MUOVERSI SENZA CONFINI Moving without boundaries Tra la fine del primo millennio e l’inizio del secondo, l’intero mondo conosciuto si muove soprattutto per motivi religiosi. I pellegrini, provenienti dal nord, percorrevano la via che attraversava la Francia per dirigersi a Roma, lungo la via Appia che conduceva ai porti pugliesi, punto di partenza per raggiungere la Terrasanta.

Between the end of the first millennium and the start of the second, people moved throughout the Western world, especially for religious reasons. Pilgrims from the North followed a route through France to Rome, then went along the Appian Way to Puglian ports to set sail for the Holy Land.

Quest’antico percorso della Francigena è un cammino lungo 1600 km. 79 giorni per 80 tappe. Tappe che ancora oggi scandiscono la testimonianza di una terra da sempre ospitale.

The ancient Via Francigena route spanning 1600 km was divided into 80 stages and took 79 days to follow. Still today, the stages bear witness to the hospitality that has always been shown here.

Il nostro Sud ha unito Occidente e Oriente, Adriatico e Ionio, età antica e medioevo, descrivendo un itinerario trasversale tra basolati romani e antichi tratturi, templi pagani, imponenti cattedrali e santuari cristiani, dolci panorami collinari e aspri paesaggi montani. Il percorso è lungo non solo nel tempo, ma anche nello spazio.

Our Southern Italian homeland united the East and West, Adriatic and Ionian, ancient history and the Middle Ages. It plotted a path encompassing paved Roman roads, old sheep tracks, pagan temples, magnificent cathedrals, Christian sanctuaries, rolling hills and rugged mountain landscapes. The route is long in terms of both time and space.

LÌ DOVE C’ERA UN CAMPO BRULLO E SENZA ALBERI, OGGI SORGE UN BORGO DI PIETRA IMBIANCATA A CALCE, IN TUTTO E PER TUTTO FEDELE ALLA SECOLARE ARCHITETTURA DI PUGLIA. BORGO EGNAZIA È UNO SCRIGNO DI MEMORIE E AL TEMPO STESSO UNA DEDICA A CHI HA FATTO LA REGIONE DEI MURETTI A SECCO. LO ABBIAMO ATTRAVERSATO GUIDATI DA PINO BRESCIA, IL CREATIVO CHE HA RESO MATERIA IL SOGNO DI UNA FAMIGLIA. In what was once a barren, treeless field, a whitewashed stone village now stands. In every respect, it stays true to time-honoured Puglian architectural traditions. Borgo Egnazia is both a treasure trove of memories and a tribute to those who built the region renowned for its dry stone walls. We looked around it with Pino Brescia, the creative talent who made a family’s dreams come true.

Viaggiando, la curiosità è un dovere, scriveva Anna Maria Ortese. Viaggiando in Puglia, aggiungo io, è un piacere che sollecita tutti i sensi. Questa è l’esperienza, fra le altre, che fa il viaggiatore che sceglie di approdare a Borgo Egnazia, perdendosi e ritrovandosi, perché ci vuole anche un po’ di svagatezza da flâneurs in un luogo come questo. Abbiamo attraversato la Piazza, gli spazi dedicati alle piscine, ai ristoranti, le Casette e le Case, la Bottega.

La pietra è elemento predominante.

La senti al tatto, nella sua porosità, apparentemente leggera, eppure così mastodontica e sicura. E la vedi nella

sua forza bianca che abbraccia tutte le nuances create dal tempo. Un bianco che illumina, che dà luce; una luce densa come il silenzio che ci circonda.

Sotto questa luce beata saprai di essere in Puglia.

Da questa terra, un tempo solamente campo brullo e senza alberi, sorge ora questo luogo dell’ospitalità, frutto della visione del creativo Pino Brescia, voluto dalla famiglia Melpignano per proporre un’idea di Mediterraneo che consentisse di riscoprire proprio la Puglia, la pugliesità e tutto il caleidoscopio emozionale, sensoriale, che può procurare al viaggiatore.

«Ho scelto di raccontare una storia tutta pugliese, la nostra identità culturale, il nostro stile di vita» mi dice Pino Brescia.

«Con il progetto di Borgo Egnazia, ho potuto recuperare il vero minimalismo dei nostri antenati, che vivevano solo quasi dell’essenziale nelle loro case imbiancate a calce. Mi sono ispirato alla nostra storia, quella dei campi, dell’architettura dei nostri centri storici».

Curiosity is a duty when you’re travelling, wrote Anna Maria Ortese. I’d add that when you’re travelling in Puglia, it’s a wonderful way to stir all five senses.

It’s one of the experiences that await travellers at Borgo Egnazia, where they can lose and rediscover themselves.

Everyone should find the time to idly wander around daydreaming in a place like this and that’s just what we did, looking around the pools, restaurants, Piazza, Bottega, Casette and Case.

Stone is a predominant feature. It’s porous and seemingly light to the touch, yet so sturdy and substantial. It’s a powerful sight, in all the shades of white that have

developed over time. The bright white fills everything with a light as dense as the silence all around. In this blissful light, you know you're in Puglia.

The spot where this haven of hospitality stands was once nothing but a barren, treeless field. It all stems from the creative vision of Pino Brescia, who was asked by the Melpignano family to put forward a concept of the Mediterranean that allowed travellers to rediscover Puglia, Puglianness and the whole emotional and sensory kaleidoscope it has to offer.

“I chose to tell an entirely Puglian story, presenting our cultural identity and

lifestyle,” Pino Brescia tells me. “In the Borgo Egnazia project, I managed to revive the genuine minimalism of our ancestors, who made do with little more than the bare essentials in their whitewashed houses. I took inspiration from the history of our people, the rural areas and the architecture in our old town centres.”

È proprio così, la nostra Puglia ha mille peculiarità, parla una sua lingua sensoriale, specifica, che poi è comprensibile a tutti.

That sums it up. Our Puglia has countless distinctive features and it speaks a specific, sensory language that everyone can understand.

Seguendo questi primi elementi ispiratori Pino Brescia ha strutturato uno scrigno che potesse custodire memorie, tradizioni e innovazione, una Puglia che ti entra sotto la pelle, ammalia i sensi e poi ti farà tornare perché sarai stato rapito dalle emozioni. Pino mi racconta che se è vero che i lavori per completare tutto il complesso sono durati cinque anni, è pur vero che c’è sempre qualche elemento da modificare, allestimenti da rinnovare: «È una fabbrica che non si fermerà mai, anche perché richiede le classiche manutenzioni di un piccolo Borgo, un’attenzione continua a tutti i dettagli, che sono uno dei nostri punti di forza. Il lavoro dell’ospitalità ha a che fare con le emozioni, che sono trasmesse anche dalla cura nei dettagli e da ciò che puoi recepire con tutti i sensi. Sono felice quando il messaggio viene capito appieno, anzi devo dire che proprio adesso, dopo dieci anni, è ancora più evidente che questo progetto visionario e innovativo sia un sogno reso materia: un Borgo creato dal nulla che contiene la mia dedica a chi ha fatto la Puglia dei muretti a secco, delle ricette delle nostre tradizioni culinarie, del lavoro certosino e mastodontico impiegato nei terrazzamenti sulle colline di Fasano.

Drawing on these initial sources of inspiration, Pino Brescia put together a treasure trove full of memories, tradition and innovation. It presents Puglia in a way that spellbindingly stirs your senses and touches an emotional chord, filling you with an irresistible urge to return. It took no fewer than five years to fully complete the complex, but Pino reveals that the work is never really done because there’s always something to change or some display to update: “The production line will never stop, partly because it needs all the usual maintenance work required in any little village and constant attention to every detail, which is one of our strengths.

Emotions play a part in the hospitality industry and one way they’re conveyed is through focusing on the details and everything that can be perceived with the senses. It makes me happy when the message is fully understood. Actually, right now – after ten years – it’s clearer than ever that this visionary, innovative project is a dream come true: a village created out of nothing that contains my tribute to those who built the Puglia of dry stone walls, the recipes behind our culinary traditions, and the terracing on the Fasano hills, which was a painstaking, mammoth undertaking.

accoglie il visitatore all’ingresso è una sintesi di questo pensiero: un tronco di ulivo a cui Pino Brescia ha fatto aggiungere i rami del mandorlo e del ciliegio; è un albero “seminaconoscenza” perché al posto delle foglie compaiono pagine di vecchi libri.

Un’installazione che dice di fusione di elementi diversi, di luce e ombra, di conoscenza e tradizione.

«La vera bellezza è poter fare scelte libere, vere e autentiche, senza forzature.

Uso la mia esistenza come esempio: una delle cose più importanti nella vita di ognuno è scoprire come fare al meglio ciò che sei chiamato a fare», conclude Pino Brescia.

Borgo Egnazia è, insomma, nelle parole del creativo e ideatore, una vera e propria celebrazione, un canto a tutta la Puglia contadina che ha costruito questa regione così come la conosciamo, raccoglie in sintesi tutto quello che ti racconteranno di questo territorio.

Intanto il sole è scomparso e la luce arriva aranciata, un rossore che via via si spegne, mentre si accendono le luci e i fruscii della sera. Il Borgo si prepara a offrire la sua faccia serotina.

In some respects, the installation that greets visitors at the entrance encapsulates this outlook: Pino Brescia has had almond and cherry tree branches added to an olive tree trunk that “sows knowledge” because its leaves are pages from old books. The installation embodies the fusion of different things, such as light and shadow, knowledge and traditions.

What’s really wonderful is being able to make free, real and genuine choices totally spontaneously. Take me, for instance: one of the most important things in everyone's life is finding out the best way to follow your vocation,” concludes Pino Brescia.

In the words of the man who conceived and created it, Borgo Egnazia is a real celebration and an ode to all the people of rustic Puglia who built the region we know today. It sums up everything you’ll hear about this part of the world.

Meanwhile, the sun’s dipped below the horizon and its red and orange rays are gradually fading away, as the lights come on and a bustling Borgo Egnazia prepares for another enchanting evening.

To an Olive Tree ¬ Luigi Pirandello

AD UN OLIVO È UN COMPONIMENTO DI LUIGI PIRANDELLO SCRITTO DURANTE IL SOGGIORNO DELLA SUA FAMIGLIA A SORIANO NEL CIMINO E PUBBLICATO NEL 1909 IN NUOVA ANTOLOGIA, SOTTO IL TITOLO GENERALE “TRA CASTAGNI E OLIVI”.

“To an Olive Tree” is a poem written by Luigi Pirandello during his family’s holiday in Soriano nel Cimino and published in Nuova Antologia under the general title “Among Chestnut and Olive Trees” in 1909.

Quante cose saprai, tu che non cedi da trecento e più anni, o fosco olivo, dei venti all’urto, e qui ferrigno in piedi ti stai su questo solitario clivo…

How many things you must know, having not succumbed For three hundred and more years, O sombre olive tree, To the blast of the winds, and here steadfast upright You stand on this lonely slope....

Ma forse è ver che il vento fuggitivo nuove ti reca, o che tu gliene chiedi?

Luigi Pirandello (Agrigento, 28 giugno 1867 – Roma, 10 dicembre 1936) è stato un drammaturgo, scrittore e poeta italiano, insignito del Premio Nobel per la letteratura nel 1934. Per la sua produzione, le tematiche affrontate e l'innovazione del racconto teatrale è considerato tra i più importanti drammaturghi del XX secolo.

Luigi Pirandello (Agrigento, 28 June 1867 – Rome, 10 December 1936) was an Italian playwright, novelist, short story writer and poet, awarded the Nobel Prize in Literature in 1934. Due to his body of work, the themes he explored, and the innovation of his theatrical storytelling, Pirandello is considered one of the leading dramatists of the 20th century.

La chiamano Mimina They call me Mimina ¬ Roberta Longo

ARRIVÒ NEGLI ANNI NOVANTA, COME AIUTO CHEF A MASSERIA SAN DOMENICO. RICAMÒ, CON I PROPRIETARI, UNA RELAZIONE PROFONDA, COSTRUITA ATTORNO ALL’ATTIVITÀ DI CURA PIÙ PREZIOSA DI TUTTE: PREPARARE IL CIBO. OGGI CUCINA PER GLI OSPITI DELLA STRUTTURA. E IL CIBO È ANCORA RELAZIONE E CONOSCENZA, CONFIDENZA E COMPLICITÀ.

