By Zarah Parker zarah@theleadernews.com After two years of perfecting recipes for nutritious baked goods, and spending five years building an allergyfriendly, health-centered bakery, founder Jennifer Thai is bringing Awesome Bites Co. to the Heights at Sawyer Yards. This decision was made after seeing how popular her “Super Muffins” were at local farmers markets. These muffins are made with whole fruits and vegetables instead of sugar. With the expansion into its first brick and mortar, Awesome Bites will begin serving new nutritious goodies that are handcrafted, allergy-friendly and vegan. It is expected to open in April at 2313 Edwards St. Ste. 185. “We launched Awesome Bites when I couldn’t find safe healthy foods that my daughter, who had food allergies, would actually want to eat,” Thai said. Though this journey began with her daughter, it took Thai to different places to learn and train in the art of baking. She

AshleyCakes is Houston Rodeo Grand Champion On Feb. 17, the Houston Livestock Show and Rodeo hosted a destination for local food and wine enthusiasts during the Rodeo Uncorked! Roundup & Best Bites Competition. The annual competition paired dishes from Houstonarea culinary institutions with winning wines from the 2019 Rodeo Uncorked! International Wine Competition. James Coy “Mac” McCelvey, age 103, passed away February 11, 2019 in Houston, Texas. He was a wonderful father and grandfather, and our link to a way of life that has faded away. He was born April 9, 1915, on a farm in Houston County, Texas, the ninth of eleven children, to James Thornton and Lucy Della McCelvey. The family grew cotton and most of their own food, plowing with mules. Mac was the only person we knew who served in three branches of the armed forces, the Marine Corps during the depression, and the U.S. Army and U.S. Navy during WWII. He worked for the Well Equipment Company (WECO, later merged into the FMC Corporation) for almost 45 years. Mac was married to Rita Lewis McCelvey for forty years prior to 1991. He lived in the same house in Oak Forest for over 60 years and touched the lives of many of the residents in that community. He loved to share the oranges, figs and pecans that he grew, and the honey from his hives. Mac is survived by his son Michael and fiancé Bichlan Thai; son Patrick and wife Barbara; daughter Debra Hayes; grandchildren Abbie Dollar, James McCelvey, Leah Carriveau, Daniel McCelvey, Shawn Hayes, Morgan McCelvey, Mason McCelvey; and three great grandchildren. The family would like to thank the caregivers of Brookdale, the Heights, and Tranquility Personal Care Home for their compassionate care of Mac over the last year, and to Linda Canning for her help to Mac and the family over many years. In lieu of customary remembrances kindly consider a contribution in Mac’s name to the Conner Cemetery Association, P.O. Box 148, Ratcliff, TX 75858, or to the charity of your choice.

Diana Freeman is gearing up to open her bakery at 704 E. 26th St. in March. Freeman’s goods will be available for pick up or delivery. She will take orders directly but will be at local farmers markets, too. “I have been a lifelong home baker,” Freeman said. “I just moved to the area and have been buttering up my work colleagues with breakfast treats for months, and they all encouraged me to start a side hustle. So I decided to take the leap.” The bakery is inspired by Freeman’s grandmother. “I honestly can’t remember when I first started to bake with my grandmother, Nonnie, but I definitely needed a stool to reach the countertop,” she said. “We had 25 years of baking and laughing and messing up the kitchen together before she passed away in 2008.
