Changing lives one coffee cup, meal at a time By Betsy Denson betsy@theleadernews.com
A fresh cup of coffee or a delicious dish are pleasures all to themselves, but with some local businesses, the good feelings continue after the meal is over. Coffee shop and non-profit A 2nd Cup, located at 1111 East 11th Street, started in 2012 — not only to raise awareness about human trafficking in Houston, but also to help survivors start over. Development and Communications Director Julie Jackson said that until 2015, A 2nd Cup occupied what they lovingly referred to as their “incubator space in next door’s Vineyard Church. There is a director staff of three – Jackson, Executive Director and founder Erica Raggett, and Operations Director Brooke Evans who all operate under the leadership of a board of directors. “While none of us have personally dealt with the direct effects of trafficking, thankfully, we are each connected to the cause in ways where we couldn’t not do anything to help end it, said Jackson. They do this by selling good coffee and using the proceeds to educate others about the crisis of human trafficking, and to fund programs to help rescue and assist victims. Good coffee is key to the endeavor. “We don’t want to be a nonprofit coffee shop that wants your support for a worthy cause and serves you a low quality product in the meantime, said Jackson. “So the quality of our coffee is very important to us. They partner with Boomtown Coffee, a small batch coffee roaster in Houston, who Jackson affectionately calls ‘coffee nerds.’ “Boomtown has been so great to us from the very beginning, said Jackson, who notes that they have seasonal
offerings from other local roasters, too, most commonly in their Split Shot program where 50 percent of the sales go to a specific anti-trafficking organization. The education aspect comes in from their baristas who are trained to answer questions and bring awareness to new customers. “We believe that sometimes the first step to acknowledging that slavery still exists in the form of trafficking is to speak about it — to have that conversation, said Jackson. “We also believe that our shop space is one of our greatest resources. The wall along the west side of the shop is marked by statistics and a call-to-action to mobilize the community. “We don’t want to just shock people about the issue, but we do want them to be unsettled and aware that it will take every one of us to end human trafficking both locally and globally, said Jackson. A 2nd Cup partners with many anti-trafficking organizations including Redeemed Ministries, Homes of Hope, Freedom Place, Love146, Free the Captives, The Landing, Children at Risk, the YMCA, Elijah Rising, United Against Human Trafficking, and Rescue Houston. “We are always open to new partnerships with anti-trafficking efforts in order to maximize everyone’s efforts in the same fight, said Jackson. Jackson says that 2nd Cup has recently established their first aftercare solution — a five month culinary training program. “[It is] a long-term solution to assist survivors of human trafficking to have a viable career in the culinary or hospitality field, she said. “Combining our expertise with the culinary field and the anti-trafficking community, we believe that this program will fill a need in our community. The pilot program will start in May.

Stop in for a cup of joe, or visit them at 1111 E 11th Street. Paper Co: A CafĂŠ for All Another combination cafĂŠ and non-profit enterprise is Paper Co CafĂŠ at 1100 Elder St. which is an offshoot of Ecclesia Church. The profits from Paper Co. provide for Houston’s homeless. The organizational structure is similar to A 2nd Cup with a leadership team that serves under an executive board. Manager Jessi Johnson said that her journey to Paper Co. began when she read The Irresistible Revolution: Living as an Ordinary Radical, a book that talks about putting love into action. Johnson did the “mission yearâ€? program at Ecclesia in 2013, and then worked at Taft Street Coffee, which is what Paper Co. was called before it and Ecclesia moved to Elder Street, near Washington Avenue. The cafĂŠ is clean and mod-
ern looking, with many professionals working away on laptops. Homeless Houstonians, or those in transitional housing, are also the clientele. “We don’t treat the cafĂŠ seating like real estate,â€? said Johnson, who noted that people are not booted from their perch to make way for the next paying customer. She also explains that every day there is something called the Common Meal served at Paper Co. “It’s a balanced, nutritional meal,â€? said Johnson. “Last week it was pork belly tacos and apples.â€? The Common Meal is offered on a sliding scale and up to 40 a day are sold. Those who can are asked to pay the suggested price or more so that that a homeless customer can have the same meal for as little as a dollar. “Everyone deserves to sit down and be served a meal,â€? Johnson said. There are also events like the monthly Harmony House
Mueva Coffee, which comes via direct trade with the farmers from the Matagalpa Highlands of Nicaragua. Johnson’s favorite Paper Co. java offering is the Flat White, with its ideal espresso to milk ratio. For more on Paper Co see www.papercohouston.com.

