Versa5 celebrates grand opening At 4,800 square feet, Versa5 has more space to operate with than previous locations

Versa5 boutique dance studio hosted a grand opening Nov. 9 to commemorate its new name, location and ownership.

The studio, formerly known as Blonn Dance Academie and The Dance Academie, has 33 years of history in the Village of Downers Grove.

“This pretty much means my whole life,” said Deanna Thompson, owner of Versa5.

Versa5’s new home is 6218 Main St. in Downers Grove. The studio previously operated on Fairview Avenue, Curtiss Street and Belmont Road.

At 4,800 square feet, Versa5 has more space to operate with than previous locations.

“We have one studio primarily for adults that we run six classes

a day for adults,” Thompson said.

“The other two studios, those are just for youth classes we’re running in the afternoon back-toback.”

Many studios in the area do not hold programming geared for adults.

“This is part of the expansion,” Thompson said. “The only really big adult dance classes are in the city. So, we want to be a hub for the suburbs to provide these kind of dance classes.”

The studio has a history of training people who use their dance skills professionally.

“Being a previous student, I went and I worked for Disney professionally,” Thompson said.

“I did that before I actually went to college, so I danced for Disney,

and then I decided that I really need to go to school. So, I have a degree from Columbia.”

Thompson said seeing people put their skills to use in the real world is always a positive.

A number of other dancers have received training through the studio over the years and went on to use their skills in other professions, such as physical therapy and teaching.

“We have a curriculum that we

stick to,” Thompson said. “We also work with The American Academy of Ballet. We have their curriculum, and that’s just for our ballet program. We also have Discover Dance, which is our Tumbler Tots: toddler mommy and me classes. … We try to stay up with the market. [We] stick to curriculum because that’s how schools work, that’s how dance studios work.”

Thompson said the dance studio’s use of music is embraced by

the community.

Typically, the studio utilizes songs that are family-friendly and popular to help children learn the techniques needed to perform.

“This is definitely my vision,” Thompson said. “I bought this… studio in May, and then construction started here in June, and this was definitely my vision and my husband’s vision putting this all together.”

Thompson said the studio’s future in the village looks bright.

“I think we have a lot that Downers Grove doesn’t offer, like barre classes and Zumba and adult dance classes,” she said. “[Expansion plans,] could be a possibility in the future, for sure.”

fected with antibiotic-resistant bacteria and at least 23,000 die as a result. Antibiotic resistance, one of the most urgent threats to the public’s health, occurs when bacteria no longer respond to the drugs designed to kill them.

Be Antibiotics Aware provides educational resources to help healthcare professionals improve antibiotic prescribing. Be Antibiotics Awareeducates the public on what illnesses antibiotics treat, how to take antibiotics appropriately, and that antibiotics can have minor to very severe side effects. The resources include fact sheets, a brochure, infographics, and social media, video and audio tools.

Antibiotics are critical tools for treating a number of common in-

fections, such as pneumonia, and for life-threatening conditions including sepsis. Antibiotics are only needed for treating certain infections caused by bacteria.

District 99 visual art students win awards Fourteen District 99 students and one faculty member received awards at the Chicagoland 4x5 High School Art Exhibition on November 8. Each piece in the Exhibition is contained within a 4x5 inch framework. Dubbed the “largest small show in the nation,” and dedicated to the memory of Fremd High School art teacher Lew Hubbard, the Exhibition showcases student and faculty artwork and forges connections and provides opportunities for student artists through a myriad of corporate and collegiate sponsors.

Over 40 schools submitted over 900 pieces of artwork in nine media categories for the competitive show; 14 District 99 students and one faculty member received awards. A complete gallery of all winning artwork may be accessed HERE. “The Chicagoland 4x5 Show is a national exhibition treasure for high school students.” said DGS Fine Arts Department Chair Glenn Williams.

Holiday food safety: The basics and beyond As we have reached the time for holiday meals and parties, it is once again a good practice to review both the practical things, as well as the “sometimes hidden and forgotten secrets,” when it comes to keeping our food safe.

Some of the common items, such as washing hands with warm water and soap for 20 seconds before handling food, and rewashing them when any change of tasks takes place while preparing food (such as handling garbage, touching the dog or cat, picking up something that fell on the floor), are common instinct for many.

But there may be some other tips that make people say, “Oh, I never thought of that!”

The Food and Drug Administration likes to highlight four major categories, or should we say four specific verbs, when it comes to preparing food: clean, separate, cook, and chill.

The “clean” category includes the part about 20 second hand washing, but it also reminds us to clean all surfaces that will have contact with the food: such as countertops, cutting boards, dishes, and utensils. They should be washed with hot, soapy water as well.

But here’s an important thing to distinguish: while it is wise to rinse fruits and vegetables thoroughly under cool, running water (with perhaps a produce brush to remove stubborn surface dirt), it is not wise to rinse raw meat and poultry before cooking, as this can cause bacteria to spread to areas around the sink, such as countertops.

