Perché viaggiare significa anche diventare protagonisti di nuovi racconti, ascoltare storie ispirate dai paesaggi, dai profumi, dalle persone. E qui, in Puglia, si può scoprire una dimensione piena di sentimento, che non sempre si vede ma sempre si sente.

Because travelling also means becoming part of new stories, hearing tales inspired by landscapes, scents, and people. Here in Puglia, you’ll discover a world rich in feeling – a world that may not always be visible, but is always deeply felt.

LA POZIONE DI LOCOROTONDO

LOCOROTONDO’S MAGIC POTION

Dicono da queste parti che non c’è posto al mondo che luccichi più di Locorotondo. Certo, qualcuno obietta: anche Cisternino brilla. Ma accade più che altro se arriva il temporale e l’aria elettrica pigmenta i muri e da’ un tono di blu che ricorda i marshmallow sulle bancarelle del mercato. Locorotondo invece è un’altra cosa: è abbacinante. E chi la visita sotto le feste scrive sui social che è per via delle mirabolanti luminarie, che dal cielo cadono sulla città come una rete che intrappola un prigioniero.

Ma Teresa e le altre befanelfe che escono con lo scopettone sanno che la pozione magica è un’altra. Semplice semplice: acqua e candeggina. Che nel rimbombare dell’aurora spargono generosamente nel cortile immaginario davanti a casa – la strada pubblica lastricata di pietra chianca – che per tutto il giorno assorbe il profumo di pulito e lo restituisce, proprio come fa con le luci della festa. La via diventa casa. La coscienza diventa sogno e passa la fame. Perché nei sogni, a pensarci bene, nessuno mangia mai.

Around here, they say that nowhere in the world can outshine Locorotondo. Of course, some people point out that Cisternino also gleams, but that mostly tends to happen when a storm’s on its way. The electricity in the air gives the walls a blue tinge reminiscent of marshmallows on market stalls. Locorotondo, meanwhile, is absolutely dazzling. On social media, visitors that come at Christmas time say it's all thanks to the stunning luminarie draped over the town from above, like a sparkling net. But Teresa and the other "befanelfe" armed with scrubbing brushes know that the real secret lies in a simple magic potion: water and bleach. At daybreak, they pour plenty of it all over the imaginary courtyards outside their homes – the public streets paved with “Chianca” limestone – which soak up the clean smell all day long and release it back into the air, just like the Christmas lights. The road becomes part of the home. You feel like you’re dreaming and hunger passes. After all, no one ever eats in dreams.

IL GATTO GUERCIO

ONE-EYED CATS

Ogni dieci gatti, nelle campagne pugliesi ce n’è uno guercio. Striato e rosso. Cieco dell’occhio destro. Tutto allungato e con la testa piccola come fosse una scultura di legno che d’un tratto ha preso vita. Diversamente dai tanti randagi assassini, che per dimostrar la loro perizia portano i gechi storditi davanti alle masserie che provvedono al loro pasto, vivono in casa e non escono mai. Neppure se dimentichi le finestre aperte. E neppure quando gli altri giocano in cortile usando le zampette come mani e le olive come biglie. Sono i gatti saggi, quelli là. Che escono tardi la mattina e tardissimo la sera. E seguono l’unica regola che vige nel mondo dei gatti: è vietato, in Puglia, vedere sia il tramonto che l’alba sul mare, nel medesimo giorno. Gli umani possono. I felini no.

Ma quelli rossi, che si credono figli del sole, disobbediscono tutti quanti. E la trasgressione li condanna all’ombra. E gli costa un occhio della testa.

One out of every ten cats in the Puglian countryside is a tabby with ginger stripes that’s blind in its right eye. They have little heads and are all stretched out, like wooden sculptures that have suddenly come to life. Unlike the many strays that show off their deadly hunting skills by leaving dazed geckos outside the farms where people feed them, they’re house cats that never go out. Even if you leave the windows open, they’ll stay put. They remain inside when the other cats are playing in the courtyard, pushing olives around like marbles with their paws. The other cats are the wise ones. They go out late in the morning and very late at night.

And they follow the only rule that cats have to obey: in Puglia, never see both the sunset and the sunrise over the sea on the same day. Humans are allowed, but cats aren’t. However, ginger cats think they’re children of the sun and they all disobey the rule. It condemns them to life in the shadows, with only one eye.

GLI INSETTI PITTORI

ARTISTIC INSECTS

Arben Shira è arrivato a Brindisi su una nave piena di persone e di casse di zucchero. Era marzo ma faceva freddo.

Erano in tanti e avevano fame. E nella traversata ondosa si son saziati così, rubacchiando le zollette e sciogliendole sulla lingua, mentre l’Albania sfumava a poppa fino a diventare ricordo.

Sono sbarcati e ognuno è andato per la sua strada, chi a fare il manovale e chi a fare il professore, a perfezionare un italiano che faticano a pronunciare, trasformando tutte le “erre” in “elle” come chi tiene ancora una dolcezza sul palato e chiacchierando la vuole riassaporare. Figlio di un militare che per amore aveva fatto cadere la spada (la sua amata, figlia di dissidenti, altrimenti non l’avrebbe potuta sposare), Arben Shira aveva deciso di fare il pittore.

E lo si vede ancora oggi nelle campagne di Fasano mentre dipinge gli ulivi sulla sua tavolozza appiccicosa, perché con le zollette di zucchero avanzate mischia i colori. È il suo segreto: osserva, stende, e poi lascia la tela alla mercé degli insetti, che con la lingua di spillo un po’ rubano il verde e il giallo e un po’ lo spargono tra le forme. I suoi concittadini lo chiamano “maestro”.

Ma lui, che conosce la verità, alle cavallette e alle api, si rivolge con lo stesso appellativo.

Arben Shira arrived in Brindisi on a ship full of people and crates of sugar. It was March, but it was cold. There were lots of famished passengers. During the rough crossing, as Albania disappeared behind them and moved into the realm of memory, they kept their hunger at bay by pilfering sugar cubes and letting them melt on their tongues. After they disembarked, they went their separate ways.

Some found jobs as labourers and some as teachers. They sought to improve their Italian. Some sounds were hard to pronounce. They tended to make Rs into Ls, as if they still had the sweet taste on their tongues and wanted to savour it again.

Arben Shira – the son of a soldier who fell in love with the daughter of a pair of dissidents and left the army so he could marry her – decided to become a painter. He can still be seen painting olive trees in the Fasano countryside today. His palette is sticky because he mixes the colours with leftover sugar cubes. That’s the secret to his style: he watches, spreads them out and leaves the canvas at the mercy of insects, which suck up shades like green and yellow, then sprinkle them among the shapes. His fellow townspeople call him “maestro”, but he knows the truth and thinks bees and grasshoppers are more worthy of the name.