Locals help locals with farmer’s markets By Zarah Parker zarah@theleadernews.com Walking through the array of vendors at a farmers market is the perfect way to spend the morning on any given weekend. With seasonal fruits and veggies always available and friendly faces behind the tables, farmers markets make grocery shopping fun—especially because some of the best are close to home. Grocery stores sell items marked organic, natural, cage-free, but with the rules forever changing on what food companies can decide to exclude on the label, it’s nice to go to a farmers market and meet someone who can actually answer questions or address concerns. The fact that they are local is the cherry on top of a community coming together to support one another. Luckily, The Leader area has a few farmers markets that offer delicious produce and more. A favorite market in the community is Canino Produce Co., which will still be included in the renovation of the property soon to be called Houston’s Farmers Market. Canino’s, open everyday from 6 a.m. to 8 p.m., first opened in 1958 on Airline Dr. and over the years grew so large the location now sits on over 20,000 square feet. David Pokorny said on a post in the Oak Forest Facebook page that his favorite market was, “Canino’s on Airline. Clean with friendly people and family owned since the 60’s. They have just about anything you could want produce wise. He wasn’t alone in his appreciation for the market, as many others chimed in saying that they’ve gone to Canino’s for years. However, with new property owners and a total remodel of the facility, there’s a worry that the market just

Johnson said that although the tucked away location of the cafe is a challenge, they have a “good foothold and get a lot of business from employees at the nearby permit center, as well as from church members. won’t be the same. “Love Caninos, but with the remodeling coming up it will be a totally different place. Should be nice with the new shops and live bands but will miss the way it is now, said Rosey Trevino Delgado. From produce vendors offering the freshest vegetables and fruits to a spice company, many new merchants will be added to the market, totaling sixteen. With a restaurant, designated play area for kids, and better parking, the new renovated property will sure to still be favored after it debuts, especially since the new owners want to keep as much of the original feel as possible. For years the Heights Epicurean Farmers Market on Heights Boulevard has been dedicated to bringing the best to the community every first Saturday of the month from 8:30 a.m. to 1:30 p.m. The market supports all things handmade, homemade, and locally grown, making it both a farmers and artisan market. The market vendors sell a wide variety of supplies, from seasonal fresh produce, mirco
greens and herbs, to dog biscuits, jams and macrons. Also available are gluten-free baked goods, Texas BBQ, preserves, hand-sewn items, pies, soaps, skin care products, home cleaning remedies, and much more. The block party style of the Epicurean market and the fun activities for kids, like face painting, makes this a great way to involve the whole family and connect with the other locals. It becomes a community within a community. Another nearby market is tucked away and has been hailed the gem of the neighborhood. The Farm Stand at Petrol Station, also known as Mickey’s Farm Stand, has a short list of vendors, but that works in its favor. Each vendor is unique and recognized by market goers. “The Farm Stand at Petrol Stations, said Brenda Thompson about her favorite market. “[because] local, fresh, and the best tacos! Megan Richard echoed Thompson’s opinion on the great tacos and added that she also loved the Farm Stand for the hot coffee and baby goats that often make appear-
ances. The Farm Stand offers fresh eggs, artisan breads, honey, handmade soap and more every Saturday from 9 a.m. to 1 p.m. What makes this market so great is the location—it’s off Wakefield behind the Petrol Station, making it right in the middle of the neighborhood. It’s easy to miss it and drive by, so look for the canopies. Lastly, Eleanora’s Market sets up every Saturday in the parking lot of Cavatore’s. It’s a relatively new market, not yet a year old, but quickly gained popularity because of the great list of locally sourced vendors and artisans. Eleanora’s Market is committed to offering high-quality produce, cheeses, meats, baked goods, art, and more - rain or shine. With the wide range of vendors, they have something for everyone and it’s small enough not to feel overwhelming. The vendors are great locals who will answer any questions about the products without hesitation, and they’ll help every shopper find what’s best for them.