She started out as a commis chef at Masseria San Domenico in the 1990s. Over the years, she’s forged a firm bond with the owners based on the most wonderful way of pampering people: cooking. Today, she cooks for guests and her food continues to pave the way to new encounters, relationships, ties and connections.

Le mani in moto perpetuo, forti e vissute. Mani abituate a seminare e a raccogliere, mani cresciute tra la terra e maturate in cucina, tra quegli ingredienti che rendono ricca la Puglia, chi la vive e chi è qui solo di passaggio. Si chiama Cosima, ma tutti la chiamano Mimina.

“Lo vuoi un piatto di ziti?” chiede ancor prima di sapere il mio nome. Esce dalla cucina con un coccio di ziti al pomodoro che profuma di origano e di estate. È il ricordo dei pranzi in campagna, delle mandorle fresche raccolte in punta di

piedi dai rami più pesanti e aperte con un bel colpo di pietra sui muretti a secco, delle tavolate in famiglia, del pane con un filo d’olio, di mia nonna e delle sue galline. Il cibo unisce e chiarisce chi sei ancor prima che lo facciano le parole. È prendersi l’impegno di far stare bene gli altri, di stare bene insieme. A volte è un dono, a volte è una preziosa eredità.

Mimina sceglie uno dei tavoli affacciati sul campo di San Domenico Golf e mi raggiunge con una coppa di gelsi bianchi e neri, appena raccolti.

La sua storia intreccia quella del luogo che ci circonda: è iniziato tutto da Masseria San Domenico, da questi campi che guardano il mare di Cala Masciola, “la preferita dell'Avvocato”.

Her strong, experienced hands never stop moving. Accustomed to sowing and reaping, they’re hands that grew up on the land and matured in the kitchen among ingredients that enrich Puglia, its people and its visitors. Her name's Cosima, but everyone calls her Mimina.

“Fancy some ziti?” she asks before she even knows my name. She exits the kitchen with an earthenware pot of ziti in tomato sauce that combines scents of oregano and summer.

It brings back memories of lunch in the

countryside, standing on tiptoes to pick fresh almonds from the biggest branches and opening them with rocks on dry stone walls. It reminds me of olive oil drizzled on bread, my family at the table, my grandma and her hens. Food can unite people and show who you are before you even utter a word. It’s a way of ensuring people have a good time together. Sometimes it’s a gift and sometimes it’s a cherished legacy.

Her story is intertwined with that of the places surrounding us. It all began at Masseria San Domenico and in these fields facing the sea in Cala Masciola: “the Lawyer's favourite.” The “Lawyer” in question is Sergio Melpignano.

– IL CIBO UNISCE E CHIARISCE CHI SEI ANCOR PRIMA CHE LO FACCIANO LE PAROLE. È PRENDERSI L’IMPEGNO DI FAR STARE BENE GLI ALTRI, DI STARE BENE INSIEME. A VOLTE È UN DONO, A VOLTE È UNA PREZIOSA EREDITÀ. – Food can unite people and show who you are before you even utter a word. It’s a way of ensuring people have a good time together. Sometimes it’s a gift and sometimes it’s a cherished legacy. È una storia di famiglia, semplice e delicata come tante e come tutte, fatta di incontri, di momenti trascorsi insieme, di quella rituale quotidianità che il tempo trasforma in ricordi.

This is a simple, tender family story, like many – if not all – of them. It’s a tale of encounters, moments spent together and everyday rituals that time turns into memories.

Siamo negli anni ’90 quando Mimina arriva come aiuto chef, dal vicino paese Pezze di Greco, nella cucina della Masseria. Vede nascere prima il Golf, poi il Borgo: «Dobbiamo aprirlo per far lavorare i nostri ragazzi, quelli della nostra terra, diceva l’Avvocato». In queste parole c’è la visione che ha cambiato il corso della storia di un intero territorio e il modo di intendere e fare turismo in Puglia. C’è tutto quel che è stato, tutto quel che ancora è: un luogo in cui la Puglia è intorno e dentro.

Mimina’s from the nearby town of Pezze di Greco. She first came here in the 1990s, as a commis chef at Masseria San Domenico. She witnessed the creation of the golf course and then Borgo Egnazia: “We need to open it to provide work for young people from around here, that’s what the Lawyer used to say.” These words sum up the vision that changed the course of history for an entire area and the notion and approach to tourism in Puglia. It encapsulates everything it was and still is: a place with Puglia inside and all around it.

La genuinità pugliese diventa un valore inestimabile. Quel che conta è l’accoglienza sincera, è ciò che la terra restituisce e fa arrivare in cucina, sono i piatti delle nonne e delle mamme da cui tutto parte e verso cui tutto tende. Non c’è bisogno di snaturare, né tantomeno di contaminare, c’è solo bisogno di essere semplicemente quel che siamo. Come Mimina.

È la sua storia, ma a ben pensarci è quella di tutti noi. Conosciamo davvero qualcuno quando i suoi “gusti” non sono più estranei, quando tra tanti piatti sappiamo riconoscere quello in grado di appagare lo stomaco e riscaldare il cuore.

This is her story, but it’s one we all share with her. You can say you really know someone when you’re familiar with their “tastes” and you know exactly which dishes will satisfy their stomach while also warming their heart.

Il legame di Mimina con la famiglia si rafforza a ogni piatto di ziti al pomodoro, a ogni focaccina alla fasanese fritta nei giorni di pioggia. E poi c’è il pollo grigliato sui carboni del caminetto, il sartù, i panini con le olive, le melanzane ripiene di pane. Poco, pochissimo formaggio per la signora Marisa, il pesce di stagione per l’Avvocato, i panzerotti per i pranzi in famiglia. Di piatto in piatto ripercorre oltre vent’anni di vita.

Mimina usa il cibo per raccontarsi e per raccontare i luoghi, le persone e le relazioni tra di loro.

Mimina’s bond with the family gets stronger with every bowl of ziti in tomato sauce and every fried focaccina alla fasanese on a rainy day. Then there’s chicken roasted over the coal fire, sartù (a baked rice dish), bread rolls with olives, and aubergines stuffed with bread. Very little cheese for Marisa, seasonal seafood for the Lawyer and panzerotti for family lunches. She can look back at more than 20 years of her life, dish by dish. Mimina uses food to talk about herself and about places, people and their relationships.

There’s no dividing line between her story and that of San Domenico Hotels: the flow of words makes it impossible to separate the two. She can lay claim to the space and the horizon. She remembers how it was and how it became what it needed to be.

I CONTADINI PUGLIESI SANNO CHE, APPENA I FIORI BIANCHI SBOCCIANO SUI RAMI DEGLI ALBERI DEL MANDORLO, VUOL DIRE CHE STA INIZIANDO LA BELLA STAGIONE. It’s an eagerly awaited sign among Puglian farmers: when the white flowers blossom on almond trees, it means the long, cold winter is over and warmer weather’s on its way.

FOTO La storia - Il mandorlo è un albero originario dell’Asia, ma è coltivato qui sin da tempi antichissimi, tanto che il suo ciclo di fioritura scandisce oramai i tempi di chi lavora questa terra. La Puglia è una delle maggiori produttrici di mandorle su tutto il territorio italiano insieme alla Sicilia.

History - The almond tree is native to Asia but it’s been cultivated here since ancient times, so its blossoming cycle has become a sign of the changing seasons for local farmers. Puglia and Sicily are the biggest almond producers in Italy.

La raccolta - Tra la fine di agosto e gli inizi di settembre, prima della vendemmia, i contadini si alzano prima dell’alba per raccogliere le mandorle. Inizia la “bacchiatura”: si fanno cadere le mandorle su dei teli con delle pertiche e poi si conservano in sacchi di iuta. Dopo aver selezionato i frutti migliori e aver rimosso il mallo verde dal guscio, le mandorle vengono messe a essiccare su enormi coperte, così da ridurre l’acqua nel guscio e nel seme.

Harvest - In late August and early September, before the grape harvest, Puglian farmers get up before sunrise to collect almonds using the “bacchiatura” system. They hit branches with poles so the almonds fall onto sheets, then put them in jute sacks. Once the best fruits have been selected and the green hulls have been removed from the shells, the almonds are left to dry on huge blankets, to reduce the water in the shells and seeds.

Places - Almond groves can be found throughout the Province of Bari, between Altamura, Cassano delle Murge and Toritto. The latter is home to the best almonds: renowned for their delicate, buttery flavour, they are ideal for use in pastries.

L’utilizzo - Le mandorle sono un alimento ricco di proteine, vitamine B1 e B2, A e E, ferro, calcio, fosforo, magnesio e potassio. Nella cucina pugliese si possono mangiare come semplice frutta secca, zuccherate o tostate e salate e vengono usate per la preparazione di dolci tipici, come i mostaccioli e il biscotto cegliese (di Ceglie Messapica), oppure di bevande alcoliche e non.

Use - Almonds are packed with protein, vitamins B1 and B2, vitamins A and E, iron, calcium, phosphorus, magnesium and potassium. In Puglian cuisine, they can be eaten as simple nuts (either candied or roasted and salted) and used to make traditional sweets such as mostaccioli and biscotto cegliese (from Ceglie Messapica), as well as alcoholic and soft drinks.

Walking in Puglia means following meridians and parallels that lead wayfarers towards historic destinations marked by the passing of time. It isn’t hard: the terrain is mostly flat, with a few climbs up paths in the shade of woods and little valleys where you can rest and enjoy the cool air and the sight of the boundless light between the sky and the sea.

ON THE VIA FRANCIGENA OF THE SOUTH

A piedi, da Celle di San Vito a Santa Maria di Leuca, Giovannangelo de Gennaro racconta il suo percorso lungo la variante costiera della via Francigena del Sud, in particolare il suo arrivo ad Apani, contrada nella provincia di Brindisi. Assieme a lui, il suo amico musicista Antonio. Giovannangelo affronta il pellegrinaggio chiedendo ospitalità a ogni tappa e garantendo in cambio un concerto insieme ai musicisti del luogo, nelle cantine, nelle chiese. «A ogni tramonto suono e canto storie di santi, di crociata, amori perduti».

Giovannangelo de Gennaro describes the route he followed on foot from Celle di San Vito to Santa Maria di Leuca, on the coastal version of the Via Francigena del Sud (Via Francigena of the South), focusing in particular on his arrival in Apani, a hamlet in the Province of Brindisi. With him was his friend Antonio, a musician. On every stage of his pilgrimage, Giovannangelo asked for hospitality in exchange for a concert with local musicians, in churches and wineries.

Antonio mi guarda e dice: “Va bene, va bene, facciamo come dici tu”. Ai suoi occhi, non ero sicuro della strada.

Faccio i miei calcoli, vado un po’ avanti a intuito, e confronto il percorso con quello descritto sulla guida.

La strada giusta del viaggiatore è quella delle carte ma anche quella dell’istinto. Il primordiale si risveglia e corrisponde al bisogno necessario.

Leggo il cartello stradale “Punta Apani”, seguo le indicazioni della guida. Mi ripeto che siamo sul tracciato e abbiamo un problema in meno a cui pensare. Sulla strada ci sono segnali di altri camminatori: bigliettini, pesci dipinti di rosso, adesivi con su scritto “Jerusalem Way”, un carabiniere con zainetto di colore rosso, blu e giallo, graffiti di barche a vela latina e turca incise su facciate di chiese e cappelle. Lo sguardo misurato dai passi è capace di analizzare la stratificazione dei passaggi. Sicuri, avanziamo verso l’entrata di Brindisi costeggiando il mare, lo stesso che tanto tempo fa

Antonio looks at me and says “All right, all right, we’ll do it your way.” He thinks I don’t really know where I’m going. I weigh things up, listen to my gut a little as we move forward and compare the route with the description in the guide. You have to trust your instincts as well as maps when you’re travelling. Your primitive side is reawakened to meet your needs.

I look at the “Punta Apani” road sign and follow the directions in the guide. I tell myself again that we’re on the route, so that’s one less thing to worry about. Traces left by other walkers can be seen on the path: notes, painted red fish, “Jerusalem Way” stickers, a carabiniere with a red, yellow and blue backpack, pictures of boats with lateen and Turkish rigs carved into the façades of churches and chapels. Moving along at a measured pace, you can really analyse the layers of what they’ve left behind. We confidently advance towards Brindisi, travelling alongside the sea where the huge numbers of 22

Le strade qui diventano un proseguo della casa, i panni stesi fuori ad asciugare, le donne che lavorano sapientemente la farina e la semola per preparare la pasta fresca, il marinaio che fila la rete, il pastore con il suo gregge su distese di pascolo verdeggiante.

