Meet Kimberly Vincent, owner of Topknotch Vegan Vittles.

Kimberly is a Blue Springs resident who started her vegan catering business out of necessity. In 2000, Kimberly started having debilitating health issues: “Every time I ate, I got sick.

I didn’t feel good. I was tired. My stomach was bloated. I was just miserable.” Between regular hospital and ER visits, Kimberly decided to stop eating bread, dairy and meat and refused to keep taking the countless medications her doctors would prescribe. “I continued eating that ‘nothing’ diet (no bread, dairy, or meat). A month later, I started feeling different.

I started getting some relief, and two months later, I started noticing that my stomach aches got better every week. And in three months, I could not believe how much better I felt by giving up meat and dairy. And in six months, I felt like a totally new person.” Kimberly began experimenting in the kitchen, and Topknotch Vegan Vittles was born.

Kimberly serves clients who don’t have access to healthier dietary options. “Education, knowledge, opening minds and changing peoples’ perception is my goal. A lot of people are struggling with these same issues.