IL FORNO DI BETTYS

THE BETTYS BAKERY

Nella cittadina di Harrogate c’era una pasticceria chiamata Bettys, dove si serviva il tè con la pasta-brioche e le cameriere indossavano la divisa col colletto di sangallo. E poi c’era il ristorante di Gennaro, che in principio voleva arrivare fino in Canada ma poi s’era fermato qui. Perché il profumo del forno di Bettys gli ricordava quello di suo padre ad Alberobello, che cuoceva le focacce e il pollo con le patate per tutto il paese, e usava i gusci delle mandorle per impennare la fiamma e rendere tutto croccante. Tra mille dubbi, Gennaro aveva tre convinzioni: non si lavora a Natale, non si lavora a Pasqua e non si lavora la domenica. E così nei giorni di festa nella sua piccola casa si raccoglievano tutti gli immigrati di Harrogate, seduti sul pavimento in cucina oppure stesi sui letti, qualcuno persino appallottolato sulle scale: «Ricordo troppo bene cosa significa essere soli», diceva davanti alle timide rimostranza della moglie.

Anche i compagni di scuola delle figlie non volevano mancare. Ai genitori inglesi raccontavano con stupore che a casa di Gennaro si pranzava seduti intorno alla tavola. E masticando, si rideva un sacco.

In the town of Harrogate, there was a tea room called Bettys where waitresses in uniforms with broderie anglaise collars served drinks and cakes. There was also a restaurant owned by Gennaro. He’d planned to move to Canada but ended up staying in Harrogate because the smell from the Bettys bakery reminded him of his father’s bakery in Alberobello, where he cooked focaccia and chicken with potatoes for the whole town, using almond shells to get the fire to flare up and make everything crunchy. Gennaro didn’t know much, but he was sure about three things: you don’t work at Christmas, you don’t work at Easter and you don’t work on Sundays. At those times, all the immigrants in Harrogate flocked to his little house. They would sit on the floor in the kitchen, stretch out on the beds or even perch on the stairs: “I remember all too well what it’s like to be alone,” he would say when his wife half-heartedly complained. His daughters’ schoolmates never wanted to miss it. The astounded children told their English parents how much fun they had sitting all round the table at Gennaro’s house, eating and laughing together.

IL CERAMISTA ENTRATO DALLA FINESTRA

THE CERAMIST WHO CAME IN THROUGH THE WINDOW

Vincenzo Del Monaco dice che il problema, con gli apprendisti, è che appena arriva il sole se ne scappano dalla finestra. E pure a lui, a dire il vero, i parenti con le botteghe a Grottaglie l’avevano sconsigliato: «Vincè, lascia perdere la ceramica, che si sgobba e non si guadagna niente». Agli zii rispondeva ma certo, avete ragione, e chi ci pensa mai.

Ma intanto escogitava il piano e una notte di maggio, mentre tutti festeggiavano San Francesco di Gerolamo, rubò al padre un aggeggio affilato e fece un buco nel vetro all’ultimo piano per occupare una grande stanza che nessuno voleva più. Il suo laboratorio!

Il suo atelier! Ora tutti gli chef stellati gli ordinano i piatti e dicono che è il più bravo d’Italia. E lui se ne resta lì a impastare le mani nella terracotta pure quando splende il sole. Mentre gli apprendisti scappano da quel buco, che per ricordo, non ha tappato mai.

Vincenzo Del Monaco says that the problem with apprentices is that they leave through the window as soon as the sun shines. To tell the truth, his relatives with workshops in Grottaglie had tried to discourage him, too: "Vincè, forget about ceramics. It’s hard work and there’s no money in it". He’d tell his aunts and uncles they were right and the thought had never crossed his mind. But all the while, he was concocting a plan. One night in May, when everyone was celebrating Saint Francesco di Gerolamo, he stole a sharp implement from his father and made a hole in the glass on the top floor, so he could use a big room that no one wanted anymore.

His own workshop! His own studio! Now, Michelin-starred chefs order his tableware and say he’s the best in Italy. He stays there shaping terracotta with his hands even when the sun shines. And the apprentices disappear through the hole, which he’s left there to remind him of that day.

BOSCO TRULLALLERO

Che paura la selva di Fasano. Ma chi diamine ce l’ha messa una foresta in mezzo a un deserto di rocce? Come fa a rimanere così verde e scura anche d’estate, quando il sole costringe persino gli oleandri a mettersi la crema? I grandi non l’hanno capito. I piccoli ci stanno provando. E con pigne e ramoscelli hanno costruito una stazione di ricerca che in codice si chiama Bosco Trullallero. Tutti pensano sia un asilo ma in realtà è un avamposto guidato da Juri, che è mezzo pugliese e mezzo berlinese, capisce di scienza ma pure di assurdità, che nella selva di Fasano sono indistricabili come i fili di un cesto di vimini. Le ricerche sono avanzatissime e la prossima estate il sindaco Malandra sarà convocato per sentire le conclusioni: la selva non è una selva bensì il resort estivo di Babbo Natale, motivo per cui si trovano le nocciole che a questa latitudine non dovrebbero crescere. E poi: la tigre delle canzoni popolari non è un’invenzione bensì esiste, portata da uno svizzero nel 1820. Sta benissimo, è senza denti e si fa sbucciare le castagne dagli scoiattoli.

E i cervi non son cervi bensì renne in vacanza, che vanno rimpinzate spesso sennò si mangiano tutte le carrube, da cui si può ricavare – è una scoperta dei bimbi di Trullallero – persino la nutella.

La mamma di Juri, che lavora a Borgo Egnazia, di nascosto gli ha già soffiato la ricetta e tutte le mattine serve la Carrubella a colazione. Persino a Babbo Natale, che ne va ghiotto, e con l’inganno si mischia agli ospiti.

The Fasano forest is an eerie place. Who on Earth put all those trees in the middle of a rocky desert? How does it manage to stay so dark and green in the summer, when even oleanders have to wear sun cream? Grown-ups have never been able to fathom it, but some children are trying.

Using branches and pine cones, they’ve built a research station with the code name Bosco Trullallero. Everyone thinks it’s a nursery school, but it’s actually an outpost run by Juri, who’s half from Puglia and half from Berlin. He knows as much about science as he does about absurdity, and in the Fasano forest the two are woven together like a wicker basket. The research is at an advanced stage and next summer Mayor Malandra will be informed of the conclusions: rather than a forest, it’s a summer resort for Santa Claus. Hence the hazels, which shouldn’t grow at this latitude. What’s more, the tiger that people sing about in popular songs really exists.

A Swiss man brought it here in 1820. It’s in good shape but has lost its teeth, so squirrels peel chestnuts for it. The deer are actually reindeer on holiday. They have to be fed often or they eat all the carob pods, which the Trullallero children have discovered can be used to make a spread similar to Nutella. Juri’s mum works at Borgo Egnazia. She’s secretly pinched the recipe and serves Carrubella at breakfast every morning. Santa Claus can’t resist it and sneaks in to enjoy it alongside the guests.

IL POLPO E LA ZAMPA DI GALLINA

THE OCTOPUS AND THE CHICKEN FOOT

Nessuno sa quanti esperimenti ci siano voluti. Hanno provato con le polpette al sugo, ma lui ci spruzzava sopra l’inchiostro e le rovinava. Poi con le bombette ripiene di formaggio, ma i delfini l’han messo in guardia dicendogli che il latte arriva sempre dalla mamma e mai dal macellaio. E poi col fiasco di vino, a cui sfilava il tappo per andare a viverci dentro, mantenendosi giovane e sotto spirito. Finché sugli scogli di Bari un bambino di nome Antonio e di cognome Cassano ha tentato immergendo tra gli scogli una zampa di gallina rubata dalla tavola. E il polpo non ci ha visto più: era una mano tesa?