Più si va avanti e più lo zaino si riempie di incontri con chi è abituato sin da tempi lontani ad accogliere. L’ospite è sacro in Puglia. È un retaggio che ci portiamo dietro da molti secoli. I greci stessi ritenevano che non si poteva sapere chi si cela dietro allo sconosciuto: una divinità, un messaggero di Dio, ninfe o satiri. In Puglia nessuno è straniero, siamo tutti forestieri. Esiste una forma di nomadismo statico. Mentre il corpo è fermo, i geni e la memoria dei pugliesi continuano a viaggiare. The streets here are like extensions of the homes. You might see clothes hanging out to dry, women expertly making fresh pasta with flour and semolina, fishermen weaving nets or shepherds with their flocks on green pastures.

The further you travel, the more encounters you’ll have with people who’ve been welcoming guests since time immemorial.

Hospitality is sacred in Puglia. It’s been part of our heritage for many centuries.

The ancient Greeks believed that strangers could secretly be figures such as deities, messengers from God, nymphs or satyrs.

You might be a stranger or a foreigner, but in Puglia nobody’s an outsider. There’s a sort of stationary nomadism here. Even if their bodies are still, Puglians’ genes and memories keep travelling. The dynamism within them means Puglians are always ready to take care of wayfarers.

La mente riprende ricordi vicini e lontani: direzione Brindisi, nostra madre alla guida della Mini Minor, i miei fratelli felici di percorrere la strada parallelamente al peschereccio di nostro padre, Sirio. Un solo punto in comune: il porto.

Old and more recent memories spring to mind. I recall our mother driving our Mini Minor towards Brindisi and my brothers being so happy to follow a road running parallel to the route taken by our father Sirio in his fishing boat. Our paths only met at one point: the harbour.

I retrace my steps. I can see the horizon on the left out of the corner of my eye. Antonio is on the right and our shadows stretch east across the asphalt on the road in front of us. We stop to rest and refuel with a roll, as usual. Silently, each doing without the other, we look around and at each other, as if that moment were a living snapshot. We get moving again with the wind against us and the sun with us. The happy feeling of having nothing makes our efforts worthwhile.

We’re covering almost 40 km on this stage and a concert in the crypt of the Church of Santa Lucia awaits us.

We go past Torre Testa and start to see the first buildings from a rich past that’s now been totally abandoned by civilisation, leaving it to suffer the consequences of neglect and time, which shows no mercy. None at all.

Roberto calls me on the phone: “Hi! Where are you? I’ll join you! Meet me at the bar down the road.”

I leave my stick at the door of the bar, partly out of habit and partly as a sort of ritual. I unfasten the hip strap on my rucksack. Roberto gets here. We order a beer and a coffee. I put my route guide on the counter. The barman smiles: “We get plenty of you coming through here…”

I carry on sipping my beer. Antonio nods. Yes, we're walking to Santa Maria di Leuca. The barman asks if he can look through the guide and I can guess why. He wants to see if his bar’s listed among the refreshment stops. He’s disappointed not to find it and says out loud: “Everyone has to come down this road anyway, although further on the names of the roads into Brindisi have been changed since they wrote this book!”

He shakes the guide up and down, then puts it back on the counter. He tells us they’ve changed all the place names in the area. “Could you tell us which road we need to take? It says Via Trieste here.”

“You need to take… I can’t remember the new name of the road.”

“OK”, I say. We say goodbye to the barman and Roberto, arranging to meet in the crypt. I’ve got the sea on my left and Antonio on my right again. I suddenly hear the footsteps of someone rushing up behind me and I turn around. I see Roberto running and holding a piece of paper: “Giovannangelo, this is the new name of the road into the city!” Without slackening my pace, I take it and thank him. I take a few more steps, unfold it and read: “Via Sirio”. I fold it back up and pass it to Antonio, who calmly states: “You know, Buddhists say that the departed can appear in special circumstances.” We get to Brindisi, tired and late. In the crypt, the audience is seated and ready to listen to the concert. We have a different rhythm to them. We take off our shoes and start feeling the Earth breathing. With our eyes closed, the long sound enters our souls.

Ritorno sui miei passi. Vedo l’orizzonte a sinistra con la coda dell’occhio. Antonio è a destra e le ombre protratte verso est tagliano l’asfalto nel pezzo di strada di fronte a noi. Ci fermiamo per una sosta, il solito panino che carbura. In silenzio, ognuno facendo a meno dell’altro, osserviamo e ci osserviamo in quell’istante come fosse un fotogramma vivente. Ci rimettiamo in marcia con il vento contro e il sole a favore, la felicità di non avere nulla ci sovrasta e giustifica lo sforzo.

Quasi 40 km in questa tappa e ci aspetta il concerto nella cripta della chiesa di Santa Lucia.

Superiamo Torre Testa e iniziamo a vedere le prime costruzioni di un passato ricco, ora totalmente abbandonato dalla civilizzazione, al boia dell’incuria e del tempo che non perdona. No, non perdona.

Mi chiama Roberto al telefono: “Ciao, dove siete? Vi raggiungo! Ci vediamo al baretto più avanti.”

Un po’ per abitudine e un po’ per ritualità, lascio il bastone fuori all’entrata del bar. Mi sgancio la cinghia dello zaino. Roberto ci raggiunge. Ordiniamo una birra e un caffè. Poggio sul bancone la guida del cammino. Il barista sorride: «Eh…ne passano di qui…»

Continuo a sorseggiare la birra. Antonio annuisce con il capo. Sì, stiamo facendo il cammino verso Santa Maria di Leuca. Il barista chiede il permesso di sfogliare la guida, ne intuisco il motivo. Voleva verificare che il suo bar fosse segnato tra i luoghi di ristoro. Non trova nulla e deluso commenta ad alta voce: «Eh, tanto tutti da questa strada devono passare, anche se più in là i nomi delle strade per entrare a Brindisi non corrispondono più a quelli riportati su questo libro!»

Scuote la guida su e giù e la rimette sul bancone. Ci dice che hanno cambiato tutta la toponomastica del quartiere.

«Mi scusi, che strada dobbiamo prendere? Qui c’è segnato via Trieste».

«Dovete prendere… non ricordo il nuovo nome della via».

«Va bene», gli dico. Salutiamo Roberto e il barista e ci diamo appuntamento nella cripta. Ancora a sinistra il mare e Antonio a destra. All’improvviso avverto dietro di me un suono di passi veloci e mi volto. Vedo Roberto correre con un biglietto in mano: «Giovannangelo, questo è il nuovo nome della strada per entrare in città!».

Senza interrompere il ritmo della marcia, recupero il pezzo di carta e lo ringrazio. Qualche passo più avanti apro il biglietto e leggo: “Via Sirio”. Lo richiudo e lo passo ad Antonio, il quale con aria serena afferma: «Sai, nel buddismo si dice che i defunti si possono manifestare in circostanze speciali». Arriviamo a Brindisi, stanchissimi e in ritardo. Nella cripta il pubblico è seduto e pronto ad ascoltare il concerto. I ritmi sono diversi, tra noi e loro.

Ci togliamo le scarpe e iniziamo a sentire il respiro della terra. A occhi chiusi, il lungo suono entra nell’anima.

Wayfarers become part of the family hosting them, just like the streets are part of the houses. The reception that they get plays a key part in their journeys. I’m talking about the times when they stop to get information from someone with a friendly face and they take the chance to have a chat and get a little encouragement to help them on their way. This is one of the many things Puglia has to offer.

In Puglia i cammini segnati son tanti. A me piace collegarli tra loro per creare un mio cammino personale. In questo modo cammino accanto al mare, tra le valli del Gargano fino ad attraversare infiniti campi di grano con il loro colore mutevole a seconda delle stagioni.

There are lots of marked paths in Puglia. I like to join them up to make my very own route. It means I can walk alongside the sea, in the valleys of Gargano and through vast wheat fields whose colours change with the seasons.

Le guide cartacee sono un punto di riferimento soprattutto per chi è alle prime esperienze, ma nessuna guida è assoluta perché i cammini sono organismi mutevoli. È necessario chiamare sempre le accoglienze prima di arrivare a destinazione. E cercare di essere attenti e disposti ai cambiamenti di programma.

Il cammino insegna la convivenza con l’inaspettato, che porta a entrare ancor di più in relazione con il territorio.

Printed guides can be handy – especially for people with little experience in the area – but none of them are 100% reliable, because the paths can change. You should always call accommodation facilities before you reach your destination. In addition, be careful and be prepared to change your plans. When you're walking, you learn to expect the unexpected, which can help to forge even closer ties with the world around you.

Non pretendere, ma attendere. Non aver paura di perdersi. Seguire il mare e le ombre segnate dal sole a destra o a sinistra. L’est e l’ovest portano il camminatore ad attraversare tutta la Puglia seguendo i segnali lasciati dalla narrazione di questa lunga striscia di terra riflessa verso l’alto tra le stelle della Via Lattea.

Be patient and don’t be demanding. Don’t be scared to get lost. Follow the sea and the shadows cast by the sunlight to the left or right. The East and West take walkers all across Puglia, following the traces left by the narration of this long strip of land, which is reflected above among the stars of the Milky Way.

SACRED MOUNT: IL PROGETTO NATO SUI CAMMINI DI PUGLIA Un viaggio sonoro tra Ovest ed Est alla ricerca del sacro.

“Sacred Mount”: 13 tracce musicali, accompagnate da brevi testi, nate durante i cammini del musicista e compositore pugliese Giovannangelo de Gennaro, autore di questo articolo, e musicati dall’ensemble Calixtinus, con la prefazione di Vinicio Capossela. Si viene trasportati dal Monte Athos alla Grecia dell’Epitaffio di Sicilio, dalle isole Tremiti alla Basilica di San Nicola, da Costantinopoli all’Armenia. A formare il mosaico di “Sacred Mount” tredici tracce, ideate e registrate in Puglia, tra cui un omaggio a Vardapet Komitas - padre della musica armena - con Hov Arek e Krunk; una rilettura di “L’ombra della luce” di Franco Battiato e una riscrittura inedita con musiche di Gurdjieff/ de Hartmann e testo di Giovannangelo de Gennaro del “Canto di Sayyid”. Un progetto intenso e intimo che ondeggia tra Occidente e Oriente in costante equilibro tra le frontiere della world music e quelle della musica antica.

SACRED MOUNT: A PROJECT THAT TOOK SHAPE ON THE PATHS OF PUGLIA Go in search of the sacred on a sound journey between the East and West. “Sacred Mount” features 13 tracks – accompanied by short texts – that came into being during the walks of the Puglian musician and composer Giovannangelo de Gennaro.

They are set to music by the Calixtinus Ensemble and come with a foreword by Vinicio Capossela. They take listeners from Mount Athos to the Greece of the Seikilos epitaph; from the Tremiti islands to the Basilica of Saint Nicholas; from Constantinople to Armenia. The 13 tracks forming the “Sacred Mount” mosaic were conceived and recorded in Puglia. They include a tribute to Vardapet Komitas – the father of Armenian music – with Hov Arek and Krunk, a reinterpretation of “L’ombra della luce” by Franco Battiato, and a brand new reworking of “Canto di Sayyid” with music by Gurdjieff/De Hartmann and lyrics by Giovannangelo de Gennaro. This intense, intimate project flits between the East and the West, constantly striking a balance between world music and ancient music.

I can’t remember – not because I don’t have any memories of being here, but because I have so many.

Non amando il caldo e praticando attività sportive all’aperto, le stagioni ‘di mezzo’ sono le mie preferite: clima mite e solo gli affezionati con lo spirito del Borgo.

In which seasons of the year have you stayed here and which do you prefer?

I think I’ve seen Borgo Egnazia in all the seasons. I don’t like it when it’s very hot and I enjoy outdoor sports, so spring and autumn are my favourites: the weather’s mild and you only find regular Borgo guests who get into the spirit of the place.

Più che un posto posso dire di avere scoperto La Puglia nella sua totalità. Se vogliamo parlare di luoghi, confesso che ogni volta che posso mi porto la bicicletta e pedalo tra le distese di ulivi secolari verdi sulla terra rossa per godermi il panorama dalla cima della selva di Fasano.

Sicuramente quando ho insegnato ai miei figli a nuotare nella piscina per i bambini.

Can you name a place in Puglia that you discovered while staying at Borgo Egnazia?

