Ramzi

This is Ramzi from the 10th floor. Ramzi attends Concordia University and it is his first year, he majors in Business Technology management. He is originally from Lebanon but has lived in Dubai for the last 16 years of his life before moving to Canada for University. Ramzi loves helping others, hanging out around campus 1 whether it is playing pool, doing homework in one of the study space, or eating a delicious meal in the cafeteria. Don’t be shy to say “HI” when you see him around!

CHRISTMAS RECIPES

Snowman cheese ball 2 (8-ounce) packages cream cheese, softened 1 (8-ounce) package shredded pepper Jack cheese 1 tablespoon salt-free Cajun seasoning, such as T-Don’s Cajun Goods No Salt All Purpose Blend 1 (1-ounce) packet ranch dressing mix 10 whole peppercorns 1 baby carrot 1 jalapeno pepper with stem crackers for serving Directions: 1. Mix cream cheese, pepper Jack cheese, Cajun seasoning, and ranch dressing mix together in a large bowl; divide mixture to form one small cheese ball for the head and one larger cheese ball for the body. Wrap and chill in the refrigerator for 4 hours or up to overnight before serving.

2. Place larger cheese ball on a serving plate for body. Place smaller cheese ball on top for head. Slice the tip off baby carrot; press into cheese ball for nose. Use whole peppercorns for mouth, eyes, and buttons. Cut the top, with stem, from a jalapeno, and place on top for a hat. Serve with crackers. Festive Cranberry-Pistachio Cheese Log 2 (8-ounce) packages of cream cheese, softened 1 cup dried cranberries, chopped 1 cup shelled pistachios, chopped 2 tablespoons orange zest 1 tablespoon mixed herbs (thyme, rosemary, parsley), finely chopped Crackers or sliced baguette for serving Directions: 1. In a bowl, mix cream cheese, half of the cranberries, half of the pistachios, orange zest, and herbs. 2. Shape the mixture into a log and roll it in the remaining cranberries and pistachios to coat the outside. 3. Wrap in cling film and chill in the refrigerator for at least 2 hours. 4. Serve on a platter with crackers or baguette slices.

Christmas Tree Cheese Platter A variety of cheeses (cheddar, gouda, brie, etc.), cut into cubes Green grapes Cherry tomatoes Fresh rosemary sprigs Assorted crackers and breadsticks Directions: On a large platter, arrange the cheese cubes in the shape of a Christmas tree. Fill in the gaps with green grapes and cherry tomatoes. Use rosemary sprigs to mimic the branches of a tree. Place crackers and breadsticks at the base for the 'tree trunk'. Serve immediately, allowing guests to pick their favorites.