Un burattino? Un pesce giallo con tre teste e le unghie al posto delle pinne?

Insomma, s’è avvinghiato, e si è fatto catturare. Insieme sono andati al campo sportivo e han fatto un patto: il polpo ha imparato il dialetto per poter insegnare agli amici il trucco della zampetta. Mentre Antonio ha imparato a trasformare le sue due gambette in otto tentacoli. E diventare così il calciatore più forte del mondo.

Nobody knows how many different techniques were tried. Meatballs with sauce were no good: he ruined them by spraying ink on them. Bombette filled with cheese didn’t work either, because the dolphins warned him that you always get milk from your mother and never from a butcher. When they tried with a fiasco of wine, he pulled the cork out and took up residence inside it. The alcohol preserved him and kept him young. Then a boy named Antonio Cassano pilfered a chicken foot from the table at home and dipped it in the water by the rocky shore of Bari. The octopus was intrigued: was it a hand? A puppet? A yellow fish with three heads and nails instead of fins? He grabbed hold of it and got caught. They went to a football pitch together and made a deal: the octopus learnt the local dialect so he could tell his friends about the chicken foot trick and in return, he taught Antonio how to turn his two legs into eight tentacles. It helped to make him the best footballer in the world.

TONUCCIO E TONETTA

TONUCCIO AND TONETTA

Tonuccio e Tonetta hanno mille anni ciascuno e tengono sempre il giubbotto pesante, anche d’estate. Vivono dentro un orto che a sua volta è ficcato in fondo al Canale di Pirro, dove soffia un vento gelato che in un lontanissimo giorno dopo Cristo fece scappare gli elefanti che volevano conquistare Savelletri. Mentre loro son rimasti, perché l’aria che sale dagli inghiottitoi li tiene giovani e forti e in più salvaguarda le conserve. Non si parlano mai ma i loro gesti son sempre concordi: se uno raccoglie un gelso, l’altra lo trasforma in marmellata. Se uno pota un tronchetto, l’altra lo raccoglie. Se uno lancia una pietra, l’altra la sistema in cerchio poco lontano, in ordine preciso, sasso su sasso. E così, in fondo al canale, sono nate centinaia di casette che hanno reso famosa nel mondo un’intera città. Ma Tonuccio e Tonetta neppure lo sanno: ad Alberobello non soffia il vento e la gente ha qualche ruga. E per paura, non ci sono andati mai.

Tonuccio and Tonetta are both a thousand years old and they always wear warm coats, even in the summer. They live in a vegetable garden at the bottom of the Canale di Pirro. The wind that blows there is so icy cold that centuries ago, elephants on their way to attack Savelletri fled from it. Meanwhile, Tonuccio and Tonetta stayed because the air rising up from the ponors keeps them young and strong, while also extending the shelf life of their preserves. They never talk to each other, but always work well together: if one of them picks a mulberry, the other makes it into jam. If one prunes a branch, the other collects the wood.

If one throws stones, the other arranges them in circles nearby, putting them on top of each other in a precise order. As a result, hundred of houses have sprung up at the end of the Canale di Pirro and made an entire town world famous. But Tonuccio and Tonetta have no idea: the wind doesn’t blow in Alberobello and the people have the odd wrinkle, so they’ve always been too scared to go there.

LA NEVE E LE RADICI

SNOW AND ROOTS

Intorno a Castellana Grotte ci sono tantissime neviere. Dove i contadini raccoglievano i fiocchi e li stivavano in una parte della casa, per farci il ghiaccio da rivendere ai nobili per le coppe di champagne. Anche perché i francesi qui erano di casa, nei tempi in cui la filossera si mangiava tutti i grappoli in Borgogna e venivano a comprare l’uva sulle Murge, senza capire bene dove le viti prendessero l’acqua. Ma Giovanni Aiello, che una neviera la usa per il vino, dice che la verdeca e il primitivo hanno radici sagge e con tanta esperienza. S’infilano nella roccia calcarea finché ne trovano il centro, dove c’è uno triangolino umido, e da lì prendono la vita. Da queste parti, con metafora femminile, la chiamano la Pietra Madre.

There are lots of ice houses around Castellana Grotte. Peasants would collect snow and ice, then store them somewhere in their homes and later sell the ice to aristocrats who wanted to chill their champagne. The French were regular visitors here back when the vines in Burgundy were being devastated by phylloxera. They came to the Murge to buy grapes, but never really understood where the vines found water. Giovanni Aiello uses an ice house for his wine. He says Verdeca and Primitivo have wise roots with lots of experience. They reach down into limestone until they find a wet triangular patch in the middle that gives them what they need. Around here, it’s known as the Mother Stone.

LA CONFUSIONE DEL GRECALE

BEWILDERED BY THE GREGALE

L’unica a non cascarci è l’orata, che in compenso diventa sciocca nella stagione degli amori e vagando col naso per aria si fa acciuffare. Per tutti gli altri, è meglio aspettare il “maltempo buono”, quando soffia il grecale. Che s’annuncia con nuvole basse a oriente e poi soffia da nord-est, rendendo l’acqua più fredda e spingendo i pesci a riva. E allora il peschereccio Maestrale salpa da Torre Canne e mette giù la rete, aspettando che i branchi facciano ritorno al largo e non distinguano le maglie nell’acqua, che nel frattempo s’è fatta torbida. Tre quintali di tonnetti, palamite, dentici, saraghi, cefali, pagelli e ricciole dalla pinna gialla, che possono pesare anche cinquanta chili. Pescatori da tre generazioni, Checco, Enzo e Leonardo usano questo trucchetto da sempre. Ma che funzioni sul serio non ci credono neppure loro: il mare, dicono, alla fine non lo conosce nessuno.

Only the gilt-head bream is immune to it, but it makes up for it in the mating season, when it loses its wits and is easy to catch. The best bet with all other fish is to wait for the “welcome bad weather” when the Gregale blows. Low clouds in the East show that it’s coming. The wind blows from the North-East, making the water colder and pushing fish towards the shore. That’s when the Maestrale fishing boat sets sail from Torre Canne and lowers its net. It waits for the shoals to head back out to sea again. The water will be murkier, making the net hard to see. It can catch 300 kg of fish such as little tunny, Atlantic bonito, common dentex, white seabream, grey mullet, common pandora and greater amberjack, which can weigh up to 50 kg. Checco, Enzo and Leonardo’s families have been using the trick for three generations. However, not even they think it really works. They say nobody can truly know the secrets of the sea.

PAPPAGALLI E MELAGRANE

PARROTS AND POMEGRANATES

Da qualche tempo la Piana degli Ulivi Secolari è dominata dai pappagalli.