More than just one place, I’ve discovered the whole of Puglia. If you want to talk about specific spots, every chance I get I bring my bike and ride through the rows of age-old green olive trees in red soil to the top of Selva di Fasano to enjoy the sweeping views.

What experience will you never forget?

Definitely teaching my kids to swim in the children’s pool.

IL TRIATHLON DI SAVELLETRI: UN’EMOZIONANTE GARA CON SE STESSI IN UN PAESAGGIO MOZZAFIATO Savelletri triathlon: push yourself to the limit in a spectacular setting

È una gara estrema. 113 chilometri, distribuiti fra tre discipline di fatica, immersi in una natura sublime ma severa, assieme ad atleti provenienti da tutto il mondo.

Stiamo parlando del triathlon.

Triathlons are always a tough prospect and this one is no exception. Athletes from all over the world will cover 113 km during the three demanding disciplines, in breathtaking but harsh natural surroundings.

La gara - Quest’anno la seconda gara italiana del circuito Challenge Family si terrà a Savelletri di Fasano, in Puglia.

L’appuntamento è per il 21 ottobre. Non è la prima volta che la città di pescatori, stretta tra il caratteristico porticciolo e il parco archeologico di Egnazia, ospita una triathlon, ma quest’anno la competizione esce dai confini diventando internazionale.

The race - This year, the second Italian race in the Challenge Family series will take place on 21 October in Savelletri di Fasano, in Puglia. Nestled between its picturesque little harbour and the Egnazia Archaeological Park, it isn’t the first time the fishing town has hosted a triathlon, but this year the race has expanded beyond Italy’s borders to become an international event.

Il percorso - Gli atleti si sfideranno nella bellezza più assoluta. Si comincia con 1,9 chilometri a nuoto nel Mare Adriatico al largo di Savelletri; si prosegue con 90 chilometri di bici, dalla costa all’entroterra, lungo strade puntellate di trulli, per concludere con 21 chilometri di corsa, attraverso la campagna fino al mare per tagliare il traguardo a Cala Masciola, la spiaggia privata di Borgo Egnazia.

The route - The triathletes will be battling it out against a stunning backdrop. The race will start with a 1.9 km swim in the Adriatic Sea near Savelletri. This will be followed by a 90 km cycling leg, which will head inland from the coast along roads dotted with trulli. Finally, a 21 km run will take the athletes through the countryside and back towards the sea. They’ll cross the finish line in Cala Masciola, which is Borgo Egnazia’s private beach.

“Decoratore” può sembrare una professione minore, generica. Invece è un lavoro che fa rima con arte. Angelo, infatti, è un artista: per convincersi, basta vedere le sue “opere” e ascoltarlo.

Angelo non appartiene alla categoria di coloro che fanno un lavoro sognato da piccolo. «Sono decoratore per caso: inviai un curriculum, così per tentare.

Un breve periodo di prova e fui assunto.

E sono ancora lì nella grande famiglia di Borgo Egnazia, però…». Però? «A tre

anni disegnavo… Mi piaceva tantissimo.

Diciamo che ero predisposto. Ho frequentato il Liceo Scientifico e ho continuato a disegnare… Mi sono inserito facilmente, maturando una passione enorme. E ho avuto la fortuna di avere un grande maestro, Pino Brescia, scenografo-designer, mente creativa del Borgo. Sono qui da 13 anni e mi sento realizzato al massimo».

“With what we have here, you can make a whole world.” These words about the South of Italy, Puglia and the Itria Valley were uttered emphatically, wholeheartedly and lovingly by Borgo Egnazia’s 36-year-old decorator Angelo Mileti, who was born locally in Montalbano (near Brindisi).

“Decorating” might sound like a humble, run-of-the-mill trade to some ears, but there’s a real art to it. Angelo’s an artist, as you’ll soon realise if you listen to him and look at his “works”. Every single part

of Borgo Egnazia – inside and out – is adorned with Angelo Mileti’s flowers, plants, iron, glass and salvaged vintage items. He always uses local materials and stays in step with the changing seasons and Borgo Egnazia’s events.

Angelo isn’t one of those people who do the job they dreamed of as a child.

“I stumbled into decorating: I simply sent off my CV and gave it a shot. After a short trial period, they took me on permanently.

And I’m still part of the big Borgo Egnazia family today. Having said all that, I’ve

always had a vocation for these things.

I’ve been drawing since I was three years old and I used to absolutely love it. I was still drawing when I got to high school, where I focused on scientific studies…

I fitted in easily here and I’ve become hugely passionate about what I do. I was lucky enough to have a great teacher in the scenographer and designer Pino Brescia - the creative mind behind Borgo Egnazia. I’ve been here for 13 years and I couldn’t feel more fulfilled.”

I fiori, le piante, la frutta, il legno, il vetro. E le collane di papavero, i cestini, le lampade, le lanterne, gli oggetti della civiltà contadina rimessi in vita e le creazioni in ferro: qui c’è da incantarsi…

«Ecco il ferro. Comunemente, viene visto come materiale da buttare, scadente, brutto. Non è così: anche il ferro pieno di ruggine, che a volte raccolgo per strada, si può trasformare in un piccolo gioiello.

Il ferro può vivere da solo, può essere contenitore di fiori, può essere elaborato a caldo, a freddo. Nei nostri allestimenti ha sempre un ruolo».

Flowers, plants, fruit, wood and glass, not to mention poppy garlands, baskets, lamps, lanterns, reclaimed rustic items and creations made of iron: it’s truly enchanting here… “Yes, take iron for instance. It tends to be seen as an inferior, unsightly material that should be thrown away, but that’s not true. Even rusty iron – which I sometimes pick up in the street – can be made into a little treasure. Iron can stand alone, it can be used to make flower pots, it can be worked either hot or cold. It always has a role in our displays.”

L’emozione è parte fondamentale del suo lavoro. «Un decoratore deve emozionarsi, deve sentire per trovare la bellezza. Con l’emozione, devono convivere l’attaccamento ai luoghi dove si vive e la riconoscenza verso chi ti ha dato la possibilità di esprimerti: Borgo Egnazia è vita, mi emoziona ogni giorno.

LA PIANTA DEI LUMINI

It grows on sheep tracks in the local countryside and still todayold folk use it in votive lights

La Ballota Acetabulosa (nome scientifico della Pianta dei Lumini) è stata utilizzata nel Mediterraneo come stoppino vegetale per millenni, grazie alla consistenza porosa e alla forma di piccoli imbuti dei fiori.

Ballota acetabulosa is the scientific name of Greek horehound, or the “natural wick”. It has been used as a wick in the Mediterranean for thousands of years, due to the porous nature and funnel-like shapes of the little flowers

“Ma nonna quando andiamo a raccogliere la pianta dei lumini?”

“Tra un po’…. è ancora troppo verde.

Deve cambiare colore”.

I primi di luglio la pianta dei lumini iniziava a seccare e allora sapevo che l’estate era iniziata. Questa pianta non è profumata come le altre ma mi affascinava in modo particolare per il suo utilizzo. Cresceva nel muretto a secco del viale della masseria di zia Lucia. Nonna la raccoglieva in unico fascio e la metteva a essiccare capovolta nello stanzino del terrazzo, dove già c’era l’origano, e presto sarebbero apparsi pomodori, uva e meloni gialli.

Era nonno Ciccio che preparava il galleggiante dove mettere il fiore essiccato. Tagliava la latta delle scatole del caffè a triangolo e forava il centro con un chiodino. Questa base la conficcava in piccoli pezzi di sughero ricavati dai tappi.

Un bicchiere con due terzi di acqua e un terzo di olio con al centro il galleggiante, il fiorellino sopra alla latta, un fiammifero e la magia aveva inizio. Questo stoppino naturale durava per diverse ore fino a che non si consumava l’olio.

Ancora oggi la tradizione di accendere il lumino è conservata dagli anziani del paese per scopi votivi e passeggiando nei tratturi delle nostre campagne spuntano gli steli di questa bellissima pianta.

Quando mi sono appassionata all’etnobotanica ho compreso che i miei nonni erano gli ultimi depositari di una tradizione culturale millenaria.

Mi emoziona il pensiero che un fiore così piccolo ha illuminato le notti del Mediterraneo. E sono grata ai miei nonni per avermi trasmesso queste conoscenze che hanno radici così profonde.

“Natural wick” is what people in Puglia call Greek horehound. When it started to wither in early July, I knew summer was here. It wasn’t as fragrant as other plants, but I was just as fascinated then as I am now by its traditional use. It grew in dry stone walls by the drive leading to my Aunt Lucia’s farm. My grandma would gather the plants in one big bunch and leave them to dry upside down in a cubbyhole 35

by the terrace, near the oregano we’d previously picked. They would soon be joined by tomatoes, grapes and canary melons.

My Grandad Ciccio used to make floating holders for the dried flowers by cutting pieces of coffee tins into triangles, making a hole in the middle with a nail and sticking pieces of wine corks on the three ends. We’d then fill a glass with two parts water to one part oil, place the holder in it, put a dried flower on top as a wick, light it and let the magic start. It would last for hours, until all the oil was gone.

Still today, old folk here use votive lights like these and you can spot the stems of the beautiful plants when you walk along sheep tracks in the local countryside.

When I got into ethnobotany, I realised my grandparents were the last keepers of cultural traditions dating back thousands of years. It’s heart-stirring to think such a small flower lit up Mediterranean nights.

I’m grateful to my grandparents for passing on knowledge with such deep roots.

VERGOGNA E ORGOGLIO. IL SENTIMENTO DEI SALENTINI NEI CONFRONTI DELLA TARANTA È SEMPRE STATO AMBIVALENTE: UN TEMPO MOTIVO DI IMBARAZZO, DISGRAZIA FAMILIARE DA OCCULTARE, SI È FATTO ORA VANTO IDENTITARIO. MA LA TARANTA CHE OGGI AFFASCINA I TURISTI È COSA BEN DIVERSA DAL FENOMENO ANTROPOLOGICO DALLE ORIGINI REMOTE E CONFUSE.

Pride and shame. There’s always been ambivalence in Salento about the taranta: once a cause of embarrassment that families tried to keep secret to avoid disgrace, people now proudly lay claim to it as part of their cultural identity. The taranta that enchants tourists today is very different from the original anthropological phenomenon, which has distant, uncertain roots.

La taranta è un fenomeno antropologico dalle origini misteriose. Le donne, morse da un ragno, si liberavano del suo veleno danzando in maniera forsennata al ritmo di melodie sfiancanti. Quel ragno esiste davvero, ma è innocuo. Ciò di cui le donne si liberavano era la subalternità all’uomo, la morsa della fatica e della miseria. Oggi i cambiamenti sociali hanno trasformato il Salento e la taranta è un rito collettivo che attira centinaia di migliaia di turisti. Ma la questione che solleva, salentina e universale, continua a riguardare le donne e i marginalizzati di ogni latitudine.

Di tarantismo si sapeva già nel Medioevo, come fatto oscuro, circoscritto a un territorio e al suo popolo. A dargli una prima visibilità mediatica fu Chiara Samugheo, fotografa barese che nel 1954 – appena diciannovenne – approdò in Salento e fotografò la “tarantata”.

All’epoca il termine indicava il rito nel suo complesso, sia la persona che morsa dal ragno degenerava nell’isteria – molto più spesso donna che uomo – sia il pellegrinaggio alla chiesetta di san Paolo a Galatina per chiedere la grazia, in cerca di quiete dopo un estenuante tormento. Il ragno probabilmente mordeva davvero,

nei campi di grano, ma non era velenoso.

“In realtà è inoffensivo – si leggeva fra le pagine di Cinema nuovo, la rivista che pubblicò le immagini sconcertanti di Samugheo qualche mese dopo il debutto su Le ore – Può produrre solo leggeri fenomeni locali senza gravità, e comunque guaribili facilmente”.

Taranta is the name of an anthropological phenomenon with mysterious origins.

When women were bitten by spiders of a certain type, they would endeavour to rid themselves of their venom through frenzied dancing to music with a relentlessly fast beat. The spiders really exist, but they’re basically harmless. The women were actually ridding themselves of the biting effects of hard toil, poverty and subordination to men. Social change has transformed Salento and the taranta is now a community event that attracts hundreds of thousands of tourists. Nonetheless, the issues that it raises are still just as relevant

today for women and marginalised groups in Salento and across the globe.

There are records of the associated dancing mania known as tarantism dating back to the Middle Ages, but it was localised and largely obscure. It first gained prominence in the media thanks to a photographer from Bari called Chiara Samugheo, who went to Salento in 1954 when she was just 19 and took pictures of the “tarantata”.

