Only nine, not 43

The moment I read the title of Pamela White’s column “‘Birth control moms fight back” (Uncensored, March 8), I knew it would be still one more screed on the comments by Rush Limbaugh. Not to disappoint, she regaled me with false facts about the number of advertisers that have fled Limbaugh’s show.

The facts are these. There were only nine — count ‘em — nine advertisers who fled the show, not 43. Rush explained this in great detail on his show, but I am sure that Ms. White does not listen to the show so was ignorant of these facts. Two of those advertisers have apparently asked to return.

Limbaugh apologized for becoming what he loathes. He descended to the level of liberals with his name-calling.

We are still waiting for an apology from Bill Maher for calling Sarah Palin a “c---” and a “dumb t---”. I wonder what the reaction of Ms. White would be if Maher used similar language about her, but I don’t think I would want to be standing next to Maher at the utterance of those words.

As for the subject of the furor, Ms.

Fluke, how else does one describe a woman who participates in so much sexual activity that those activities threaten to bankrupt her? She reminds me of the punch line of the old joke, “We have established what you are, Madam. Now we are dickering over the price.”

Ms. Fluke claims that she needs free birth control because it costs too much.

Her claim of $3,000 for three years has been debunked by a few simple phone calls to local pharmacies in her area. It turns out that birth control is about $9/ month at Target three miles from her university. That would be about $324 for three years. Is she too proud to shop at Target, drive three miles, or perhaps

He wouldn’t even need to write any new material. For example, just as in his day, our Wall Street banksters are getting rich, even as the victims of their narcissistic greed are getting pink slips and eviction notices. He already wrote about this outrage Boulder Weekly

As for the “GOP war on women.”

Does Ms. White truly believe that a political party seeking to win an election would say “Let’s alienate one half of the voting public?”

We shall see how the women’s vote turns out. They are not as gullible as Ms. White thinks they are.

Hopefully, after the election in November, some sanity will be restored to the nation. Not so if Obama is reelected.

Fracking poses airborne health hazard

t’s time for Coloradans to take a hard look at hydraulic fracturing — fracking — and a critical view of those state lawmakers who are more interested in sucking up to the gas and oil lobby than protecting their constituents.

A three-year air pollution study conducted by the University of Colorado Denver School of Public Health revealed that air within a half mile of fracking operations contained five times the level of certain pollutants deemed safe by the EPA. This leaves workers and residents within that halfmile area exposed to air pollutants that could potentially harm their health.

The chemicals included trimethylbenzenes, chronic exposure to which can cause nervousness, tension and anxiety, asthmatic bronchitis, anemia and alterations in blood clotting; aliaphatic hydrocarbons, which can affect the lungs, the nervous system, heart and liver; and xylenes, which can cause conjunctivitis, dermatitis, kidney and liver damage, and dryness of the nose, throat and skin.

Current state regulations do little to protect those who live near fracking sites from air pollution. Under current statutes, fracking operations must be set back 350 feet from developed residential areas — i.e., neighborhoods — and 150 feet from rural residential areas.

Just to help you with the math, a half mile is 2,640 feet.

After hearing the concerns of Aurora residents upset by the encroachment of fracking rigs on their homes and schools, Rep. Su Ryden, D-Aurora, introduced House Bill 1176 this year, asking lawmakers to increased the required setback to 1,000 feet. But Ryden’s bill never even made it out of committee. Even had the bill passed, 1,000 feet is inadequate, if the results of this study are accurate.

In an ideal world, the gas and oil industry would look at this study, apologize, and move its operations to a safe distance from places where people live and breathe. Instead, what we see from the oil and gas industry is an unending barrage of advertisements telling us how the natural gas beneath the Front Range will provide energy and jobs for Colorado and the nation for years to come.

It’s all about profit, of course.

When HB 1176 was killed, Rep. David Balmer, R-Aurora, justified his action on the bill by claiming it would result in lost jobs in Colorado.

“This bill will send another shock wave across the country that Colorado doesn’t want to do oil and gas development. It will cause us to lose jobs! Why do you want to run a bill that will cause Colorado to lose jobs?”

Of course, Balmer was employing hyperbole. Requiring fracking operations to stay at least 1,000 feet — or even 2,700 feet — away from homes, businesses and schools doesn’t mean Colorado doesn’t want to “do oil and gas.” It simply means Colorado, unlike Balmer, places some value on the health and well-being of its residents.

And shouldn’t people’s health come first? Or does money desensitize us to the idea of children breathing xylenes and trimethylbenzenes while they sit in their classrooms, play on the playground and sleep in their beds at night?

The legislature will have an opportunity to address this issue again next year, and let’s hope they take their responsibility seriously, putting the gas and oil lobby in its place and focusing on the needs of their constituents instead.

Not only should the setback be increased to beyond a half mile, but a substantive effort should be made to eliminate the air pollution associated with fracking. Period. After all, whatever impacts human life will also affect wildlife.

Thanks to the abundance of oil and gas trapped in Colorado’s Niobrara Formation, the gas and oil industry is poised to eat this state alive. The regulations under which the industry is permitted to operate will have a direct impact on the people of Colorado, including residents of Longmont and Erie.

Sure, we’ll do gas and oil, but we’ll do it safely. And if the oil and gas industry doesn’t like it? Well, the Niobrara Formation isn’t going anywhere, so I guess they’ll have to adapt.

resident Obama has been flitting around the country intimating that U.S. natural gas reserves have tripled in the last three years as a result of his administration’s policies. His chutzpa is astonishing.

U.S. natural gas reserves have tripled in recent years, alright (the last six actually), but it’s in spite of the Obama administration, not because of it.

Within its first weeks, the Obama administration derailed plans to open up the Atlantic outer continental shelf for drilling. It cancelled already-awarded leases on federal lands in the western U.S. It slowed the pace of new lease sales, both on shore and off shore, from Alaska to the Gulf of Mexico to a crawl; ditto for the issuance of drilling permits.

Obama routinely calls for junking oil and gas industry tax incentives and subsidies, which amount to about $4 billion a year. That’s not a particularly large

amount of money in the greater scheme of things — but it’s a dumb thing to do if you want more oil and gas. If you want more of a commodity, you subsidize it.

That’s why the U.S. has had gigantic agricultural surpluses since World War II. Most of the natural gas and oil found in the U.S. in the last six years has been found on private land, including the massive discoveries in the Barnett, Haynesville, Marcellus, Eagle Ford and Bracken shales, where the Obama administration couldn’t interfere. Oil and gas production from public land has actually dropped since Obama took office.

