BOULDER WEEKLY
I
you are here.
picked this up on Pearl Street and took it to Chautauqua Park to admire the Flatirons. Because then you’ll have done the two things people outside Boulder know about our little city. Then, you’ll be ready for the Insider. Insider isn’t a directory of all the things to do and see in The People’s Republic — if you want that, pick up one of those phonebooks they insist on delivering each year. So instead of listing all the businesses and recreation spots in Boulder (and Boulder County) we’ve curated lists of the best Boulder’s local eateries, drinking holes, biking trails, music venues and more. If you’re new to Boulder, this guide will serve you well. In a matter of mere days, you’ll be talking and acting like a local, crowding hotspots of seasoned Boulderites and immersing yourself fully in the Bubble™. Now, hold onto your hat for this bombshell, but believe it or not, Boulder’s changing. That’s why we designed this guide to be a fun resource for people who have been in town a while as well. New breweries, food trucks, trails, shops and everything in between are popping up every week, and we wanted to be sure you’re in the know. The establishments and institutions we highlight in Insider have no doubt earned our seal of approval. But, there still remain hundreds of fine places to spend your time and money within Boulder city limits that don’t grace these pages. If you’re a transplant, you came out here to explore, so consider this your permission slip. Lastly, one bit of advice for all: Use this guide as a jumping off point. If you go to one of the places listed in Insider, turn to your left when you’re done and dive into the next experience. We’ll see you out there.

303
MORE THAN JUST an area code for the Denver/Boulder metro area, “303” has become a major branding tool for folks who want to indicate they really know what goes on at the local level. You’ll see it on hats, shirts, liquor bottles, business names. Everything. If you stumble upon a 720 or, goodness, a 970 area code, proceed with caution.

THE NUMBER OF Master Sommeliers, or internationally renowned and rigorously trained wine experts, in the City of Boulder. For reference, there’s seven such people in San Francisco, nine in New York City and only 149 in the U.S. It’s one reason why Boulder’s known as the “foodiest little city” in the country.
I
THE MEDIAN AGE of Boulder residents, thanks in large part to a University of Colorado population that comprises about one-third of the city’s residents. The school keeps Boulder young at heart, too, as you’ll see folks of all ages conquer recreational feats that’d make a younger person blush.
THAT’S RIGHT, we’re higher than a mile. At 5,430 feet of elevation, folks visiting from sea level may need a day to get acclimated, but we appreciate the height for the dry weather, sunshine and clean air it brings.
SPEAKING OF SUNSHINE, you’ll hear the statistic that Colorado gets 300 days of sunshine a lot. You may have even heard it on the airport tram. And it’s true — the sunshine mostly makes it pleasant to live here, but sometimes it will just bake you and make you run for shade and a cool IPA. Bonus: it melts the snow sometimes on the same day it falls.

SUMMING UP BOULDER BY THE NUMBERS

$905,000 THE MEDIAN HOME price in Boulder is out of control. A home that’d fit an average-sized family will set you back close to a million bucks. It’s indicative of a housing market that has gone off the rails, ever skyward.
THE NUMBER OF breweries in Boulder County. With that many micro-brews, you’re likely to come across any style you can fancy, and a few you don’t. There are breweries that specialize in German-style lager, Belgian-style dubbels and trippels, sours, IPAs, and everything in between.

Black bears come down from the mountains in search of trash and natural goodies, and, pro tip: it’s not wise to stand up to one of them. Though not as aggressive as brown bears, the black bear can rip your face off and destroy your TV.

n MORK & MINDY’S HOUSE, 1619 PINE ST. Take a stroll down Pine Street and you’ll cross a gray, Victorian-style house with large bay windows, a white picket fence and a tower on the eastern side. Look familiar? That’s because it is. In the ’70s, Robin Williams and Pam Dawber spent a considerable amount of time around this house shooting their breakthrough sitcom Mork and Mindy. Though the meat of the show was actually filmed before a Southern California studio audience, the exterior scenes were all shot in and around Boulder. The house is currently a private residence, so look, but do not touch.