This was the term used at the time to describe the ritual as a whole. It referred both to the person who had been bitten by a spider and gripped by hysteria – much

more often a woman than a man – and to the pilgrimage to the church of Saint Paul in Galatina on which people would go in search of respite after a gruelling ordeal. It’s likely that people really did get bitten in wheat fields, but by spiders whose venom is not especially toxic. “It’s actually harmless,” stated an article in Cinema Nuovo, a magazine that published Samugheo’s disconcerting photos a few months after they first appeared in another magazine called Le Ore. “It might have a mild, localised effect, but it isn’t serious and it can be treated easily.”

When the first symptoms appeared, musicians would be called to the woman’s home and start playing in an attempt to find out what sort of spider had bitten her."

Il problema non era certo la tarantola, era la condizione di disagio estremo che viveva la popolazione salentina, e non solo quella: miseria e fatica nei campi, e poi rivolte contadine e operaie, e le donne sempre sfruttate, soggiogate, mute. “La terra del rimorso”, la chiamò l’antropologo Ernesto de Martino qualche anno dopo, reduce da un viaggio in Salento nel 1959 sulle tracce del tarantismo. Ciò che lui ebbe modo di vedere - e prima di lui Chiara Samugheo - era un rituale a tutti gli effetti, che mescolava paganesimo e religione cattolica, invocava l’intercessione del santo mentre ignorava la medicina e si affidava alle cure della musica.

Aveva fasi ben precise, il percorso di guarigione della tarantata. Quando manifestava i primi sintomi si chiamavano in casa i musicisti, che cominciavano a suonare cercando di capire che tipo di ragno avesse morso: il ritmo al quale la donna reagiva determinava le melodie che si sarebbero suonate per ore e a volte per giorni, in maniera ossessiva, sfiancante, tale da provocare uno stato di trance. La tarantata si contorceva, si inarcava per terra mimando le mosse del ragno, e ballava, ballava fino a perdere i sensi, fino a quando non si assicurava di aver avuto la meglio sull’aracnide.

Era una forma di possessione, quella che prendeva le donne salentine – spesso si ripeteva ogni anno con l’arrivo dell’estate – e arrampicarsi sull’altare della chiesa di san Paolo, bere l’acqua putrida del pozzo lì vicino, danzare in maniera scomposta e oscena davanti ai familiari, e a volte pure in piazza fra gli sconosciuti con indosso solo un camicione bianco, non era solo manifestazione di una malattia.

The real problem wasn’t caused by the “tarantulas” but by the terrible hardships endured by people in Salento and beyond.

They faced poverty and back-breaking work in the fields and there were peasant revolts and worker uprisings. Women were invariably exploited, subjugated and given no voice. The anthropologist Ernesto de Martino called Salento “the land of remorse” after he went there in 1959 to investigate tarantism. Just like Chiara Samugheo before him, he witnessed a ritual in the true sense of the term, featuring a blend of paganism and Catholicism. People would invoke the intercession of a saint, while disregarding medicine and instead turning to music in search of a remedy.

There were a number of specific stages in the recovery process for a “tarantata”.

When the first symptoms appeared, musicians would be called to her home and they would start playing in an attempt to find out what sort of spider had bitten her: the type of tunes they played would depend on the type of rhythm to which the woman responded. The frenzied, relentless music would go on for hours and sometimes for days, putting the “tarantata” into a trance. She would twist and turn on the floor, wriggling around like a spider, and she would dance and dance until she lost consciousness. She would not stop until she was sure she’d got the venom out of her system. The mania that took hold of the women of Salento often recurred every year when summer came around. It wasn’t just a physical reaction to a bite that made them climb onto the altar of the church of San Paolo, drink the putrid water from the nearby well, and dance wildly and obscenely in front of

Quando la statua di san Paolo usciva in processione, nel pomeriggio del 29 giugno, era tutto già finito: le tarantate, che si erano dimenate fin dal mattino in ogni angolo della chiesa, si calmavano.

Tornavano ad accettare l’ordine prestabilito dopo averlo sovvertito, seppure per un tempo brevissimo.

Quell’effimero riscatto se l’erano guadagnato sudando via il veleno del ragno, ma sarebbe stato necessario aspettare qualche altro decennio perché lo facesse pure la loro terra.

their families and sometimes even in the square among strangers wearing nothing but a white smock. Cinema Nuovo described them in its title as “Le Invasate” (“Possessed Women”) when it published Samugheo’s photos from Galatina, but that was far from the case. They were striving to highlight the hardships they’d suffered ever since they were born and the subordination to men from which they would never be free.

By the time the statue of Saint Paul was taken out on a procession on the afternoon of 29 June, it would all already be over. The women who had been writhing all over the church since the morning would calm down. Having subverted the established order of things for just a brief moment in time, they would accept their fate once again. They were fleetingly set free by sweating out the venom of a spider, but their homeland would have to wait a few more decades before it could find its own redemption.

I cambiamenti sociali hanno trasformato il Salento, la vocazione contadina resta ma di quel retaggio primordiale, ai limiti dell’esoterico, poco o nulla è rimasto. Di tarantate vere non ne esistono più, e però ne è rimasta l’eredità: merito di chi ha compreso la portata di quel patrimonio immateriale, ha fatto ricerca per recuperare documenti e testimonianze, registrare canzoni e salvare ciò che rischiava di andare perduto.

Social change has transformed Salento.

It’s still a quintessentially rustic place, but little or nothing remains of the primeval, almost esoteric “taranta” in its original form. However, its legacy lives on thanks to those who grasped the significance of the intangible heritage that it represented. They conducted research into it, recovering documents and witness accounts, recording songs and saving treasures that were in danger of being lost.

Da vergogna la taranta si è fatta orgoglio, i vecchi cantori hanno passato la staffetta ai giovani. Il genere musicale si è smarcato dal retaggio del passato, si è alleggerito del carico magico che si portava dietro ed è diventato moda.

Hanno contribuito i tantissimi gruppi nati in Salento, chitarra e tamburello e feste improvvisate ovunque, e più di tutti ha contribuito la Notte della Taranta, la cui prima edizione risale al 1998. Che fosse qualcosa di più di un semplice fenomeno locale si è capito pian piano, l’evento è cresciuto di anno in anno e nel 2008 è nata l’omonima fondazione. Il Salento ha continuato a percuotere forsennatamente i tamburelli e a battere i piedi per schiacciare un ragno immaginario, intanto diventava una destinazione vacanziera sempre più appetibile. Il festival estivo, che culmina nel Concertone finale a Melpignano, è un appuntamento immancabile per chi la pizzica la ama e per chi in Salento ci arriva da turista, e anche se ha assunto proporzioni inimmaginabili – con centinaia di migliaia di persone che accorrono in un piccolo paesino per ballare una notte intera,

Now that it has broken free from the shackles of the past and cast off its ties with magical beliefs, the music has become fashionable. A part in this has been played by the many groups formed in Salento, who’ve played their guitars and tambourines at impromptu celebrations throughout the area. The biggest contribution of all has been made by the Notte della Taranta festival, which first took place in 1998. The event grew year after year and it gradually became plain that it was more than a simple local affair. The Notte della Taranta foundation was established in 2008. In Salento, people continued to wildly beat their tambourines and crush imaginary spiders by stamping their feet. In the meantime, it was becoming an increasingly appealing holiday destination. Culminating in a huge closing concert in Melpignano, the summer festival is an unmissable occasion for visiting tourists and all those who love the “pizzica” music and dancing traditionally associated with the taranta.

Dei maestri concertatori del Concertone della Notte della Taranta poche sono state donne: Carmen Consoli la prima nel 2016, Andrea Mirò due anni dopo, Madame (con Enrico Melozzi) nel 2021, Fiorella Mannoia nel 2023. Quest’ultima la declinerà al femminile, seguendo le donne che dalla sottomissione sono passate all’emancipazione. Ci sono riuscite a forza di danzare, pestare il ragno, espellerne il veleno. È una questione salentina e universale, riguarda donne e marginalizzati di ogni latitudine.

E non è finita: bisogna ballare ancora, perché ancora oggi “la taranta è viva, e non è morta”.

It has grown to an almost inconceivable size – with hundreds of thousands of people flocking to a tiny town to dance the whole night away in a sort of mass exorcism – and some of the artists now play totally different types of music, but it continues to entrance visitors. Only a few of the musical directors of the Notte della Taranta’s closing concert have been women. Carmen Consoli was the first, in 2016. She was followed by Andrea Mirò two years later and Madame (with Enrico Melozzi) in 2021. In 2023, it will be the turn of Fiorella Mannoia, who will present a female point of view and follow the path taken by women from subjugation to emancipation. After all these years of dancing and stamping on spiders, they've finally managed to drive out their venom.

However, there are still many issues facing women and marginalised groups in Salento and across the globe. We can’t stop dancing yet, because “the taranta is alive and it hasn’t died”.

Le origini - Affascene è il nuovo massaggio disponibile da quest’anno nella Vair Spa di Borgo Egnazia. Le sue origini affondano nella cultura popolare pugliese secondo cui per togliere “l’affascino”, ovvero una leggera forma di malocchio, causa di mal di testa inspiegati, si doveva ricorrere a un rituale magico segreto per annullare la “fascinazione”.

The origins - “Affascene” is the name of a new massage that’s been introduced this year in the Vair Spa at Borgo Egnazia. Its origins lie in the popular culture of Puglia, where it was thought that unexplained headaches could be caused by a mild curse known as an “affascino” (“bewitchment”). To get rid of it, victims had to go through a secret magic ritual.

Il rituale - L’esperienza si svolge nella cabina all’interno delle terme romane, il cuore più profondo della Spa. Guidati unicamente dall’olfatto, che è in grado di riconnettersi alla parte più profonda di ciascuno di noi, si sceglie uno dei quattro olii essenziali e ci si accosta a un rituale per prendersi cura di sé. Stesi sul blocco di pietra, con gli occhi coperti da un telo ci si lascia avvolgere dal profumo dell’olio per quarantacinque minuti di dolce e delicato massaggio che parte dal petto, sale verso il collo e arriva all’attaccatura dei capelli, alla testa e al viso. Lenti movimenti circolari delle dita della terapista che si muovono su tutto il cranio con pressioni diverse portano a un senso di rilassamento profondo, coccole per i capelli, carezze con pettini di legno, acqua fredda, tiepida e poi calda si alternano sulla testa portandola in una dimensione altra.

The ritual - The experience takes place in a booth in the Roman baths, right at the heart of the spa. Guided solely by your sense of smell, which can reconnect you to your innermost self, you’ll choose one of four essential oils and then prepare for a ritual that’ll do wonders for your wellbeing. Stretched out on a block of stone with a towel over your eyes, for 45 minutes you’ll simply unwind and enjoy a mild, delicate massage that starts on the chest, moves up towards the neck and reaches the head, face and hairline. With slow, circular movements, the therapist’s fingers will wander all over your head, varying the pressure in different places and leaving you feeling totally relaxed. Delicately stroking your hair, running wooden combs through it and pouring cold, warm and then hot water onto your head, she’ll take you to another dimension.

L’effetto - I pensieri sfuggono, la mente si concentra sul ritmo del respiro, il corpo segue la testa e si prova una sensazione di abbandono e ritorno alla terra prima dell’ultimo atto. La terapista recita la formula magica “Clarificet haec aqua mentem tuam” (Quest’acqua renda chiara la tua mente) e fa cadere delle gocce di olio nell’acqua in cui sono state lasciate in infusione erbe fresche come menta e melissa, che agiscono sempre a livello delle tensioni della testa. Subito dopo, seduti sul bordo del lettino, ci si lava da soli viso e décolleté.

Ed ecco che mal di testa e tensioni sono sparite. La fascinazione è andata via.

The results - All your cares will drift away and your mind will focus on the rhythm of your breathing. Your body will follow your head and you’ll feel like you’ve really let go and are at one with the world again, ahead of the last step in the process. The therapist will say the magic words “Clarificet haec aqua mentem tuam” (“May this water clear your mind”) and put a few drops of oil into water infused with fresh herbs such as mint and lemon balm, which always help to relieve tension in the head.

Straight afterwards, you’ll sit on the edge of the bed and wash your own face, neck and upper chest. All traces of tension and headaches will have disappeared, now that the “bewitchment” has been banished.