The Obama administration can defend these actions — barely — on environmental grounds. But for Obama to intimate that his administration had anything to do with the increase in U.S. gas reserves is a brazen lie of epic proportions — about as brazen as Mitt Romney’s claim that RomneyCare isn’t see OBAMA Page 9

COUNCIL BACKS TRAIN TO NOWHERE It appears that Boulder City Council members will once again be playing the role of Charlie Brown to RTD’s Lucy. After having landed flat on their backs when the transportation authority pulled the football, make that the train, from the kicking tee at the last second, council is apparently ready to give it another try, as long as RTD promises not to pull the ball at the last second this time around.

I remember my son at 5 years old yelling at the TV, “Don’t do it Charlie Brown, she’ll move it!” If only we had such wisdom on council these days.

A little background. RTD accidently spent all the money we gave them to connect Longmont, Boulder and Lafayette to Denver’s light rail system by train on something else. They promised us a train when we passed a special tax to pay for said train in 2004. Now they want us to pass another tax in exchange for a hybrid train system.

And by hybrid train system they don’t mean a train that gets really good mileage. No, their definition of a hybrid train is actually a bus.

You can’t make this stuff up. We wonder if they showed council pictures of a bus with a cow-catcher mounted on the front, or maybe a Thomas the Train face painted on it.

Whatever they did, it worked. Having heard about the new “hybrid train” system, Boulder City Council thinks that we should trust RTD and vote to give them more tax money yet again. The difference this time? Council wants RTD to guarantee, in writing, to deliver what we pay for.

Unless we’re mistaken, they did that last time. We think promising to deliver a train system in writing on a legal voting ballot should have been considered a guarantee.

Fortunately, most voters are able to grasp the simple lessons of Peanuts, and aren’t as likely as City Council to be fooled again on election day.

AT LEAST WE DIDN’T FAIL A new study has found that the state of Colorado earned a grade of D+ for its accountability.

The study, conducted by the Center for Public Integrity, Global Integrity and Public Radio International, ranked Colorado 33rd in the nation for its transparency and openness.

The study dings Colorado for a variety of reasons, including the fact that the secretary of state is not required to audit campaign finance reports or asset disclosure forms. (Exacerbating that situation is that our current SOS, Scott Gessler, is little more than a political operative for the Republican party and has had his hands in some questionable campaign practices himself.)

Our fair state also scored low because we don’t have regulations barring nepotism in the hiring of state employees or strong restrictions on legislators getting plum private-sector jobs after their service, perhaps based on how they voted.

The study finds that Colorado’s “527” committees — named for the tax code that governs them — are a major campaign finance loophole that allows groups to raise unlimited amounts of money without being subjected to the same disclosure requirements as candidates or political parties.

Finally, open records requests are handled by the custodians of the document instead of a central state office, and there is no formal administrative appeal process when requests are denied. Those custodians are often bumbling idiots, er, we mean, not well informed when it comes to what files can be withheld. Trust us. We know from experience.

At least we didn’t get an F in the study, like Wyoming did.

the prototype of ObamaCare.

And then there’s this statement the president keeps repeating: “Anybody who tells you we can drill our way out of this problem [high gas prices and dependence on foreign oil] doesn’t know what they’re talking about — or just isn’t telling the truth.”

The belief that “we can’t drill our way out of it” has been an article of faith among environmentalists, Democrats and, above all, journalists, for decades.

But the truth is that the American oil and gas companies, using a combination of three-dimensional seismology, horizontal drilling and hydraulic fracturing, have already made a mockery out of that proposition. Since 2006 they have tripled U.S. natural gas reserves — to 2,170 trillion cubic feet, a 100-year supply at present rates of consumption.

The gas boom has already produced so much gas that the price has fallen from over $10 per thousand cubic feet to about $2.50 a thousand today.

The same technology that has produced the gas glut allows oil and other liquid hydrocarbons to be produced from shale and other non-porous formations.

As a result, the industry is shifting its focus from pure gas plays (called dry gas) to crude oil, and to gas deposits that have large quantities of the other liquid hydrocarbons associated with them (wet gas).

The most common natural gas liquid is called condensate, or natural gasoline.

Horizontal drilling and fracking in North Dakota’s Bracken shale has driven oil and natural gas liquids production past 500,000 barrels a day (and climbing fast) in that state. It’s now doing the same thing in half a dozen other regions, including the Denver-Julesburg basin.

But the real game-changer is the natural gas itself. The gas can be used to fuel cars and trucks directly, as T. Boone Pickens advocates, or it can be turned into gasoline, diesel and petrochemicals, using updated versions of the same 90-year-old technology (the FischerTropsch Process) that is used for turning coal into gasoline. The technology to do this is commercially mature, but up to now it has been very capital intensive. But a new generation of smaller, cheaper, more efficient units is starting to reach the market that promises to make turning natural gas into gasoline as routine as fracking. If they live up to their billing, the natural gas glut will turn into a gasoline and diesel glut in a few years.

The U.S. has had aircraft carrier battle groups steaming around the Arabian Sea lately in case Iran tries to close the Straits of Hormuz, so you would think the prospect of the U.S. slashing its dependence on oil imports by developing domestic oil and gas would be seen as a blessing.

But that isn’t how a lot of Obama’s Boulder Weekly

supporters see it. Fox example, the Boulder County Democratic Party will consider, and almost certainly pass, a resolution at its assembly calling for a county, statewide and national ban on hydraulic fracturing — which essentially endorses the country’s continued dependence on foreign oil for another generation.

Seems that progressives are cool with the blood-for-oil thing these days.

n his latest book, Gerald Nicosia has unlocked the dynamic of Jack Kerouac and Neal Cassady, and not a moment too soon.

Nicosia, the author of Memory Babe, the definitive Jack Kerouac book, was an advisor to the On The Road movie due to premiere in May at the Cannes Film Festival. On the Road, published in 1957, was, of course, the book that made Kerouac famous. It was inspired by Jack London’s famed book The Road, published in 1907.

Nicosia’s new book is One And Only: The Untold Story of On the Road.

Its genesis was on the set of On The Road, when he was hired to teach the actors what beatnik life was all about.

Nicosia had, 30 years before, interviewed Lu Anne Henderson, known as Marylou in On the Road, for Memory Babe.

Cassady famously wrote Henderson, “We’ll be together, you are my one and only wife.” And through all the wives and husbands and boyfriends and girlfriends, they were each other’s lovers to the end.

Kerouac and Cassady had a sometimes homoerotic relationship, but Nicosia says it was Henderson who brought them together and encouraged them to love each other in a way that defined the beat movement.

Up until now, most of what people know about Cassady and Kerouac comes from Carolyn Cassady, Cassady’s second wife. Her memoirs shaped the 1980 film Heart Beat, starring Nick Nolte as Neal Cassady and Sissy Spacek as Carolyn.

