Thank you for publishing “The Peace Sign on the Mountain [Re: The peace sign on the mountain, Dec. 25];” it’s a great piece of Boulder history that the Weekly is keeping alive.

Having had the dubious privilege of receiving a draft card in 1973, and although there were no call-ups that year and the war soon ended, I was horrified by the tragedy being inflicted on the children and families of Vietnam and Cambodia. n 1972, I was part of a nationwide campaign that came close to getting the U.S. Senate to reject Earl Butz, Richard Nixon’s choice for secretary of agriculture.

A coalition of grassroots farmers, consumers, and public interest organizations teamed up with progressive senators to undertake the almost impossible challenge of defeating the cabinet nominee.

The 51 to 44 Senate vote was so close because we were able to expose

Butz as... well, as butt-ugly. We brought the abusive power of corporate agribusiness into the public consciousness for the first time. We had won a moral victory, but it turned out to be a curse and a blessing.

First, the curse. Butz had risen to prominence in the world of agriculture by devoting himself to the corporate takeover of the global food economy. He openly promoted the preeminence of middleman food manufacturers over family farmers.

“Agriculture is no longer a way of life,” he barked, “it’s a business.” He instructed farmers to “Get big or get out” and proceeded to shove tens of thousands of them out by promoting an export-based, corporate-run food economy. “Adapt,” he warned, “or die.”

The ruination of farms and rural communities, Butz added, “releases people to do something useful in our society.”

The curse of Butz, however, spun off a blessing. Small farmers and food artisans practically threw up at the resulting Twinkieization of America’s food. They were sickened that nature’s own contribution to human culture was being turned into another plasticized product of corporate profiteers. They threw themselves into creating and sustaining a viable alternative. Linking locally with consumers, environmentalists, community activists, marketers, and others, the Good Food rebellion has since sprouted, spread, and blossomed from coast to coast. school, including my hockey coach, and just can’t shake the immensity and sadness of it all. I miss them, so young, vibrant and full of dreams, then taken away.

I applaud Jack, Lorel and Lois for their courage of convictions, persistence, determination to spread peace and the playful way in which they went about the work. I laughed, cried as the story unfolded, and many of the images portrayed will linger a long time.

To our civilian leaders who have authority to deploy our service men and women into harm’s way: I advise you to tread very carefully in your decisions, for they have profound impact on lives far beyond those who serve. It is incumbent on you to exhaust every diplomatic avenue before embarking on inherently crazy military adventures. Peace, tolerance and understanding are the way. I extend a hearty ‘thank you’ to our men and women in military service.

Obama has it right on Cuba

I am one American (born here)/ West Indian (grew up there...

Jamaica/Barbados) that is extremely happy to see this U.S. Administration sending such positive political and economic signals to the Cuban regime and its people. Make no mistake about it, Cuba is one of the largest and most resource/people/talentrich Caribbean islands that there is.

People forget that. And its young deserve a chance to integrate with the rest of the world to contribute and learn simultaneously.

Having lived for some time in Coral Gables in South Florida I also remember the very old stubborn, even bullying ‘we escaped Cuba’ Cuban guard that then and up until today has dominated the political scenario.

However, I have little to no sympathy for these refugees and the corrupt Batiste Cuban government that they were a part of and represent. I know whereof I speak as well in that rumor has always had it that the same mob/ exploiting American businesses that Castro threw out were influential in derailing the ‘Federation’ or ‘United States of the Caribbean’ movement of the 1950s. My late father, along with the late Sir Grantley Adams of Barbados, Sir Norman Manley of Jamaica, Sir Eric Williams of

Trinidad and Tobago and Prime Minister Forbes Burnham of Guyana had meticulously put this all together.

When Jamaica jumped out of the agreement at the last minute, having been talked out of it by these same Cuban-like interests, the whole idea fell apart. So I suppose there is a somewhat personal ulterior emotional motive on my part here. But be that as it may, there is still no reason that this same obstinate and closed state of mind in Miami should hinder the vibrant, promising young Cuban communities in Cuba and in the U.S. And absolutely no reason they should be separated any longer as the other Caribbean islands have been, in my opinion. Congratulations to President Obama and his team as well as the Pope himself on this important, essential and historic move. Thanks.

A part of Cuban history

On November 11, 1941, a ship, the “Colonial” pulled away from the docks of Lisbon Portugal, its destination: Havana, Cuba. On board were many Jewish refugees, desperate to flee the horrors of Nazi occupied Europe. Cuba was one of the few countries allowing refugees in at that time. This part of the island’s history is essential to my life. My mother and her family were on that ship and Cuba’s willingness to take them in is why I am here writing this letter. Castro’s Cuba, as we have known it, is also becoming a part of history. President Obama, President Raul Castro, Pope Francis (and of course others) have begun to pave the way to a new future with Cuba.

The recent talks about restoring full diplomatic relations and opening up travel between our two countries have, in my opinion, brought energy and hope to the daily news.

We are neighbors that share a long history. I hope the upcoming years will be a time of peace and friendship between Cuba and the United States.

after the November elections, the Republicans retook the Senate and the new Majority Leader, Mitch McConnell, announced that he is eager to work with Obama to pass the TPP and similar agreements.

The TPP has been under negotiation for six years. Members of Congress were denied access to the text for years but now can read it under strict conditions. When they go into a room to look at it, they can’t take pen or paper or take notes. They are sworn to secrecy. Since the document is still being negotiated, the text could change the next day.

Rep. Polis has read some of the pact but declines to say anything.

Rep. Alan Grayson (D-Florida) has examined the text and has had plenty to say. “Having seen what I’ve seen, I would characterize this as a gross abrogation of American sovereignty,” Grayson said. “And I would further characterize it as a punch in the face to the middle class of America... But I’m not allowed to tell you why!”

Grayson said that the agreement would be very favorable to multinational corporations, but has extremely detrimental implications for the public interest in many respects.

“It’s all about tying the hands of democratically elected governments, and shunting authority over to the non-elected for the benefit of multinational corporations,” Grayson said. “It’s an assault on democratic government.”

U.S. trade policy changed with the rise of corporate globalization. It used to involve rivalries between different industrial sectors but now involves a stealthy slow-motion corporate coup against hard-won progressive advances.

The North American Free Trade Agreement (NAFTA) was the game changer.

NAFTA and the later agreements were supported by the leadership of the Republicans and the Democrats.

They were opposed by a majority of Democrats in Congress as well as many grassroots Democrats (particularly in the labor and environmental movements).

A smaller number of Republicans opposed these agreements. Colorado’s former Republican Senator Hank Brown is a curious case. When the Clintonite/Republican coalition asked Congress to approve a huge worldwide expansion of NAFTA called the World Trade Organization (WTO), Brown was inclined to support the legislation.

Then Ralph Nader challenged any member of Congress to read the 25,000 page agreement and answer 10 questions posed by an independent journalist. He offered to give $10,000 to the member’s favorite charity if he answered the questions correctly. Hank Brown was the only one to take up the challenge. He scored 100 on the test

and voted against the agreement.

“Anyone who thinks this agreement expands free trade,” he said, “has not read it.”

That’s a problem with these deals.

How many people read them? A survey of economists who supported NAFTA revealed that only one in nine actually had read the treaty itself. That’s why

How five young people are using their personal stories to change the conversation on immigration

The five of them each wrote a monologue about their experiences growing up in the U.S., and Wilson has crafted a script based on what they wrote and Brian Mullins contributed original music. The play, Do You Know Who I Am?, has since been performed around Colorado roughly 30 times.