TUTTI PRODOTTI BIOLOGICI, CHE DIVENTANO MATERIA DI QUALITÀ PER GLI CHEF Arianna loves working on the land. She chose to make a career out of it 20 years ago and she’s never regretted it. She’s now in charge of all the kitchen gardens at Borgo Egnazia and the Melpignano family’s other properties. The produce is all organic and provides premium ingredients for the chefs.

A sua nonna diceva sempre che non avrebbe mai lavorato in campagna. Il ricordo della sveglia alle 4 del mattino per andare a raccogliere fioroni, fichi, pomodori, fave, piselli e olive per fare l’olio è stato per anni il suo incubo peggiore. A 21 anni però la vita ha deciso che doveva tornare alle sue origini.

«Vado a lavorare alle verdure» furono le sue parole. «Tu in campagna non resisterai tre giorni» quelle di suo padre.

Una sfida, in un momento di scelte importanti, che non poteva perdere per nessun motivo. Oggi, oltre 20 anni dopo quel momento, la campagna è la sua passione e il suo lavoro.

È Arianna. La paladina degli orti di Borgo Egnazia, da quando, otto anni fa, la signora Marisa Melpignano ha avuto l’intuizione di affidarle la gestione delle terre. Coltivazioni biologiche in grado di soddisfare le esigenze e le richieste degli chef, dei ristoranti e degli ospiti del Borgo.

She always used to tell her grandmother she’d never work on the land. She was haunted for years by memories of waking up at 4 am to pick figs, tomatoes, broad beans, peas and olives for making oil. However, when she was 21 fate sent her back to her roots.

“I’m going to grow vegetables,” she said.

“You won’t last three days out in the fields,” replied her father.

Faced with this challenge at a time when she was making important decisions, she couldn’t afford to fail for any reason. More than 20 years later, she loves working on the land and she’s made a career out of it.

Well-groomed hands that nonetheless show signs of daily toil, skin tanned from hours in the sun, blonde hair that’s always

up, brown eyes full of light, a few freckles on her face, a winning smile, a shapely figure, and incredible determination.

This is Arianna. She’s the driving force behind Borgo Egnazia’s kitchen gardens, which were first developed when Marisa Melpignano had the brainwave of putting her in charge of the land eight years ago.

The organic crops cater to the needs and requirements of Borgo Egnazia’s chefs, restaurants and guests.

Arianna takes care of everything. She wakes up at 4 am every day and does the housework, then heads to work. She’s the one who chooses which fruit and vegetables to plant, decides on times and amounts, and painstakingly, passionately

checks the six hectares of land under cultivation on a daily basis. She’s also the one who hands the produce from “her land” to the chefs every day, so they can use it in delicious dishes. Two other people work with her: a man and a woman. Some of the more demanding tasks might have been deemed “a man’s job” once, but now working the land is something both men and women can do and there have been plenty of female farmers in Puglia over the years.

THE FORMER FARM MANAGER’S HOUSE IS NOW HOME TO MASSERIA CIMINO The very walls of Masseria Cimino are imbued with a scent of home, family and beauty that casts its spell as soon as you step into the coach house, now converted into a reception for guests. Surrounded by kitchen gardens and age-old olive groves by the green hillocks of San Domenico Golf Course, its tower looks out over the Adriatic sea. Welcoming us and telling us its story is Annamaria, the sister of Marisa Lisi Melpignano. She still keeps some of the fondest memories of her childhood within the red and white walls of what was once her grandparents’ house. Built in the 18th century inside the archaeological site where the 6th century BC ancient Roman city of Egnatia had recently been excavated, Masseria Cimino was a rural home for the overseer of the farmers and people who worked on the land. Since 2005, it’s been a refined Guest House with 14 welcoming Mediterranean rooms featuring the same shapes, colours and materials as the original architecture. Guests can enjoy the enchanting family atmosphere that’s always prevailed here and fall in love with the local aromas and produce as they savour buffet breakfasts and dinners at the same time every day, relax in the public areas and unwind by a highly sophisticated swimming pool that has taken the place of a rainwater harvesting tank.

«E pensare che tutto è iniziato come un gioco» racconta Arianna mentre sotto il sole pugliese di giugno cammina fiera tra i prodotti dell’orto. «Venivo dal chimico e non sapevo se sarei riuscita a creare un orto bio» dice sorridendo.

I cornaletti, i peperoni verdi piccoli che si friggono in padella, insieme alle melanzane sono state le prime cose che Arianna ha piantato nel 2016. Da allora non si è mai fermata. E oggi negli orti si producono fave, piselli, broccoli, cavolfiori, rape, spezie e piante aromatiche, insalate, cavolo, zucchine e cicoria, sedano, prezzemolo; varie tipologie di bietola, peperoni e peperoncini, melanzane, finocchi, cipolla, barbabietola. E poi ancora limoni, cachi, meloni, albicocche, mele cotogne, melograni, gelsi bianchi e neri, fichi e mandorli.

“You know, I started trying my hand at this just for the hell of it,” reveals Arianna as she walks proudly through a kitchen garden in Puglia’s June sunshine. “I had a chemical background and I wasn’t sure I’d be able to create an organic kitchen garden” she says with a smile.

The first things that Arianna planted in 2016 were aubergines and little green cornaletti peppers for frying in a pan.

She hasn’t stopped since. In the kitchen gardens, she now grows broad beans, peas, broccoli, cauliflowers, turnips, spices, herbs, lettuces, cabbages, courgettes, chicory, celery, parsley, various types of chard, bell peppers, chilli peppers, aubergines, fennel, onions, beetroot, lemons, persimmons, melons, apricots, quinces, pomegranates, black and white mulberries, figs and almonds.

La produzione cambia in base al periodo e segue il ritmo delle stagioni, oltre a riuscire a soddisfare con alcuni prodotti il 100% delle richieste interne, senza mai scendere sotto l’80%. Uno dei crucci di Arianna è lo spinacio, che non rende ancora come vorrebbe. E poi ci sono i prodotti nuovi come le zucchine gialle, e i progetti per il futuro di piantare ciliegi e amarene.

The output is seasonal, changing at different times of year. All items of produce can cater to at least 80% of in-house demand and some can cover as much as 100% of requirements. The spinach is a bit of a headache, because Arianna still isn’t satisfied with the results.

Then there are new products such as yellow courgettes, and future plans to plant sweet and sour cherry trees.

«Seminare con la luna vuota, piantare con la luna nuova. Sono le due cose che faccio sempre – svela senza remore come tutti i contadini di qui. E poi ogni tanto, quando le vedo giù di tono, parlo con le mie piante».

“Sow with a waning moon, plant with a waxing moon. Those are the two things I always do, like all farmers here,” she reveals with no qualms. “And when they look out of sorts, I sometimes talk to my plants.”

Ed ecco il suo segreto per fare tutto questo: non dimenticare mai le origini e le tradizioni popolari della sua amata Puglia.

Finally, the secret to her success as she does all of this is that she never forgets the origins and folk traditions of her beloved Puglia.

Da quanto tempo lavori a Borgo Egnazia?

Dal 1 febbraio 2016, giorno in cui ho compiuto 40 anni. Credo molto nei numeri: avevo deciso di voler stravolgere la mia vita dopo i 40 anni. Ed è successo.

How long have you been working at Borgo Egnazia?

Since 1 February 2016, which was my 40th birthday. I’m a big believer in numbers: I’d decided to make a major life change when I turned 40. And that’s what I did.

La qualità più importante nel tuo lavoro?

L’attenzione ai dettagli, che è un modo per trasferire amore, e l’empatia, intesa come la capacità di gioire nel rendere felici gli altri.

What’s the most important quality in your line of work?

Attention to detail, which is a way of showing you care, and empathy, in the sense of taking great pleasure in making others happy.

Il tuo momento della giornata preferito a Borgo?

A fine giornata, quando riesco finalmente a fare una passeggiata con calma. In sella alla mia bici, mi perdo tra i vicoli, i profumi e i colori. Questo mi ricorda dove sono, mi riconcilia con me stessa e con il mondo.

What’s your favourite time of day at Borgo Egnazia?

The end of the day, when I can finally take my time and look around. I ride my bike aimlessly among the alleys, colours and aromas. It reminds me where I am and makes me feel at one with myself and the world.

Il momento in cui finisco di controllare una camera riassettata al meglio: un letto sistemato alla perfezione, gli abiti ripiegati, le scarpe appaiate. Questo fa sentire l’ospite amato e a casa.

What’s one thing you find rewarding about your job?

When I finish checking an impeccably cleaned and tidied room: a perfectly made bed, folded clothes, shoes in pairs. It makes guests feel cherished and at home.

When they took a break on sultry summer days, farmers used to eat a cold, humble dish called cialledda, which was made with stale bread and the seasonal produce from the land. Wholesome and nourishing cialledda – which is also known as “acquasale” – is now often served as either a starter or as part of a main course, alongside a source of protein such as cheese or fish.

Ingredienti - Frisa, cocomero barattiero, pomodoro regina, foglie di sedano, tartare di pescato del giorno (tonno, gambero, sarago, triglia), origano, olio evo.

Ingredients: frisa, barattiere (a local melon that tastes a bit like cucumber), Regina tomatoes, celery leaves, freshly caught fish tartare (tuna, prawns, white seabream, red mullet), oregano, EVOO.

Procedimento - La frisa viene bagnata in acqua di mare e poi tostata in forno, a seguire viene condita con tutto il resto degli ingredienti tagliati a dadini, in ultimo viene aggiunta la tartare di pesce e poi tutto è condito con olio, origano e un po’ di pepe.

Method: Soak the frisa in sea water and then toast it in the oven. Dice all of the other ingredients and scatter them over the frisa, then add the fish tartare and season it all with the olive oil, oregano and a little pepper.

lo sguardo rivolto verso l’alto, Isabella di Capua si accorge, nel suo viaggio salentino del 1549, che esistono forme di inatteso splendore, opere di artigiani locali. As you stroll along the narrow streets of Corigliano d'Otranto, Ceglie Messapica, Ostuni or Monopoli, you’ll feel like you’re seeing Las Vegas at its best. The only

difference is that our Puglian lights have a longer history behind them, and an even brighter future.

As the luminarie cast their spell, you’ll wonder where it all began. Everything started in Scorrano, a town south of Lecce that’s humble but full of light. Not one but two women played a key role.

The first was Isabella di Capua, Princess of Molfetta, a muse for poets of her time and still studied by historians today. Her story has inspired a host of novels. She had an eye for beauty and grasped things before others, like all visionaries do.

During a trip to Salento in 1549, Isabella di Capua looked up and was surprised to see some stunning creations by local artisans. The structures blended into the natural landscape, like shooting stars in the night sky. Historian Luca Contile noted that the princess fell in love with the first luminarie. Le luminarie (dal latino “lumen”, che significa letteralmente “oggetto che diffonde luce”) erano formate da grossi pannelli dipinti con sontuose scritte in latino di buon auspicio. In parte erano legate a celebrazioni religiose, e qui entra in gioco la seconda figura femminile a cui è legata la loro origine.

Santa Ciriaca, versione greca del latino Domenica, fu giustiziata durante l’impero di Diocleziano, nella persecuzione cristiana. Sopravvisse al rogo e alle grinfie dei leoni; fu la decapitazione a farla soccombere nel 300 dopo Cristo.

Secoli dopo, durante la peste del ’600, un’anziana donna di Scorrano “vide” Santa Ciriaca. Le promise di liberare il paese dall’epidemia, a patto che ogni cittadino accendesse un lume per la grazia ricevuta. Così è stato. Il resto è storia che vive di luce riflessa.

The luminarie (from the Latin “lumen”, literally meaning “object that gives off light”) featured large painted panels with sumptuous Latin good luck messages.

They also had connections to religious celebrations, which is where the other woman behind them comes into play.

Saint Cyriaca (Greek for Domenica) was martyred during the persecution of Christians under the Roman Emperor Diocletian. She survived burning at the stake and mauling by lions, but died when she was beheaded in the 4th century AD. Hundreds of years later, an old woman from Scorrano “saw” Saint Cyriaca during a 17th century plague. She promised to rid the town of the epidemic if each of its inhabitants lit a light to give thanks, which is exactly what happened. The light has been reflected ever since.

Alcune strutture storiche superano i quaranta metri di altezza e riproducono torri, castelli, gallerie, archi, frontoni merlettati e poi piramidi, cuori, cactus ed elementi del paesaggio, a seconda del tema della festa.

Una struttura così possente nasce da un piccolo disegno su un foglio di carta.