The new film is more from the viewpoint of Henderson, Cassady’s first wife. That is because

Nicosia, as the preeminent Kerouac scholar, was hired as an advisor for On the Road. When he played tapes of a 1978 interview for actress Kristen Stewart, both he and the actress had some major revelations.

Stewart plays Marylou, who was 15 when she met Cassady-inspired Dean Moriarty. Marylou was a sweet 16 when they married, and is discounted as the stunning 16-year-old blonde bimbo the characters who represented Kerouac and Cassady shared, but otherwise was of little account.

One and Only: The Untold Story of On the Road strongly disputes that description, and portrays Henderson as the glue that bound these two powerful characters together. She molded their relationship, and thus was a major catalyst of American literature.

It’s not that Nicosia hadn’t been impressed when he first met Henderson in 1978. He records that her presence was formidable. He interviewed her when it had been at least a decade since her two primary lovers were gone.

“What I saw was a large (larger than I had expected), beautiful 40-ish woman, with a head of blonde curls, in a blue hospital gown, with one hand swathed completely in white bandages, giving me the kindest, most understanding smile I had seen Author Gerald Nicosia in in a long, long time.”

Love was love to her, and each person brought a new richness to her life ...”

Nicosia admits he was completely smitten. She was an older woman in pretty bad health at the time who was still confident of her sexuality, her appeal.

She was “beautiful, she was clearly wounded, she was unbelievably charming,” Nicosia said.

She also was the existential link to one of the greatest enigmas and mysteries of American literary history. **** Like many of us who first read On the Road in the ’60s, I was racing up and down between Los Angeles and San Francisco in old cars with my buddies. I drove a straight six 1952 Chevy, and later I raced around the state in this great 1955 Chrysler Coupe with a powerful motor and an electrical system that always seemed to die on some hill in San Francisco because it had been raining.

Like Kerouac and Cassady, I also was in love with the rails. I knew almost every inch of the Southern Pacific line between Los Angeles and San Francisco. I rode the Southern Pacific’s Daylight in the ’50s and ’60s, and then the Amtrak Starlight, which would have been in the early ’70s. On one of my first trips on the Amtrak, this stocky SP conductor I thought I recognized from the old Daylight came aboard. In the early days of Amtrak, SP provided the engineers and conductors. A thought suddenly struck me. He must have known Kerouac and Cassady. He rode from San Luis to Salinas, and I had talked to him in the past about rail lore. This time I wanted to see if he remembered the mighty beatnik duo.

Bingo. He did.

He was a Greek with a hard-to-pronounce name.

He had been their boss — and he hated both men.

He did not talk about them as great literary figures, but rather as low-class drifters and lousy workers. As we rode through the long dark tunnels across the Cuesta Grade between San Luis Obispo and Paso Robles, he kept talking about them. I didn’t record that interview, but suffice to say he despised them both.

The funny thing is that Cassady became almost a better-known portion of the legendary duo than Kerouac. Cassady had wanted to be like Kerouac, a 12 March 22, 2012

natural writer. But there is not too much printed evidence that he was. He became more famous for being Kerouac’s pal. He was who Kerouac wanted to be but never could be.

Even as lovers, Cassady was the magnet, while Kerouac became tongue-tied around women.

A couple of years before Cassady’s body was found bloodied beside a rail track in Mexico in 1968, I stood in front of Benjamin Bufano’s St. Francis of Assisi statue in front of the Longshoreman’s Hall in San Francisco. Ken Kesey’s Day-Glo-painted bus was getting ready to leave on the first voyage of the Merry Pranksters. Its driver was none other than Neal Cassady.

I almost thought the great sculptor’s rendition of the gentle, animal-loving Catholic saint looked enigmatic through the dope-hazed stroboscopic madness of that crazy evening that I still have as a snapshot in my mind. I remember the outlandish costumes of Kesey and the Pranksters, the ugly and pervasive noise of the acid rock sounds of the Grateful Dead, as well as the startling sight of a phalanx of women dancing topless, and the cops who hovered as if they were about to pounce, but then held back. The Merry Pranksters was an apt name.

Some years later I was introduced to Norman Hartweg, one of the original pranksters. Much of Tom Wolfe’s The Electric Kool-Aid Acid Test had come from material taped by Hartweg. Hartweg wouldn’t have been interested in Kesey’s proposal that he abandon all that he had in Los Angeles and come up to Kesey’s place in the redwoods (just south of San Francisco) had it not been for the mention of the legendary Neal Cassady. The chance to meet Dean Moriarty himself was irresistible to Hartweg.

In Wolfe’s book there were some memorable descriptions of the Pranksters’ first cross-country trip, some truly terrifying moments with Cassady, his mind blowing with too many mics of LSD, maneuvering the old beast down the slopes of the great mountains without the benefit of brakes.

Hartweg had a similar hair-raising experience when he first met Cassady. They had gone for a drive in the country around Kesey’s home, and Cassady was at the wheel. While he was driving, especially down one long, winding curve coming out of the coastal mountains, Cassady kept up an incessant patter about the bus and old cars and anything else that crossed his fertile mind, all the while looking not at the road but directly at the terrified Hartweg. Hartweg saw a truck coming up the grade, and he was also sure that Cassady had not. At the last moment, as the bus

approached the truck, Cassady looked to the road, fishtailed the old bus out of the truck’s path along the edge of the road, and without comment looked back again at Hartweg, his patter resuming where it had left off a second before.

Back at La Honda, where Kesey lived, the famed author suddenly appeared before his guest, as if he knew that Hartweg needed an explanation, and said, “Cassady doesn’t have to think anymore.”

By which, Hartweg presumed, he was supposed to believe that Cassady had moved on to ever higher and more noble plains of pure thought, helped, of course, by the huge doses of acid he had taken. So this was the great Dean Moriarty.

So affected was Hartweg by On the Road, when the Army stationed him in Denver, he went searching on his time off for Moriarty’s famous lost drunken father on Larimer Street, as described in On the Road.

But Larimer had changed. It had gone uptown; the old slum neighborhood was undergoing urban renewal. Cassady’s father was nowhere to be found.

Hartweg was assigned to the library of the army hospital, and most of what he did was read.

“There were five or six souls of my ilk on the post,” he said. “We made up the ‘Beat contingent.’ We went out and got the obligatory bongo drums, berets and Miles Davis records and had a good time. We managed to survive the army that way. We all wanted to be writers, but we also had trouble finishing anything.” **** Kerouac poses big questions he couldn’t answer and we still can’t answer. But there’s no doubt plenty of meat left on the bone to chew on in the upcoming On the Road.

I asked Nicosia to try and make of it what he could.

“What we now know is that the dynamic duo of Kerouac and Cassady was actually a trio: Neal, Lu Anne and Jack,” he replied. “It was always assumed that these two guys, cultural outlaws, a kind of modern-day Butch Cassidy and Sundance Kid, just magically found each other, combined forces, and started the Beat Generation.