“Some people rinse out the cavity of the turkey or of a chicken, or even rinse their steaks,” says Will County Health Department Environmental Director Tom Casey. “But when you do that you are literally splashing the raw meat juices all over; in addition to on your hands, arms, and body.”

For “separate,” this is where you do not allow raw food that will be cooked to touch foods that will not be cooked until they are served. For example; raw eggs, meat, and poultry; as well as their juices; should be kept away from vegetables, salads, and other ready to eat items. It is best to keep all of this in mind through the entire process: from the purchase at the store, to the storing in the refrigerator, to the preparation and serving of the meal.

There should also be separate cutting boards for foods that are raw and for ready to eat foods. And another thing that could be an “oops, I forgot” mo-

ment: cooked meat, or anything that is ready to be served, should not be placed on an unwashed plate that has already held raw eggs, meat, poultry, or their juices. This will avoid cross-contamination.

For the “cook” category, temperature is extremely critical, especially when preparing a holiday turkey. A turkey should never be judged to be “done” or “not done” depending upon its color.

Instead, a food thermometer should be used, and should be inserted into the innermost part of the thigh and wing away from the bone, as well as the thickest part of the breast. The temperature for both the turkey and stuffing (if the turkey is stuffed) should be a minimum of 165 degrees Fahrenheit.

And speaking of stuffing, there’s another important area of caution that is often forgotten. Not only should the stuffing be the same temperature as the turkey when done cooking, but the turkey should be stuffed just prior to being placed in the oven. In addition, it should be stuffed rather loosely, at about ¾ cup of stuffing for each pound of the turkey.

Other “cook” items include bringing sauces, soups, and gravies to a rolling boil when heating or reheating. And if you are making your own eggnog, or if you need raw eggs for a certain recipe; you should use pasteurized shell eggs, liquid or frozen pasteurized egg products, or powered egg whites. “The pasteurized shell eggs are where the eggs are heated up while still in the shell according to FDA regulation, and then preserved at 41 degrees Fahrenheit or less,” Casey explained. “You need to ask your grocer if they carry these products.”

And while on the topic of raw eggs: although this is a favorite of many kids, eating uncooked cookie dough is not safe, as it may contain raw eggs. “Yes, a lot of us did that,” Casey admits. “But it’s just not safe. And this goes for stuffing

as well. Some people like to taste their stuffing after all the flavorings are added before it goes into the bird. But you are consuming raw stuffing, which commonly means you are eating raw eggs.”

For the “chill” category, the number one rule is to refrigerate leftovers and takeout foods within two hours of the meal’s conclusion. It is important to remember that room temperature falls right in the middle of the “danger zone” for bacteria to begin rapidly growing on food that’s left out. That danger zone is identified as anywhere between 41 and 135 degrees Fahrenheit. Although we often love to leave leftovers and desserts out for a while as the evening at home moves into relaxation time, this includes pumpkin pie as well.

And getting back to the start of the process, food should not be defrosted at room temperature. You should defrost in the refrigerator, under cold running water, or in the microwave as part of the cooking process. “The reason to use cold constantly running water,” Casey explained. “is to make sure particles are rinsed off and going down the drain.

This is much safer than having something, like a turkey, thawing in stagnant water.”

And if you are using the fridge to defrost, it’s important to remember to not wait until the night before your meal.

For example, a 20-pound turkey often takes four or five days of refrigeration to completely defrost.

What’s something else that is often not thought of? Always thaw raw meat, small or large, on the bottom shelf of your refrigerator. This avoids the dripping of raw meat juices on to food that would be stored below.

When it comes to Minooka volleyball, there is no name that is more prominent than Perinar.

And, as the final of the five siblings — that all are, or have, played volleyball at the Division-I level — senior Rocky Perinar just may have saved the best for last.

This season, the youngest Perinar posted 351 kills, 90 blocks, 230 digs and 22 aces. She was named to the All-Southwest Prairie Conference team and helped the Indians to a second-straight IHSA Class 4A second-place trophy.

For her accomplishments, Perinar has been named the 2017 Voyager Media Player of the Year.

“She truly peaked as the season went on,” Minooka coach Carrie Prosek said of Perinar. “During the playoff games, she was the one that got the kills when we needed. (In the state semifinal game against St. Charles North), she was the one that got the kills and her defense picked up and her serve and serve receive.”

Perinar said she put in the work to make her game better to help the team advance as far as possible this season.

“Knowing that this was my last season with all the girls I grew up with, it really got in my head that

every point could be my last,” she said. “Putting everything out there every game with the people I love is what I cherished this whole season and putting hard work into every single practice and every single game is what we all did.