“All the things that we’ve been through, our families, the struggles we’ve faced on a daily basis, at one point you just get tired of it and one of the biggest things for me was, coming up in this work, I was always trained to tell my story in the third person, so I wouldn’t be telling my story as Victor Galvan, I’d be telling my friend’s story, and I felt like that always took something away from what I was saying. It never felt quite authentic,” says Galvan.

People told him not to go public with his status out of concerns for his safety. He did so anyway.

“The first time I said it, it felt so empowering,” he says. “I was telling people who I really was and what my real experiences were, and people really wanted to hear that because all they’d ever heard was allies defending undocumented people and here I was, undocumented and telling my story.”

Legislators needed the stories, he says. They needed more than numbers and labels to make changes to legislation. He credits those who have come forward publicly as undocumented immigrants with passing the bill that allowed undocumented immigrants inBoulder Weekly

“That’s exactly what telling our stories as undocumented people did, it moved law,” Galvan says.

It’s any immigrant’s story, Wilson says, “You really are between cultures and there’s no ‘going back’ so there is only going forward.”

What she sees now is the five of them creating community, creating home, in each other.

Their wants are the same as any young person’s — to go to college, to visit their families, to build careers and lives for themselves. But so often, when they’ve gone to pursue those dreams, they’re faced with one obstacle after another.

Galvan excelled in school, had geared up to go to college by accumulating a stack of awards for his participation in school programs and was given a scholarship for overcoming adversity. Then he lost that scholarship because of his immigration status.

Juan Juarez came to the U.S. as a 14-year-old, initially unable to understand anything his teachers or other (90 percent white) students said to him in high school. He advanced to the point he was taking community college classes before he graduated. One look at the price of college, he says, and he knew it would be impossible for his family to afford. His father wanted him to focus on school, but he insisted on working full time on top of finishing high school.

“Looking back at it, I’m like, did I really start working when I was 14? Did I really do that?” echoes Oscar Juarez. The Juarez family relocated from Arizona to Colorado because of Arizona’s law allowing officers to ask anyone for proof of immigration status.

“Having to look back through what our family went through, it’s like, I don’t even know how we all did it, to be honest. … Just living in Arizona where you know that if you get pulled over, you’re pretty much going to get deported. That’s the daily fear that we went through, and it’s like, how did we get away from that? We see family after family getting separated.”

Temu would like to go back to Guatemala to learn from her grandmother, who lives in the mountains and makes pots she takes down into the city to sell for a bag of corn to make tortillas. Her mother says no, it’s too dangerous. As if to prove her point, this time last year, Temu’s cousin was kidnapped when he went along with their grandmother last year to help sell the pots. He escaped only because, having grown up in the mountains, he knew how to disappear and survive finding his way home, Temu says, and if he hadn’t escaped, he’d either be killed or forced to work in drug trafficking.

They still worry for their families here.

“What I’m doing right now, it’s for them, because it’s time for me to give them a little bit of relief of what they had to do in order for us to be here with a better future,” says Juan Juarez. He watched the news of the president’s new program for immigrants with his father, and saw the tears in his father’s eyes as he realized this program would make no difference for him.

“It’s not just some theoretical moment of, ‘Oh yeah, that’s too bad,’” Wilson says of the community outpouring. “It’s someone I’ve seen, I’ve seen their hearts desire, I know what they think about their mothers, I relate to these people and their striving for college. That person being undocumented, that’s unfair, that’s unjust.”

Galvan risked deportation and loss of his DACA status to join in civil disobedience that blocked traffic on Broadway near the Capitol in Denver. But risk is nothing new.

“Our lives had been full of risk, so we always have seen the light at the end of the tunnel and we’re reaching towards it,” says Juan Juarez, who was old enough to remember life in Mexico, and the ongoing worry about whether there would be food on the table and shoes on the kids’ feet. Life in America has definitely provided better opportunities, and they make the risks worth taking.

“Looking at my parents and looking at the life that we have, which was not as much as what my parents thought it would be, but it’s definitely better, and my fear is to lose it. My fear is to lose it by losing my parents,” Oscar Juarez says. “Deferred action has opened a lot of doors and it definitely has helped out our family and yeah, just losing that, it’s one of the fears that many of us live.”

To be clear, they’re looking for opportunities, not freebies.

“It’s a better place to be to have those opportunities, to have something and not starve to death or scrape a wall for food every single day,” Oscar Juarez says. “We’re not asking for giveaways. We’re asking for the opportunity to develop those things to have a better life. We’re not here to take advantage of anything.”

So many of those opportunities we take for granted, like a K-12 education, are far from readily available in Mexico.

“People have been waiting for a really long time to be able to get work authorization because what they want more than anything is to be able to support their families,” says Laurel Herndon, founder, executive director and managing attorney of The Immigrant Legal Center of Boulder County. “I have talked to many, many people since the new program was announced, and they feel that they take a risk every day, and if they can step forward and prove to the government that they are good people, that they don’t have criminal records, it’s something they’re anxious to do.”

“It brings a gentle understanding of the situation. It’s not preachy and it helps people identify some of the misconceptions that they’ve had over the years,” Herndon says. “I think it’s moved many people to action in different ways.”

For some, that could mean calling a member of Congress or volunteering with the Colorado Immigrant Rights Coalition. Some in the audience have gone all-in.

hey know he is home when they hear his whistle.

Whittle-WEE! Whether Jose Luis Guerrero’s wife and children will hear his call again, from the doorway of their small Aurora home, will be determined by the U.S. government.

Jose Luis has been in jail for five months. He was detained after Immigration and Customs Enforcement (ICE) officials came to his home looking for someone else.

When they ran his ID, they found he had a prior deportation and re-entry on his record. ICE came back a week later and, with a gun to his head, arrested him and brought him to jail.

He now awaits deportation, and like many other families under similar circumstances, the Guerreros hoped that the Obama administration’s recent executive action on immigra-

tion would offer relief. With all indications from ICE that it won’t apply to him, the Guerreros will wait to hear if Jose Luis qualifies for a stay of removal, which would allow him to stay in the country, at home, for a year, and continue to file stay of removal requests annually in the future.

ICE spokesman Carl Rusnok says Jose Luis will not qualify for the executive action deferral, and “falls within the new enforcement guidelines” because he has a final order of removal dated after Jan. 1, 2014. This is despite the fact that Jose Luis has four U.S. citizen children, has lived in the country for more than five continuous years, has no criminal record, owns a small business and pays his taxes.

Jose Luis’ story is seen as a trial case for the executive order, according to his lawyer and the advocacy group Colorado Immigrant Rights Coalition. At least, it provides an opportunity to look at who the executive order is benefitting, and who is still slipping through the cracks.

“It’s been a really hard couple months.”

Sofia Guerrero sits at the end of a baggy brown couch with her children. She is tired. They are all tired. She is softspoken and speaks carefully, recounting in Spanish the week her husband was arrested.

“We had agents come to our house one day,” Sofia says through an interpreter. “They knocked on the door and we had two doors so I opened the inner door and I left the glass door closed. They came looking for another person, they asked for another person. I kept on telling them that the person they were looking for wasn’t here, he didn’t live here, and I kept reiterating that to them. My husband was bathing, getting ready for work. I insisted and insisted and, really for wanting to cooperate with them, I went and got my husband. He spoke to them and they asked him for an ID and he gave them his ID at that time. They didn’t have any arrest warrant; I had asked them if they had a warrant. They Boulder Weekly

and that his case was closed.

