Chicken and Black Bean Chili Serves 6 to 8 1/2 cup olive oil or vegetable oil, divided 1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch cubes 2 to 3 tablespoons chili powder 1 tablespoon cumin seeds 2 cups diced yellow onions 1 cup seeded, diced poblano chiles 1 red bell pepper, diced 3 canned chipotle chiles in adobo sauce, minced 1/4 cup minced garlic 1 14.5-ounce can black beans 1 15-ounce can diced tomatoes 2 ears corn, kernels cut from the cobs Salt Freshly ground black pepper 1 ripe avocado, halved, pitted, and diced 1 cup cherry tomatoes, quartered 1/2 red onion, diced 1/2 bunch fresh cilantro, minced 1/2 cup freshly squeezed lime juice 2 jalapeno chiles, seeded and minced 1 1/2 teaspoons kosher salt 1/2 cup crumbled Mexican cotija cheese 1/2 cup grated mixed cheddar and Monterey Jack cheeses Heat 1/4 cup of the oil in a heavy-bottomed, 8-quart pot over medium heat. Add the chicken, chili powder and cumin seeds and saute until the chicken is cooked through, 4 to 6 minutes. Transfer the meat to a bowl and set aside. Return the pot to the heat, add the remaining 1/4 cup of oil, and cook the yellow onions, poblanos, bell pepper, chipotles, and garlic, stirring frequently, until the onions start to brown. Stir in the beans with their liquid, tomatoes and corn and return the cooked chicken with all its juices. Turn the heat down to low and simmer, stirring every 5 minutes, until the chicken is cooked through and tender, about 25 minutes. Season with salt and pepper to taste. In a large bowl, combine the avocado, tomatoes, onion, cilantro, lime juice, jalapenos, and salt. Set aside. To serve, ladle the chili into bowls and top with the salsa and the cheeses.

(PX) — Many people are unaware that opal, one of October’s birthstones, is Australia’s national gemstone. With the 2000 Olympic Games taking place in Sydney, this kaleidoscope gemstone may become more popular than ever. Australia not only mines 95 percent of the world’s precious black and white opal, but offers opals of many varieties used in jewelry, including milky opal, jelly opal, boulder opal, crystal opal and some fire opal. The most common and affordable variety of opal is called milky opal or

white opal because it shows a play of color against a white opaque background. Colors can show as patches or as tiny flashes called “pinfire” and usually are light and bright pinks and greens. Jelly opals and crystal opals are transparent to translucent, and the play of color is a subtle sheen of color dancing through the gem, rather than color patches. “Fire opal is the gold to deepred transparent opal that is most commonly faceted for jewelry,” says Lynn Ramsey, president of the Jewelry Information Center. “Most other opals are cut in free forms, cabochons or slabs, depending on the shape of the rough material.” The most valuable opals, known as black opals, feature large, luminescent areas of one or more bright

colors against a dark background. Opals rarely are treated to enhance their color, however, they can be quite delicate and should not be exposed to steam cleaning or excess acids. The best cleaning method is with a soft damp or dry cloth. Opal has a long history, dating back to the pre-Roman times, when one variety of milky opal with patches of pastel red, blue and green was mined in what was later called Hungary. “In the 19th century, large deposits of opal were discovered in Australia, including the most rare, black opal,” says gem dealer Gerry Manning, president of Manning International, New York. “Today, opals also are mined in Mexico, Brazil, the United States and Canada.” Opals of all varieties have been used for everything from easing childbirth to bringing strength in battle. Long known as the Wish Stone, opal is supposed to promote love and romance and grant wishes and personal happiness. There was a time, in 19th-century Britain, when opal was considered bad luck for anyone not born in October. This largely was because of Sir Walter Scott, who portrayed opal as bringing bad luck and death to one of his fictional heroines, Anne of Girstein. However, Queen Victoria, who adored opals, helped to dispel this notion by giving opals to all of her daughters, whether born in October or not.