Sono verdi e chiassosissimi, e fanno tanto rumore col becco e con le ali che a Malaga – da dove provengono – gli anziani non riescono più godersi la siesta. Sono golosissimi di fichi d’india ma soprattutto di melagrane, che prima aprono e poi assaltano a folate successive, per non finire subito i chicchi e goderne più a lungo che si può. Una vera disdetta per i camminatori, che amavano perdersi tra i sentieri di terra rossa dalle rovine dell’antica Egnazia fino a Cala Masciola: per loro, non c’è più frutta da rubare dagli alberi. E i ladruncoli del cielo, con le piume tutte striate di succo rosso, ora sembrano uccelli tropicali.

Piana degli Ulivi Secolari has been invaded by parrots. The noisy green birds make such a racket with their beaks and wings in Malaga – where they came here from some time ago – that they keep old people awake at siesta time. They love prickly pears and especially pomegranates, which they open and eat a little at a time, so they can carry on enjoying the seeds for as long as possible, rather than finishing them all at once. It’s rotten luck for hikers, because it means there’s no more fruit to swipe from the trees when they’re wandering on the red earth of the paths from ancient Egnatia to Cala Masciola. The red juice running down their feathers makes the winged thieves look like tropical birds.

LA PROCESSIONE SULLE SCALE

A PROCESSION ON THE STAIRS

Ogni anno nelle case pugliesi si fa un presepe diverso. Il paesaggio una volta più collinare e una volta meno.

Il muschio un anno verde un anno no.

La neve fatta con lo zucchero a velo oppure mischiando il bicarbonato col balsamo per capelli. Solo una cosa non cambia mai: la processione dei bambini per far nascere Gesù. Funziona così: fratelli e cugini si mettono in fila, il più grande in fondo il più piccolo davanti, incaricato di tenere la statuetta tra le mani. Poi si scende a casa di una zia. E si risalgono le scale in processione entrando stanza stanza dopo stanza, cantando Astro del ciel affinché ogni muro sia benedetto. Quindi si appoggia Gesù nella culla per poi sparpagliarsi festosi e andare ad aprire i regali. Mentre le nonne, per decorare la tavola, appoggiano tra i bicchieri le bacche e i rametti raccolti in campagna.

The nativity scenes in Puglian homes change every year. One year the landscape will be hillier than the next. One year the moss will be green and the next it won’t. They might make the snow with icing sugar or by mixing baking soda with hair conditioner. Only one thing never changes: the children’s procession for the birth of Jesus. All the siblings and cousins line up, with the oldest at the back and the youngest at the front holding the figurine. Then, they all go to an aunt’s house.

The procession goes up the stairs and into the rooms one at a time, singing Astro del ciel (Silent Night) until every wall has been blessed. They then place Jesus in his crib, before joyfully scattering and going to open their presents. Meanwhile, the grandmothers decorate the table by putting little branches and berries from the countryside among the glasses.

Indossa una veste rossa, ha una lunga barba bianca e porta con sé tanti doni. È San Nicola, il patrono di Bari, a cui è dedicata la grande basilica che svetta tra i vicoli stretti della Città Vecchia. Eppure basta guardare qualche immagine e ascoltare la sua storia per notare una certa somiglianza con un altro vecchio signore barbuto, famoso in tutto il mondo.

He wears red clothes, has a long white beard and carries lots of gifts. Saint Nicholas is the patron saint of Bari and the basilica towering over the narrow streets of the Old Town is dedicated to him. If you look at a few pictures of him and listen to his story, you’ll soon see that he also bears a certain resemblance to another world-famous old man with a beard.

Secoli e secoli fa, San Nicola era vescovo di Myra, in Licia, l’attuale Turchia. Uomo tanto ricco quanto generoso, soleva aiutare le famiglie bisognose ma con molta discrezione. Per non farsi notare, Nicola ebbe la geniale idea di distribuire i doni di notte, facendoli scivolare silenziosamente attraverso le canne fumarie dei camini delle case più povere.

Hundreds of years ago, Nicholas was the bishop of Myra, in Lycia (in modern-day Turkey). As rich as he was generous, he would very discreetly help families in need. Nicholas ingeniously ensured no one spotted him doing his good deeds by quietly dropping gifts down the chimneys of the humblest homes at night.

Un giorno, mentre passeggiava a Myra, incontrò tre bambini che non avevano nulla da mangiare. Regalò loro tre mele, una per ciascuno. Felici del fortunato evento, i bimbi corsero a casa per raccontarlo ai genitori. Le mele furono conservate per mangiarle il giorno dopo. Ma, miracolo, il mattino successivo le mele si erano trasformate in luccicanti pomi d’oro.

Oro vero, da vendere per comprare cibo e altro di cui avevano bisogno.

While he was walking through Myra one day, he came across three children who had nothing to eat. He gave each of them an apple. The children couldn’t believe their luck and ran straight home to tell their parents.

They put the apples aside so they could eat them the next day. The following morning, they found the fruit had miraculously turned into glistening gold. They sold the precious metal and used the money to buy food and other essentials.

Questa è solo una delle tante storie a lieto fine che fecero di San Nicola il protettore dei bambini. A Bari si festeggia ogni anno il 6 dicembre: in quel giorno i bambini ricevono regali, dolciumi e, a volte, delle belle mele lucide.

This is just one of the stories with a happy ending that led to Nicholas being named the patron saint of children. In Bari, he is celebrated on 6 December every year. Children are given presents, sweets and – sometimes – lovely shiny apples.

Nel Nord Europa invece, San Nicola perse l'aspetto del vescovo cattolico ma mantenne il ruolo di benefattore col nome di Samiklaus, Sinterclaus o Santa Claus. Oggi lo chiamano così in buona parte del mondo, oppure Babbo Natale. Certamente il santo barese non viveva in Lapponia, però chissà, forse anche lui avrebbe gradito far merenda con latte e biscotti!

In Northern Europe, Saint Nicholas no longer tends to be depicted as a Catholic bishop, but he’s still portrayed as a benefactor. There, and in much of the rest of the world, he’s known by names such as Samiklaus, Sinterklaas or Santa Claus, as well as Father Christmas.

Bari’s patron saint definitely didn’t live in Lapland, but if children had left milk and cookies out for him, perhaps he would have appreciated it!

«No, no, e ancora no! Dai nonni in Puglia ci andiamo d’estate, quando si può giocare sulla spiaggia di San Vito con i paguri, si può bere la limonata fresca dal carretto della famiglia Benemerito, si può stare svegli fino a tardi a guardare le stelle. Che ci andiamo a fare d’inverno?». Bianca era irremovibile. Eppure sua madre aveva fatto di tutto per prenderle, quelle ferie. E quando ne aveva avuto conferma, la prima cosa a cui aveva pensato era stato proprio il sorriso di Bianca. Per la prima volta da quando era nata, avrebbe passato le vacanze di Natale “giù”. E invece…

«Dai, giochiamo! Facciamo un disegno!

Leggiamo un libro!», Francesca cercava in tutti i modi di strappare un sorriso a Bianca, la sua cuginetta del Nord. Era così felice di trascorrere le vacanze di Natale con lei. «Devo trovare qualcosa di speciale da fare insieme», pensava tra sé quella sera, mentre la vedeva dormire nel lettino accanto.