According to our sources, this is the only place in the country where you can grab a cheeseburger cooked in a restaurant named after a cannibal. Back in the gold rush days, Alferd Packer was traveling alongside six fellow prospectors when a snowstorm trapped them in the mountains. Everyone died. Except for Packer, who resurfaced in civilization two months later. He actually confessed to eating his compatriots. All in the name of survival. Just like that second helping of fries.

n INNISFREE POETRY BOOKSTORE & CAFE, 1301 PENNSYLVANIA AVE. As one of merely three exclusivelypoetry bookstores in the entire nation, this intimate joint on the Hill certainly pulls its weight in the fight to keep good ol’ poetry alive. Every Tuesday night, owners Kate and Brian, who met in a graduate school poetry workshop, clear the floor for their weekly open mic poetry night. With poets visiting from around the world, you could say their mission to “promote the discovery that writing and reading poetry brings forth” is still riding success. So, got a rhyme? Bust it out here.

Its factory, located just north of town, abuts a 15-acre field, home to one of Boulder’s largest prairie dog colonies. When the resulting boycott headed by the Rocky Mountain Animal Defense garnered national press, Celestial Seasonings converted the open space into a private ecological park and guaranteed the dogs permanent protection. BOULDER HAS BEEN
extremely kind to us,” says Simeon Margolis. Though Margolis is describing the Boulder entrepreneurial food scene as kind, his sentiments cut across a wide swath of Boulder in general. This town has a legacy of alternative approaches to familiar forms. Margolis made his way to Boulder around 2010, following his childhood friend Andy Goldman, who was experimenting with mixing supplements and sweets in his kitchen. In 2012, the two founded Good Day Chocolate, bringing together fair trade chocolate and non-GMO supplements to provide energy, calmness or sleep assistance. As far as snacks go, there isn’t anything out there quite like Good Day Chocolate. Yet, the combinaSee EMPIRE on PAGE 20

tion of the two seems obvious. The same can be said of Alpine Start Instant Coffee. How many instant coffees are in your grocery? How many of them do you actually want to drink? Meanwhile, Boulder is home to many outdoor enthusiasts who are out on the trail, up on the mountain or biking across the valley long before the sun comes up. They don’t have time to wait for the percolator or the press. They need their coffee on the go and they need it now. Both Good Day Chocolate and Alpine Start Instant Coffee are what Aaron Mansika, managing director of Naturally Boulder, calls “Disruptions to the food system.” And they are what make Boulder’s food scene unique. Take Alpine Start Instant Coffee CEO Alex Hanifin for instance. Hanifin has spent the last 10 years in the Boulder natural INSIDER ’17
food scene, starting when she was 17 at Justin’s Nut Butter before moving on to Rudi’s Bakery. She is now the co-vice president of I
BOULDER WEEKLY
Naturally Boulder, an organization that helps drive Colorado’s naturalproducts community. “[Boulder]’s so supportive,” Hanifin says. “The network and the wealth of information that’s in this town is so valuable, especially when you’re starting a business. ... There are so many people in this town that will sit down with you and just be an open book.” Hanifin’s sentiments are echoed by just about everyone you’ll meet in the Boulder food scene. “There is such a legacy of organic and non-GMO brands that developed here,” says Tom Spier, founder and managing partner of the Boulder Food Group. “The people who are here and have done it ... are not picking up their families and moving away when they’re done. They like it here and they give back.” One of the many ways they give back is through the events and panel discussions put on by Naturally Boulder. “We can shorten the learning curve dramatically,” Naturally Boulder’s Mansika says. “We can speed that up [by] giving [entrepreneurs] access to the right thinkers.” Mansika describes Naturally Boulder as a middleman — an organization that brings different segments of the industry together to create dynamic, informative events. “We have the ear of the manufacturer, the ear of the service providers, the ear of the media, the ear of the investors,” he explains. As Mansika points out, what might take a start-up three to four months to figure out on their own can be conveyed in a matter of minutes by someone who’s been there and done that. Invaluable information for anyone trying to get their product off the ground. “Many of them — [Celestial Seasoning’s Mo Siegel, Justin Gold of Justin’s Nut Butter, IZZE’s Todd Woloson] — are still local,” Mansika says. “You’re still going to bump into them walking down Pearl Street. They still come to our events. They’re still available.” Mansika describes this type of mentoring as a “chain of virtue.”