“At that moment we just felt like there wasn’t going to be any hope or opportunity for us anymore,” Sofia says.

But with the help of Sarpong and the Colorado Immigrant Rights Coalition, the Guerreros filed for a stay of removal that would allow Jose Luis to return home from jail and stay in the country at least for the next year. They are awaiting the verdict on that request.

Brendan Greene, a Colorado Immigrant Rights Coalition campaign director who is working with the Guerreros, says a stay of removal is “not ideal,” and that they will continue to work to try to include Jose Luis in the executive action program. Either that, or work to change the program to include families like the Guerreros.

“The bad part about the way the program is written now is that it’s all up to discretion at the local level and it’s going to be a case-by-case basis to see how our local office is following through on that mandate to give this discretion proactively,” Greene says. “The place they give the most room for discretion is public safety issues and we think that a thorough review of this case will really make it clear that he has done nothing that would put him into that category other than the prior deportation and the re-entry that was around noncriminal immigration issues. There’s nothing on his record and there’s a lot of positive contributions to the community.”

The agency that is in charge at the local level varies throughout the country. In Colorado, the local ICE field office handles such cases, but elsewhere, it could be the U.S. Citizen and Immigration Service Field Director or Service Center Director; Customs and Border Protection Sector Chief or Director of Field Operations; or the Department of Homeland Security.

So, to be clear, the executive order lays out priorities but it gives the power to local officials to exercise judgment and discretion on a case-by-case basis. The local official in Jose Luis’ case, the Denver Field Office of ICE, says he falls under the new enforcement guidelines.

So unless he is granted a temporary stay of removal, Jose Luis will be deported away from his family.

“It’s only for people that qualify for that freedom.”

Sofia, bleary-eyed already, starts to choke on her words when she talks about the impact Jose Luis’ absence has had on the family.

“It’s like we’re a chair and they just took one of the legs away from the chair,” Sofia says. “We’re trying to bal-

ance ourselves. It’s hard. It’s been really heavy for us.

“To see day to day that, the kids, they need their father and they need his attention. I’ve been forced to now take on two jobs. I come home from my day job, I finish work, I come home, I give them food, and then I have to leave to go to my second job. We’ve always tried to be there for them to help them with everything, to help them with their homework and now it’s hard.”

The eldest, Andy, 16, has had to take on more responsibility, helping get his brother and sisters ready for school and helping make meals while his mother works two cleaning jobs. His mother says his schoolwork has suffered and this event might be jeopardizing his future. “[Andy] has a scholarship and one of the requirements is that he stay after school,” Sofia says. “He’s had to miss a couple different sessions just for the need of being able to support and being at the home. And same thing if I get home late or early in the morning, he helps get everyone ready for school.

This hurts me because he shouldn’t have to be dealing with this, he should be able to focus on his school and only on his school. It’s causing us to have to stop or put a bump in his future to have to deal with all of this. We want him to be a professional and that to be the only thing he has to worry about: school and getting ahead.”

But the biggest issue, the family says, is the truth that it’s just tough to see their father in jail.

“It’s ugly to have to see them have to go to a jail to talk to their father behind glass,” Sofia says. “Sometimes they come home happy to see him and other times they come home crying because they’re unable to touch him.

I’ve had five months since I’ve seen him.”

“I feel mad and angry that we can’t hug him or touch him because there’s a glass there and we can’t do nothing about it,” Kenneth, 11, says.

“My sisters go one week and we don’t go,” says Andy. “And the next week we go and they don’t go. The thing is to try to cheer him up. Tell him jokes so he’s glad that we’re there and make him happy. But it’s not the same.”

Sofia says that when her kids do get to see him, it sometimes does more harm than good.

“It’s also hard because sometimes they’re treated well and sometimes they’re not treated well. [Prison officials] waste their time or cut off their time. They see how they yell at him and tell him that his time’s up and that’s when they come home sad,” Sofia says.

Even as they fight for their husband

and father to be able to come home, the Guerreros realize that their fight is one of thousands across the country.

“It’s like a horror movie,” says Jennifer, 13, “because I just can’t imagine, like I’m living it right now, but what about those kids that actually got their parents deported and they have to be in foster homes? It’s just scary. You never know if they take him and they come for my mom… it’s going to be the same thing. We’re going to have to be living with other people that we don’t even know.”

Sofia says by making their struggle public, they can help other families in similar situations by rallying public support.

“When we make it public and we fight for what is just, people are going to see that it’s not just us, there’s thousands of people in this situation,” Sofia says. “For people like us who sometimes get sent back home without knowing there were other options available to them and they probably have the same needs we have. We’re asking for discretion not just for us but for so many other people who are in this situation.”

But the way the Guerrero’s feel they’ve been treated isn’t without consequence. Andy, not yet out of high school, says he’s had to seriously question the notion of fairness and equality in America.

“The motto here is everybody is equal and it’s a place for freedom. But it’s only for people that qualify for that freedom. There’s people that work everyday, try to sustain a family, pay bills, pay taxes, but they don’t qualify for that freedom,” Andy says.

“It’s not so much the injustice but seeing that [ Jose Luis] doesn’t have a chance to express himself and explain that he is here for his kids, out of necessity,” Sofia says of her view of the situation.

For now, the family takes solace in little reminders of Jose Luis, and they pray for the best. Each has their own story, their own favorite memory of their father and husband. But each are eager to start living their life again with him there.

“Inside there, the prison, he gave me this rosary that reminds me every morning or whenever I put it on, of him, telling me to keep on going, to not give up,” Kenneth says.

That rosary and a lone framed picture of Jose Luis on the living room table will have to do for now. They all remember his smile and take turns trying to mimic his whistle, Whittle-WEE. They smile. But it’s a sad smile, each of them, because it’s not the same.

rayless dining in university dining halls: a simple idea, but one with few case studies and fewer reliable metrics.

“It’s supposed to save water and save energy, and people also take less food when they don’t have a tray, because they can’t stack it up as much. So you don’t have as much food waste,” says Courtlyn Carpenter, a sophomore who researched trayless dining during her freshman year at the University of Colorado Boulder.

healthy side option if they don’t have enough hands to carry another item. Others say that with less room, diners are forced to consciously choose when and why to get back in line for another serving.

That’s why Carpenter supports a test program at CU. “It’s really, really hard to tell, from university to university, if [trayless dining] is going to be successful or not,” Carpenter says.

CU holds a “Scrape Your Plate Day” at least once every semester in all of the campus dining halls, where diners are asked to scrape their unwanted leftovers into special bins for weighing. This project was initiated in 2008, and the fall 2014 Scrape Your Plate Day showed that CU Boulder diners each produced about 3.8 ounces of food waste each meal, on average. Beckstrom says that this number is a 32 percent decrease from six years ago, and that the perdiner waste is comparable to other universities that have trayless dining.

Both schools’ improvements are impressive, given how much food is thrown away in the U.S. Americans waste 40 percent of their food every year, according to a 2012 report from the Natural Resources Defense Council.

Nearly half of that comes from households and service operations, including dining halls and cafeterias.

Carpenter surveyed universities across the U.S. on dining practices and found that 22 out of 25 saw a decrease in food waste when trayless dining was adopted. But most did not have proof of the decreases, and each university had different methods for collecting the information.

“At some universities, students seem to take to it more,” Carpenter says. “But it also depends when you start it, how much food waste you had previously, how your cafeteria is set up for the traffic flow, if students like the food or not.

There are a lot of factors. So I think the best way to test it is to actually try it for a semester.”

And things are looking positive for Carpenter’s research.

