Lynda Quick, one of the creators of metro Atlanta’s famous “Barbie Beach,” has passed away. Her family says while they won’t be able to keep up with her eccentric project, they’re looking for a way to keep her legacy alive.
There’s a strange, unexpected roadside attraction hiding within a tiny Georgia town. Drive along the highway 16 through Turin, and it won’t be long before you come across a (mostly) nude Barbie beach.
The naked Barbie and Ken dolls have been lounging around in a six-by-four-foot stretch of sand for more than a decade. They’re arranged in an ever-changing display that matches various current events, like the Final Four playoffs, the Olympics, and even a royal wedding.
Barbie Beach is the brainchild of Steve and Linda Quick, two longtime Turin locals. They created their first sandy scene in celebration of the 2006 Winter Olympics, which just so happened to take place in Turin, Italy.
The Quicks have been, well, quick to keep the tradition strong ever since. They maintain a patch of their front lawn as Barbie Beach not just for their own amusement, but to add a touch of whimsical delight to the community. While some residents find it tacky, it’s become a charming, carefree part of Turin. When the producers of The Walking Dead (which was filmed in the same county) saw Barbie Beach, they were inspired to gift the owners with several zombie Barbies.
The passing of Lynda Quick brings the era of the Barbie Beach to a close. Beyond the Barbies, she lived a facinating life. We hope her family and friends continue to support .
Barbie’s 7 Layer Taco Dip
A perfect appetizer dip for your next party or event. This loaded dip is ideal served with chips, tortillas, crackers, or even fresh vegetables for dipping.
Ingredients:
• Refried beans– Canned or homemade is fine •Taco seasoning- This ingredient adds a little spicy flavor to the dip.
• Pico de gallo or salsa– You can use store-bought or homemade Pico de Gallo or Mexican Salsa with Roasted Corn
• Guacamole
• Shredded mild cheddar– Pre-shredded or shredded from a block of cheese works
Directions:
• Mix the beans. In a bowl, blend the refried beans and taco seasoning using an electric hand mixer. Set aside.
• Make the next layer. In a separate bowl, combine the cream cheese, sour cream, and taco seasoning with an electric hand mixer.
• Assemble. To assemble the 7 layer taco dip, use a deep 9×13 dish or a deep glass trifle bowl. Begin spreading each layer, starting with the refried beans, sour cream mixture, guacamole, Pico de gallo, shredded cheddar, and a handful of sliced olives. I like to garnish mine with green onion or chopped cilantro. Cover and serve chilled.

Frozen Margarita
Cool off this summer with our super-simple frozen margarita recipe. This refreshing tequila cocktail can be made in just five minutes in a blender
Ingredients:
• 50ml tequila
• 25ml triple sec (like Cointreau)
• 25ml lime juice
•15ml sugar syrup
• large handful of ice wedge of lime, to garnish
Directions:
Put all the ingredients except the lime wedge in a blender and blitz until smooth. Tip into a cocktail, margarita or rocks glass, garnish and serve.
