Our students of Canada Parkside

CAs here to help

We are all struck by the impact of the history of residential schools in Canada and the long lasting and ongoing impact. The starting point for true reconciliation is for all of us to understand that this has multi-generational and ongoing impact. We invite all our residents who seek to have a greater understanding to take part in a free Massive Open Online Course (MOOC) from the Faculty of Native Studies with the University of Alberta. You can find this link HERE

As we move forward Parkside Student Residence will continue to keep a sustained message of support and solidarity with our Indigenous peoples. Keep your eyes out for:

Educational Corner in lobbies/ lounges – During Academic Year Recognizing our community resides on traditional indigenous territory with a land acknowledgement formally installed in our Lobby Speaker Series Social Media Stories Highlighting local businesses that are indigenous people owned close to properties and shared on social media

Thank You

Homemade Ice Cream Recipes

Ice Cream in a Bag

Ingredients:

1 cup Half and Half – OR you can use 1/2 whole milk and 1/2 cream. We have also made it with whole milk and it will still turn out but the ice cream won’t be as creamy

1/4 cup Salt – the type of salt doesn’t matter. We used regular table salt. But the chunkier the salt you use, the less chance you’ll get salt mixed into your ice cream by accident.

Ice

1.5 tsp Vanilla

1 tbsp Sugar

Ziploc bags (1 small, 1 large)

Instructions:

Pour 1 cup of half and half into a small ziploc bag.

Add 1.5 teaspoons of vanilla extract and 1 tablespoon of sugar.

Seal the bag firmly and get any excess air out.

In the larger ziploc bag, fill it about 1/2 way with ice.

Add 1/4 cup of salt. Then add your small bag and fill with extra ice on top.

Seal the large bag. Get gloves for shaking and shake for 6 minutes.

Gloves are needed since the salt makes the ice extra cold.

Take the small bag out of the large bag and rinse the outside of the small bag with cold water. Make sure to rinse out the top part of the bag also (above the seal).

Once done rinsing, carefully open the small bag to not get any remaining salt from the outside of the bag inside the bag.

The ice cream will be a little icy looking to start.Use a spoon to mix it around and soften it up a bit. Scoop out and enjoy!

Blender Icecream

Ingredients/Equipment:

Frozen fruit puree

Heavy cream

Food processor or blender

Instructions

With the food processor or blender running, slowly pour the cream over the pureed frozen fruit. The fruit quickly freezes the cream, making an almost instant ice cream dessert.

Mason Jar Ice cream

Ingredients/Equipment:

Mason jar or other large glass canning jar with screw-on lid

1 cup heavy cream

1½ vanilla extract

1½ tablespoons sugar

Pinch of salt

Flavourings and toppings of your choice

Instructions:

Add cream, vanilla extract, sugar, and salt to the jar. Screw on the lid.

Shake until mixture has thickened, about 5 to 10 minutes.

Add flavourings such as jam, chocolate chips, mint, candy sprinkles, or cereal.

Freeze to firm up the mixture, about 2 hours.

Cooking Recipe: Venezuelan Tres Leches Cake

Ingredients for the cake:

4 eggs

1 cup self-raising flour

⅔ granulated sugar 1

tbsp vanilla extract 1

tsp salt

For the meringue:

2 egg whites

3 tbsp powdered sugar

1 tsp vanilla extract

lime zest

For the syrup

1 cup condensed milk

1 cup cream

1 cup evaporated milk

Instructions

For the cake:

1. Preheat the oven to 180 C (350 F)

2. Separate the egg whites from the yolks.

3. Beat the egg whites until stiff peaks. Add half of the sugar in small batches during the process.

4. Beat the yolks and add the remaining sugar. Beat until the yolks are creamy and lighter.

5. With a spatula, mix gently the egg whites with the yolks.

6. Add the flour, the vanilla extract, and the salt. Incorporate with encircling movements. Don’t beat the batter or all that air that we previously built will be gone.

7. Pour the batter into a greased cake pan and take it to the oven for 15 minutes until the cake is slightly brown.

8. Let the cake chill completely.

9. With the help of a knife, make small holes in the cake (this way it will absorb more of the syrup).

For the Syrup:

1. Mix all the ingredients.

2. Pour it over the cake and let it soak for at least 1 hour (you can let it overnight).

For the meringue:

1. Beat the white egg until stiff peaks. Add the powdered sugar, the vanilla extract and the lime zest.

2. Decorate the tres leches.