“I am now working for dining services, I’m their sustainability intern,”

Carpenter says. “So they’re having me work on trayless dining again. It’s still a possibility, and I’m hopeful that maybe we can get somewhere this time.”

Beckstrom says that the school is considering trayless dining in Libby Dining Hall, located in the same building as a residence hall and laundry rooms in the center of campus.

“This location may be able to support trayless dining with its existing layout,” Beckstrom says. “It’s not as large as other dining operations. I’m not sure if we will be able to measure our energy and/or water usage, as this data is not separated from the rest of the building.”

Beckstrom says that dining services may consider asking students what their goals are if the program moves forward, whether that be food waste, convenience, portion size options, nutrition, cleanliness, energy use or water use.

“I’d like to pose that question to our students to see what they would consider priorities,” Beckstrom says. “I’m certain that food waste would likely be a leader in the response, as this is an issue that we receive consistent feedback from our guests, our students.”

he trail starts at the edge of Frisco and immediately begins to go up. It is cold, but not as cold as it was when I pulled in front of a coffee shop an hour earlier to rendezvous with guidebook author Fritz Sperry. The sun has seen to that, pushing a growing warmth down onto the slopes of Royal Mountain. As Sperry climbs easily up the trail in front of me, I’m thankful for the late start and mellow pace. I had expected a hard run of it. But Sperry is in no hurry. He knows that there’s always good snow to be found in Colorado and that there’s plenty to go around.

Why rush?

Fritz Sperry moved to Colorado in 1992 from New York, ending up in Summit County. A skier since the age of 4 and already veteran of the Eastern backcountry with trips to Tuckerman’s Ravine and other descents, he almost immediately started fooling around in Colorado’s wilder terrain, nailing his first out-of-bounds Colorado day on Gore Range landmark Red

Peak. A desire to ski steeper and more intense took him to Crested Butte in 1995.

He might have stayed in that legendary Colorado ski town forever, but a serious injury forced his return to New York City in 1998. He made it back to Colorado a year later after healing up, but then life took him to St. Louis.

“I spent four painful years there,” Sperry says and laughs, while also admitting that one bright spot in his Midwestern hiatus from the Centennial State was a renewed appreciation for baseball.

The other bright spot was that St. Louis was where Sperry got the inspiration for his guidebooks, Making Turns in Colorado’s Front Range: Volume 1 — South of I-70 and Making Turns in the Tenmile + Mosquito Range.

“When I was in St. Louis in 2001, I came up with the idea of doing a guidebook,” says Sperry. “I started work on it then and used it as inspiration to return.

the flatlands more bearable,” he adds. “My ex-wife was doing her doctoral work in St. Louis and we were looking for some direction on where to go when we were done there. Each season, we made it back to Colorado for skiing and visits. I even got some of the lines in the first book done while I lived in St. Louis.”

From a forested shoulder of Royal Mountain, where I’m skiing today along with one of Sperry’s regular backcountry partners, Frisco local Gary Fondl, you can see many of the peaks that Sperry has skied, written about and photographed. Lake Dillon glistens in the sunshine below as the sun rises higher. Conversation comes easily and ranges across a wide range of subjects. It’s a companionable group and I’m reminded why some of the strongest bonds in life are created outdoors. And for Sperry, it’s been one of the highlights of the creative process that went into his guidebook projects.

“The friendship bonds created in the hills are like none I’ve ever experienced in other aspects of my life,” says Sperry. “Ski partners mirror family in my mind and my heart.”

These bonds, of course, make it painful when — as does happen — an accident or other tragedy results in death.

“Losing some of these friends along the way is the low point,” admits Sperry. “It wasn’t in an accident that involved one of our trips, but it still hurts.

“Backcountry skiing is dangerous no matter how well you prepare,” notes Sperry. “The first book is dedicated to one of my fallen friends. This is a serious game without a doubt.”

Because of this, both Making Turns in Colorado’s Front Range: Volume 1 — South of I-70 and Making Turns in the Tenmile + Mosquito Range have a strong emphasis on backcountry safety and avalanche protocols. Colorado leads the nation in avalanche deaths and has a tricky snowpack that can challenge the most educated.

“Powder days and steep scary lines are the highlights of the mountains,” says Sperry. “Learning how to best go about getting it done has been an amazing experience. Colorado’s fickle snowpack dictates doing it a certain way.”

Sperry freely admits that one goal of his guidebooks is to, “pass along my thoughts on what the right way to get it done is.”

And the right way, he says, is to take it easy and ski what Mother Nature, the weather and snow conditions let you ski, without taking big

risks, because the conditions will always improve and the big peaks and huge lines will always be there.

“Some of the peaks took multiple tries to get done,” says Sperry of the process of gathering beta and photographs of the terrain he covers in his books, multiple trips that were a result of being hyper aware of avalanche and weather hazards in Colorado’s harsh winter environment and making the choices that would let him come home each day alive.

Still, Sperry wants you to go skiing, and he wants you to explore Colorado’s mountains in winter.

“The goal of the books is to highlight the great options in each of the zones that I know best,” he says. “The more choices people have the better. Places like Berthoud and Loveland Pass will always be crowded but there are better places to ski. Thinning out the crowds by giving people fun choices is the point.”

And when it comes to choice, Sperry wants you to have more. A lot more.

“I’ve always got plans for the mountains,” he laughs. “This spring my focus will be on the Indian Peaks and the skiing portion of Volume 2 of the Front Range books. I’m shooting for a 2016 release for this project. My company Giterdun Publishing will be publishing Eli Helmuth’s Select Ice Climbs of Rocky Mountain National Park, we’re hoping to hit the shelves with this around August 1. Then, hopefully, there will be good weather in the fall and we can go for some objectives down in South America. Volume 3 of the Front Range series will cover from Southwest RMNP to the Snowies in Wyoming, this will include the Never Summers and Cameron Pass.

I’m hoping to have that in stores in fall 2017. There are a few other projects in the works but those are just discussions at this point. The other big goal is to ski powder all the time and just have a ton of fun, but isn’t that what life’s all about?”

omeone once said that managing your brand isn’t always easy, but it’s always easier than managing your customer.

Banjoist Dave Johnston knows a little about this, as Yonder Mountain String Band found themselves in the position this year of morphing the structure of their much beloved four piece with the departure of mando player and co-founder Jeff Austin in April. While the split may not have come as a shock to some Yonder observers, it still left the band with a seat to fill and some nuts and bolts decisions about how to mature and re-fit the band’s lengthy and welltraveled repertoire.

Austin’s seat was actually filled by two players — mando player Jacob Jolliff and fiddler Allie Kral — and Johnston says that the process of arranging the band’s material, which happened more or less in real time as the band played out during the summer festival season, was both a matter of sitting down and working through parts, as well as just kind of letting the new thing grow its own legs.

“Well, yeah, you’re right about that,” noted Johnston, when Boulder Weekly caught up to him before the band’s departure to Mexico for Strings & Sol a few weeks back. “There were a few things, particularly with vocal harmonies, where we were like, here are the parts we’d like you to sing. But, counter to that, we kind of decided we’d just tackle it day by day, and setlist by setlist

Yonder’s 16-year run as one of the progressive bluegrass scene’s most vital franchises has engendered a deep sense of ownership amongst their fanbase, the kind of loyalty and support that most bands would envy. And of course, a lineup change will predictably prompt any number of skeptics in the pitiless, free-fire zone of Internet chat rooms. A little ironic, in a sense, that a band long heralded for liberating bluegrass from the limitations of its historical conven-

tions should find itself, even marginally, faced with skepticism during its own transformation.