Art Valet: Dog Lodge Sanctuary announces inaugural “Artists for the Animals” event
Meet your neighborhood CoMMerCial real estate experts over 70 years CoMbined real estate experienCe
Mitch Cohen Art Columnist
Where do old dogs go? How about old dogs with special needs? Elaine Rosen and Rick Laminack have big hearts because they founded Dog Lodge Sanctuary, set to open this summer - the sanctuary is a Texas-based 501(c)(3) organization dedicated to providing a permanent home for senior and/or special needs dogs. Laminack told me the sanctuary has a vet clinic, therapy room and an acre outside paddock for running around and socializing. The primary function of Dog Lodge is to come to the rescue of dogs that are, for all intents and purposes, considered “unadoptable” because of advanced age or because they have chronic illness or physical disabilities. “The Sanctuary is an alternative to life on the streets, abuse, neglect, fighting, and euthanasia,” Laminack said. “Here is an opportunity for those dogs to be in a place where they can belong; where they can be happy, where all their special needs can be met – where they can love and be loved.” Artists have always reached out to help our four-legged friends and this Saturday evening you can join them. AFTA, or Artists for the Animals, is a collaborative partnership with local, state, and nationally known artists, by invitation, who support the efforts of Dog Lodge Sanctuary through their talents, shows, and exhibitions. Their first event is being hosted by Houston artist April Murphy Saturday, April 21 from 6 – 9 p.m. at her Winter Street Studio #3B, 2101 Winter Street. Other participating artists include Paula Miller of Pagosa Springs, CO. and Allison Gregory of Austin, TX. Expect to find great art for