“What we now know, thanks to Lu Anne’s testimony, is that both these guys were enormously insecure and vulnerable, that they were very different (though both were misfits in post-World War II America), and that neither one liked or trusted the other when they met.

“It took the depth and insight of a woman’s love, Lu Anne’s, to allow them to see enough in each other’s character, and in each other’s heart, to begin to form the friendship that changed contemporary America. Without Lu Anne — the ‘necessary estrogen,’ as Kristen Stewart put it — the chemical reaction, the new and potent compound of KerouacCassady, simply wouldn’t have happened or existed.

And without that compound, Kerouac-Cassady, there would have been no On the Road, no Beat Generation and probably none of the ’60s counterculture that followed.”

The beat goes on.

commentary CU staff retire, double-dip, get paid, oh my!

et another CU administrator has been “double-dipping,” we at Boulder Weekly have learned.

And it’s not that big of deal. A bigger deal is how these things have been communicated.

Much has been made lately about University of Colorado Boulder administrators, their tuition-funded salary increases and their ability to retire and get rehired — “double-dipping” by receiving their pension and a salary.

Indeed, the Camera’s Brittany Anas has done some good reporting on the subject, even though some at CU have described it as low-hanging fruit taken out of context.

The reality is, using tuition revenue toward salary increases — including for already overpaid executives — is nothing new at CU. “We’ve been using tuition money for salaries for 130-some years at this university,” says CU spokesperson Ken McConnellogue. “It surprises some people that that’s where it goes, but we’ve been doing that since 1876.”

Considering that the state is now only providing about 5 percent of CU’s total budget, which is a disgrace nationally, it’s become increasingly hard to find an operating expense that isn’t at least partially funded by tuition.

However, without context, it does look bad to the public when CU jacks up tuition year after year — and a portion of that money gives seemingly over-compensated people even higher salaries. Especially in this economy.

Still, this is nothing new. Faculty and staff have been griping about bloated pay for years. In my previous job at CU’s now-shuttered faculty and staff newspaper, Silver & Gold Record, I recall the questions that went through the newsroom in 1999 when we learned that the campus was going to increase Senior Vice Chancellor Ric Porreca’s annual salary from $115,690 to — gasp — $140,000, in an effort to keep him from being lured away to another university. Now that looks like chump change, considering the estimate that he is now pulling down close to half a million in retirement checks and salary.

Far be it for me to defend the actions of the university when it comes to giving raises to administrators who, in some cases, don’t deserve it, regard-

less of what their peers in the market receive. But retirees coming back to work for the university and collecting both their pension and a salary is nothing new, either. In fact, in some circles, it’s encouraged, because departments can benefit from the years of institutional knowledge, experience and skills that retirees bring to the job.

Considering the amount that can be spent training new employees and educating them about CU’s environment and systems, sometimes it’s a bargain.

McConnellogue says there are 401 retirees who were registered to work in the CU system as of Jan. 31, although some are on call and don’t work every month. Exactly 232 were paid in January. The Boulder campus has 189, of which 121 were paid in January.

The trick is, Public Employees’ Retirement Association rules limit the number of days a retiree can work each calendar year to 110. So the doubledipping is limited.

Then the state legislature passed a bill allowing state agencies — and individual CU campuses — to employ up to 10 designated retirees for 140 days a year. (The typical calendar year has about 250 work days.)

You can imagine our surprise when Boulder Weekly received a tip months ago that a top CU official was “doubledipping” by collecting $350,000 a year in salary, plus about $100,000 more in annual PERA money. Oh, and he’s a chancellor who runs two campuses.

Working only 140 days a year.

And yet he’s listed as a full-time employee on university documents.

When we called McConnellogue and asked how someone can run CU Denver and the Anschutz Medical Campus working only 140 days a year, there was a long pause.

“Well, I think that he has proven that, yeah, you can do that,” he said.

But as suspicious as it may look on its face, Chancellor Jerry Wartgow, a long-time Colorado higher education executive and former superintendent of the Denver Public Schools, claims to be playing by the rules. Turns out, in 2011, his only full year in the position, he exceeded the 140-day limit by 62 days.

Act legalizes cottage chefs Local Foods, Local Jobs Act allows for sales of food from home kitchens

F

armers have a new revenue stream to tap into this year, and as a result, their customers will have some things to look forward too as well, like homemade jams, baked goods, dehydrated soup mixes and fruit butters.

Gov. John Hickenlooper has signed the “Local Foods, Local Jobs Act” into law, exempting small food producers who sell directly to their customers from having to use commercial kitchens and paying for health department inspections. This cottage food bill is expected to help farmers even out their sales, by making it possible to produce goods with a longer shelf life that can be sold long after frost has nipped off the rest of the harvest. It will allow farmers to create and nurture new businesses through the winter months.

“It’s such an exciting opportunity and we’ve been working for two years on this bill that will allow for local growers and bakers to prepare a certain range of value-added products to be prepared in their home kitchens without special licenses or commercial kitchen certification,” says Sen. Gail Schwartz (D-Snowmass), Colorado Senate sponsor for the bill. These products must be clearly labeled as coming from a home kitchen, and sold only at

farm stands, farmers’ markets and through community supported agriculture programs — directly by the producer, to the consumer. Production is capped to small producers who sell less than $100,000 worth of products each year, a limit designed to keep these businesses from running in direct competition to local businesses on main street.

“These are more incubator, entry level opportunities that someone can try a product in the marketplace and hopefully they’ll be so successful they’ll be selling it by the pallet and build a commercial kitchen and we’ll have new products on Main Street,” Schwartz says. The bill came out of conversations she had with hundreds of growers in the 11 counties she represents, says the senator.

“These year-round sales will help provide year-round income for these farmers and producers and help support them and make their businesses more viable,” she says. Access to commercial kitchens eats up too much time and money to make those viable choices for small farmers.

Home kitchen food preparers will still need to take courses on safe food handling and processing, which are available through the U.S. Department

of Agriculture, Colorado State University, the health department and online by some of the 28 other states with similar cottage food laws.

“It’s pretty exciting for us to have this new opportunity and hopefully these individuals will make the most amazing raspberry jam,” Schwartz says.

Farm, says that although she’ll be keeping an eye on the liability issues — farmers are not exempt from liability in the instance of a food borne illness outbreak and the local foods act suggests getting liability insurance — the option has some appeal.

Pine beetles appear to share Santorum’s views on sex

For pine beetles, sex is apparently all about procreation. While that might play well in some conservative circles of the insect kingdom, it’s not so good for Colorado’s lodgepole and ponderosa pine trees, which the beetles are destroying at an astronomical rate.