Per risparmiare, gli artigiani della luce sviluppano un buon senso prospettico, evitando costosi prototipi. La creazione avviene dunque attraverso una visione.

Come succede per la letteratura, la scultura, la musica, l’arte. Sull'impronta del disegno con i gessetti colorati vengono simulate le lampadine luminose. Dal bozzetto finale si arriva alla costruzione in scala con riproduzione in legno (di solito l’abete). Tra le doti di questi artisti figura certamente l’esperienza, insostituibile come la maestria, la pazienza, l’intuito per progettare a mente la disposizione della galleria (un insieme di archi che riproduce la navata delle chiese), della cassarmonica (che riproduce l’interno di un teatro) e di tutte le altre combinazioni possibili.

Some of the most momentous structures are more than 40 m high. They might be huge, but they all begin life as a little drawing on a piece of paper. Lighting artisans save money by developing a good sense of perspective, so there’s no need for expensive prototypes.

As a result, a vision is at the heart of the creative process, just as it is for literature, sculpture and music; for art. The effects of the bright lights are recreated on the drawings with coloured chalk. The final sketch then provides the basis for a scale model made of wood (usually fir). The qualities of the artists unquestionably include their vast experience, which is as irreplaceable as their craftsmanship, patience and the instinctive ability to plan in their minds the layout of a tunnel (a series of arches resembling the nave of a church), a bandstand (which looks like the interior of a theatre) and all other possible arrangements.

The breathtaking sights start as soon as you step into arrivals at Bari airport. An illuminated Puglia awaits you, with the elongated shape of the region opening up the horizon in an embrace brimming with joyful energy. Paulicelli came up with the idea for this refined, resplendent welcome.

One of the leading Puglian names in its field, the company also produced the segmented rosette design that can be seen below the diving boards at the famous cliff diving events in Polignano a Mare, not to mention the illuminated narrations in Borgo Egnazia’s Piazza. Imagine entering the Castellana Caves – one of the most spectacular karst cave systems in Europe – at 6:00 pm, after closing time. You’ll then spend 45 minutes going down passages that are normally closed to the public and for staff use only, until you reach the cave where wine made by the Terre Carsiche 1939 winery is kept, and get the chance to taste it. Alternatively, imagine waking up at half past five in the morning and going out with a fisherman in his boat to catch octopuses using a traditional weighted fishing line. When you triumphantly return at 10:00 am, you can fry and eat your catch. These are just two of the ways in which you can experience Puglia like a real Puglian, thanks to the packages that a group of “indigenous” people provide for travellers.

Large fishing structures reminiscent of stilt houses stretch out into the sea, like silent guards defending the Adriatic coast. Known as ”trabucchi”, until modern trawlers came into use half a century ago, they were the main way for local families to earn their livelihoods. After years of decline, many are now operational again. Young people are being taught the trade and travellers can try them out for a day.

Lavoro di mani, per fissare ogni chiodo, legare ogni nodo e cucire, senza l’ausilio di macchine, tutte le reti da pesca grandi fino a 500 metri quadri. Lavoro di braccia, con cui spingere e far girare gli argani di legno chiamati in dialetto anche “ciucci” (cioè asini, perché ricordano il movimento delle macine girate da questi animali): gli argani, fino a cinquant’anni fa, riuscivano a tirar su anche 400 kg di pesce in una sola virata. Infine, lavoro di testa, perché quella del trabucco è una scienza esatta, basata sull’equilibrio insindacabile dei pesi e delle proporzioni.

Celebrati anche dal poeta Gabriele D’Annunzio, i trabucchi, o trabocchi, secondo la variante abruzzese, sono ufficialmente delle macchine di legno da pesca, simili a delle palafitte, che oggi sono diventate però anche macchine del tempo, perché a scorgerle da lontano sanno già di eterno e, salendoci sopra, si può (ri)vivere la pazienza del passato, oltre che la gioia di essere letteralmente in piedi sul mare (a circa sette metri di altezza).

Di trabucchi che scandivano la costa dell’Adriatico tra l’Abruzzo e il nord della Puglia ce n’erano tanti: in Puglia ne sono rimasti una ventina, quindici solo

sul Gargano tra Peschici (5) e Vieste (10). In particolare, Vieste è l’unica città a poter vantare tre trabucchi nel centro storico, fra cui quello più antico, il Trabucco di San Lorenzo, realizzato oltre centrotrent’anni fa. Opere affascinanti e antiche, queste costruzioni erano oramai in disuso e quasi dimenticate, almeno fino a quando l’associazione La Rinascita dei Trabucchi Storici Onlus, dodici anni fa, ha deciso di recuperarle e, una alla volta, restituirle al loro destino originario, vale a dire la pesca.

Engineering meets magic in trabucchi.

However, it takes a lot of work to cast the perfect spell. You need to use your hands to hammer every nail, tie every knot and – with no help from machines – weave fishing nets as big as 500 m².

You need to use your arms to push and turn wooden winches known in the local dialect as “ciucci” (“donkeys”, because they call to mind the movement of millstones turned by the animals), which could lift up to 400 kg of fish in one go until 50 years ago. Finally, you need to use your head, because fishing with a trabucco is an exact science requiring meticulously balanced weights and proportions.

Trabucchi, or trabocchi as they’re known in Abruzzo, were even celebrated by the poet Gabriele D’Annunzio. They’re officially defined as wooden fishing structures resembling stilt houses, but they’ve now also become time machines because there’s something eternal about the sight of them from afar. Once you’re on one, you can (re)live the patience of the past, as well as the delights of walking above the sea (about 7 m over the water).

Numerous trabucchi were once dotted along the Adriatic coast in Abruzzo and northern Puglia. Now around 20 remain in Puglia, including 15 in Gargano alone

between Peschici (five) and Vieste (ten).

The latter is the only place to boast three trabucchi in its old town centre, the oldest of which – the Trabucco di San Lorenzo – was built more than 130 years ago. These storied, spellbinding constructions had largely fallen into disuse and been forgotten until 12 years ago, when a non-profit association called La Rinascita dei Trabucchi Storici Onlus (“Regeneration of Historic Trabucchi”) decided to restore them one by one so they could be used once again for their original purpose: fishing.

Oggi, quindi, ben nove trabucchi su dieci, a Vieste, sono tornati perfettamente funzionanti e, da novembre a maggio, due trabuccolanti vi salgono ogni giorno a lavorare, proprio come facevano fino a mezzo secolo fa, quando prima dell’avvento dei pescherecci e della pesca a strascico, con questo lavoro riuscivano a sostenere e far vivere le loro famiglie.

No fewer than nine of the ten trabucchi in Vieste are now fully functional again. From November to May, two trabuccolanti (operators) climb onto them to work every day just like people did until half a century ago: before modern trawlers came into use, it was a job that enabled trabuccolanti to earn their livelihoods and support their families.

«La pesca a strascico è rapida, ma poco astuta; quella del trabucco, invece, è una pesca intelligente: lo stesso nome deriva dalla parola trabocchetto che è sinonimo di inganno, perché il pesce cade letteralmente in una trappola, cioè la rete», ci spiega Matteo Silvestri, presidente dell’associazione, a cui si dedica in ricordo del nonno trabuccolante di cui porta lo stesso nome. «È una pesca di avvistamento che consiste nell’intercettare i flussi di pesci che si spostano lungo la costa rocciosa, sfruttando le correnti. Uno dei trabuccolanti rimane a guardare il mare e, quando vede i pesci arrivare, manda un segnale all’altro che comincia a girare l’argano per tirare su la rete».

Il sistema rende felici i pescatori, ma anche i gabbiani, che rimangono per ore lì sulle travi ad aspettare di potersi saziare senza fatica (almeno loro). «Mio nonno raccontava che i bambini venivano mandati al trabucco dal paese con lo scolapasta in testa a prendere il pesce», ricorda Matteo.

“Trawling is quick but not clever, whereas using a trabucco is an intelligent way to fish. The name stems from trabocchetto, which means ‘trap’, because the fish literally fall into a trap in the net,” explains Matteo Silvestri, the chairman of the association. He works for the organisation in memory of his grandfather, who had the same name as him. “It’s a type of sight fishing that involves intercepting the flows of fish as they exploit the currents to move along the rocky coast. One of the trabuccolanti watches the sea and sends a signal when the fish arrive, so the other one knows to start turning the winch and lifting up the net.” It’s a system that’s popular with seagulls as well as people: they perch on the beams for hours waiting for an easy meal (easy for them, at least). “My grandad used to tell me that children would be sent to get fish from the town trabucco with colanders on their heads,” recalls Matteo.

Parallelamente a quella “ufficiale”, oggi la pesca sul trabucco è diventata anche una delle esperienze da provare quando si è in viaggio nei pressi di queste coste.

Da soli o in gruppo si può infatti sperimentare il lavoro sul trabucco con dei veri pescatori, assieme ai quali si girano gli argani, si tirano su le reti e si raccolgono i pesci, che, ci giurano, «non mancano mai perché è impossibile non prendere niente con il trabucco» (e a noi non è successo).

As well as the work done by the “professionals”, fishing on a trabucco has become one of the experiences that travellers like to try when they’re visiting this stretch of coastline. On their own or in groups, they can have a go at working on a trabucco alongside real trabuccolanti, turning the winches, raising the nets and gathering the fish, which they swear “are always there because you can’t fail to catch something with a trabucco” (and we never have).

Grazie a un’Accademia fondata dalla stessa associazione, il mestiere del "trabuccolante" viene oggi insegnato anche ai giovani, per non perdersi pezzi di storia quando i più anziani non ci saranno più. «Ho provato altri lavori ma niente è bello come stare qui a guardare i pesci e il mare», mi confida Natale, che, a dispetto dei suoi 77 anni, continua a inerpicarsi sulle travi a strapiombo sul mare come un vero stuntman (vederlo in azione per credere).

Thanks to an academy founded by the above-mentioned association, young people are being taught the trade of the trabuccolante, so that our historical heritage is not lost when the older operators are no longer with us. “I’ve tried other jobs, but nothing compares to being up here watching the fish and the sea,” declares 77-year-old Natale. Despite his age, he still clambers onto beams jutting out over the sea, like a stuntman: you have to see him to believe it.

A dining room in a former oil mill and an age-old olive grove that forms the backdrop to events sum up how history lives on and grows in the deeds and dishes at Masseria Le Carrube: a little model of all-embracing sustainability.

A pochi passi dalla città Bianca di Ostuni, a metà strada tra il mare e il verde della Valle d’Itria, Masseria Le Carrube si presenta in tutta la sua autenticità: una tipica costruzione pugliese, un’antica casa colonica ristrutturata mantenendo inalterata la composizione antica.

Nella sala centrale, dove si pranza e si cena, c’è un antico frantoio con volte e travi originali. L’intenso odore di legna conduce all’interno di un maestoso camino padronale dedicato al fuoco e ai suoi riti. Qui la cultura locale mescolata a elementi moderni esalta il fascino del tipico abbraccio pugliese, scaldato dalla luce abbagliante del sole che si infrange sui muri bianchissimi.

Tutto nella masseria parla di casa e di Puglia: dalle alte spighe dorate sulla via verso l’ingresso al maestoso carrubo, dalle cascate di glicine e bouganville agli agrumeti, dai tappeti di salvia e menta all’uliveto secolare. Lo chef non ha dubbi: “la bellezza è la diversità”.

Il suo nome è Massimo Santoro, e la sua cucina, basata esclusivamente su ingredienti vegetali, dimostra quanto la cultura vegetariana può essere creativa, appagante e fortemente ancorata alla territorialità.

Located just down the road from the “White Town” of Ostuni and halfway between the sea and the green Itria Valley, Masseria Le Carrube is a classic example of a typical Puglian farmhouse. It has been renovated but it still has the same layout.

The original vaults and beams can be seen in the central dining room, which was once an oil mill. The rich smell of wood guides you towards the magnificent main fireplace, the focal point for rituals revolving around flames. Local culture is blended with modern features to bring out the best of traditional Puglian hospitality, while dazzling sunshine bouncing off bright white walls makes the welcome even warmer.

Everything at Masseria Le Carrube is steeped in a sense of home and Puglia: tall, golden wheat by the entrance road, a majestic carob tree, cascading wisteria and bougainvillea, citrus orchards, carpets of sage and mint, and an age-old olive grove. There’s no doubt in the chef’s mind: “beauty lies in diversity”. His name’s Massimo Santoro and his entirely plantbased cuisine shows just how creative, fulfilling and closely tied to the local land a vegetarian approach can be.