sale, a silent auction, and food and beverages. The event is free to attend and proceeds will benefit Dog Lodge Sanctuary. Dog Lodge founders, Elaine Rosen and Rick Laminack, will be speaking about the labor of love Dog Lodge has become and the impact sanctuaries like this have on the “animal rescue/shelter” community. To find April Murphy’s studio, drive around behind the studios and look for Murphy’s deck next to the Winter St. Art Alley entrance. Also Saturday evening, and just a few steps from Murphy’s studio, SITE Gallery Houston will present the first public art installation of Shelter in Place, a community-focused photography project by Houston artist Keliy Anderson-Staley that will culminate in a temporary sculpture, on view for only one week, April 21-28. There will be a public opening on April 21, from 5-9 p.m., with refresh-
ments served, and the closing day of the exhibition, April 28, will coincide with the Sawyer Yards Biannual Art Stroll. The simple temporary house-like structure, sheathed in original tintype portraits, will be installed under the train shed at the Silos at Sawyer Yards. Several hundred portraits, each a one-of-a-kind metal plate, will be on view on the surface of the structure. 1502 Sawyer St, Suite 400, www.sitegalleryhouston.com/ shelter-in-place I met Anderson-Staley this past Saturday where she was getting ready to begin assembling her exhibit. This will be a fascinating piece, do not miss it - I hope to bring you more about this next week, before the closing. Craft Chronicles
A cup of joe isn’t just found in the coffee shop Landon Weiershausen Columnist
The weather is changing. Then changing back. Then changing again and, well you know how it goes. What should we do? For me it sounds like time for coffee in the morning and beer in the afternoon. Oddly enough I am not a coffee drinker. When I think of coffee, generally I envision a big steaming cup of plain joe which really isn’t fair to coffee because there are tons of different coffee beverages and options out there these days. While not a coffee beverage per se, coffee beers have become a staple in the repertoire of many craft breweries across the country. Today I will focus on a few of the many different ways brewers utilize coffee in
their creations. Coffee and beer go hand-in-hand. Doubt me? There are actually many varieties of barley malt that already give off coffee like aromas and flavors from the roasting they receive during production, a natural pairing with coffee itself. Plus, there are so many different varieties of coffee out there that each one can add a subtle nuance to your beer. And we know there are tons of different ways to make coffee - Drip, French press, cold brew etc. – that can each add their own flavor profile and then you could just add the grounds themselves. The brewers can add the grounds in at the end of the boil essentially hot steeping the coffee to pull out flavor and aroma, but also astringency at the same time. The astringency factor is big in brewing because the dark barley malts we employ can also have the same effect. Astringent flavors result in a
chalky and very drying sensation in the mouth and can also cause a slight choking effect, we don’t want that last one in our beer for sure and the others need to be kept in check. For this reason, brewers have adopted several different coffee preparation methods to get that coffee flavor without the astringency. Cold brew methods are a quick way to add straight coffee flavor to beer, just like drip coffee would but without astringency. Brew the coffee and dump it in essentially. Much in the same way that hops are used in a “dry hopping” fashion after fermen-
tation, coffee can be added all the same. Whole beans or milled coffee is added straight to the fermenter for a few days to allow them time to release their goodness. Whole beans are being used in Golden Stouts now to get the flavor but not the color. They are a treat for the eyes and taste buds. Now who else is ready to go get their caffeine and beer buzz all in one?!? Cheers! Make sure to join us in our craft adventures each month. Landon is the owner of Farmboy Brew Shop. Local schools lead eco-friendly practices By Zarah Parker zarah@theleadernews.com Little by little schools are implementing environmentally friendly features on their campuses. From recycling to maintaining a garden, the schools in our community have stepped up to teach students to appreciate nature and the different ways to best take care of it. The benefit of schools going green impacts the environment outside, as well as the one inside. When schools move toward eco-friendly practices, the greenhouse gas emissions and energy cost drop. The air that circulates indoors can be up to a hundred times worse than the air outside. Going green can improve the air quality and in turn improve teacher and student health. Students spend about twothirds of their day inside a schoolroom. Purer air, healthy lighting, outdoor spaces, and quality food in the cafeteria are a few of the things that can improve health, but it can also serve as motivation for the students. Garden Oaks Montessori is an environmental science magnet that is dedicated to turning their entire campus green. They truly cherish the earth and every creature inside of it, so much so that they even made the earth the focus of their recent art car. The school used to have a huge pond where the native plant life was vibrant, and fauna roamed. A bird deck was built as well to give students the chance to nature watch and see firsthand what certain plants and animals looked like in real life. With the new Garden Oaks building and remodeling of the old ones, they’ll have to move the pond that essentially acts an outside classroom. Each classroom has its own garden bed that is used to teach the plant life cycle, both by teachers and in collaboration with Urban Harvest, a non-profit that encourages community, good nutrition, and sustainability though organic gardening. “[Garden Oaks Montessori] is looking in the fall to turn some of our garden beds into pollinator gardens and monarch gardens,” said Mira Balakrishnan, a beautification chair at Garden Oaks. Eventually they want to expand planting with different types of trees, and “the thought is to have fruit trees on campus, so the kids can pick them and learn to harvest,” said Balakrishnan. Inside the school they recycle and do composting. In the cafeteria they’ve switched out the lunch trays for ones that are more recyclable. They use a machine called StyroGenie, which is a thermal densification machine that takes polystyrene foam used for lunch trays (often mistaken for Styrofoam) and reverses the manufacturing process. It removes the air and turns the trays into liquid resin that is cooled and formed into small lumps for easy recycling. Harvard Elementary is also a leader in Eco-Literacy because of their teacher and student led efforts in using sustainable practices on cam-
pus. They were granted a StyroGenie as well. Harvard has also been recognized for successfully completing the Eco-Schools USA Silver Award criteria given by the National Wildlife Federation. The school entered the HISD Foundation Innovation Grant competition and was awarded a $20,000 grant for their “INSIDE OUT” proposal, which stands for Innovative, Nature-based Science Investigations Designed to Educate students OUTside proposal. “The grant funding will be used to enhance outdoor education by providing a space for students to understand how natural components and processes relate to science, technology, engineering and math learning while at the same time engaging in creative, imaginative play,” said Laura Alaniz, principal of Harvard Elementary. At Crockett Elementary teacher Christian Sakar raises Eco-awareness in her classroom. “I started by using a book called Mrs. Fox’s Class Goes Green for a read aloud. This was effective because we were able to brainstorm ideas and make text to self-connections during our turn and talks,” said Sakar. When the class finished the book, they discussed ideas on how Ms. Sakar’s class could go green. The students noticed that recycling bins were absent from the room. She then located two bins for her classroom and labelled one paper and the other plastic. The students also took the initiative to implement a classroom job of turning the lights off when they all leave the classroom. “They’ve extended the concept themselves and often bring back items from lunch to place in our classroom recycling bins. After breakfast I find empty milk cartons in the paper recycling bin and plastic straws in the plastic bin, something I never even suggested,” said Sakar. Currently Sakar is working on introducing the concept of native plants and their significance to conservation and sustainability. And though she hasn’t introduced the garden idea to the kids yet, she thinks Earth Day would be the perfect opportunity. At Travis Elementary, every classroom has their own garden plot. The school uses the plots to teach the students about organic farming, harvesting, environmental sustainability, as well as soil, and plant lifecycles. Mrs. West, a garden teacher at Travis uses the natural material from these gardens to teach art lessons. A project led by Travis’ fourth-grade team, Save the Travis Trees, takes a real-life problem at the campus and helps to find a solution. On the playground most of the bald cypress and live oak trees have exposed roots caused by water erosion and students running over them through the years. “Exposed tree roots can impact the health and growth of the trees. Our fourth graders are using their science, math and reading-language arts skills to develop a solution to this problem. They are researching the issue, have heard a tree expert discuss

