When The Leader visited with local chef Karuna Diedericks two years ago, she had started a cooking and consulting business to build upon a personal chef service she had offered since 2011. It was centered on Ayurvedic principles — Ayurveda being the traditional medicine of India dating back 5,000 years. Now she is fine tuning her vision and taking the endeavor full time, partnering with ISKCON of Houston to offer cooking classes at their eight acre property in Shady Acres. An Ayurvedic practitioner who earned her degree from the California College of Ayurveda in 2007, Diedericks said that the impetus for shift-
ing gears was part necessity and part passion. “I was also doing education and sales for ten different vitamin and skin care lines with Whole Foods and other health food stores, but when Amazon bought Whole Foods there was no need for a middle man and my job became obsolete,” she said. “I also felt my calling was to help people transition to a plant based diet because I’m always getting asked about it. I wanted to help people find their natural balance in other areas of their lives as well. Ayurveda is about physical, emotional and spiritual well-being.” Diedericks decided to move away from chef work and hired a business coach to help her drill down on her plans to be See Cooking P. 3B

As CNO, Szapor has executive oversight of regulatory standards, compliance, patient satisfaction, patient safety, quality of patient care, and employee engagement. “We are excited to have Ann lead our nursing team. Her extensive background in team building and leadership is supported by a collaborative mentality that elevates patient care,” said Susan Jadlowski, Senior Vice President and CEO of Memorial Hermann Greater Heights. “Ann has a track record of improving patient experience within multicampus health care systems, like Memorial Hermann Health System, and she will be an excellent addition to our team.” Most recently, Szapor served as CNO for Ocala Regional Medical Center in Ocala, Florida. In that role, she directed multiple collaborative initiatives to improve clinical outcomes and patient experience and reduce nursing turnover. Before her role in Florida, Szapor spent 25 years at AtlantiCare Regional Medical Center in Atlantic City, New Jersey, where she rose from a staff nurse to Assistant Vice President of Nursing. “I am proud to join the nursing team at Memorial Hermann Greater Heights. He then moved on to the Ophthalmology program at UTHSC-Houston. Once he graduated, he opened the practice and built it from the ground up until he was joined by Dr. Dora E Cantu. Cooking from P. 1B a coach and mentor for those seeking guidance leading a healthy lifestyle, as well as with stress management and other needs. She has been doing online consultations for some time and feels the format works well with people’s busy schedules. However, for the cooking component she needed a kitchen. She was looking for a place where she could cook, teach and also make teaching videos when a friend connected her with ISKCON, who was seeking someone to offer classes. A plant-based cooking school, called Karuna’s Ayurvedic Kitchen, was born. “It was the perfect coming together,” said Diedericks. “They liked my idea.” The Farm, an ISKCON property off Wheatley, has three cows, a garden area and an outdoor stage for events. Diedericks liked The Farm’s
location adjacent to Oak Forest because her daughter Sundari attended Oak Forest Elementary school and she has lived in the neighborhood for ten years. There is a house at The Farm with a kitchen where Diedericks will offer her classes. Although she currently buys organic produce from Sprouts, there are plans to coordinate with ISKCON’s farming projects so that Karuna’s Ayurvedic Kitchen can be farm to table. “We would teach according to the growing seasons,” she said. “It will take a little while.” The food Diedericks will teach people to prepare will combine whole foods in a way that’s tasty – and quick to prepare. “I want them to come home from a long day’s work
and have something easy to make,” she said. The dishes are inspired by traditional Indian meals with plenty of vegetables, protein based soups and dahls. There will be chutney and pesto and alternative grains like quinoa and millet. “It will be vegan and gluten free as far as I can,” said Diedericks, who added there will be some cakes and some dairy offerings, courtesy of ISKCON’s Brahman cows. “People are unique and different,” she said. “It’s about finding out what’s best for their bodies.” While Karuna’s Ayurvedic Kitchen will start out with just Karuna, Diedericks plans to bring other teachers on as well. Hands-on class size will range from 12 to 16 people, although if Diedericks is doing a cooking demo the groups could be much larger.

LHN women’s basketball courts strong start for TAPPS By Mike Tenney For The Leader The district girls’ basketball races are reaching the home stretch with the middle of January here and the playoff contenders starting to separate themselves from the pretenders as the games on the schedule wind down. Lutheran High North Taking a nail-biting 42-40 road win over The Woodlands Christian Academy (TWCA), the Lady Lions started their TAPPS District 5-4A schedule just the way they had hoped. Now, they will look to keep it going this week with two more big district games. They also have a non-district game as well next week, giving them three games in five days. They will host St. Thomas Episcopal 6 p.m. Tuesday, Jan. 16 and then go on the road, Friday, Jan. 20 to play Cypress Christian in what could be a very big week for them with a couple of victories because it would give them a leg up on the other five teams in the district. The next afternoon, Sat-
urday, Jan. 21 the Lions step away from conference play to host St. Agnes Academy at 2 p.m. Heights With the District 18-6A girls’ basketball schedule at its midway point, the Heights ladies are right in the mix for a definite Region III playoff berth and a possible district title. The Bulldogs began league play with four wins in five games to sit right behind Bellaire in the league standings as the Cardinals won their first five games. (That only Heights’ loss was a 68-60 defeat against Bellaire). With a deep and balanced attack, head coach Kerrick Arrington’s team is scoring a lot of points on most nights and wearing other teams down with their grittiness. There are 13 players listed on the team roster and everyone is averaging at least three points a game when they get on the floor. The team had a very good holiday break, winning three of five games at the Fidelity Communications Holiday tournament in Daingerfield, winning three of five games.
The Bulldogs are a younger team with six freshmen compared too just three seniors and two juniors, but those varsity rookies have meshed well with the older girls to create some serious momentum heading into the latter part of January. Point guard Gracelynn Alvarez has set the pace for that young group and she leads her team in scoring, averaging just less than 16 points a game. Senior Elizabeth Ramos, one of the team’s three tri-captains, is second in scoring at just under nine points a game, but freshmen guards Sincere Roberts and Trinity Frias, who has played in just five games, are both averaging over eight points an outing. Besides that trio, post person Tierra Simon, and guards Jada Beasley and Chloe Figueroa are the other three freshmen that have productive when their number has been called. It isn’t totally, however, on the youth as senior centers Jasmine Gonzales and Joylynn Harris has provided experience and leadership while the wins continue to pile up.
The Bulldogs, who began this week with an 11-6 record overall, tips off the second half of the 18-6A schedule Tuesday, Jan. 17 with a 4:30 p.m. game against Chavez at Delmar Fieldhouse. Waltrip Having only District 245A games remaining on the schedule, the Waltrip girls are hoping for a winning streak that will push them into the top half of the league standings. A winning streak has eluded the Rams so far this winter as they
sit around the .500 mark both on the season and in district, but knowing they have to win the games they play now to keep their postseason hopes alive, Waltrip is looking to find that right combination that get them moving forward. The Rams do have some
work to do with Madison winning its first eight district games and Wisdom taking six of its first seven, but the Rams control their own destiny with six or seven wins down the stretch being the ticket they need to punch their ride to the playoffs.