“I lurk here and there, and check it out,” Johnston says of the Internet buzz surrounding the band’s lineup change.

“I think there’s a few out there that are saying that it’s not Yonder Mountain String Band, but mostly the response has been really positive and very open-minded. …What Jake and Alli bring to the table is being accepted really well, almost across the board, and crowds and promoters and everyone is very happy with it.”

Reaffirmation, if that’s not too precious a term for it?

“It feels sort of like it used to feel when we were just starting out,” Johnston says. “It’s kind of this nervy and anticipatory feeling, mixed with…

I don’t know if gratitude is the right word, but it’s that kind of feeling mixed with the familiarity of Boulder and what the scene is like in Boulder, and how awesome it is. It’s kind of two things that on the surface seem apparently contradictory but are actually very complementary of each other. ... It’s reassuring, but also brand new at the same time.”

We couldn’t help but remind Johnston that, when we talked with him and his ex-mando player back in 2011, they both insisted that Yonder was close to recording and releasing a follow-up album to 2009’s The Show, the band’s last proper LP. You kinda stop waiting after a while, and let’s be honest here, Yonder hardly needs to prove anything to anyone by making a new album. But still, we had to ask: will there be a new album in 2015?

“For real,” Johnston says, “it’s done.

Like, seriously, everything’s pretty much done. We’re just mixing. We’re really excited by the way it sounds, and there’s a lot of new material on it, and a couple we’ve been playing out this year that people will recognize.”

The three-piece string group brings their ‘classically trained garage band’ back to Boulder

espite their impossibly booked schedule, the gentlemen of Time For Three always make time for Boulder — this time they’ll drop by the Boulder Theater on Jan. 8 for a fundraiser concert for the Colorado Music Festival & Center for Musical Arts. “[Boulder is] a second home for us for sure,” says Ranaan Meyer, double bassist for the Indiana-based string trio. “The Colorado Music Festival we consider family. We’ve been there four summers, so this will be our fifth appearance that they are presenting us at — there’s history there,” says Meyer.

There’s so much history, in fact, that the trio — which also includes violinists Zach De Pue and Nick Kendall, who met Meyer in 2001 while students at Philadelphia’s Curtis Institute of Music — regularly stays in the homes of CMF board members while in town.

porting music in the way Colorado Music Festival patrons are, it’s something to get behind as an artist because it’s the way that we live in our world, in the musical community: by people who get involved and support it,” says Meyer.

The community at CMF includes Steve Hackman, known for his fluency in both classical and popular repertoire.

It is this fluency that recently placed Hackman at the helm of CMF’s “Mash-Up” Series, where Radiohead meets Brahms and Coldplay mingles effortlessly with Beethoven.

Hackman is a longtime friend and collaborator of Time for Three — Tf3 for short — and it’s no wonder considering their shared fascination with blending the worlds of pop and classical music.

“We’ll take an arrangement [of a pop song], say, “Firework” by Katy Perry, and you’ll find the “Firebird Suite” by Stravinsky in there,” Meyers explains. “I like to compare it to fusion cuisine.”

Their music is part Bela Fleck, part Beethoven, a place where hip-hop can meet Haydn.

It was Hackman who co-arranged the trio’s classical take on the Kanye West song “Stronger.” The video, with its anti-bullying message, became a YouTube sensation that catapulted Tf3 to another level of fame in 2012.

But Tf3’s success wasn’t something the band themselves, let alone the classical music industry, saw coming.

“When Time for Three was created, we weren’t really told by the industry that we were going to be successful,” Meyer says with a chuckle. “[They told us] ‘Hold on to your day jobs because two violins and a bass, that’s so hard to market — no one really knows what you do. Keep at it, but don’t bet on it,’” Meyer says of the group’s genre-busting

musical stylings.

Despite the classical music industry’s confusion and hesitation, Meyer says he never felt like he and his band mates had any other choice but to play together.

“We were attracted to each other because of our personalities and this ambition of wanting to get together and jam after orchestra rehearsal, and it wasn’t more profound than that.”

They played then as they do now, Meyer says: for the love of music and the deep appreciation they’ve always felt from audiences.

“So we hung in there. Now we have this really big career and get to travel the world and play music.”

Nearly 15 years later, Time for Three has four albums, a substantial catalog of original music and a Rolodex full of prominent orchestral composers (such as Hackman) ready to create commissioned pieces for whatever occasions the trio might have.

The boys have performed at Carnegie Hall (in casual attire, as always), famed San Francisco jazz club Yoshi’s, NFL games and on Dancing with the Stars, not to mention their five-years-and-running residency with the Indianapolis Symphony Orchestra.

Meyer says he thinks the type of genre bending that Tf3 practices is what propels the art of classical music.

“I think the way that this art form is going to continue to go is by really keeping it so you’re having new, innovative minds within the industry, people willing to push the envelope,” Meyer explains. “The reason classical music has been around for hundreds of years is because the developers, advocators [and] composers are all people who wanted to push things forward.”

Andrew Bradford, executive director of the Colorado Music Festival &

Center for Musical Arts, says this attitude about “pushing the envelope” is what makes Tf3 such a favorite of CMF patrons.

“They know how to put on a good show but they also have a unique way of breaking down the barrier between stage and audiences, which is something that as a classical music organization we’re constantly striving to archive,” Bradford says.

“With Time for Three, they make classical music cool, they make it accessible. … I think that might be the greatest contribution they make in the way of education, is making it accessible to all, to experience it, to fall in love with it,” Bradford adds.

For Meyer, Kendell and De Pue, it’s really just as simple as having a love of music.

“We just happened to find our way through classical music. The world is such a small-slash-vast musical place — there’s so much to sample from,” Meyer says. “It’s really just been about using our imaginations and dreaming about music and styles that could go together and not wanting to categorize and get in the way of something that’s in our heads. Our approach to music is wonderfully childish. It’s like getting in the sand box and playing with each other and making up games as we go along.

It happens after years and tens of thousands of hours of practice married with that childish mindset, but it’s phenomenal because we keep that spirit going as we mature.”

Austin embarked on a lengthy dissertation about redefining self, maintaining physical strength and mental patience — almost a metaphysical statement of purpose — and Johnston merely committed to riding his bike more.

Johnston laughed when we brought that up, and asked what his New Year’s Boulder Weekly

resolutions were for 2015.

“I guess my goal for next year is to be more organized about my work… I read this fantastic quote by Kurt Vonnegut: ‘It’s not hard for evil to triumph over good; all it takes for anything to beat another thing is for it to be more organized.” [The actual quote is “There is no reason why good cannot triumph as often as evil. The triumph of anything is a matter of orga-

nization.”]

“For me, it’s like encountering a problem with a lyric you’re writing, encountering a problem with a lick you’re playing or a musical passage you’re trying to understand. … You’re directing your focus toward your weak points. Being a poor family, they are unable to offer any significant dowry for any of their daughters, so they rely on the local matchmaker, Yente (Barb Reeves), to find them suitable husbands.

As successful a matchmaker as Yente is reputed to be, her efforts are thwarted

by Tzeitel, Hodel and Chava. In a time when matches were made by parents and matchmakers, all three girls presume to choose their own husbands. Each episode is accompanied by Tevye wrestling with his conscience via a humorous internal dialogue about whether the man is good enough for his daughter.

