QUEUING UP THE ‘QUE Tahlequah, Muskogee barbecue joints keep customers coming back

Deep, meaty smoke permeates the Muskogee-Tahlequah area. The smoke — tinged with hickory, pecan or post oak wood — comes from the low and slow cooking at barbecue restaurants.

Muskogee’s My Place East, at 2021 Gibson St., has been tempting barbecue lovers since 1927. A buffet features its signature ribs, plus brisket and links, and draws a large after-church crowd.

Amy Frix said her parents, Bruce and Shirley Shropshire, opened My Place West, 4322 W. Okmulgee Ave. in Muskogee, in the 1970s. Frix said she and her sister, plus their husbands, have operated it since 2018.

“My dad was very big into quality foods and consistency,” Frix said.

One constant has been a special spice that goes on ribs, brisket, beans, even the sauces.

“It’s all our own,” she said. “It’s been the same spice for decades now. It’s a little different from everyone else’s.”

She didn’t share the secret. People also like My Place West’s sauce, which Frix said is different from those found in Texas or Kansas City.

Sauce is a big thing at Roxie’s BBQ, 16407 State Highway 10 in Tahlequah. Shortly after opening in 2025, owner Tyler Wagers said he uses the same barbecue sauce his parents had at their restaurant in 1951. He said the meat is smoked with pecan and hickory, with a little bit of post oak.

Roxie’s co-owner Kim Wagers said people keep coming after a year.

“We’ve grown a lot,” she said. “It’s

just the quality of the food. We spend a lot of time prepping, and we get the best of the best.”

She said top dishes include sliced brisket and the Tahlequah Twinkie, an extra-large jalapeño stuffed with brisket and cheese.

There’s also Dino beef ribs on Saturdays.

“People love that, so we usually sell out,” she said. “It’s a beef rib instead of a pork rib.

And when we say dino, they’re massive. They’re huge.”

Meat rocks at Rockin P BBQ, 170170 Rockin P Lane in Tahlequah.

“Everything is made fresh daily,” co-owner Waynita Philpott said.

“We have a very large smoker out back.”

Ribs are a top draw.

Rockin P also offers brisket, pulled pork, chicken, and hot links.

Tacos with brisket or pulled pork are a specialty.

“Tanner Williams, our pitmaster, has the technique to cook everything to perfection,” she said.

Russell Pratt, owner of Runt’s Bar-B-Q & Grill, 3003 W. Okmulgee Ave. in Muskogee, smokes his meats slowly with hickory and pecan, using his own recipe.

Mahylon’s owner Kenny Greer has kept the same routine since opening his restaurant in 1995 at 3301 Chandler Road in Muskogee.

Morgan Morris carries a tray of ribs and brisket through My Place West, a Muskogee barbecue hub since the 1970s. overnight in a hickory-fired pit. Ribs, turkey and pork go in around 7 a.m.; ham and bologna go in around 9 a.m.

Above P@R BBQ, between Hulbert and Tahlequah on State Highway 51, draws customers with its variety.

Its Back Nine platter features ribs, Brisket, pulled pork, bologna and jalapeño sausage.

Brown Bag BBQ, north of Tahlequah, does things differently, said co-owner Joseph Nation said, who owned the original Brown Bag in Naples, Florida, for 30 years.

One secret is the tender meat.

“We use a European-style cut rib,” Nation said. “It has more bone on it and the pigs are processed when they’re

much younger. It produces a smaller bone and whiter meat. It produces a more tender meat. A lot of American pigs are fattened up.”

For beef, Brown Bag uses sirloin tip instead of brisket.

“It’s hand-pulled, like a pulled pork,” Nation said. “It was more popular back in the day, when Dad started the restaurant. It’s a very lean kind. For someone who doesn’t want something super-fatty, it’s a good option.”

A special seasoning mix — another family secret — adds to the unique flavor.

“We smoke it a little lighter and we think it adds to a more tender meat,” Nation said, adding they use hickory with pecan.

CONTINUING A LEGACY Southside Drive-In is under new ownership, but with the same traditional features

When Destiny Hicks heard last August that the longtime Southside Drive-In might be sold, she didn’t expect the news would lead her back to a place that had already shaped much of her life.

“I worked there throughout high school and made a lot of close friends,” Hicks said. “It was a place that always meant something to me.”