«Bianca, svegliati, c’è qualcuno alla finestra».

«Finalmente, lo sapevo che esistevano». D’un tratto, il broncio di Bianca era scomparso. Al suo posto un dolcissimo sorriso. «Dai Franci, apri la finestra».

«Buongiorno fanciulle, Fata Serenella al vostro servizio. Potete chiamarmi solo Fatina. Orsù, non perdiamo tempo. Mettete vestiti comodi e partiamo. Abbiamo tantissimo da fare e da vedere. Pronte a saltare insieme a me? Uno, due e tre».

“No, no, no! Definitely not! We go to grandma and grandad’s in the summer, when we can play with hermit crabs by the sea in San Vito, drink fresh lemonade from the Benemerito family’s cart and stay up late looking at the stars.

What on earth would we do in Puglia in the winter?” Bianca was adamant.

Her mother had done everything she could to get time off work. When it was finally approved, she couldn’t wait to tell Bianca the good news. For the first time ever, she was going to spend the Christmas holidays “down south”. This was certainly not the reaction her mother had expected…

“Come on, let’s play! Or we could draw or read a book!” Francesca was trying everything she could to cheer up Bianca, her little cousin from the North. She was so happy to be spending the Christmas holidays with her! “I need to find something magical to do together,” she thought to herself that night, as she watched Bianca sleep in the bed next to hers.

“Bianca! Wake up! There’s someone at the window!”

“At last! I knew they existed.” Bianca had suddenly stopped sulking and the sweetest smile had appeared on her face.

“Quick, Francesca! Open the window!”

“Hello, my dear girls. My name’s Serenella and, as you can see, I’m a fairy. Chop chop! There’s no time to waste. Put on some comfortable clothes. We’ve got lots to see and do! Get ready to jump with me: one, two three!”

In the blink of an eye, Francesca, Bianca and the fairy found themselves on a plain,

un timidissimo sole faceva capolino.

L’aria era frizzantina. Un venticello leggero accarezzava le guance rosse delle cuginette e sfiorava le olive ormai mature. Eccolo l’inverno pugliese.

«Adorate fanciulle, siamo nella Murgia, una terra magica dove la storia dell’uomo si mescola all’opera di mia madre Natura, dove si susseguono rocce, doline, gravine, lame, inghiottitoi. Seguitemi».

«Whooho! Non vedo l’ora di raccontarlo alla mamma!», Bianca non avrebbe mai immaginato che a pochi minuti dal suo mare c’era tutto un mondo da scoprire.

«Nel bosco c’è tantissima vita», spiega la Fatina. «Alberi, fiori ed erbe buonissimissime. E questo è il periodo migliore per raccoglierle».

La Fatina aveva ragione. Pochi passi nell’uliveto e si erano ritrovate a guardare dall’alto la lama in cui stavano per avventurarsi. Pian piano si erano fatte strada attraverso una pianta di rucola violacea.

«Graziose fanciulle, questa pianta è squisita sia cotta che cruda. Una mia amica umana la chiama erba “wasabi” per il suo sapore».

«Quanti ciclamini».

«Sono stupendi».

«Oh sì. Di ciclamini ce ne sono tanti qui, insieme a diverse specie di orchidee selvatiche, come l’Ophrys murgiana, scoperta da poco».

Le bambine continuavano a farsi strada tra una pianta di azzeruolo e una di alliaria; tra una di erba vajola e una di

cardo mariano; tra una caccialepre e un pungitopo; tra una calendula e una malva. Erano ormai dentro la lama.

«Guardate, fanciulle, ecco la rosa canina: è una delle piante più diffuse nell’Alta Murgia. Secondo Plinio il Vecchio, uno scienziato di duemila anni fa, un soldato romano sarebbe guarito dal morso di un cane e dalla rabbia grazie a un decotto delle sue radici. Anche le bacche si usano per fare infusi e decotti, mentre i fiori servono contro gli arrossamenti del viso.

Noi fate del bosco la usiamo da sempre…Ops, piccolo segreto!».

Ed ecco la regina dei boschi murgiani: la quercia roverella. «Fatina, cosa sono quelle? Non sembrano le solite ghiande», Bianca e CONTINUA >

in a beautiful olive grove. The sun was peeping out from behind the clouds in the sky. The air was crisp. A gentle breeze blew across the ripe olives on the trees and the rosy cheeks of the two cousins, in a classic Puglian winter scene.

“My sweet girls. We’re in the Murgia. This is a magical place where human history is intertwined with the work done by my own dear Mother Nature, among limestone, natural hollows, dolines, ravines, lamas, caves and ponors. Follow me.”

“Woo-hoo! I can’t wait to tell my mum!”

Bianca had absolutely no idea that a whole world was waiting to be discovered just a few minutes from the coast she loved so much!

“The woods and undergrowth are bursting with life, including trees, flow-

ers and wild herbs and plants that are soooooooo good! And this is the best time to forage for them.”

The fairy was right. The girls took a few steps through the olive grove and found themselves looking down on the magical ecosystem into which they were about to venture: the lama. They had slowly walked through a patch of purplish rocket.

“My charming children, you can eat this wild plant raw or cooked and it’s delicious.

Nadia, one of my human friends, calls it the “wasabi” herb because of its flavour” “Look at all the cyclamens” “They’re beautiful” “Oh yes. Cyclamens are a common sight here, as are various species of wild orchids. One that was discovered recently has been named Ophrys murgiana.”

The cousins carried on walking, making their way past various plants: azarole and garlic mustard; honeywort and milk thistle; common brighteyes and butcher’s broom; marigolds and mallow. They were now down in the lama.

“Look, you prodigious pair, there’s a dog rose. Along with common hawthorn, it’s one of the most widespread plants in the Alta Murgia. Pliny the Elder related a story of a Roman soldier who was bitten by a dog, caught rabies and was then cured with a decoction made from dog rose roots. The hips are packed with vitamin C and used to make infusions and decoctions. The petals are good for facial redness. All of us woodland fairies use them… Oops, that was supposed to be a secret!”

Francesca se ne stavano ferme con il naso all’insù.

«Infatti non lo sono, quelle sono le galle! Hanno tante forme, alcune sembrano biglie, e in passato i bambini le usavano per giocare. Sono una protezione della pianta contro un parassita, una sorta di culla per piccoli insetti che l’albero crea per difendere in realtà se stesso».

«Fatina, che bella la natura».

«Certo. Pensate che da sola ha scavato le grotte. Ce n’è una qui vicino.

Andiamo! Gli uomini hanno sempre usato le grotte, in tempi antichissimi e in tempi più recenti. Negli anfratti i briganti pugliesi nascondevano i bottini e le armi. Ma questa è una pagina di storia complessa. La prossima volta vi racconterò di quando ho incontrato il Sergente Brigante Romano».

Le cuginette seguivano attente la Fatina mentre avanzavano tra rami di ferula e fiori di grespino verso il cuore della lama.