Alpine Start’s Hanifin says that extends beyond mentoring and investment, and into the most crucial aspect of the food industry: retail. “You can start selling your product in the grocery store almost right away,” Hanifin says. “And the consumers are right there, in your backyard, willing to give you feedback.” And there doesn’t seem to be an end to the kind of innovation these businesses bring. “It’s a crowded market and there’s a lot of trends always coming onto the scene, but I honestly don’t see an end to it,” Good Day Chocolate’s Margolis says. “Progress is inevitable and there will be another idea, right around INSIDER ’17
the corner, coming to market that we don’t even see coming.” Mansika reinforces this idea; several of their most popular panels — e.g., How to Work with a Broker, How to Work with a Distributor — are offered annually. “Because there is annually a new group, a new population, that need that information,” Mansika explains. “In other words: Boulder is churning out a dozen new natural product brands annually.” And as the Boulder food industry pumps these new natural and organic products into the market year after year, future generations will be raised on them, shifting the paradigm. It’s only a matter of time until natural/organic is the norm. I

Chautauqua: THE HOMESTEADING HISTORY OF BOULDER’S MOST ICONIC PARK
by Alvaro Sanchez
AS YOU’RE DRIVING west, there’s
only one surefire way to know when you’ve made it to Boulder. And no, it’s not Pearl Street or Fox Theatre or even the University of Colorado. It’s the large, protruding rocks that stretch toward the sky, 8,000 feet above sea level, keeping watch over Boulder Valley. These rock formations, commonly known as the “Flatirons,” are the most prevalent aspect of Chautauqua Park, which has preserved the area surrounding these sandstone pillars as a historic landmark since 1898. You’ll find hundreds of people hiking or picnicking up there on any given summer evening, but it’s more than just a fun place to recreate. It was originally intended as an education center for both community members and travelers coming to the Rocky Mountains. More than a hundred years ago, our Colorado Chautauqua spawned from a large organizational body, the Chautauqua Institution, based in Chautauqua, New York. The original concept was simple, though considered experimental at the time: create a space outside of schools to extend education and vacaSee CHAUTAUQUA on PAGE 28

tion-based learning programs to communities. It was Ohio philanthropist Lewis Miller and Alabama Methodist pastor John H. Vincent that came up with this idea. They established the first Chautauqua in 1874 — the Chautauqua Lake School Assembly in New York — and developed a new training program for Sunday School teachers. They choose the word “Chautauqua,” which comes from the Iroquois language and could mean “a bag tied in the middle” or “two moccasins tied together,” because it describes the shape of New York’s Chautauqua Lake. The Chautauqua Institution was a reflection of the 19th-century, nationwide effort to professionalize teaching. Although the Institution was based on religious studies, Miller and Vincent were adamant about associating their training system first with educational purposes. The Institution quickly became host to many other INSIDER ’17

scholarly and artistic endeavors such as symphonies, ballet, theater, and visual arts exhibits The expansion across the U.S. in the late 1800s was known as the “Chautauqua Movement,” and as it grew more popular, the word “Chautauqua” became synonymous with educational training. Back in New York, Miller and Vincent established another iteration of the concept, the Chautauqua Literary and Scientific Circle (CLSC), which put an emphasis on teaching students “alternative” ways to use their leisure time, rather than drinking or gambling. cles of reading and studying caught on fast in rural places out West. Boulder’s Chautauqua chapter was actually founded in Austin, Texas, in 1897 as the Texas-Colorado Chautauqua Association. It didn’t last long there; after students demanded a cooler climate in exchange for Texas’ sun-drenched flatlands, the Chautauqua moved to Colorado. Boulder’s Chautauqua is unique in the fact that it’s the only Chautauqua west of the Mississippi River that has yet to break continuous operation. Along with that, according to the association, it’s the only Chautauqua that operates year-round. This, of course, means that since its inception in 1898, the Colorado Chautauqua has never missed a day of operation — even under threat from the thick snow blankets that cover the Front Range every winter. The Colorado Chautauqua protects approximately 26 acres of land that it leases from the City of Boulder, located at the base of the distinguishable Flatirons (back in the day, though, they called them the Chautauqua Slabs). Most of the original buildings are still in use today, including the Chautauqua Auditorium, the Dining Hall and more than 98 cottages that the Association rents out. It was actually the effort to buy this land and build Chautauqua that led to the earliest formation of a city parks department.