According to new research by Jeffry Mitton, a CU-Boulder professor of ecology and evolutionary biology, and one of his graduate students, Scott Ferrenberg, the destructive pine beetles actually produce two tree-killing generations of offspring every year instead of one, as previously believed.

Because of this extra generation being born each year, it is now estimated that there may be as many

as 60 times more beetles killing trees than would be present otherwise and that number is rapidly increasing. That’s bad news considering that the current beetle infestation is already the largest in history, stretching from Alaska to New Mexico.

Mitton and Ferrenberg’s research will appear in The American Naturalist later this month.

Amphibian armageddon

Scientists and ecologists don’t necessarily agree as to why amphibians are rapidly dying off, but they do agree that at least 40 percent of amphibians are currently facing extinction in real time.

It has long been known that frogs and

their fellow amphibian brethren are the most sensitive creatures on the planet when it comes to changes in their environment such as the increased presence of pollutants like acid rain. Today, scientists list the three major threats as habitat destruction, increasing infectious disease and climate change.

David Wake, a researcher at the University of California Berkeley, recently told the Chicago Tribune, “It’s happening around the world ... we’re seeing it on our watch,” he said. “People talk more about birds or mammals because they are charismatic, they’re in the public eye. I’m concerned about rhinos and tigers, too, but in the meantime, we’re losing the things that are in our backyard.”

Researchers first noticed the decline in frog populations beginning in the 1980s, yet despite their efforts to stabilize threatened populations, the decline is only accelerating.

While some believe that global warming is the main culprit, Wake believes that history shows amphibians to be quite adaptive and therefore he feels that diseases such as the recently discovered and widespread Chytridiomycosis are more likely the culprits.

Whatever the cause, it may be time for all of us to start appreciating our wet-skinned friends while we still can.

“I could definitely see it helping a lot,” she says. “We are a small grower, so we have to be very careful about everything that we produce and sell, so if we could potentially repurpose produce that doesn’t get sold at market to something that’s more stable and has a little longer shelf life … then that could be very helpful for our business.”

popular, she says, it could become a new branch of the Frog Star Farm business. It’s also a way for the farms to cut down on waste.

products, including soup mixes, to make use of produce and extend their selling season into winter with something more than carrots and potatoes.

“It’ll diversify, which is the name of the game for farmers these days,” Guttridge says. “It’s a real challenge to make a living farming, so any way you can diversify will be a plus.”

“I think we’re actually going to have more access to a more stable, healthy food distribution system,” says Guttridge.

of the night, we said we were going to do two songs, and this guy up in front shouted out ‘10 more songs!’ We finished up the two, and he says, ‘Hey, you owe us eight more songs!’ That was good.”

Festival audiences, even if they’re just hangin’ at the club gigs, can be a little numbed into complacency by the end of a long night, but Moreland & Arbuckle aren’t likely to let anyone leave without getting their molars rattled a little.

Touring behind their second major label release, Just A Dream, the Kansas-based duo of harpist/vocalist Arbuckle and guitarist Aaron Moreland (with drummer Brad Horner on the road) summon tweeter-ripping specters of Delta and Chicago blues figures into broad, impolite, elbowthrowing giants. The CD’s pitiless opener “The Brown Bomber” opens with Arbuckle’s juke-joint hollering and is propelled by Moreland’s milewide riffing, leading into icy South Side workouts like “Travel Every Mile” and the vaguely sinister “Troll,” with Moreland cranking on his custombuilt, four-stringed, cigar box guitar.

This is a partnership reaching into the deep recesses of traditional blues forms for structure and harmonic reference, but driving them into something like diesel-fumed beasts, dark and sludgy and menacing.

Minus some of the voltage, this is what gutbucket blues, two or three generations ago, was always supposed to be.

The CD hasn’t garnered raves from the New York Post or USA Today, which might have missed it altogether had the band’s previous release, Flood, not landed them onstage last year with big timers like ZZ Top, Robert Cray and Buddy Guy. Clearly, the decade-long partnership of these two guys and withering road miles (they clocked more than 8,000 on the odometer touring behind Flood alone) are starting to pay off, but remaking Flood as a momentum-sustaining follow-up wasn’t really an option.

“I think part of [Just A Dream] was just the natural evolution our music’s taken,” Arbuckle says. “Aaron produced the record, and he definitely had very strong ideas about what he wanted to

do with the sounds. And it was a ‘mission accomplished.’ We took a very meticulous approach to it, we spent a lot more time in the studio than we usually do, getting things right.”

But one of the CD’s surprises comes at the end, when the band leans off the distortion (a little) and takes a gallop through a Steve Cropper original, “White Lightnin’,” with The Man himself, the guitarist behind some of the great Stax singles of 40 plus years ago, tossing in a sleek, slippery third-verse solo.

“We were introduced to Steve at a wedding. Our former manager was a friend of his, and we get to chatting and really hit it off. And it was great, just sittin’ there talking about music with Steve Cropper. This is a guy was an integral part of some of my favorite music of all time. Otis Redding, Sam and Dave. All that stuff. So, getting to talk about, say, what Duck Dunn did on his bass line for “Nobody’s Fault But Mine” … you get a sense of what a nice guy he is and how down to earth he is. It was like talking about those records with one of your buddies.

“So not long after, he sent us a song, said ‘Here, you guys just take this and do what you will with it.’ We ended up doing something entirely different than the demo he sent us, and he loved it and asked if he could play on it.

“What were we going to say to that? No?” Well, probably not.

“Exactly. It was a tremendous honor to have him be a part of it,” Arbuckle says, “and he played exactly what the song needed.”

THINK THE CAG In contrast, Barrak’s piece does not have a notated part for the drummer. “I will improvise my part in a certain way, where I’m supposed to do that, like when I have a solo with the orchestra,” Barrak says. At other times, “I play grooves to push the orchestra and keep the beat solid.”

The score grew out of the music Barrak played on his last visit to Boulder, titled “Beirut Sensations.” He wanted to honor Boulder with a companion piece titled “Boulder Sensations.”

“I have lots of respect to the people in Boulder, they have so much love, appreciation and interest in music,” Barrak says. “This has made me feel inspired and more encouraged to compose every time I visit Boulder.”

Parallel with his previous piece, “Boulder Sensations” is in three movements, and has what Michael Butterman calls “cinematic sweep.

There is a visual quality to the music somehow,” he says.

Barrak’s description confirms Butterman’s impression.

“The first movement is describing arriving in Colorado, opening the view of watching its lovely mountains in a Hollywood movie style, blending Middle-Eastern melody into it of where I come from,” he says.

The following movements include “using the instruments as sound effects of soft rain and air” and “a percussion conversation between my Darbouka and the string ensemble using their instruments in a percussive way.”