Ed eccola lì, timida e allo stesso tempo maestosa, la roccia con le orme dei dinosauri. «Mie gentili fanciulle, queste sono impronte di Teropodi, dinosauri carnivori e bipedi, antenati degli uccelli. Seguitele, guardate come

And here’s the queen of the Murgia woods: the downy oak. “Serenella, what are they? They don’t look like normal acorns,” asked Bianca and Francesca as they stood looking up.

“That’s because they aren’t! They’re galls.

They come in lots of different shapes and some of them look like marbles – children used to play with them. Plants use them to protect themselves from parasites.

They’re a bit like cradles for little insects, but the trees actually make them as a form of defence.

“Oh Serenella, isn’t nature marvellous?”

“It certainly is. It can even make caves all by itself. Look, there’s one just there. Let’s go back up a second! People have always used caves, both in the distant past and more recently. They were once the haunt of Puglian brigands, who hid the arms that they trafficked and the hauls from their raids. It’s a complicated chapter of history, my young friends. Another time, I’ll tell you about when I met a brigand called Sergente Romano.”

The cousins followed the fairy as they walked past giant fennel and Sonchus Oleraceus on their way into the heart of the lama.

And there it was, right before their excited eyes. An unassuming yet majestic assortment of dinosaur tracks in the rock.

“My darling girls, these are the footprints

LAME Lamas are furrows which are formed and widened by the powerful erosive action of water. Karst lamas are a distinctive feature of the Puglian landscape, forming a network that channels surface water towards the sea after rainfall. Lama Marchesa, Lama Badessa and Lama/Grotta Giglia provide the setting for this story. The opportunity to visit these sites was invaluable, so heartfelt thanks go to Ricciotti Ricciardi, Marco Bruno, Nadia Pascale, and Archeoclub d’Italia APS “Sante Zirioni” of Acquaviva delle Fonti for their generosity, expertise and the knowledge they shared.

LA LEGGENDA DI ROSSOFIORE The Legend of Rossofiore ¬ Carmen Borrelli

STORIA DI MAGIA, AMORE E REDENZIONE TRA I BOSCHI INCANTATI DEL SALENTO A tale of magic, love and redemption in the enchanted Salento woods C’era una volta, nel cuore del Salento, un principe giovane e un po’ troppo sicuro di sé di nome Larenzio.

Bello, coraggioso, ma con un brutto vizio: cacciava ogni creatura che si muovesse. «Sono il miglior cacciatore che si sia mai visto!», ripeteva spesso. In una sera di dicembre, quando il mondo sembrava sospeso sotto un manto di neve e le stelle brillavano nel cielo gelido, Larenzio decise di dimostrare ancora una volta il suo valore e, con arco e frecce, si inoltrò nel bosco tra Sogliano e Cutrofiano. La notte era limpida, e la luna splendeva così forte che sembrava giorno.

Mentre si incamminava tra gli alberi, gli apparve davanti una cerva dal manto bianco. Splendida, quasi magica. E il principe, con una sola freccia, la colpì. Ma proprio quando stava per vantarsi di nuovo della sua infallibile mira, sentì il pianto disperato di una ragazza.

La luna si rifletteva luminosa nei suoi occhi e tra i lunghi capelli scuri spuntava un fiore rosso a forma di stella, vivido sullo sfondo bianco della neve. Per un istante, Larenzio restò senza fiato, colpito da una bellezza così irreale da far vacillare le sue certezze.

Once upon a time, in the heart of Salento there was a cocksure young prince called Larenzio. He was brave and handsome, but he also had a very bad habit: he loved to hunt absolutely anything that moved. “I’m the best hunter the world’s ever seen!” he would boast.

One December night, when time seemed to stand still under a blanket of snow and the stars were shining in an icy sky, Larenzio decided to prove once again just how good he was. Grabbing his bow and arrows, he ventured into the woods between Sogliano and Cutrofiano.

It was a clear night and the moonlight was so bright it seemed like midday.

As he was walking through the trees, he spotted a white doe. It was a glorious, almost magical sight. The prince felled it with a single arrow. Just as he was about to start bragging again that he never missed, he heard a young maiden crying in despair. The moonlight reflected brightly in her eyes and in her long, dark hair she wore a starshaped red flower that stood out clearly against the white snow. She was so breathtakingly beautiful that Larenzio couldn’t believe his eyes. He was lost for words.

«Ma che hai fatto?» gridò lei, le mani nei capelli.

Sembrava disperata: «Quella cerva era sacra!

Apparteneva al mago Nanni, e io sono la sua guardiana! Ora sono nei guai, e pure grossi!». La sua disperazione era palpabile, e Larenzio sentì per la prima volta un’inquietudine nuova, come se quella fanciulla avesse acceso qualcosa nel suo cuore.

“What have you done?” she yelled, with her head in her hands. She was distraught. “That was a sacred doe that belonged to Nanni the sorcerer and I was guarding it!

I’m doomed!” When he saw her forlorn face, Larenzio felt a sense of unease he’d never experienced before. It was as if the girl had unlocked a new part of his heart.

Proprio in quel momento comparve il famigerato mago, alto e minaccioso, brandendo la sua grande bacchetta.

«Era tuo dovere difenderla dai pericoli del bosco!», tuonò il mago e con un colpo di bacchetta trasformò la ragazza in una nuvola di fumo. Larenzio era incredulo: la fanciulla di cui si era innamorato al primo sguardo era sparita. «Se desideri rivederla, dovrai dimostrare che il tuo cuore può fiorire nel gelo», disse il mago. «Cercala, ma sappi che il cammino richiederà più del coraggio».

Andò sulle scogliere di Otranto, ma nessuno aveva visto la ragazza con un fiore rosso tra i capelli. Arrivò a Castro, e poi a Capo di Leuca, dove un vecchio pescatore gli disse: «Prova a chiedere al vento».

Dopo diversi giorni tornò al bosco, ora più silenzioso e gelido che mai. In lontananza, sentì il suono delle campane, canti e risate, e capì che doveva essere il giorno della Vigilia. Esausto, si addormentò proprio dove aveva visto per la prima volta la misteriosa fanciulla, nella speranza di poterla vedere di nuovo in sogno. Al risveglio, notò qualcosa di strano. Accanto a lui c’era un rovo intrecciato pieno di spine e un fiore rosso a forma di stella sulla cima.

The notorious wizard appeared at that very moment, towering menacingly over her with his big wand. “It was your duty to keep it from harm in the woods!” boomed Nanni, then he waved his wand and she disappeared in a puff of smoke. Larenzio couldn’t believe it. He’d fallen in love with the girl at first sight, and now she’d disappeared. “If you want to see her again, you’ll have to show that your heart can bloom on the coldest of days,” said the wizard. “Your bravery alone won’t be enough to help you find her.” Larenzio went to the rocky shore of Otranto, but no one had seen a girl with a red flower in her hair. He travelled to Castro and then Capo di Leuca, where an old fisherman said: “Try asking the wind.”

After a number of days he returned to the woods, which had never been so cold and quiet. Hearing the distant sound of bells, singing and laughter, he realised that it was Christmas Eve. The exhausted prince fell asleep on the very spot where he had first seen the mysterious girl, hoping to see her again in his dreams. When he woke up, he noticed something strange. Next to him was a prickly, tangled bramble bush with a star-shaped red flower on top of it.

