Odyssey, Of Course! will celebrate all that is best about CCAE—a virtual respite that helps you manage the difficulties of social distancing and individual isolation. CCAE provides you with a way to connect, a reason to gather and to learn virtually during these months when we cannot experience face-to-face learning. Choose among 15 different 40-minute classes that will take you to another country and another way of thinking, eating, speaking, reading, or being.

Best of all, Odyssey, Of Course! will be animated by the spirited conversation and sense of convivial community that CCAE is famous for—an for evening of exploration and fun in support of CCAE programming, scholarships, and community partnerships!

For demonstration classes, you are welcome to cook along but due to timing and format, instructors may not be able to troubleshoot any issues in real time. BASIC KNIFE SKILLS DEMONSTRATION & DISCUSSION Lars Liebisch | Private Chef

Demonstrations by professional chef, Chef Lars Liebisch will show you how to properly slice, chop and dice. He will demonstrate cutting techniques for a variety of different vegetables. You’ll learn about the many types of knives and how to use them for different tasks. Chef Lars will show you how to sharpen your knives at home and how to take care of them. We recommend cutting vegetables along only if you are comfortable with your own knife and can multitask as the instructor may not troubleshoot any issues in real time. A large cutting board and a chef’s knife are best suited for this class. If possible, follow this class on a larger screen device like a laptop or tablet.

French macarons are sweeping the nation. These delicate and colorful almond confectionaries will be a sweet ending to your homemade meal. In this online class, you’ll learn step-by-step techniques to make shells and various fillings including Swiss buttercream and ganache. Impress your family with your delicious macarons.

BAGELS AND PRETZELS Evelyn Schichner | Culinary Instructor

Let’s make delicious pies at home. In this online class, you’ll learn how to make strawberry cream pie, hand pie, and galette. We’ll learn how to make pie crust, pastry cream, stable whipped cream, and glaze from scratch. We’ll also talk about blind baking. We’ll use the leftover pie dough to make mini pies so nothing goes to waste. You’ll never buy store-bought pie crust again.

Whether you prefer New York bagels or German pretzels, you can easily master them both at home. Bagels and pretzels share similar ingredients and baking techniques even though bagels can be denser and soft pretzels can be doughier. We’ll start with making the dough from scratch and then turn them into different shapes. While we are baking, we’ll talk about how we can flavor them into sweet and savory bagels and pretzels and how we can serve them.

BRITISH BAKING AT HOME Evelyn Schichner | Culinary Instructor

Get set, bake! Let’s bake together in this online interactive class. We’ll incorporate different baking techniques into British bakeries that will make your baked goods taste great.

We’ll start with Victoria sponge cake trifle, British cookies, and delicious cake rolls. We’ll talk about how to twist and incorporate unique ingredients including spices into the baked goods to enhance the flavors. You’ll be sure to become a “star baker” in your own kitchen.

Cornish pasty is one of the most popular British street foods originated in Cornwall, United Kingdom. Let’s turn your kitchen into an English pub and make three different types of authentic Cornish pasties. We’ll start with making the dough from scratch. While the dough is resting, we’ll prepare fillings starting with beef, potato, and turnip. Then, we’ll make curry filling and vegetable filling. While we bake the Cornish pasties, we’ll make delicious dipping sauce.

Turkish Borekitas are delicious hot water shortbread pastry crust filled with cheese and spinach usually served with herb yogurt dip, tomato dip, and eggs. On the other hand, Asian empanadas use a different technique to make the dough. The filling will include ground meat (or shrimps) and vegetables served with delicious dipping sauces. In this online interactive class, we’ll make both Turkish Borekitas and Asian empanadas with different dips and sauces from scratch including the dough. We’ll bake both and enjoy these delicious baked pastries as snacks or entrees.

Boston has many historical connections to chocolate, starting with the Revolutionary War and continuing from that point in time, including being the home of the very first chocolate factory in North America and the first forays into commercial white chocolate production. Gluten free cooking sounds challenging. If we want to make a gluten free meal also vegan, it is almost impossible. But, we’ll make it possible and delicious. In this fun interactive class, we’ll use plant based whole foods ingredients to make delicious meals at home. We’ll make vegan kebab with avocado sauce, delicious lentil soup with vegetables and fresh herbs, and vegan pulled jackfruit served with quinoa pilaf, rainbow coleslaw, and homemade grated vegan mozzarella cheese. We’ll finish the class with peanut butter from scratch and turn it into delicious mousse served with a thin layer of chocolate ganache.