The first season of Colorado Chautauqua’s operation was ambitious. In 1898 they scheduled 94 speeches over six weeks, two of which featured the governors of Colorado and Texas. All attendees were housed in tents and had to either walk or ride horses through the one-and-a-half miles of muddy trails — a reliable streetcar line from downtown Boulder to Chautauqua hadn’t been built yet. Despite the rough start, Colorado Chautauqua continued to offer numerous activities in which community members could enroll day-to-day. Musical classes were taught for cello, guitar, mandolin, piano, singing and chorus. There were also 51 different classes for students to take, ranging from physics and mathematics to literaINSIDER ’17

ture and botany. Today, the Colorado Chautauqua is as strong as ever, still hosting lectures, concerts and film series throughout the year. In 2006, the Colorado Chautauqua became a National Historic Landmark, and the space continues to attract hundreds of thousands of people each year, thanks in part to its gateway power over the dozens of miles of trails that line the base of the Flatiron’s large, flat slabs jetting up from the ground. without leaving Boulder County limits and still be able to try something new each day, everyone needs a fresh perspective. Thankfully, Boulder is surrounded by an abundance of outdoor and leisure activities — from hot springs to art showings to gnarly skiing — that make vacationing around the state every weekend tempting. These six excursions represent just a handful of our favorites.
1. GREAT SAND DUNES NATIONAL PARK & PRESERVE:
This national park and preserve is home to the tallest sand dunes in North America. A picturesque jewel in Southern Colorado, the dunes attract visitors with all-you-can-walk day hikes or overnight backpacking trips across the 30-square-mile dunefield. Go in any direction you please because, thanks to the sand, there are no designated trails. If you spend the night on the Dunes, get ready for one of the best night skies offered anywhere. Sandboarding and sand sledding will get your blood pumping more than you’d think — you can rent a board or sled specifically for the sand at Kristi Mountain Sports in Alamosa, or Oasis Store just outside the park entrance. Swim at Medano Creek, a seasonally filled body of water at the base of the dunes that’ll cool you off in the hot summer temperatures. (Check the current water levels on the Sand Dunes National Park website.) There’s also horseback riding, fat biking, fishing, hunting and wooded hiking along the Montville Nature Trail. The dunes are accessible to those with disabilities as well; you can sign out a dunes wheelchair for free at the National Park’s visitor center. Make sure to check the weather report before you go: visiting during the morning or evening is preferable, because temperatures at the sand dunes can reach up to 150 degrees midday and random violent thunderstorms can occur.

Few places are as relaxing to partake in outdoor yoga as Carbondale. Located in the heart of the Rocky Mountains, the experience offers complete immersion in nature and abundant serenity.
2 INSIDER ’17
CARBONDALE:
This small town situated in the Roaring Fork Valley, just downstream from Aspen, sits at the base of picturesque Mt. Sopris, right in the heart of the central Rocky Mountains. Thanks to the variety of arts and cultural activities, shopping opportunities and outdoor recreation potential, there’s something exciting for all visitors coming to town. The community boasts visual arts, theater, dance and music that manifests in showrooms, performances and gatherings on a near-weekly basis. Downtown, explore showings of all kinds, from photography, painting and sculpture, to woodworking, blacksmithing and plays. When you’re ready to head outside, the biggest question is: How much time do you have? Bike, camp, climb, fish, golf, horseback ride, hunt, raft and kayak in the summer. Then, in the winter, ski and snowboard on any (or all) of the five mountains located within a half hour: Aspen Mountain, Snowmass, Aspen Highlands and Buttermilk, plus the Sunlight Mountain in Glenwood Springs. Local hot springs are also a year-round attraction at Avalanche Ranch Cabins and Hot Springs, and Penny Hot Springs. If you’re looking for a real taste of Western culture however, venture to the Carbondale Wild West Rodeo where you’ll watch bull riding, team roping, barrel racing, mutton busting, steer riding and many other rodeo favorites.