the problem, and are working in groups to come up with a solution to the problem,” said Sarah Gonzales, a fourth-grade teacher at Travis. The students oversee researching the cost, safety, and environmental impact of whatever solution they choose to present. The best solutions will then be presented to the playground committee and they hope to implement a solution this summer. The culinary and gardening program at Hogg Middle School encourages kids to buy, eat, and grow local produce to reduce their carbon footprint. “We encourage their habits by growing fruits and vegetables in our school garden and utilizing our products in our classroom during cooking labs. The kids are introduced to a horticultural-themed lesson every week to better understand the importance of growing a healthy, eco-friendly garden,” said Janay Goodman, assistant culinary teacher at Hogg. Some of the lessons introduce the use of natural, non-chemical pesticides to cultivate organic crops, seed saving, proper crop rotation for soil conservation, and composting. The teachers communicate these principles so that the students can have an awareness of the benefits gardening offers to the community. St. Pius X High School is also invested in teaching ecoawareness to the students. “St. Pius X High School is committed to building respect for the environment and fulfilling the Dominican Sisters mission to live and act in an ecologically responsible manner, which is taught throughout the curriculum on a daily basis,” said Diane Larson, principal of St. Pius. At St. Pius, the Energy Team monitors school energy usage through participation in the Sustainable Schools Program sponsored by Center Point Energy and Wildan Solutions. The student led team routinely conducts inspections of energy usage and then makes recommendations to the school in how to save energy. The high school also runs a recycling program of all paper and plastic products that involves different organizations on campus, rotating the responsibility throughout the year. “Thursday, April 19 will be SPX Blackout Day, where [the] students, faculty, and staff will wear all black in support of unplugging from and turning off all waste of electricity for one school day. Funds raised from this day will be directed

The Generals defeated A & M Consolidated 2-0 in the first semifinal before Waltrip played its final playoff game. The Rams finished 12-4 on the season and all four of the losses were by one goal. They finished 9-3 in district with two 1-0 setbacks to Wisdom and a 1-0 loss to Sharpstown.
By Mike Tenney For The Leader The soccer season at Waltrip High School is officially over and both the boys and girls teams had an excellent year with one team making a deep playoff run while the other was unbeaten in claiming a district championship. The Waltrip soccer team had an extended playoff run came to an end last week in the Region III tournament and the girls were the undefeated District 24-5A champions, but fell in the first round of the playoffs. Boys District 24-5A was wellrepresented last week in the Region III-5A semifinals at Turner Stadium in Humble with champion Houston Wisdom and runner-up Waltrip making up half the Final Four. And Wisdom was the team that took the regional championship with the Rams getting eliminated in the semifinals, 2-1, in a thrilling match against Huntsville. But just 24 hours later, Wisdom scored two goals in the final 18 minutes to rally for a 2-1 win over Huntsville, to advance to this weekend’s 5A state tournament. In the regional semifinal loss, the Rams scored first in the game, going up 1-0 at the 25-minute mark of the first half. But the Hornets