“Putting heart into every single practice and growing throughout and being around the people that I have made me push harder every single practice – so it wasn’t all because of me, it was because of the whole team. Every single thing I have done to grow is because of the whole team and I am happy I have the girls behind me and they support me so much.”

Prosek said Perinar is the type of player that does not change her emotion no matter the circumstance.

“Rocky is that type of player that you will never see a different face on her,” Prosek said. “If she is playing bad, she still looks happy.

She has that poise on the court and she is positive all the time.

She doesn’t need the fame and glory and that is why she doesn’t get it sometimes. I can’t wait for see her play at Tennessee.”

Perinar, an Under Armour AllAmerican r will play next season at the University of Tennessee in Knoxville under coach Rob Patrick, who said, in a release. “Rocky

will bring a physicality that will allow her to compete at a high level at the net early in her career.

She has the ability to play all six rotations and attack successfully on both pins and through the back row. She presents a physical net presence also with her blocking. We are excited about Rocky’s potential as a back row player.”

Perinar said the choice of schools was not a very hard one.

“It felt just like home there and the warm weather didn’t hurt,” she said of Tennessee. “I think the coaches there are great and are going to push me every practice.

I am really excited. I can’t wait to be down there and work hard this summer and hopefully be a big threat down there.”

TAYLOR BARANSKI MINOOKA Senior libero posted 513 Digs, 30 aces and 52 assists for the Indians. Named to the All-SPC team.

“Taylor plays with passion and she takes pride in the skill of passing.” Prosek said. “She is the heart, soul and glue of a team.”

HOLLY BONDE MINOOKA Senior tallied 265 kills, 128 blocks, 28 aces and 215 digs this season for Minooka and was named All-SPC.

She was the team leader in kills with 315 and in aces with 58 and was second on the team with 273 digs and added 60 blocks.

“She was our No. 1 attacking option and was our most dependable six rotation player,” said North coach Mark Wasik.

She has signed with Villanova University.

EMILY HOLBROOK JOLIET CATHOLIC Junior outside hitter led the Angels in kills (261), service points (189) and aces (41), while also posting 146 digs.

She was named to the ESCC All-Conference Team as well as the Metea Valley/Oswego East All-Tournament Team.

“Emily has an amazing amount of ability for a girl of her size,” JCA coach Christine Schiebe said.

“She is quick, jumps extremely well, and is very strong. Although

“JoDee has been one of the hardest workers since she walked into Lockport as a freshman,” said Lockport coach Nick Mraz.

“Her hard work paid off as her presence on the court had to be accounted for in the game plan for every team we faced. She was named to the SWSC All-Conference team as well as, Plainfield North Invite All-Tournament and Rich East Invite All-Tournament.”

LILLY JOHNSON BENET ACADEMY Senior outside hitter paced Benet with 276 kills and 26 blocks on the season.

The Bradley University commit was the MVP of the Benet Invite, she was named to the All-Tournament team at the Wheaton Classic, Mizuno and Autumnfest, as well as the ESCC All-Conference team.

“Lilly has been our most consistent offensive player this year,” said Benet coach Brad Baker. “She is the player that when we need a big swing, she takes it. She was a four-year varsity player and because of this experience, Lilly has also been an important leader for our team. I feel like Lilly has had a great high school career, but her best volleyball is still ahead for her at Bradley.”

Her freshman and sophomore year she was our M1 and we moved her to the outside this year in order to dish her the ball more,” said Bolingbrook coach Molly DeSerf. “She adjusted seamlessly to the new position and quickly became a 6 rotation starter for us. This was her first time playing the back row.”

“Sarah has been a three-year starter for the Angels and has been our captain and emotional leader for the past two seasons,” said coach Christine Schiebe.

“She put our hitters in good positions to get kills with her setting and she vocally willed the team to win on several occasions. Her heart and passion just add to physical abilities.”

“Madeline was the heart of the Maine East volleyball team this season,” said Maine East coach Kevin Bohn. “The best passer and defensive player on the team, she helped lead us to one of the best seasons in Maine East history.

“Her work ethic is remarkable and she has left her mark in Maine East volleyball program at the libero position.”

Goal of this highvisibility effort is to reduce motor vehicle crashes As millions of motorists hit the road to celebrate Thanksgiving, Illinois law enforcement will be working around the clock to make sure holiday travelers are buckled up and driving safely. The Lisle Police Department is joining the Illinois Department of Transportation and the Illinois State Police to remind motorists to Click It or Ticket.

The goal of this high-visibility effort is to reduce motor vehicle crashes and resulting injuries and fatalities. Correct seat-belt use is the most effective way to protect vehicle occupants. According to IDOT, the statewide seat-belt usage rate is at 93.8 percent.

Drivers and passengers can expect a ticket from Lisle Police Department if they are spotted without a seat belt. Stepped-up patrols and seat belt enforcement zones will be seen throughout Lisle and the state Nov. 17-27.