The opportunity took shape after a chance conversation with former co-worker Brooklyn Coleburn at a birthday 12

party. Coleburn encouraged Hicks to consider buying the restaurant, a suggestion that quickly turned into action.

Within a day, Hicks and her husband met with previous owners Bill and Juanita Nottingham and agreed to purchase the business.

“It was so crazy to have that talk,” Hicks said. “I had worked at My Place Bar-B-Que for 12 years and wasn’t really looking, but my husband kept encouraging me to own something of my own.”

Hicks said she had considered opening a

food truck or a coffee shop, but neither felt right. Southside, she said, was different.

“It just felt like a homecoming,” she said.

“I was already familiar with it, and it immediately felt right.”

Rather than reinvent the restaurant, Hicks said preserving what made it special was her top priority. The Nottingham family built a loyal customer base over decades, and she intends to continue that legacy.

“They wanted to sell to someone who would keep the legacy going and not change everything,”

Hicks said. “That was very important to me.”

The connection is also personal.

Hicks grew up visiting the drive-in with her great-grandmother, Birdie, who played a major role in shaping her love of food and hospitality.

“She managed restaurants and ran a church kitchen, and I learned so much from her,” Hicks said. “I wanted to honor her.”

That tribute will soon be reflected in the restaurant’s name, which Hicks plans to update to Birdie’s Southside Drive-In while maintaining its long-standing identity.

Much of the menu remains unchanged, including the same ice cream many customers remember from childhood. Hicks said her focus has been on small improvements rather than major changes.

“We’re really just trying to make what’s already good even better,” she said.

Those efforts include a refreshed storefront, new menu additions, and

features such as a “Shake of the Month,” while keeping the core experience intact.

Customers continue to share memories that span generations, reinforcing the restaurant’s role in the community.

“People come in and say they ate here in the 1970s or the 1990s,” Hicks said. “That’s really special. Not many restaurants last that long.”

Hicks also retained much of the existing staff, including employees who have worked there for more than a decade, helping preserve the familiar atmosphere customers expect.

“We wanted to keep that friendly service and small-town feel where everyone knows everyone,” she said.

Although she initially kept the ownership change quiet, Hicks said the response since announcing it publicly has been overwhelmingly positive, with support from longtime customers as well as new visitors.

“We just want to say thank you,” she said. “Thank you for showing up and continuing to support us.”

Local markets offer fresh products, cultural specialties

Visitors to Tahlequah looking to experience local flavor beyond national chains can find it in a group of independently owned grocery and meat markets offering fresh products, cultural specialties and a strong connection to the community.

Tinajero’s Meat Market, at 1201 S. Muskogee Ave., is open from 9 a.m. to 9 p.m. Monday through Saturday and 20

9 a.m. to 7 p.m. Sundays. The store features a wide selection of fresh meats, produce, and a variety of Mexican snacks and candies, providing customers with both everyday essentials and specialty items.

Owners Gregorio Tinajero and Lupita Tinajero said their market is rooted in family tradition, particularly when it comes to their marinated meats.

“What makes us different is the way

we prepare our meats using family recipes,” Gregorio Tinajero said.

“We also make sure to offer discounts during every holiday so families can celebrate with good food at a fair price.”

The Tinajeros brought their business to Tahlequah after previously operating a store in Fort Smith, Arkansas, expanding their family-run operation into a new community.

“We had a store in Fort Smith and wanted to grow,” Tinajero said.

“We felt like Tahlequah was the right place to bring what we do and share it with more people.”

In nearby Park Hill, Parker’s Meat Market offers another option for residents and visitors seeking locally sourced products. Owned by April Parker, the market is open 10 a.m. to 7 p.m.

Monday through Saturday and noon to 4 p.m.

Sundays during the summer.

The store offers a variety of beef, pork and chicken, along with a growing selection of organic and specialty grocery items, including dairy products, eggs and produce.

“Our goal is to provide families with high-quality food they can feel good about

serving around their dinner tables,” Parker said.

Parker said the business was built on a commitment to supporting local producers and providing transparency in how food is sourced.

“We focus on connecting our community with local producers and carefully selecting products that align with our values,” Parker said.

“Customers appreciate knowing where their food comes from and being able to support local businesses.”

staff, offering customers a more direct connection to the food they purchase.

“What started as a dream to serve our community has grown into something centered on relationships and trust,” Parker said. “We want people to feel confident in what they’re buying and good about where it comes from.”

Another addition to the area’s local food network is 1839 Cherokee Meat Co., at 18919 N. 4666 Road just off State Highway 51.