With Beethoven’s symphony, beatboxing and “percussion conversations,” perhaps the program should be called “Rhythm Sensations.”

A set of lies agreed upon

East Coast aggression drives quirky comedy

ina Gionfriddo’s Becky Shaw isn’t informed so much by the question “Is it better to lie than to hurt someone with the truth?” but rather by the statement, “Life is pain; lies and truth are mere tools to help one salve that pain.” Curious Theatre Company’s regional premiere of this crackling comedy brings all of the play’s East Coast energy to bear on Rocky Mountain audiences.

Becky Shaw’s setup makes it seem like a sister work to Jonathan Demme’s 1986 film Something Wild, in which a chance encounter between a straight-laced man and a manic-pixie-dream-girl careens from one crazy calamity to the next. In reality, however, Becky Shaw is much more a slice-of-life comic character study filled with deeply flawed people than an action-adventure-romance all about wish fulfillment.

n a future where the government keeps a tight rein on the populace, the annual reminder of an earlier failed uprising is The Hunger Games, a televised battle to the death of teens chosen from each of 12 districts. When her young sister Prim (Willow Shields) is selected as the female tribute from District 12, tough rebel Katniss Everdeen ( Jennifer Lawrence) volunteers in her place, getting paired up with local baker’s son Peeta Mellark ( Josh Hutcherson).

They’re sent to the capital in preparation for the event, and after much pageantry and minimal training, the heart of this intense, if somewhat confusing, teen romance thriller begins: The Hunger Games themselves.

Being a teen romance, however, there’s a third person in the triangle, Gale (Liam Hemsworth), who has been a childhood friend to Katniss and is only just realizing that he loves her.

He’s stuck in District 12 and has to watch her blossoming relationship with Peeta during televised game coverage. Is her romance with Peeta genuine, or just a ploy to gain fans and sponsors during the games?

The book has a retinue of colorful supporting characters who help Katniss during the games, each of whom is also wrestling with their hatred of the game and the totalitarian regime.

Unfortunately, little of that translates to the screen, and characters like President Snow (a completely wasted Donald Sutherland) and head stylist Cinna (Lenny Kravitz) come across as onedimensional at best.

Once the games start, the film becomes a high-tech Lord of the Flies, and within moments of the competition starting, half the 24 children are killed by the others: The only way to win is to be the last person alive, so most of the tributes take that to heart in a bloodthirsty manner.

Even with the violent deaths (including one neck broken, one wild animal mauling and many knives and swords) there was surprisingly little blood and not a single obscenity, even when most appropriate. The PG-13 rating is justified because it’s quite tense in scenes, but it is indeed appropriate for older teens or those used to action or adventure films.

Thrilling in parts, The Hunger Games is a faithful adaptation of the best-selling novel of the same name, and that’s both its greatest strength and weakness: If you’ve read the book, you’ll understand the story and motivation of the different characters and quite enjoy how brilliantly even complicated scenes from the book are realized on screen. If you haven’t read the book, expect to be confused by the story and what motivates the different characters in the film. Being a teen romance, it’s also sappy and cliché at points, but when the film ends with an obvious sequel in mind, you’ll find yourself looking forward to Catching Fire, the second book in the series, sure to be filmed after the inevitable success of The Hunger Games.

oy Leckonby is happy. He’s lounging in the corner of a Boulder restaurant, sipping a beer and eating Mexican food.

He’s smiling and laughing and soaking up the moment.

“I’m blessed,” he says. And he means it.

Leckonby arrived in Boulder to attend the University of Colorado in 1996. A hotshot ski racer, he’d grown up speeding down the icy slopes of New Hampshire and other Eastern states. Fast, focused and talented, he landed in the Mt. Mansfield Academy his junior year of high school, a place with a reputation for turning out elite athletes, including U.S. Ski Team members.

After high school graduation, Colorado, with its top-flight collegiate ski racing program, seemed a natural choice, and Leckonby headed west.

“I started doing the dryland training program for the ski team,” recalls Leckonby, “and then we had our first on-snow day up at Eldora. I looked back at the Indian Peaks and thought to myself, that’s where I want to be skiing, so the next day I quit the ski team, and that was the start of it all.”

“I wanted to ski that stuff, and I had a roommate in the dorm who had heard about a competition in Crested Butte. It sounded interesting, so we decided to see if we could do it,” Leckonby says.

The competition was, of course, the U.S. Extremes. The contest was first launched in 1991. Rather than the formalized, timed and controlled environment of ski racing Leckonby was a veteran of, the Extremes were radical and fresh.

There were limits: Athletes had to stay inside a “venue,” or course, but the venue usually spanned an entire mountain face, and competitors picked their own way down, with points being given by a judging Leckonby in Crested Butte panel for aggressiveness, degree of difficulty of the chosen line and style. And he was skiing well, scoring sixth place on Kirkwood’s challenging and cliffed-out Cirque venue, and always a threat to be in the top 10 anytime he competed.

“I loved the energy, the camaraderie and spirit of the events,” says Leckonby. “The feeling you get when you’re at the start is amazing.”

But along with the energy and the stoke came risk.

By their very nature, bigmountain competitions are dangerous. The terrain that comprises venues is steep, rocky and usually punctuated with cliffs. In some cases, like Crested Butte’s Hourglass or Kirkwood’s Cirque, it’s closed to the general public and illegal to ski. And, unlike the lush powder landscapes of Alaska or Europe, which feature so prominently in ski and snowboard movies that showcase the extreme, competition venues usually have difficult snow conditions, which get increasingly chewed up during the course of events.

These factors up the consequence level for falls or other mistakes. While most events go off with only minor injuries, tragedy has struck several times. Last year, 25-year-old Ryan Hawks died after a crash at Kirkwood, and in 2008, Colorado skier John Nicoletta died after crashing at another event at Alyeska, Alaska.

The deaths reflect the rowdy evolution of a sport, where athletes now ski

bigger and steeper lines, with more speed and aggression than anyone could have imagined. And one of these athletes was Leckonby.

It’s 2008, a month or so before the Nicoletta tragedy, and Leckonby is at Taos for the Salomon New Mexico Extremes. He’s made it deep into the competition, a three-day affair where athletes move to progressively more difficult venues, with only the top finishers from each day advancing. The “cut,” as it’s called, is one way for event organizers to minimize the risk. Cull the lesser-skilled athletes from the pack each day, and only those who have the skills and ability will end up skiing on the final and most difficult venue, Kachina Peak. Leckonby has made the cut, and he’s on Kachina.

He chooses one of the most exposed lines, in a zone called The Dive. Before this event, and the athletes who began to flock here every year to test themselves, The Dive didn’t get skied. Ever.