Against the microcosmic background of Tevye and Golde working to marry off their three eldest daughters, some broader social and political issues

rear their sometimes ugly heads. Tevye is a fairly progressive man for being an early 20th century peasant Jew, but even he cannot abide interfaith marriage. The local constable (Scott Severtson) bears Tevye and the other Jews no particular ill will, but he is powerless to prevent the occasional pogrom or forced relocation. These real-world troubles lend Fiddler on the Roof a gravitas not shared by many other musicals and ensure that though it is an often-buoyant production, Fiddler is not a traditional feelgood piece of theatre.

Speaking of traditions, the music of Fiddler on the Roof is some of the most well-known and well-regarded in Broadway history. The first act is lush with memorable, sing-along staples like “Tradition,” which jauntily and efficiently lays out the structure of Anatevkan society. Tzeitel, Hodel and Chava go from schoolgirl anticipation

of matrimony to wary circumspection about it during the course of “Matchmaker, Matchmaker.” Tevye daydreams good-naturedly about an easier life with “If I Were A Rich Man.” The bittersweet “Sunrise, Sunset” artfully expresses a parent’s joy and pain at seeing a child grow up and leave the nest.

Wayne Kennedy is not a 20-something-year-old Adonis. He is, in fact, a middle-aged, follicularly challenged, lessthan-svelte everyman. Put in theatrical terms, he is a “character actor” rather than a lead. The thing is, Kennedy is also one of the best performers you’ll ever have the pleasure to see strut his stuff live on stage.

So it is always with great happiness that I welcome the news that he has been given the lead in one of BDT Stage’s productions.

Tevye is the very soul of Fiddler on the Roof, and Kennedy plays him flawlessly. With his Einstein-reminiscent, tongue-sticking-out laugh and his shoulder-shimmying dance moves, he is the funniest Tevye you’ll ever see, which makes it that much more impressive when he also excellently communicates Tevye’s emotional conflicts and out-andout agony later in the show. Director Michael J. Duran’s choice to build Fiddler around Kennedy was an outstanding one.

Shelly Cox-Robie (obviously under the weather the night I saw Fiddler but still spot on — what a trouper) matches Kennedy scene for scene. Her and Kennedy’s duet, “Do You Love Me?” is an emotional highlight.

And as usual, the BDT orchestra plays the heck out of every number Fiddler on the Roof has to offer.

oulder’s Dinner Theatre recently changed its name to BDT Stage. With the company now in its 37th season, it’s tempting to poke a little mid-life crisis fun at it over the unexpected new moniker. What’s next, a hair transplant? A gold hoop earring? A cherry-red Corvette and a 23-year-old girlfriend?

Luckily for Front Range theatregoers, BDT Stage remains the same beloved organization it has been for decades. Michael J. Duran still heads things up as the producing artistic director. The cast is still made up of a core of diehard, veteran thespians who’ve been with the company for years, intermingled with new faces just beginning their acting careers. The food is still the best you’ll find in a dinner theatre setting.

And with its choice to bring Fiddler on the Roof back to Boulder, BDT Stage clearly demonstrates its continued commitment to presenting Great White Way classics. Celebrating the 50th anniversary of its original opening, Fiddler on the Roof is Broadway royalty. For many, this Tony Award-winning musical (Best Musical, Best Director, Best Actor, Best Actress and five more) is the very definition of big-budget Broadway, and thus it’s no surprise that Fiddler is one of the top 20 longest-running musicals in Broadway history.

Though many people forget this, the star of Fiddler on the Roof is not actually the titular fiddler. Influenced by eclectic and infamous artists such as Duke Ellington, Philip Glass, Charles Mingus, Mary Lou Williams, Billy Strayhorn, Claude Debussy and Bjork, John A. Díaz-Cortés creates an equally eclectic sound with his own music. Born in Mayaguez, Puerto Rico in 1987, this young virtuoso spent the early part of his life immersed in the sounds of the Latin American church. Shortly after receiving his first saxophone, Díaz-Cortés began playing in local salsa bands and learning the popular repertoire of the Caribbean and Latin America. He formed the Folklorika Arkestra in 2009, an ensemble dedicated to presenting American roots and art music — storytellers of the community.

Each year, the Nomad Theater gives five writers a lyric from a song and actors’ headshots early one morning. The writers return just 14 hours later with original scripts written for those actors and based around the song lyric. The next morning the scripts are distributed to crew, directors, choreographers and actors. Rehearsals begin and 10 hours later, the plays are performed. A talk-back follows each performance of these unique, one-off shows .

Tickets are $10.

Songwriting duo The Prairie Scholars will be there to showcase their musical stylings and simultaneously celebrate band member Jessica Eppler’s birthday. The Tasty Weasel will donate 10 percent of all tap brew sales between 4 p.m. and 8 p.m. to the ArtWalk — Oskar Blues CAN’d Aid Foundation has agreed to match that. Bodacious Eats, a Longmont-based food truck, will be set up for the event and has also agreed to donate 10 percent of sales. Ten percent of all merch purchased from The Prairie Scholars will also be donated to the ArtWalk.

‘White Bird in a Blizzard’ is a melodramatic avalanche

Y

our tolerance for writer/ director Gregg Araki’s White Bird in a Blizzard hinges on your appreciation (or lack thereof ) for campy content.

If you were weaned on John Waters, you’ll gobble up every cheese-tastic second, from a horny housewife lusting towards her daughter’s boyfriend to Christopher Meloni’s Yosemite Sam mustache. If you’re intolerant of goofy tomfoolery, you won’t survive dialogue like, “In the blink of an eye, my virginity was gone. Just like my mother.”

Based on a 1999 novel by Laura Kasischke, White Bird is simultaneously a coming-of-age tale and a missing person mystery, a nonsensical combination if ever there was one. Kat (Shailene Woodley) is a high schooler stumbling into sexuality right at the point when her mother, Eve (Eva Green), disappears. Her father (Meloni) is a Willy Loman-esque sad sack who greets his wife’s disappearance with a sniveling, “She never loved me.” Through flashbacks, we see that Eve was more Mommy Dearest than “mother of the year.”

Green vamps and camps it up, skewering the daughter she envies with statements like, “You look just like I did when I was you.” The film may be set in 1988, but Eve is all exploding 1950s suburban housewife, drunkenly yelling things like “I will not be dismissed by the likes of you!” Kat could care less that her mother vanishes, as she’s too busy relishing her bellyflop into sexual activity, which includes the seduction of a 40-something-year-old cop (Thomas Jane). As the movie Boulder Weekly

lurches along, the only constant is sultry and sexual silliness.

For campy content to work it has to be presented with the utmost sincerity, and oh holy crap is Araki sincere.

Surreal dream sequences and faux profound symbolic moments relentlessly pound viewers. You can tell Araki thought he would blow minds with moments like when Kat dreams of her mom’s hands dissolving while she does the dishes. No one, neither the people who made the film nor the characters who appear in it, have ever even heard of the word subtle. Love it or hate it, this is all by design.

In 2014, Green declared herself the unquestioned Queen of Cheese, following up her smoldering kitsch in Sin City: A Dame to Kill For and 300: Rise of an Empire with this epically borked performance. However prepared you may feel for the final dream sequence that reveals the meaning of the title, I promise that you aren’t. Judging a film like this is tough because traditional rules don’t apply; performances aren’t gauged on depth or sincerity and the dialogue was specifically engineered to induce groans. It’s all a matter of taste, specifically a taste for tastelessness.

White Bird in a Blizzard is technically awful, intentionally tacky and, for me, pretty dang fun. More amusing than most comedies and more entertaining than many dramas, this pitch perfect example of an infrequently used genre did it for me, but I make no promises about what it will do for you.