«Che strano, sembra il fiore della ragazza!», pensò.

Guidato dall’istinto, cominciò a colpire quel rovo con tutte le sue forze. Le spine lo graffiavano, ma Larenzio non si fermava. Finché, con un ultimo colpo, il rovo crollò e una nuvola di polvere lo avvolse. Quando la polvere si diradò, davanti a lui comparve la fanciulla, viva e bellissima come l’aveva vista la prima volta.

“How odd! It looks like the girl’s flower,” he thought.

Something inside him told him to start hitting the bush with all his might. Larenzio was soon covered in scratches, but he didn’t stop. Finally, one last blow brought the brambles crashing down and the prince was shrouded in a cloud of dust. When it cleared, he saw the girl in front of him, as beautiful and full of life as the first time.

«Sei tornata!», esclamò Larenzio felicissimo. La ragazza gli sorrise e si dice che da quel giorno, ogni Natale, nei boschi del Salento spuntino piccoli fiori rossi a forma di stella. La gente del posto li chiama Rossofiore e oggi la tradizione vuole che, durante le festività, queste Stelle di Natale adornino le case pugliesi come dono speciale da offrire a chi si ama. Simbolo di nuovi inizi, questo fiore incarna la purezza che si cela nei gesti d’amore e il coraggio di cercare sempre il cuore dell’altro.

“You’re back!” cried Larenzio in delight. The girl smiled.

From that day on, it’s said that little star-shaped red flowers have bloomed in the woods of Salento every Christmas. The local people call them “Rossofiore”.

In the festive season nowadays, Puglian homes are adorned with poinsettias (known in Italian as “Stelle di Natale”, or “Christmas Stars”), which are traditional gifts to give to those you love. DA STOCCOLMA ALLA VALLE D'ITRIA CON AMORE From Stockholm to Valle d’Itria with love Erano passati alcuni minuti da quando, assorto nei suoi pensieri, aveva iniziato a far roteare tra le mani il cartoncino rosso vermiglio, estratto con malcelata impazienza da una busta dello stesso colore. Per la prima volta era stata recapitata della posta indirizzata a lui in quella casa di Stoccolma, dove viveva con sua moglie e sua figlia. Fu strano abbandonarsi al piacere dell’invito che aveva appena ricevuto, scritto a mano su carta robusta ed elegante.

Voleva andarci al matrimonio di Vincenzo, il compagno di banco del liceo, il confidente della sua adolescenza, l’amico con cui aveva trascorso indimenticabili pomeriggi per le strade della Valle d’Itria, quella terra di confine incastonata tra le province di Bari, Brindisi e Taranto.

Non si sentivano più spesso come quindici anni prima, quando si era trasferito per lavoro in Svezia. Qui aveva

conosciuto Astrid e insieme erano diventati una famiglia, destinata ad allargarsi con un secondo bambino in arrivo. Per questo motivo aveva preso da solo un volo per Brindisi a dicembre, non immaginando le emozioni che avrebbe riscoperto da lì a poco.

Having pulled it out impatiently from a matching envelope, he had now been turning the vermillion coloured card in his hands for several minutes, lost in thought.

It was the first time he had received post at the house in Stockholm he shared with his wife and daughter. The invitation contained in the envelope, handwritten on rigid, elegant card, was a pleasant surprise.

He was excited at the idea of going to the wedding of his old friend Vincenzo, his

classmate at high school, his confidant during adolescence, someone he had spent many unforgettable afternoons with on the streets of Valle d’Itria, a borderland that separates the provinces of Bari, Brindisi and Taranto.

They didn’t hear from each other as often as they did fifteen years ago when he first moved to Sweden for work. Here he had met Astrid and they had become a family with a second child now on the way.

That was why he had flown to Brindisi alone in December, blissfully unaware of the emotions that would be rekindled in him when he got there.

Carmelo, nome che gli fu assegnato per evocare quel Carmelo Bene attore e drammaturgo pugliese che sua madre amava tanto, era nato e cresciuto in uno dei paesi dell’ormai celebre conca carsica delle Murge sud-orientali, prima di trasferirsi nel Nord Italia per studiare e poi sempre più su nella Penisola Scandinava.

Erano davvero tanti anni che non tornava in Puglia in una stagione che non fosse l’estate, se ne rese conto quando l’aereo stava per atterrare all’aeroporto di Brindisi. Guardando fuori dal finestrino il colore del mare era più scuro di come lo ricordava, più intenso e nostalgico. Subito dopo avvistò la fortificazione cinquecentesca di Torre Guaceto: se ne stava lì fiera, circondata da una fitta e brillante vegetazione, a Ferragosto come a Natale. Pensò che tornare a casa gli suscitava sempre emozioni intense, anche ora che non c’era più nessuno ad aspettarlo.

Carmelo, named after Puglian actor and playwright Carmelo Bene, his mother’s favourite, was born and raised in one of the towns of the now-famous karst plateau of the south-eastern Murgia before moving to northern Italy to study and then even further north to Scandinavia. It had been many years since he had been back to Puglia outside of the summer months, a fact that dawned on him as his plane came down to land at Brindisi. Looking out the window, the sea was darker than he remembered it, deeper and more nostalgic. He immediately picked out the 16th century castle of Torre Guaceto which, as ever, stood proud among the thick and verdant vegetation. Going home was always a tidal wave of emotions, he said to himself, even now that there was nobody waiting for him to return.

Si sbagliava: c’erano i suoi amici del liceo, qualcuno non era mai andato via, qualcun altro era tornato, per partecipare come lui al matrimonio.

Gli raccontarono delle loro vite e lo aggiornarono su quali fossero gli eventi e gli appuntamenti imperdibili del Natale in Valle d’Itria. Fu rassicurante scoprire che tante cose erano rimaste le stesse. A volte la felicità passa proprio dalla voglia di ritrovarsi nei luoghi dell’infanzia.

Seguirono giorni pieni di incontri, di profumi, di immagini e sapori; giorni che lo riportarono indietro nel tempo, a quando si capiva che era Natale dal profumo di vincotto per le strade.

Pensava spesso al sorriso di sua nonna Anna, che ogni anno a metà settembre raccoglieva tantissimi fichi per fare il vincotto, sostenendo che il giorno di Natale sarebbe arrivato presto e non poteva farsi sorprendere impreparata: le cartellate dovevano essere immerse, servite e mangiate nel profumatissimo “cotto”.

But he was wrong: his school friends were there; some had never left, others had come back to attend the wedding, just like him. They told him about their lives and filled him in on the key Christmas happenings in Valle d’Itria. It was reassuring to find out how little things had changed. Sometimes happiness is as simple as going back to the places you grew up in.

The next few days were a blur of social events, smells, images and flavours; days that transported him back to a time when you knew it was Christmas because of the scent of vincotto in the streets.

He often thought of the kindly smile of his grandma Anna, who in mid-September every year would pick lots of figs and start getting them ready, explaining how Christmas was just round the corner and she didn’t want to leave everything till the last minute: the cartellate had to be soaked, served and eaten in fragrant “cotto”, or grape must.

