This will start to solve the supply of housing for buyers but further exacerbate the supply for tenants.

The mango salsa 1 Large mango - not too soft 1 Bunch of spring onions, trimmed and chopped 1/2 Red chilli 1/2 Lemon - juice only 50 ml (1.8fl oz) Olive oil 1 pinch Salt and freshly ground black pepper Cut the mango (not too soft) into 5mm cubes and place in a small bowl with the chopped spring onions.

Finely dice the red chilli and add to the salsa. Next, pour in the olive oil and the lemon juice then season lightly. Store in the fridge until required.

Tiger Prawn Spring Salsa The finishing touches...

4 Slices of crusty bread 1 tbsp Olive or sunflower oil 16 Tiger prawns 1/2 Lemon - juice only Preheat the BBQ or griddle pan. Brush the slices of bread with a little olive oil and toast until golden brown on both sides.

Place the tiger prawns in a large bowl then sprinkle with the lemon juice and a little cracked black pepper. Place the prawns on the BBQ and cook for about 2 minutes on each side.

Serve on top of the toasted bread with a spoonful of the mango salsa.