Alcohol enhances the flavor of the food. Unlike wine, spirits add aroma and sweetness to the food. Join Lars and learn how to incorporate different spirits into your everyday cooking. We’ll talk about how to pick and choose which spirits we should use and how much we should add. You’ll learn how to make roasted chicken with bourbon glaze, pork tenderloin with brandy cream sauce, pasta alla vodka, vegetable sides, and poached apples with rum and cinnamon.

Learn how this electric pressure cooker can make it easy to serve meals that taste like you spent all day in the kitchen. With the Instant Pot, you can master eggs in different doneness in no time. The first part of this session will be getting to know your Instant Pot: how it works, which are the essential functions, four pressure release methods and how and when to use them. There’s almost no greater pleasure than a perfect fried egg sandwich, a poached egg, custardy scrambled eggs, but eggs can be so much more. Eggs with different cooking techniques will turn into different delicious dishes. In this online interactive class, we’ll make gougeres, popovers, and shakshuka. We’ll finish the class with delicious clover club cocktails. We’ll also learn what all those egg labels mean–and don’t mean. We’ll cover tips for perfect hard-cooked, poached and scrambled eggs.

Get ready for the season of fresh fish in New England. In this online class with Chef Lars Liebisch, you’ll learn how to buy, clean, prepare, and cook fish and seafood and where to buy them. We’ll make cioppino seafood stew, steamed mussels in white wine tomato sauce, lemon cream cod piccata with asparagus and fresh herb, and shrimp scampi with white wine. Let’s expand your repertoire and enjoy cooking in your kitchen.

Most Italian dishes are naturally vegetarian. We are bringing the taste of Italy to your home this spring.

We’ll make quick, easy, and yummy vegetarian Italian dishes that are high in nutrition and full of vegetables. We’ll start with baked tofu parmesan. We’ll also make Spezzadini (potato, green bean and cannellini stew), pizza escarole pie, vegetarian Bolognese sauce.

NEW ORLEANS FEAST

We’ll bring you right into the heart of European cooking tradition.

Krisztina will talk about her family’s recipes and traditions of Hungarian cuisine. We’ll start with traditional Hungarian Gulyásleves (beef Gulyás Soup), one of Hungary’s national dishes. We’ll also make Hungarian noodles with poppy seed sauce (mákos tészta). We’ll finish the class with two side dishes: Hungarian sauteed potatoes and cucumber salad.

Louisiana is a wonderful place that is packed with delicious food and rich culture. We are bringing the taste of New Orleans to your home kitchen. Let’s make a feast this spring and learn about Cajun and Creole styles of cooking. Persian cuisine is a culinary style unique to Iran, with its diverse population and culinary traditions shared with neighboring countries. In this online interactive class, we’ll talk about spices and herbs central to this cuisine. We’ll start the class with key staples of Persian food. Then, we’ll make herb platter, dip with lavash, Ashre reshteh (bean, herb and noodle soup), Tahdig (Basmati rice with rose petals and barberries), and Fesenjen (Turmeric chicken with sumac and lime). Nothing is better than homemade Spanish paella.

Join Chef Luis and learn how to make a delicious vegetarian version of the world’s most renowned rice dish. The palate, the nostrils, and the eyes will be highly stimulated with this dish. While paella is cooking, we’ll make delicious salad and sangria. We’ll end our night with Chef Luis’ famous flan. You don’t have to buy a paella pan to make paella. Approximately 422 million people worldwide—both Muslim and Christian—speak Arabic, which includes three varieties: Classical Arabic (the language of the Islamic religion), Standard Arabic (official language, news, documents, etc.), and colloquial Arabic (different dialects). Spoken both in the Arabian world and in several Asian and African countries, Arabic was adopted as one of the six official languages of the United Nations in 1973. Events in the Middle East have encouraged new interest in Arabic.

JE SUIS D’ACCORD: LEARNING FRENCH WITH SONGS

This class will improve the students’ pronunciation and help to facilitate the comprehension of spoken language. It will cover the vowels and letters that are mispronounced by English speakers such as “R” and “U,” as well the nasal vowels and sounds that are combinations of letters and vowels. We will also go over the consonants that are not pronounced at the end of words. The class aims for the development of perfect French pronunciation by having fun practicing. This class is for students who took at least 30 hours of French (CEFR A2 and above).

Just like the song by Françoise Hardy, if you agree that songs are a great way to learn French then this course is meant just for you. Every session we will listen to a couple of songs from different decades and genres. It will be an opportunity to improve your listening skills and work on your grammar. Along the way you will pick up some new vocabulary and enjoy the cultural exposure. For high beginners and above (CEFR A2 and above).