Today, the rocky buttress with mandatory cliff drops to exit it is the zone of choice for competitors who want to do well in the event. Everything else on Kachina’s face is just too easy, even the 40- or 50-foot airs into avalanche chutes.

Leckonby tees up his final drop, he launches, but misjudges the off-camber landing, slams into a rock outcropping head first and then hangs, limp, off the mountainside, unmoving, obviously unconscious.

Due to its steep, rocky terrain, Taos has one of the best high-angle rescue teams in the country. Usually, it’s tourists they’re plucking out of places they shouldn’t be, but this is serious. The team goes to work. Within 30 minutes, Leckonby is off the mountain and headed for the hospital. The event goes see LECKONBY Page 48

on without him and Telluride’s Jake Cohn will eventually claim the winner’s trophy in a beer-soaked celebration, as the event management announces that Leckonby is alive and will be OK. But will he?

Five days later, Leckonby woke up.

Back at the restaurant in Boulder, he recalls, “I fractured my C5, 6 and 7 vertebrae and sustained moderate traumatic brain injury on the crash,” he says. “And with a closed brain injury like that, it’s hard to realize the significance of that kind of injury.”

“Everything is blank,” he says of the crash. “I have no memories of it at all.”

Leckonby holds up his helmet. It’s severely damaged, with large dents.

“This,” he says. “This is what saved my life.”

The words are clear and confident.

But Leckonby’s ability to articulate is the result of a year of grueling rehab, and he’ll never compete at the highest levels again.

“A lot of the time during the rehab period I didn’t really understand or comprehend the injury,” admits Leckonby. “Then I watched the video of the crash, and I realized just how badly I hurt myself.” (Editor’s note: the video is available on YouTube for those who are interested.)

According to medical experts, injuries like the one Leckonby sustained are complex, with recovery processes that differ from individual to individual.

Often, recovery is termed a “functional recovery,” and is based upon mechanisms that are uncertain. The goal of medical support teams is to give the victim the opportunity to live a more or less “normal” life. In some cases, this is impossible, and in many cases, the lingering effects of a traumatic head injury preempt the normality of the victim’s pre-accident existence. A victim’s personality can be irrevocably changed or damaged, their cognitive skills may never fully return or they may be unable to resume full-time employment. Four years after his accident, Leckonby seems to have dodged a very big bullet.

He’s back at work full time, has his old personality back and has been given the final OK by his medical team.

Still, the recovery process was tough.

“I wasn’t allowed to do much,” says Leckonby. “The biggest part was the mental exhaustion. I’d feel fine but would get totally exhausted from the tiniest effort of thinking. It was incredibly slow.”

“One thing about my recovery was how great everyone around me was,” Leckonby says. “A lot of people stepped up, but no one more than my girlfriend Tiffany. She was watching the live webBoulder Weekly

cast, saw the crash and sprang into action. That was the beginning of a long journey for her, too, as she was doing everything for me. I was incapable of doing all the day-to-day activities people take for granted. Even sleeping was difficult.”

Going back to work was a significant step.

“It was such a milestone, but it was only six hours of work a week,” he says.

“A week, six hours! And that was almost more than I could handle.”

But perhaps most importantly, Leckonby is skiing again.

“I was born to ski, I love it,” he says.

“Skiing brings it to the surface of how lucky I am, I am so appreciative of everything. I’m no longer competing, but I want to still be involved in the sport, and that is enough for me.”

He sits back in his seat, the story over, his beer still half full.

“There’s a certain purity in just sliding on snow,” he says, and smiles. “I’m lucky. Very lucky.”

n recent years, Boulder has become a haven for startup companies and locally crafted products. One typically mass-produced item, chocolate, has blossomed in Boulder’s local craft market. Working with small batches and quality ingredients, local chocolate crafters make products that look and taste completely different from the typical Hershey’s bar.

Two new artisans have joined a local scene that already boasts the likes of Chocolove, Robin Chocolates, Concertos in Chocolate, Desiderio Chocolates, Truffles in Paradise and Piece, Love & Chocolate.

Around 2009, Anna Davies and Robbie Stout decided they were unhappy with the chocolate bars on the market, and decided to venture into the world of chocolate making and startup companies. They launched Ritual Chocolates last July.

“We recognized the potential for chocolate to be on par with wine, beer, cheese and coffee as a fine food,” Stout says.

“But all the chocolate that was being sold as fine food was terrible, and that’s what really kicked us off. The combination of learning and understanding what the potential could be, and not finding what we wanted.”

Stout and Davies traveled to Costa Rica to find the perfect cacao beans to use in their chocolate. Now, they distinguish themselves from other chocolate makers by the process through which they craft their products.

The entire process, from sorting the beans to aging the chocolate, is slow and labor-intensive, and Davies and Stout do it all on their own.

In the refining stages, they use 100-year-old equipment designed specifically for chocolate. Many bigger chocolate manufacturers use modern processing equipment built for speed rather than for texture and taste, and they are usually just “modified curry mixers,” Stout says.

Stout also cites bean quality as a factor in the taste of their bars.

“Most of the mass manufacturers are using beans from the Ivory Coast or Ghana, where not only are the labor conditions really ugly, but the beans don’t have good flavor,” Stout says. “On the other hand, our Costa Rican beans taste a bit like wine. They have a lot of blackberry notes and woodiness.

Our Madagascar beans have dried fruit and apricot, strawberry jam flavors. They are so much richer.”

Another local chocolate business, Life Openings Chocolate, also began due to the owner’s dissatisfaction with mass-produced chocolate.

“I actually disliked chocolate all my life, so it’s rather ironic that I have a chocolate company,” says Barbara Yeagar, owner of Life Openings. “But then when I tried a pure cacao

You ever listen to a campaign ad over the radio that is about 90 percent bullshit and find yourself retorting, out loud? That was basically my response to the “fad” tripe, only I think I used my hands.

There’s nothing new about cheap cuts, slowly cooked. In fact, I’m not sure there are a ton of other ways to cook a cheap cut.

What a wanker.

Personally, one of my favorite cheap cuts is a beef short rib. Not only is it already in a nice, rectangular package, which makes presentation a breeze, but the bone is still attached, and that means more flavor and moisture.

And unlike a pressed pork belly, preparation is on the lighter side: Chop a few veggies, brown the meat, and put it all in the oven to cook for a few hours. Go to the mall, crank up the radio,

t first blush, naming a tomato sauce for sailors seems like an odd choice. But this is precisely the case with marinara, or mariner’s sauce, and like most stories around food origins, there are competing narratives. Each involves consumption by sailors, and one durable theory is that this was simply a sauce enjoyed by mariners upon returning to their Naples home port. The other holds that this was a staple of sea voyages, with the tomato’s acidity making it suitable for longer-term storage aboard ships. But anyone familiar with how quickly tomatoes can go from ripe to rotten may question this theory.