Folks enjoying the Steamboat Hot Springs. The springs are open in all seasons, and are but one of the many recreational features of Steamboat.
3 STEAMBOAT SPRINGS:
Already home to more Olympic skiers than any other town in North America, thousands upon thousands of other winter enthusiasts flock to Steamboat Springs every winter, and for good reason: the powder that collects across the six-peak, 165-trail system at Steamboat Resort. If it gets too crowded, there’s also the smaller Howelsen Hill ski area next door, plus plenty of other winter activities like ice fishing, horseback riding, ice climbing, nordic skiing, sleigh rides, hot air ballooning, snowmobiling, snowshoeing and snow tubing. But the best part of it all? After a long day battling the cold, you can climb into one of mother nature’s hot tubs: Old Town Hot Springs and Strawberry Park Natural Hot Springs. Even without the snow, Steamboat is known internationally as “Bike Town USA,” and boasts a bicyclefriendly community with plenty of options for all levels and riding preferences. Fishing, hiking up Fish Creek Falls, kayaking, paddleboarding and tubing on the Yampa River, as well as playing on the local Steamboat Lake, Pearl Lake and Stagecoach Reservoir are also local favorites.

As a former Victorian mining town located at 8,750 feet, Telluride is primarily famous for its ski resort. But in the summer, you’ll find enough trails criss-crossing the scenic San Juan Mountains and the Telluride Ski Resort to walk for a month without stopping. Camping spots for both tents and RVs abound, setting you up for fly fishing, horseback riding, river sports, 4x4 off-roading, ATV and motorcycle riding, golfing, rock climbing, paddleboarding, swimming, paragliding and picnicking around town. In the winter, enjoy the abundant powder at the resort on skis or a snowboard, or cross heli-skiing off your bucket list. Nordic skiing and fat-tire bike rides at places like Telluride Town Park and the Valley Floor round out an active vacation, not to mention the potential for winter fly fishing, ice climbing, horseback and sleigh rides, snowshoeing, snowmobiling and sledding.

5. ESTES PARK:
This mountain town, just outside Rocky Mountain National Park, ensures you’re never far from the great outdoors. Summer and fall activities include hiking, camping and rock climbing in RMNP, and biking up and down the adjacent, sinuous mountain roads or on Lake Estes Bike Path. If water sports are more your style, ride a whitewater raft down the Cache La Poudre River or enjoy the dozens of alpine lakes on a paddleboard. Under a blanket of snow, Estes Park transforms into a wonderland for backcountry skiing, snowboarding, snowshoeing and sledding enthusiasts. Worldclass cross-country skiing is found along RMNP’s Trail Ridge Road, which is closed to traffic in the winter months. After frolicking in nature, head into Estes Park’s charming downtown, where you’ll find good food, local wine and beer, and independently owned shops and galleries. Enough live music and local bars will keep you entertained after dark, as will more casual fare at the local bowling alley, restaurants and the Park Theatre, the oldest operating cinema in the Western U.S.

6. BRECKENRIDGE:
Any time of the year, Breckenridge will entertain you. In the summer, enjoy the expansive and picturesque trail network, cruise miles of scenic bike paths, fly fish on the Blue River or embark on a historical tour demystifying the town’s 1859 gold rush. As fall temps drop, the aspen trees change colors. To watch the kaleidoscope effect set in the mountainsides, drive or bike the Boreas Pass Road, or hike and bike in the French Gulch area and on Gold Run Gulch Road. Plus, several fall festivals come to town, such as Breckenridge Oktoberfest, Fall Fest, the annual Breckenridge Film Fest, and the Día de los Muertos celebration. Once the snow takes over, visit Breckenridge Ski Resort for some serious downhill skiing, or if you’re looking for something a little slower, options for Nordic skiing and snowshoeing abound. Alternatively, rush across snow on a dog sled or enjoy a sleigh ride through the winter wonderland. No matter the season, Breckenridge’s downtown area hosts boutiques and restaurants as diverse as its adventure offerings. BOULDER WEEKLY

The “Foodiest Town” in America Taste one of the reasons why we all love Boulder PAELLA Cafe Aion
Susan France
“Each paella is made to order and takes about 40 minutes, allowing for some time to sample a few tapas, perfect to share for 2-4 people,” Chef Dakota Soifer says. “Expert tip: be sure to get a spoon full of the socaratt, the crispy-caramelized rice on the bottom of the pan.” Around town he recommends, “Pad kee-mow (drunken noodle) at Thai Avenue. I love the thick, wok-seared noodles and fresh vegetables with a spice level that can really knock your socks off!”