T

here’s something about the term “international” that makes it a sort of red flag when judging a restaurant by its menu cover. It’s understandable prejudice on one hand — jack-ofall-trades, master of none, bringing to mind half-assed buffets and ubiquitous houses of pancakes.

But on the other hand, it shouldn’t preclude restaurants from making it their signature.

There are, to start, infinite examples of cross-culture culinary adaptations: vodka sauce, meatball grinders, sushi burritos, quesadilla burgers, not to mention the magical journey Chinese food has taken in the U.S. Too, given the globalization of food culture (let alone, culture), rarer is the American chef that specializes in one cuisine, it seems, than the chef who takes from all and creates his or her own international, for all intents and purposes, style. No drop in quality, and unique creations are made.

Such is the case with Bistro 503 in Lafayette. Hidden in the small indoor mall next to Jax Mercantile, the caliber of cooking and ambiance inside the restaurant is a wild surprise.

At brunch one recent Saturday, we reviewed a varied menu over a powerful bloody mary and a mimosa. On that menu, you’ll find a prime rib sandwich, chicken marsala, pad thai, pupusas, and salmon with eggs benedict. Let the voyage begin.

What wasn’t a home run, maybe a double, were the breakfast pupusas. Buttery and crisp, the flatbreads were sparsely packed with bacon, ham and sausage, with two fried eggs, jack cheese and avocado slices on top.

The flavors didn’t fully blend with the chicharron salsa, and the pupusas (gluten-free) disintegrated with each forking. by Matt Cortina When three plates came, I couldn’t resist the prettiest one. Three charred jumbo scallops topped with thin, crispy onion, sitting on risotto with julienned zucchini in a balsamic and pesto base.

Swiping down with the fork put it all in one bite, and delivered balance in both flavor and feel. The scallops, each large but with varying shape, were cooked to perfection — tender, juicy and just at the edge of opaque with a crispy, bitter char. The risotto was firm but

BITTER BEER

Odell Brewing is rolling out the second edition of its much ballyhooed Fernet Aged Porter in January.

It starts with a rich imperial porter from Odell, which is then aged in Fernet barrels from Leopold Bros. distillery.

“Fernet is a dark minty liqueur made with herbs and spices and aged in oak barrels.

Leopold Bros. has crafted its own unique recipe which includes lavender, honeysuckle, ginger root, bitter aloe, dandelion root, rose petals, chamomile and peppermint,” Odell said in a press release.

The brew is offered in 750 mL corked bottles throughout Colorado. Supplies are limited and getting your hands on one could be difficult seeing as the Fernet Aged Porter is a rare breed.

“Our Fernet is the most bitter type of Amaro (Italian word for bitter) that is prepared by steeping various botanicals, with a large proportion of bitter roots, in spirit,” said distiller Todd Leopold in a press release. “So far as we are aware, it is the first of its kind produced in America since

well before Prohibition.”

The second annual Bourbon and Bacon Festival returns to the McNichols Civic Center in downtown Denver on Saturday, Jan. 24. If it’s anything like last year’s, it’ll sell out quickly, and you’ll be missing out.

Finding the cure

Curing meats at home provides a world of culinary options you otherwise won’t find

here’s a bit of magic in curing meat. Letting a fresh cut muscle or sausage hang just below room temperature while a salt cure slowly marbleizes and condenses the flavor of the meat over the course of months until you take it down, slice a few pieces and share it with friends and family.

You can count the number of national artisan meat producers that supply a wide range of charcuterie and salumi on just about two hands. Too, it’s difficult for restaurants and stores in many states, including Colorado, to receive permits that will allow them to serve their homecured meats — as time-honored as the recipe and method may be — to the public.

And so now a new movement, a home curing movement, is beginning to swell. Home producers are working with butchers and specialty retailers to safely cure a variety of old world cured meat in their refrigerators, basements and wine cellars. To figure out how to get started, Boulder R Weekly I C K S asked T E R Boulder S chefs and home curers Alberto Sabbadini (Meadowlark Farm Dinners, The Kitchen) and Dakota Soifer (Café Aion) to walk through Twhere R I C Ka Sbeginner T E R S can start their cure.

First a note about safety: Unhealthy bacterial growth may appear on raw meat during the curing process, including the bacteria that causes botulism. It is important to be extremely careful, attentive and proactive about eradicating bad mold (more on this below), and deciding when to eat home cured meat.

Both Soifer and Sabbadini say unequivocally that

curing meat at home is safe, and Soifer says part of successfully curing meat is recognizing where to begin and knowing your limits.

“It’s raw meat so you want to be careful and I think sort of starting with things that you cook — sausages, bacon, pancetta — is a great place to start just to start to kind of understand meat and meat handling,” Soifer says. “The next step is the whole muscle salamis, like coppa, lomo, bresaola, and then you get into the ground cure: Genoa salamis, Toscanos, anything that gets ground and then cured, because that sort of has the highest risks, the air pockets, you’re handling the most, you’re introducing and manipulating the most. Those are the three categories that if you read up on it and feel comfortable about category one, move on to category two and

then if you feel comfortable, move on to three.”

Sabaddini agrees, “Curing whole muscle is simple and doesn’t require casings or a stuffer. A good place to start is with the [pork] belly, which is easy and more common. Then you can move on to sausage and salame with a better idea of how the process works.”

So if we start in category one, with pork belly, we can start to see how the curing process works. You can pick up a portion of pork belly from a butcher.

Blackbelly Market does custom cuts, as does Whole Foods and Your Butcher Frank in Longmont. Many local farms will also have quality, freshly cut meat depending on the time of year, and Sabbadini also runs a butchery guild at Cure Farm, where you can learn to cut your own pork belly.

However you get it, Soifer says a good rule of thumb is “to use stuff that you would want to cook up and eat.”

You’ll want to get a cut of pork belly that can fit inside a gallon-sized Ziploc bag, Soifer says. Then, you want to rub the meat with a spice blend according to your tastes, however, you’ll want to use at least a quarter cup of kosher salt per five pounds of meat, according to noted salumi master Michael Ruhlman on his cure blog.

bag. Sabbadini says he’ll use salt, pepper, bay leaf, juniper berries and chili flakes on pork belly.

“I’m usually conservative in the beginning,” Sabbadini says of spices. “If the first batch is light, add more until you find the right taste for you.”

Make sure that the cure is “really well caked on” the meat, and then put the meat in the bag and the bag in the refrigerator for about 10-14 days. Turn the meat over every couple of days to ensure that the curing spices are working with the meat.

Soifer says knowing when your bacon is done takes a bit of trial and error, and suggests keeping track for future endeavors.

“It’s going to feel significantly firmer than a raw slab of pork belly,” Soifer says. “The biggest thing that I’ve found in curing is get yourself a curing diary and start with your raw ingredients, your cut of meat, how long it cured for… That’s huge.”

As alluded to earlier, cooking the bacon will help ensure the safety of your newly cured meat.

When curing takes on more difficulty, and more art, is what Soifer called category two and three meats — whole muscles and ground salami.

Take coppa for instance. Coppa is a muscle that runs along the head, neck and upper back of the pig. You can harvest it from buying a whole pork shoulder/Boston butt from the butcher.

“If I was making a coppa,” Soifer says, “I would pretty much follow the same steps [as the pork belly]. I have a measured recipe, rub it all in there, stick it in the refrigerator, wash it off, case it and then it goes into the curing cellar.”