The business is open 9:30 a.m. to 5 p.m. Monday through Friday and offers a retail storefront with steaks, sausages, pork, chicken, and bison when available, along with custom meat processing services.

Plant Manager Adrian Sinclair said the operation plays an important role in strengthening local food systems within the Cherokee Nation.

“1839 Cherokee Meat Co. is a strong example of food sovereignty in action,” Sinclair said. “By supporting local ranchers and maintaining control over our food supply, we are helping create a more sustainable

system for our communities.”

The business was developed in response to needs identified during the COVID-19 pandemic, when supply chain disruptions highlighted the importance of local food access.

“That time showed us how important it is to have reliable, local sources of food,” Sinclair said. “What we are building here is something designed to serve our communities for generations.”

Together, these locally owned markets offer more than groceries. They provide an opportunity for visitors to experience the culture and values of the Tahlequah area while supporting small businesses and regional producers.

For those traveling through Northeastern Oklahoma, the stores offer a chance to step off the highway, explore local offerings and connect with the people behind the products.

“At the end of the day, it’s about providing quality food and building relationships with the people we serve,” Parker said.

DINING NEAR THE WATER LAKESHORE EATERIES OFFER GREAT FOOD WITH A VIEW

Visitors to Green Country lakes have several dining options right at the water’s edge.

Bryce Lubber is the owner and manager of The Boat Bar & Grill, on Lake Tenkiller. His family has run the restaurant for 17 years. The current restaurant used to be the retail store before it was remodeled and converted.

“It’s just molded into what it is now,” Lubbers said.

A unique feature of the decor is that the inside bar is modeled after the stern of a coastal fishing boat, while the outside bar is shaped like the bow.

The design is appropriate, since the restaurant floats on the water.

This is the busy season on the lake.

“We rock it as much as we can from around May, when it starts picking up,

until Labor Day,” Lubbers said.

Lubbers’ personal favorite dish is the blackened fish tacos, but he also recommends the quesadillas and burgers.

“We put a lot of effort into a menu that’s fast-paced, yet still good quality,” Lubbers said.

The restaurant is open seven days a week during the summer months.

Fort Gibson Lake has several solid dining options.

At Taylor’s Ferry, JC’s Mexican Restaurant offers a colorful atmosphere. Brightly painted Mexican pottery flanks the entrance, and paper banners hang from the ceiling.

Owner Juan Castro moved to the lakeside location three years ago after several years in Wagoner.

“It’s a better location,” Castro said.

“It’s relaxed, something different.”

Monterey are popular menu items, but his personal favorite is El Primo.

“It has rice, beans, grilled chicken, cheese on top of the chicken, and tortillas,” he said.

Castro said he always wanted to own a restaurant.

“I like to cook,” he said.

Restaurant patron Larry Doke’s favorite dish is the chile relleno dinner.

“It’s a great place to visit, especially if you like the water,” Doke said.

Across the street, Pizza Port offers Italian food and patio dining.

Owner Bri Ward said she and her significant other have owned the restaurant for almost three years.

“Sausage rolls are our No. 1 seller,” Ward said. “It’s on our menu as an appetizer, but it’s actually big enough for a whole meal.”

Her personal favorite is the North Beach Pesto pizza, which has pesto sauce, chicken, basil, artichoke hearts and mozzarella cheese.

Ward said the restaurant sees a large number of lake visitors, but patrons also drive in from surrounding cities.

“We are very blessed to have people come from all over to eat with

At Sequoyah Bay State Park, lake visitors can dine at the Giggle Fish Grill. Linda Tiffin has worked at the restaurant for eight years. She said everything on the menu is popular.

“People come here just for our burgers,” Tiffin said.

Other popular picks include pizzas, fish baskets, and chicken tenders.

The chicken bacon ranch pizza and sub are both local favorites. There are even options for gluten-sensitive patrons.

“We have a glu-

ten-free crust that’s cauliflower,” Tiffin said.

“I like the veggie pizza.”

While many restaurant patrons are campers in the park, local residents often come for live music on the deck.

“Through the summer on Fridays and Saturdays, we do live music from 7 to 10 [p.m.], with all local artists,” Tiffin said.

Tiffin said her favorite part of working at Giggle Fish Grill is the people.

“We’re a very chill place, always family friendly. People bring their children,” Tiffin said. “Even some of the bands that play bring their families.”