Ann swapped out the Cavatappi corkscrew pasta in her $11 sausage, mushroom and mozzarella entrée in favor of glutenfree corn penne noodle. The golden color of the pasta, contrasting against the bright tones of a tomato cream sauce, made for a food photographer’s dream. These noodles carried a pleasing al dente texture that nearly equaled its wheat counterpart, and it’s to Zucca’s credit there was not an upcharge for this change. Hearty flavor reminiscent of an accomplished homemade preparation characterized the sauce. This dish was a solid choice, although the simple addition of more fresh herbs or crushed red pepper would make the flavors pop even more.

A tender $13 helping of delicately flavored pancetta-wrapped chicken breast arrived atop rice-like orzo pasta cooked perfectly al dente. A combination of ricotta and gorgonzola left an overall creamy impression that was balanced out by the mild earthiness of ten-

der local pea shoots from the owners’ Three Leaf farms. As was the case with Ann’s pasta, I could sense that the cooks knew what they were doing; I just wanted a little something more in terms of unique seasonings to elevate the dish from well-executed to memorable.

The preparations at Zucca are all more than competent, although a bolder hand with the seasonings in some of the dishes would easily take things to the next level. The surprisingly peppy calamari began with a foundation of good technique, and took things further with vibrant presentation and unexpected but effective flavors. A similar approach to the other dishes would make this eatery a true standout — I suspect ingredients from the farm will help. That said, if you’re looking for Italian fare with an emphasis on fresh flavors that’s more sophisticated than a red-sauce-and-checkered-tablecloth joint, this eatery will satisfy.

Boulder cheese shop Cured will offer a course from 5:30 to 6:30 p.m. on March 29 entitled “Cheese and Meat, a Love Affair.”

We heard from condiments that cheese and meat weren’t together any more, and condiments said they heard from grains that tea actually saw meat with vegetables. But perhaps this class can reignite what cheese and meat once had. If not, sparks will fly.

The course, $40 per person, is open to the public.

A HOUSE OF CAKE

Longmont commuters looking for more than just a bagel will soon have a local option with European flair.

Romana Cake House, a family-owned European-style bakery, will open the first week of April at 900 S. Hover Road in Longmont. The bakery and café will offer traditional cakes, pastries and coffees, as well as cakes for birthdays, weddings and graduations.

Romana’s co-owners, Robertino and Raluca Ioan, hail from Romania, where German and French influences shaped their pastries. Both are graduates of the University of Colorado Boulder, and the couple has worked in Longmont for 15 years in other professions.

Denver’s Wynkoop Brewing Company will release a new limitededition beer March 30 in conjunction with the start of April, Earth Month.

The release, brewed in honor of the Cottonwood Institute, is set for 5 p.m. at the Wynkoop brewpub in the LoDo district in Denver.

The Cottonwood Institute is an eight-year-old Denver-based nonprofit that aims to guide young people “to initiate positive change in their schools, their communities and the environment in order to strengthen their civic engagement, environmental stewardship and leadership skills,” the group’s website says.

The new beverage, Cottonwood Organic White, is an Americanstyle wheat beer. The beer will be served at Wynkoop throughout April.

The line of 12 chocolates that Yeagar produces includes flavors like chili and salt, coconut cream, tart cherry chocolate and mint cream.

The chocolates are raw, meaning they are never cooked above 115 degrees, and “live,” meaning the beans are soaked and allowed to germinate.

Similar to nuts, when the beans germinate they become a vegetable instead of a bean, Yeager says, which classifies them as “living.”

One of the biggest complaints that Yeagar has against mass-produced chocolate is that most is treated with alkalizing agents, used to decrease the beans’ natural bitterness.

“I always thought, ‘What about how 44 March 22, 2012

the chocolate makes you feel?’” Yeagar says. “Cacao beans have incredibly high levels of antioxidants –– higher than blueberries, acaí berries, goji berries –– but the alkali kills all of those antioxidants.”

Without those chemicals, the natural flavors and health benefits of the cacao beans are allowed to shine through, Yeager says.

Being such a widely loved product, it is hardly surprising that chocolate often spells success for these small companies.

The same could be said for a number of products. With the enormous number of mass-produced foods on the market today, quality is often sacrificed for quantity.

Hopefully, Boulder’s craft food manufacturers will continue fighting that trend, and their small companies will be baby steps toward better products.

BRAISED SHORT RIB AND GIANT-ASS GNOCCHI Feeds four

THE BEEF

8 short ribs, bone in 2 cups dry red wine (in all honesty, it doesn’t matter how good it is. Use a jug of Rossi if you want) 3 cups beef stock 2 onions, roughly chopped About 4 stocks of celery, roughly chopped About 3 large carrots, roughly chopped 3 cloves of garlic Salt and pepper

Preheat oven to 375. Heat a large dutch oven or oven-safe pan on the stove top on medium high. While pan is heating, rub salt and pepper into all sides of each short rib. Place short ribs in and continue to turn until each side of every piece is browned and has a bit of caramelization.

Remove ribs and add about one to two cups of the wine. Using a wooden spoon, scrape off the bits of meat stuck to the bottom of the pan.

Once you have deglazed, add the ribs and the vegetables and cook until you’ve reduce the wine by about 1/3.

Add the beef stock, enough to cover all the ingredients in the pan, cover it, and put it in the oven.

Ribs are done when a fork easily passes through, about three hours.

THE GNOCCHI

1 pound of potatoes (Yukon gold or red) 2 tbsp. kefir cheese 1 tbsp. grated gruyere 1 egg ½ cup all-purpose flour Salt and pepper to taste

Poke holes in potatoes with a fork and place, whole, into oven on tin foil. They take about an hour, so pop them in about an hour and a half into cooking the ribs, so everything is ready at about the same time.

When baked, skin and rice potatoes or push through a strainer into large mixing bowl. Add flour and mix until it is incorporated.

Add both cheeses and taste. Now is the time to adjust with salt and pepper.

Add egg. Fill a saucepan with water and bring to a boil.

Pull small handfuls of gnocchi dough out and form into small squares, then drop into the boiling water. When they float, they’re done. Remove and set aside on a plate.

Fry finished gnocchi in hot olive oil after the short ribs are done and resting.

THE SAUCE

When the ribs are done, arrange a strainer over a saucepan and pour the entire contents of the pot the ribs were in. Use a spoon to push some of the soft vegetable matter through the strainer.

Turn up the heat and reduce by half, and adjust the taste with salt and pepper.

Note: You can make a roux and thicken the sauce if you want a gravy, but I think the meal is already rich enough. Serve with a tart green salad of kale or arugula to cut through the richness of the dish.