CINE-CITTÀ: SENSO: ITALIAN LITERATURE INTO FILM Maria Grazia Lolla | Native Speaker, Ph.D., University of Cambridge

We will discuss Luchino Visconti’s film Senso (1954) alongside the 19th-century novella of the same title by Camillo Boito on which the film is based. Set in Venice at the time of the Italian Risorgimento and featuring a story of betrayal where passion and politics intertwine, Visconti’s spectacular and controversial rendering asks audiences to reflect on the past and the future of Italy as a modern nation-state and a young republic. We will dedicate the first class to Boito’s 1883 novella (which will be made available in both English and Italian) and the second to Visconti’s film in the Criterion Collection version. We will discuss the two works in their historical and cultural context. Students of all levels of Italian are welcome as long as they are prepared to immerse into the language.

Can science be unbiased? Is your body yours after you die?

How and when should governments control people’s behavior for the greater good? Come explore the narrow streets, alleys, and cul-de-sacs of Beacon Hill's North Slope community.

Here you'll see 200-year-old wooden dwellings built for Boston's early African-American community, not far from the residences of wealthy white progressives who also aided the anti-slavery movement. On nearby streets are the homes of 19th-century carpenters and craftsmen, and tenement apartments erected by Jewish immigrants in the first decades of the 20th century.

We'll view the African Meeting House; two documented stops on the Underground Railroad; Boston's oldest surviving synagogue; a gambling parlor; and a maze of pedestrian passageways with unusual architectural features.

What was the Byzantine Empire? Do we characterize it as a part of the old Roman Empire that managed to survive an extra 1200 years than the other part which fell to the barbarians? Was it a different or new kind of civilization that evolved to become something completely unique combination of religion, politics and culture due to its strange combination of Roman and Greek ideas, language, and culture? Was its geographic location in an area of the world where the three continents of Europe, Asia and Africa meet make it special in world history? The answer is, all of the above, and more. Couple all that with the Byzantine love of gold and bureaucracy, silk and espionage, the desire of Byzantine emperors to meddle in the affairs of European, Middle-Eastern and Slavic worlds, together and its self-appointed role as guardian of civilization and Christian religion itself, makes for both fascinating as well as entertaining history that we will explore in this course.

The English Wars of the Roses (1455–1485) has many colorful characters: Warwick the Kingmaker, hunchbacked Richard III (but was he?), and the vengeful fury that was Queen Margaret. Shakespeare also wrote an entire cycle of plays from Richard II onward interpreting the origins and course of the dynastic struggle at the heart of the war. Why was Massachusetts such a fertile ground for the seeds of rebellion? History generally attributes the start of World War I to the unexpected assassination of a Catholic Austrian Archduke by an Eastern Orthodox Serbian in a mostly Islamic province.

However, what happened next leads to further questions about the Great War. The novels of Jane Austen are full of early 19th century English upper-class romances and other intrigues. But Austen’s novels also talk almost as much about the importance of being cultured and entertained. Music was an important part of the life of Jane Austen’s characters, and of Austen herself. Born into New York high society in 1862, Edith Wharton drew on her background to present closely observed, emotionally rich fiction. In The House of Mirth (1905) she recounts Lily Bart’s unhappy struggle to secure her place in the aggressively materialistic American society. In The Age of Innocence (1920) she tells a poignant story of thwarted love, made into a brilliant film by Martin Scorsese. Wharton’s life and art dramatize the emerging importance of female perspectives in the early 20th century.

From Hemingway’s In Our Time to Jhumpa Lahiri’s The Interpreter of Maladies, the linked short story collection is an enduring and elastic American genre. Offering prose writers an open, intuitive form to build up a composite work of discrete narratives, these “novels in stories” tend to unfold chronologically and are strongly linked to a place. This workshop will introduce students to the genre as readers and move quickly to support them as writers.

The first writing assignment will be to draft one stand-alone short story. After review and feedback, students will be asked to develop a second story, which enriches, continues, responds to, and—in some way—belongs with the first. For the first class, read two stories from a linked short story collection of your choice, and consider how they relate to one another. Join us for an introductory workshop exploring the basics of shibori! Shibori is a traditional Japanese resist dye technique that uses a variety of textile manipulation methods to produce different patterns when the fabric is immersed in indigo dye.

Experiment with tying, folding, stitching, compressing, and twisting fabric to create your own unique shibori masterpiece. Please have up to 2 yards of fabric, or kitchen towels, a t-shirt, a scarf or pillowcase; the dye process works best on white, pre-washed, 100% cotton fabrics. In the comfort of your home, create a stained glass panel with guidance provided during synchronous and asynchronous classes. All the tools needed will be provided to you along with supplies necessary for one large 12” x 18” stained glass panel.

