When it comes to grabbing a bite to eat, Plainfield is full of options. Now, the village board will take a closer look at the options that can come and go – food trucks. The board had an informal discussion on possible regulation of food trucks inside village limits during its July 11 committee of the whole meeting. Food trucks have shown up more frequently in and around Plainfield, most prominently at regular events held at the Plainfield Public Library District. The village currently has no regulations or permit process in place for food trucks, which means trucks coming to town are subject only to the rules established by the county. Now, the village will explore how to balance the regulation of those portable businesses against the needs of brick and mortar businesses already established in Plainfield. “I think we should encourage entrepreneurs, but at the same time allow a free market without an unfair advantage,” trustee Garrett Peck said. “Other existing businesses are paying property taxes at their