tied it just before halftime and then got what would be the game-winner with a goal off a corner kick during the middle of the second half. The ball sailed in front of the goal post and was loose for a few seconds before a Hornet forward drilled it into the back of the net to set off a big Huntsville celebration. The Rams finished 9-3 in the district, losing 1-0 to Wisdom on the final night of the regular season. That win allowed the Generals to close out as the undefeated champs. But the Rams regrouped once the playoffs started, winning three straight games, includ-
ing two by shutouts, before they fell to Huntsville. The red-and-white opened the postseason with a hardfought 3-2 win over Texas City and then whipped Crosby 4-0 in the Area Round to advance to the regional round for the first time in over a decade. They opened the quarterfinals with a superb 3-0 win over Kingwood Park to put them in the semifinals against Huntsville. In that win, the match was scoreless at halftime, but the Rams found the back of the net three times in the final 40 minutes to break it open and secure their trip to the semifinals.

Led by a senior group that has played a pivotal role in the program’s success the last two years, the Waltrip girls finished ahead of Austin for their first district title in school history. The team was defeated 2-0 by Manvel out of District 235A in the first round of the playoffs. The Mustangs scored a goal in each half to getthe win. Goalkeeper Robyn Dogina, Sara Garcia Yesmin Castillo, Angelina Cuevas, Savanna Guzman, and Giselle Lopez were the seniors on the Waltrip team this year.

Rams name new football coach By Mike Tenney For The Leader Wayne Wheeler has been named the new head football coach and athletic coordinator at Waltrip High School. Wheeler takes the job after being a Waltrip assistant coach the past four years under head coach Todd Wright, who resigned last month to take the head coaching job at Ellison High School in Killeen ISD. Wheeler has been the team’s offensive coordinator the past four years and the Rams, with their spread offense, displayed one of the most wide-open aerial attacks in the city in 2017, averaging nearly 40 points a game in district en route to a District 24-5A and an undefeated regular season. Wright took the Waltrip job in the spring of 2014, replacing Milton Dailey, who resigned after just two years on the job due to health reasons and passed away from pan-
creatic cancer before Wright started his first season. Every year Wright was the Rams head coach, the team’s record got better, culminating with last season’s 8-0 mark that included the 24-5A championship -- the school’s first district title in 27 years. Wright was named the District 24-5A Coach of the Year for the team’s success. The 2017 season was shortened by two games because of Hurricane Harvey and like just about everyone else, the Rams weren’t able to get together and practice for a while due to the conditions. But despite the loss of time together, the red-andwhite were always prepared and played very well in every game. Wheeler and Wright are long-time friends and Wheeler was an assistant at Summer Creek when Wright
took the job at Waltrip. He hired Wheeler, saying the two had made a pact that when one of them became a head coach, he would hire the other one. Wright was a placekicker at Arkansas in the late 80s and played for head coach Ken Hatfield, who would become the head coach at Rice University in 1994. Wright was the defensive coordinator at Klein Oak, The Woodlands College Park, and New Caney before becoming a head coach for the first time when he was hired at Waltrip. Wright was in charge of the defense for the Rams, leaving the offense to Wheeler. Wright posted a 29-13 overall record with the Rams, including 14 consecutive district wins to start this season. Waltrip currently resides in District 24-5A with eight other Houston ISD schools and will remain part

of the District 24-5A for competition when the new school year begins in September. The Rams are scheduled to open the regular season 7 p.m., August 30 when they travel to Bridgeland High School to face the Bears in their first-ever varsity football game. Bridgeland is the newest high school in Cy-Fair ISD. At Killeen Ellison, Wright replaces Trent Gregory, who announced his retirement from coaching in January.
