Balloons by Delaney, I also work at Sweet Firefly. We love to ski in the winter and go to the lake in the summer. If you drive past our house, chances are you’ll see the twins running around the front yard while my mom and I set up another balloon contraption! How long have you all lived in Canyon Creek? We’ve been here since 2013, about eight and a half years.

What do you love most about living in Canyon Creek? I love the sense of community. Every time I go to dinner in the area, I see someone I know. We have so many friends all around Canyon Creek and I love being able to make balloons for people I’ve known since I was little. Share with us a funny or awesome story of living in Canyon Creek. My dog Kayak was famous on the Residents of Canyon Creek Facebook page after taking herself on a walk and somehow arriving home with a dead rat attached to her sweater. We have no idea how the rat got there; after a picture of Kayak ended up on the Facebook page, many conspiracy theories took hold. From “rat terror dogs” to “killer shock collars,” it was quite the Facebook thread. She even got an invite to the Canyon Creek Book Club!

Ideas for your Fourth of July Gathering

f you’re hosting the festivities this year on the Fourth of July, our Canyon Creek neighbors the Iveys and the Greens have shared some favorite recipes straight from their family kitchens. Trey Ivey owns and operates Invite Me Over Catering and Cooking and shares some of his best summer barbecuing tips with us along with some fantastic sides from his wife Danielle. Brooke Green has provided us with her grandmother’s Lemonade Pie recipe, which her son Davis (pictured below) and the rest of the family always enjoy.

Top 6 Summer BBQ Tips: • Plan ahead so that you can be patient and not want to “rush” the cook. • Experiment using the flavors you like; chances are that others will like the combinations too. • I wrap my brisket with butcher paper, almost like swaddling a baby. Too much paper is better than not enough. I usually wrap briskets when the internal temperature is between 160-170 degrees. • If you wrap your brisket with foil (the Texas cheat) instead of butcher paper, you’ll retain more heat. The brisket will cook faster and soften its bark. • I like cooking my briskets to 200 degrees internal temperature measured on the flat (leaner part of the brisket). Most things you read online say 190 degrees. • Let the meat rest, in a cooler, in your oven. You’ll see and taste the difference when you slice it. Slice it about 1/4 inch thick or the traditional width of a pencil.