To unpack that: use whatever salt and spice rub you want, amply apply it to the meat, put it in the refrigerator for about two weeks (or until firm), rinse off the cure with wine or water, and prepare it for hanging. Soifer says he cases his muscles like coppa in sausage casings (you can use anything that breathes, like cheesecloth, intestine or artificial casings) to help keep moisture in, but says it isn’t necessary. Then the cut can be hung in the curing chamber.

The curing chamber can be a number of different things, but it can’t really be your standard refrigerator anymore.

That’s because there’s too little humidity in the refrigerator and the outside of the muscle will dry too quickly. To successfully cure meat, you’ll need to take time to set up a clean curing environment.

“A proper curing environment doesn’t exist; you have to create it,” Sabbadini says. “To start, you can buy a

used fridge or wine cellar, a small basement could be an option, preferably north-facing with a window and a stable temperature between 40 and 50 degrees. It has to have some air flow but not too much.”

Of the whole muscles, Soifer says, “You’re going to want them to age in a nice environment. I think it’s around 55 degrees and 60 percent humidity. What a damp cave would be.”

Sabbadini says he wouldn’t cure meat in a chamber over 50 degrees, which highlights the variety in curing methods.

Once hanging, you’ll start to see one of two kinds of mold grow on that coppa or other curing specimen. The good kind (white), or the bad kind (brown, green and fuzzy). The good kind of mold protects the meat and keeps the bad mold at bay. If you do see bad mold growing on the meat, “You can get rid of it with a towel soaked in warm water and red wine vinegar,” says Sabbadini.

Soifer says he will sometimes introduce bacteria to the cure in order to promote the growth of good mold. You can buy something like Bactoferm F-RM-52 and spritz it on the meat occasionally, Soifer says, to “offensively go after” the bad mold. Soifer says additions like the Bactoferm help people who can’t create a perfect curing environment.

One final way to mitigate risk when preparing cured meats is to add nitrates, or pink salt, to the cure. Soifer says if you plan on serving any home cured meat to anyone, adding a quarter or an eighth of a teaspoon to the original salt cure “is a huge insurance policy.”

“There’s very valid arguments against using preservatives and I totally respect those, but I feel like at home you can really control the amount you’re using and you probably shouldn’t be eating pounds and pounds of salamis and cured meats anyways. You don’t want to kill anyone. That sucks,” Soifer says.

Soifer says you’ll know when your cut of meat is done when it reduces by about 30 percent in size. For prosciutto — a whole leg of ham — that could take a year; for coppa, it could take two months. Salami and ground cures vary on size, but Sabbadini offered this final tip: “The thicker it is, the longer it takes. Start tasting it after a month to make sure it’s not too soft or too hard.

If it’s too hard it means it dried too fast.

This process takes time, and can’t be rushed,” Sabaddini says.

Dear Dan: What is your stance on maintenance sex? I’d never thought about the issue until reading Amy Poehler’s new memoir. I didn’t find anything she said controversial, and was surprised when this quote blew up in the feminist blogosphere: “ You have to have sex with your husband occasionally, even though you’re exhausted.

Sorry.” I’d never realized many people firmly believe one should have sex with their partner only when they are in the mood! Some articles even made it sound like maintenance sex is a form of nonconsensual sex. I have sex with my husband pretty often when I’m not in the mood. He would prefer sex every day, and I’m more of an every-other-day or twice-a-week girl.

I’d say about 25 percent of the time we are having sex, I am doing it for maintenance purposes. I always enjoy it and I get off the majority of the time, but I don’t always go in wanting it or needing it. Is this wrong?

— Maintenance Sex Supporter Dear MSS: I’m pro maintenance sex, MSS. Sometimes I sex my husband when I’m not feeling it; sometimes he sexes me when he’s not feeling it. We take care of each other. But maintenance sex is not the same thing as enthusiastic sex. The person asking for maintenance sex — the horny partner who’s being indulged/ milked/sexed by the non-horny partner — shouldn’t expect mind-blowing, toecurling, sheet-shredding sex.

Maintenance sex is mellow sex, it’s lowimpact and low-stress, it’s sex that requires minimal effort, and it’s likely to be non-penetrative sex — and gratitude is the only appropriate response.

Another important note: Being pro maintenance sex doesn’t obligate a person to have sex whenever their partner wants it. Proponents and practitioners of maintenance sex still get to say no. There’s a difference between indulging your partner when you’re not feeling it — when you could take it or leave it — and forcing yourself to have sex (or being guilted/ pressured/forced) when you’re too exhausted, too sick, or too angry for sex.

As a fellow Washingtonian, I feel proud to live in a state that was among the first to legalize marriage equality by a popular majority vote of the people. I avidly follow the NFL and eat fried bologna sandwiches and do lots of other manly things.

However, I have always loved musical theater. Whenever I go to New York, I have to see at least two or three big shows. My question: Is it socially acceptable for me to good-naturedly say, “I’m totally gay for musical theater”? Or is it a slur that I shouldn’t say, no matter how playful or well-intended?

But a man with a passion for musical theater is likelier to be gay; if not, he’ll at least be comfortable around gay people. I’ve heard gay guys who avidly follow the NFL describe themselves as straight for football.

Likewise, a man with a passion for football is likelier to be straight.

You saying, “I’m gay for musical theater,” or a gay guy saying, “I’m straight for football,” amounts to a humorous acknowledgment that the majority of people interested in musicals or football are gay or straight, respectively. In neither case is it an insult or a put-down. But while I think you can continue to say that you’re gay for musicals, TCJ, some gay men (or some of our more annoying “allies”) may take offense. You don’t have to pay attention to those people — they’re just gay for taking offense.

The Halloween candy scare was promoted by the Denver Police Department, which has opposed legalization without ever explaining why its own efforts to uphold prohibition have never worked, either.

Media coverage reached fever pitch in the days leading up to Halloween, with television announcers suggesting to gullible parents that evil pot smokers, who are paying high prices for edibles, would not hesitate to dose innocent children. If the implications weren’t so clichéd, they would be offensive, and, of course, there were no reported lacedcandy incidents in the state, or anywhere else, for that matter.

Both of these are typical of continued, failed policies promoted by those who have a stake in and want to continue the war against cannabis, much to the consternation of a majority of the country’s voters, who continue to send the opposite message to state legislators.

Both outline a pervasive feeling among some officials that making cannabis legal for adults also makes more teenagers want to try it. While there is no actual evidence of that so far, they continue to insist that legalization is encouraging young people.

But as the “lab rat” campaign proved, trying to scare kids into not

using cannabis just doesn’t work. And as the last 40 years of federal policy has shown, it will never work.

Last year, during a stakeholder’s meeting on edibles, Gina Carbone of SmartColorado said that legalization has made parenting harder.

That’s the part that really baffles me. Does studying the issues and actually talking with your children honestly about the pros and cons of cannabis like you would about tobacco, alcohol or sex or anything else important really make parents’ jobs more difficult? Why would parenting have been any easier when cannabis was illegal and kids were getting it on the black market?

The National Institute on Drug Abuse just released its annual Monitoring the Future survey of 50,000 high school students. NIDA generally funds only research that studies cannabis “abuse.” But its own survey shows a slight decline in students reporting cannabis use in the years since states have begun legalizing.

“Now that the national conversation about marijuana is ‘above ground,’ parents and teachers are able to have honest conversations with teens based on sound science, health and safety,” says Marsha Rosenbaum of the Drug Policy Alliance. “The declines in use revealed in [Monitoring the Future] may well indicate that teens are listening, and choosing to make wise decisions.”