FLATIRON STEAK FRITES Chautauqua Dining Hall “This [is] a comfort-food meal with a touch of sophistication, [and] the view of the actual Flatirons makes this the perfect Boulder experience,” says restaurateur Sara Martinelli. “For another unique, but totally ‘Boulder’ experience, I have to recommend the Boulder Dushanbe Teahouse. The globally inspired menu helps create an exotic cultural experience, and my favorite dish there is the spicy Indonesian peanut noodles.”
CRISPY BRUSSELS SPROUTS Blooming Beets “It’s by far the best appetizer in town, and it’s healthy! Flash fried in 100 percent coldpressed avocado oil, tossed in apple cider reduction, and served with dairy-free garlic aioli. Can’t miss that,” says cook and entrepreneur Iva Paleckova. Outside her kitchen, she recommends, “Organic Sandwich’s gluten-free turkey bacon jam sandwich. For those of us who haven’t enjoyed sandwiches due to food sensitivities in a while, Organic Sandwich’ gluten-free offerings are the best. And their bacon jam is the best thing in the world.”

Here, the secret ingredient is no secret: bossy sauce. And it’s what makes this pie shop a classic you’ll visit again and again.
Genuine Sherpas bring a little of Nepal and Tibet to Boulder. Head chef Jangbu Sherpa has been dishing out Himalayan cuisine since 2002. He’s also climbed Everest 10 times.

THE TASTING
FLIGHT 1. LIGHTSHINE HELLES.
Wibby Brewing. This crisp, refreshing lager is Bavarian-influenced and perfect when you need a light beer on a hot day.
2. LILIKO’I KEPOLO.
Avery Brewing Co. This Belgian-style white ale is shockingly unique. Brewed with tart, bright passionfruit, the beer will ignite all your tastebuds.
3. SANITAS IPA.
Sanitas Brewing Co. This is the definitive Colorado IPA. Its beautiful golden body holds tropical fruit flavors and dank hops. It’s perfect for taking in the sunset on Sanitas’ porch.
IS BETTER WITH BUDS
4. DRY HOPPED AMBER.
Finkel & Garf. Here appears the beer you didn’t know you needed in your life until you tried it. Their Dry Hopped Amber is malty, yet bright.

Getting around town on the
BUS JUMP, SKIP, HOP, RTD. The acronyms of
public transportation. Amid the spiderweb of bus lines, here are four you should know (and take advantage of) because it’s actually possible to get around this city without a car. The JUMP bus travels east and west along Arapahoe Avenue, connecting the Main Public Library and Twenty Ninth Street Mall. SKIP follows Broadway north and south. HOP connects downtown to the Hill, Twenty Ninth Street Mall and Boulder Junction. Find your way onto one of these, which you can do using the RTD — or the Regional Transportation District — app and you’ll be one of the thousands of Boulderites cutting down greenhouse gas emissions. Bonus: If you’re a college student, you can ride local, regional and even airport buses and trains for free with your student card.

COMPOST, RECYCLE, TRASH. WHAT TO DO WITH YOUR WASTE.
With a plethora of waste receptacles and veteran Boulderites standing vigil, keeping this whole recycle-compost-trash thing straight can be tricky. Where do you dispose of that plastic fork covered in bacon grease? In general, follow these guidelines so you can help save the planet, and at the very least avoid a nasty side-eye from your neighbor. Compost: all food scraps, pizza boxes, coffee and tea, most tissues and paper towels. Recycle: cans, glass, plastics, printer paper, cardboard. Throw away: styrofoam, solo cups, plastic bags, to-go containers. Susan France
CANNABIS, MARIJUANA, POT. WHERE AND WHEN TO USE THE GREEN.
Yes, welcome to the land of legal pot. If you choose to use recreationally, keep a few things in mind: 21 is the official age for purchasing, possessing or using cannabis. It’s illegal to drive while under the influence of marijuana or to have it exposed in any vehicle (and don’t drive across state lines). Using marijuana isn’t allowed in public spaces, including ski resorts, music venues, state and national parks, playgrounds, roads, and the list goes on. So use it in your home, but don’t forget to check with your landlord’s policies first.