Massimo was born and raised in Grottaglie, where he learned to love cooking at a young age. After years away from his homeland, he was on the verge

of leaving his passion behind when an experience at a WWF conservation area in Galbusera got him back on the right track.

It gave renewed meaning to his work and forever changed how he saw things, by making him realise he needed to find the roots of his food. He was lacking a circular mindset, inspired by the natural cycle of produce from the land and based on caring for people and the environment.

The chef’s greatest treasure – alongside the olive grove, where he spends as much time as possible – is the orchard, where red and white mulberries, figs, apricots and pomegranates grow. Le Carrube takes a principled approach to farming, as underlined by its organic methods and respect for the natural cycle of life.

Chef Massimo si lascia quotidianamente ispirare dalla natura. La sua missione è dimostrare che la cucina vegetariana non è solo una scelta salutare ed etica, ma ha un impatto gentile verso l’ambiente e un rapporto più armonico con la natura. As well as quality, there’s a big emphasis on the establishment’s founding principles: responsible consumption and allembracing sustainability, including when it comes to workers. Si parte domenica 30 luglio, alle ore 19, con l’incontro dal titolo “Natura, scienza, uomo” con Gianumberto Accinelli e Daniele Rielli, a seguire lunedì 31 luglio, alle ore 19.00, ci s’interroga su “Che rumore fa la felicità?” con la filosofa Ilaria Gaspari; martedì 1 agosto, ore 19, un dialogo per capire dove ci sta portando il nostro modo di parlare: “(non) Sono solo parole” con Stefano Bartezzaghi e Silvia Bencivelli, mercoledì 2 agosto, ore 19.00, si discute di “Architettura e città: discorso sul futuro” con Italo Rota (https://vivafestival.it/extra-viva/).

L’intreccio tra antico e moderno, avanguardia e tradizione, è la cifra che da sempre ha contraddistinto il festival pugliese, dal 3 al 6 agosto in Valle d’Itria, tra i più prestigiosi e avveniristici set e live della scena internazionale, riassumendo tutto ciò che di meglio si può trovare nella musica contemporanea di qualità, da Bonobo a Caribou, passando per Kode9 e Madlib.

A number of original shows have been lined up in locations in one of the most enchanting areas of Southern Italy. Among them is magnificent Cala Masciola beach, which will host a dawn concert on 6 August and – during Extra Viva! – meetings, speeches and debates to create connections between different people who view the future as a chance to build a more sustainable and shared world. La Puglia è leader a livello nazionale nella produzione di olio d’oliva, qui l’oro “verde” è garanzia di qualità della stessa regione d’origine e si contraddistingue per la grande varietà di caratteristiche sensoriali dalle numerose cultivar autoctone, per le particolarità dell’ambiente geografico e pedo-climatico e dalle tecniche colturali ed estrattive. Secondo la mitologia greca, la Dea Atena piantò in terra di Puglia il primo albero di ulivo. A settembre e in ogni momento dell’anno, Borgo Egnazia organizza un’esperienza immersiva negli uliveti secolari che fanno parte della sua estensione attraverso un percorso di conoscenza e degustazione dell’olio.

La prima cosa che si impara attraverso questo percorso è riconoscere un olio buono. L’olio, del resto, è l’ingrediente base della cucina mediterranea, ricco di antiossidanti, acidi grassi monoinsaturi e polifenoli, e a Borgo Egnazia se ne fa un uso a trecentosessanta gradi, dal salato alla pasticceria, crudo o cotto, sempre nel rispetto delle diverse tipologie, esaltandone tutte le proprietà. Chi sceglie di partecipare alla degustazione per apprendere tutti i segreti dell’olio inizia infatti proprio con una lezione sulle caratteristiche produttive della Puglia, poi si passa alla raccolta in biologico fatta a Borgo Egnazia con un approfondimento sulle varietà di olio utilizzate (in ordine d’intensità: ogliarola, leccino, nociara e coratina). Si prosegue, poi, con l’abbinamento dell’olio a tavola, dalle classiche bruschette col pomodorino alle più stravaganti fragole con olio, dal cioccolato fondente al gelato al pistacchio con una goccia di olio. Un’esperienza adatta a tutte le età.

Puglia is one of Italy’s top producers of olive oil. Reflecting the superior standards found throughout its home region, Puglian “green gold” is renowned for the wide variety of sensory properties imparted by the numerous native cultivars, the unique geographical and pedo-climatic conditions, and the cultivation and extraction techniques employed here.

According to Greek mythology, the goddess Athena planted the first olive tree in Puglia. In September – the month of the olive harvest – and all year round, Borgo Egnazia organises immersive experiences in its age-old olive groves, during which you can learn about and taste olive oil.

The first thing you find out is how to recognise good olive oil. Packed with antioxidants, monounsaturated fatty acids and polyphenols, olive oil is the cornerstone of Mediterranean cuisine.

Carefully considering the characteristics of the different types and bringing out all their properties, Borgo Egnazia uses it in an endless array of raw and cooked, sweet and savoury dishes. If you choose to take part in a tasting session and learn all the secrets of olive oil, you’ll start with a lesson about the nature of the production approach in Puglia, then move onto the organic harvest at Borgo Egnazia and an in-depth look at the varieties of oil used (in order of intensity: ogliarola, leccino, nociara and coratina).

The next step is actually enjoying the oil in culinary combinations ranging from classic bruschette with cherry tomatoes to more unconventional options such as strawberries, dark chocolate and pistachio ice cream with a drop of oil. It’s an amazing experience for people of all ages.

Numerosi e affascinanti sono i racconti legati a questa stagione che hanno ispirato le lavorazioni antiche dei tessuti, la pittura e la ceramica, con raffigurazioni incantevoli della natura e delle luci della “seconda primavera”. Non mancheranno la musica, musa delle notti danzanti d’autunno, e i prodotti appena raccolti, protagonisti di una stagione ricca di gusto e sapore. Un’esperienza imperdibile che racconterà la vera essenza dell’autunno in Puglia.

It’s always party time in the Piazza at Borgo Egnazia! In October, we celebrate the season of warm colours and autumnal flavours. It’s an opportunity to spend a vibrant, joyful and magical night at Borgo Egnazia and listen to the spellbinding stories of local artisans and Massaie. Forgotten autumn fruits are artistically championed in handmade creations and traditional recipes. A whole host of fascinating tales about the season have inspired the use of age-old techniques to make fabrics, paintings and pottery featuring enchanting depictions of nature and lights in the “second spring”. There is also music to get people dancing as the nights draw in, as well as the freshly picked produce that plays a starring role in this flavour-packed season. It’s an unmissable experience that encapsulates the real essence of autumn in Puglia.

DECEMBER: CHRISTMAS AT BORGO

Il Natale al Borgo è la magia dello stare insieme. È casa. È calore. È cibo.

Ma soprattutto, è buonissimo. Per cominciare ci si rimbocca le maniche e, con le mani in pasta, si lavora insieme intorno al tavolo per preparare i dolci delle feste: potrà sembrare una lezione di cucina, in realtà è proprio ciò che accade nelle case pugliesi. Come vuole la tradizione, la notte della Vigilia sarà il cuore più autentico del Natale in Puglia, in questi tre giorni di festeggiamenti che vanno dal 23 al 26 dicembre. La Frasca, la trattoria di Borgo Egnazia, sarà una festa per gli occhi, con decine di candele e decorazioni natalizie per ospitare la gustosissima cena tradizionale. Nel periodo più dolce dell’anno, ritornano anche i Mercatini di Natale al suono dei campanelli tintinnanti e delle zampogne.

La Piazza del Borgo si trasforma in un mondo incantato fatto di bancarelle animate dagli artigiani e degustazioni di prodotti tipici, per raccontare la tradizione natalizia pugliese e far rivivere la magia di tornare bambini.

Christmas at Borgo Egnazia is all about the magic of spending time together. It’s home. It’s warm. It’s full of food. It’s truly delectable. We start by rolling up our sleeves and all getting around a table to make sweet festive treats together. It’s a hands-on experience that might seem like a cooking class, but it’s actually exactly what happens in Puglian homes.

As is traditional in Puglia, Christmas Eve will be the festive focal point at the heart of the three days of celebrations from 23 to 26 December. Dozens of candles and Christmas decorations will make Borgo Egnazia’s La Frasca trattoria a stunning sight during the delicious traditional dinner. Bells will jingle and zampogne will fill the air when the Christmas markets return, at a time of year like no other.

The Piazza will be transformed into a wonderland where you can experience a traditional Puglian Christmas and feel like a child again as you taste local products and admire the artisanal creations on the stalls.

Ah, la "papagna"! Un'arte segreta tramandata di generazione in generazione, ognuna, nessuna esclusa, cresciuta a suon di oppiacei.

La “papagna” è un parente stretto del dolce decotto di papaveri somministrato dalle nonne per placare gli animi dei più piccoli e accompagnarli nel mondo dei sogni. Oggi nel gergo comune pugliese indica quello stato di sonnolenza e semi-trance in cui si cade tipicamente dopo pranzo. Generalmente accompagnato da un risveglio senza più ricordi: non si ha memoria né dell’anno o del luogo in cui ci si trovi, né di quale sia il proprio nome. È il sottobosco della cultura pugliese e, più in generale di quella mediterranea, perché soprattutto d’estate, la “papagna” ti coglie neanche troppo di sorpresa all’ombra di una pineta. È come un rito magico che si compie dopo ogni patate-riso-e-cozze che si rispetti, piatto per cui il bis o il tris, in Puglia, è d’obbligo.

Il sole è alto nel cielo, le cicale cantano la loro sinfonia estiva e il caldo si attacca addosso come una cozza allo scoglio. È il momento per l’arrivo in sordina della "papagna".

Con un cappello di paglia in testa ci si prepara per l'esperienza suprema del riposino pomeridiano, che può variare dai 20 minuti ai 3 giorni di fila, dipende dalla mole del pranzo che si è appena affrontato. Il supporto su cui ci si appoggia è del tutto irrilevante: può trattarsi del divano, della sdraio, della stuoia sottile stesa sugli scogli appuntiti o di una radice d’ulivo ben piantata in mezzo alla schiena. Tipicamente, la famiglia inizia a radunarsi sotto l'ombra, pronta ad “appapagnarsi”. È come una competizione non ufficiale a chi dorme più profondamente.

Quando poi finalmente tutti si risvegliano, il caffè è d’obbligo.

E così, nella cultura mediterranea, la “papagna” diventa una sorta di sacro rito collettivo, un modo per godersi il dolce non fare, rilassarsi e aspettare che la controra passi per dedicarsi alla seconda metà della giornata.

Perché la vita è troppo breve per non addormentarsi ogni tanto sotto un albero!

Ah, “papagna”! As this secret art was passed down through the years, it saw each new generation growing up under the influence of opiates, as surprising as that might sound to modern ears.

“Papagna” was the name of a sweet decoction of poppies that grandmothers used to give to children to calm them down and get them off to sleep. Nowadays, in the Puglian vernacular the term refers to that drowsy, semi-trance-like state in which you often find yourself after lunch. If you drift off, when you wake up you’ll usually find your mind’s completely blank and you don’t remember where you are, what year it is or even what your name is.

In Puglia and the Mediterranean as a whole, no one is ever really surprised to find “papagna” lying in ambush after their midday meal, especially in the cool shade of pine woods in the summer. It seems to cast a spell on you every time you indulge in local dishes such as patateriso-e-cozze (potatoes, rice and mussels), second and even third helpings of which are practically compulsory in Puglia. In the baking heat, as the sun shines down from high in the sky and the cicadas sing their summer symphony, “papagna” will almost inevitably sneak up on you.

Pop a straw hat on your head and get ready for the ultimate afternoon nap. It can last anywhere between 20 minutes and three days, depending on how substantial your lunch was. It really doesn’t matter where you stretch out for your slumber. You might find yourself on a sofa, a deck chair, a slender beach mat on jagged rocks or even with an olive tree root running down your spine. Families tend to start gathering in the shade as they feel “papagna” drawing nearer. It’s like an unofficial competition to see who can enjoy the deepest sleep.

When everyone’s finally woken up again, a cup of coffee is an absolute must.

In Mediterranean culture, “papagna” is a sort of sacred collective ritual: a way of unwinding and idly whiling away the blazing hot hours in the early afternoon, before you face the second half of the day.

After all, life’s too short not to take a nap under a tree every now and then!