You will meet online on Zoom weekly with your instructor for a step by step demonstration, basic skill-building, and troubleshooting, if necessary. Anton Bruckner and Gustav Mahler are often placed alongside each other in discussions of the development of the symphony. Learn about forest and tree communities, their behaviors and interactions with one another. Investigate their ecological role and importance to us. Learn how to identify trees from shape, leaves, buds, and bark. Explore nearby parks to discuss, document and sketch the trees that we see, without forgetting to observe and record the species that depend on them. You’ll also learn how to participate in gathering information easily about trees through citizen science to help climate and wildlife science. The first class will be a virtual class on Zoom and the second half of the class will be a walk.

LEARN BIRDSONGS Neil Hayward | Author, Vice President, Brookline Bird Club

Ever wanted to know what the birds are that you hear around your home and local travels? This class will give you the tools to be able to do just that. We'll be reviewing local species, and use some graphic illustrations and mnemonics to help remember the sounds. We'll also examine why birds use song, and understand the differences between contact calls, alarm calls, songs and flight calls.

It's a lot more intricate that you might imagine, and this class will hopefully open your eyes and ears to what's around you. The course is two afternoon Zoom meetings and a morning spent birding at Mount Auburn Cemetery (or other local birding hotspot depending on possible Covid-related closures) where we’ll practice our new skills.

Policies

ONLINE CLASSES

Online classes take place on Zoom . If you are unsure if you are able to use Zoom or if your camera and microphone work, we recommend testing it out by joining a test meeting before your class starts at zoom . us/test .

Register early!

CCAE reserves the right to cancel classes due to low enrollment or other considerations . We begin cancelling classes with low enrollment up to 10 days before a class is scheduled to start, so register as early as possible in order to reserve your seat and help it meet the minimum enrollment .

The zoom link and information on how to join will be emailed to you . If you register within 12 hours before the class begins or after the first date, please contact zoom@ccae.org for the link .

Registration fees

An $8 registration fee is charged for any class whose tuition exceeds $25 . Only one registration fee is charged per person per term . The registration fee is not refundable if you withdraw from a class . The fee is refunded if CCAE cancels your class or if changes to the class schedule prevent you from attending . This does not apply to individual classes rescheduled due to inclement weather or other significant factors beyond CCAE’s control.

Credits and refunds

If you withdraw 1 week or more before the start date of a class, we will issue you a course credit (good for 18 months from the date of issue) . If you prefer, we will refund the class tuition minus a $10 processing fee . Withdrawals from courses and events under $25 are only eligible for a course credit . No cash refunds are given .

Online class withdrawal policies

For multi-week online classes, if you are unhappy with the format of the class, you may withdraw up to 24 hours before the second meeting of the class for a full class credit (no refunds given) .

For online Food and Wine classes, you can withdraw three days or more before the start date of a class for a class credit . After we send out a Zoom link and a recipe packet, no credits or refunds will be given .

For one-day online classes (with no curbside pickup component), you can withdraw the day-of for full class credit (no refunds given) .

For online classes with curbside pickup, you can withdraw up to two days before the date of curbside pickup or the first class meeting, whichever comes first, for a class credit minus the materials fee (no refunds given). If you attended the first class or already did curbside pickup, no credit or refund can be given .

Transferring to another class

For classes that are three sessions or longer, contact the registration office before the second meeting of the class in order to transfer . For one- and two-session classes, you must contact us at least five business days before the start of the class. For all cooking, wine, beer, or spirit classes, you must contact us at least five business days before the start of the class. If there is a difference in price, we will issue a class credit or there will be a remaining balance to be paid . Refunds are not given .

If we cancel your class, you will receive a course credit good for 18 months from date of issue or, upon your request, a refund. Please call our registration office to request a refund. This does not apply to individual classes rescheduled due to inclement weather, other significant factors beyond CCAE’s control .

Student expectations for online classes

Classes will take place on Zoom . Do not share the Zoom meeting invitation and link with anyone who is not registered for the class .

Classes will take place at the time they are scheduled . We cannot guarantee that recorded classes will be available if you are not able to attend the class at the time scheduled .

One registration is for one person . If you are planning to invite your spouse, partner, or friend to attend this online class with you, please sign up for an additional seat .

Inform anyone in your household that you will be in a class; if your camera and/or microphone are on, they will be seen and/or heard .

For the security of our instructors and students, please do not record the class .

Please do not take photos of the class without the permission of the instructor and the other students .