He had travelled a lot and had spent Christmas in some wonderful places around the world but he only really felt at home when he was surrounded by those heady fragrances and flavours that he had never forgotten.

Ogni piatto della tradizione preparato a dicembre era legato a un ricordo e ogni ricordo a un anno felice della sua vita: il torrone fatto in casa con le mandorle tostate, che da bambino rubava furtivamente sotto lo sguardo distratto di sua nonna; i panzerotti dolci fritti, ripieni di pasta reale e immersi nel miele, che sua mamma conservava in dispensa nelle capasedde di ceramica, aggiungendo qualche stecca di cannella come si faceva a Putignano.

E c'erano le pettole, frittelle da mangiare ancora bollenti nelle vie di Alberobello, con i tetti festosi coperti dalle installazioni luminose e le strade riscaldate dal calore dei mercatini.

Every traditional dish prepared in December stirred up memories and every memory took him back to a happy place: homemade torrone with toasted almonds, which as a child he would furtively steal from under the nose of his grandma; sweet fried panzerotti filled with pasta reale - almond paste - and dipped in honey, which his mum kept in typical ceramic capasedde vases in the pantry, adding a few sticks of cinnamon as was the practice in Putignano. Not forgetting the pettole, fritters to be eaten piping hot in the streets of Alberobello against the backdrop of the brightly-lit festive roofs and the vibrant, atmospheric Christmas markets.

Carmelo trascorse i giorni prima del matrimonio del suo amico alla ricerca dei luoghi del suo passato. Passeggiò da solo lungo la costa di Capitolo, frazione di Monopoli: ci andava con suo padre a comprare il crudo di mare per la cena della Vigilia e il capitone da cuocere al forno, con tantissimo alloro, come si raccomandava suo nonno.

Carmelo spent the days before his friend’s wedding seeking out the places of his past.

He walked alone along the seafront of Capitolo, a resort in Monopoli: he used to go there with his Dad to buy the raw fish they would eat on Christmas Eve and the capitone - eel - to bake in the oven with lots of bay leaves, as his granddad insisted.

Non aveva ancora finito di riordinare i ricordi, quando si ritrovò poche ore dopo a guidare l’auto a noleggio in direzione di Pezze di Greco, vicino a Fasano, dove da trentasei anni organizzavano un Presepe Vivente negli spazi del villaggio rupestre di Lama del Trappeto, un insediamento ricavato tra le formazioni geologiche di epoca neozoica. Era convinto che la visita di quella rappresentazione fosse un vero e proprio viaggio indietro nel tempo: tutto era curato in ogni dettaglio, dagli abiti dei numerosi figuranti agli oggetti dei diversi ambienti.

Era sfacciatamente bello e indiscutibilmente immersivo: i visitatori non erano semplici spettatori, ma elementi attivi della rappresentazione.

Si sentiva parte della comunità, come quando poco più che quindicenne interpretò il ruolo di pastore insieme ai suoi amici. Nascere in questa terra vuol dire far parte della tradizione che si tramanda e il Presepe Vivente ne è la massima espressione. Percorse tutto il chilometro e mezzo in due ore, come da itinerario suggerito e assaggiò il baccalà fritto che gli venne offerto con un calice di vino rosso locale.

He was still getting his memories in order when, a few hours later, he found himself driving his hire car towards Pezze di Greco, near Fasano, where for thirty-six years they had organised a real-life nativity scene in the spaces of the cave village of Lama del Trappeto, a dwelling place carved from neozoic geological formations. Visting this scene really was like taking a step back in time and the accuracy of the details was quite remarkable, from the clothes of the numerous actors to the objects in the different rooms. It was both visually stunning and undeniably immersive, with visitors an active part of the nativity rather than passive onlookers.

He felt part of the community, just like he had when, a little over fifteen years old, he had played a shepherd together with his friends. Being born in this land means being part of a tradition that is passed down the generations and the real-life nativity is a perfect example. He walked the entire kilometre-and-a-half route in two hours, as recommended, and tasted the fried baccalà offered to him with a glass of a local red wine.

Aveva ancora pochi giorni da trascorrere in Valle d’Itria, presto sarebbe tornato a Stoccolma dalla sua famiglia, portando con sé la voglia di raccontare loro il Natale della sua infanzia. Ma ora non voleva lasciarsi travolgere dalla tristezza e trovò uno stratagemma per scacciarla via: lontano da lì, sopraggiunto il bisogno di risentirsi a casa, avrebbe chiuso gli occhi e respirato profondamente, immaginando il profumo del vincotto per le vie del suo paese illuminate nei giorni di festa.

Avrebbe riposto in valigia fichi secchi, paste di mandorle e torrone. Avrebbe promesso a se stesso di tornare presto, per ritrovare i ricordi, per ritrovarsi.

He still had a few days left in Valle d’Itria but soon he would be heading back to Stockholm and his family, where he would tell them all about the Christmases of his childhood. Worried that his nostalgia would get the better of him, he came up with a strategy for keeping it at bay: when he found himself assailed by that desire to return home, he would close his eyes, take a deep breath and recall the fragrance of vincotto on the streets of his town at Christmas time. He would take dried figs, almond paste and torrone home with him. He would promise himself that he would come back soon, to rediscover his past, to rediscover himself.

Ho un ricordo meraviglioso dei pomeriggi trascorsi con i miei nonni, seduta davanti al fuoco acceso ad ascoltare i loro racconti.

I have wonderful memories of afternoons sitting in front of the fire with my grandparents and listening to their stories.

La sedia di nonno Ciccio era sempre a sinistra del camino, e accanto c’era quella su cui sedevo io.

Dall’altro lato c’era quella della nonna, con il suo cestino pieno di lane colorate. Mi piaceva stare con loro, ma a un certo punto avevo voglia di correre a giocare nello spiazzo davanti a casa.

Grandad Ciccio’s chair was always to the left of the fireplace, next to mine. Grandma used to sit on the other side, with a basket full of colourful balls of wool. I liked spending time with them, but sometimes I felt the urge to go outside their house to run and play instead..

«Nonna, quando smette di piovere possiamo andare fuori a giocare con le barchette?».

«Sì».

«Potete anche aiutarmi a costruirle?»

E lì cominciava un vero e proprio cantiere navale.

Con il suo coltellino, il nonno apriva le noci, facendo attenzione a non rompere i gusci. Poi le svuotava, e noi mangiavamo i gherigli. Prendevamo della carta velina colorata, la ritagliavamo e la incollavamo su un bastoncino, per fare la vela. Infine arrivava la parte più emozionante: accendevamo una candela e facevamo gocciolare la cera all’interno dei gusci, attenti a non scottarci. Quando la cera cominciava a solidificare, infilavamo il bastoncino per fare l’albero maestro. E così, le nostre piccole barchette inaffondabili erano pronte a navigare.

Facevamo questo gioco dopo le piogge abbondanti, quando nello spiazzo si formavano delle grandi pozzanghere, perfette per far galleggiare le barchette. Con i miei cugini, organizzavamo delle vere e proprie regate nei canali di acqua piovana. Erano momenti di divertimento e magia.

“Grandma, when it stops raining can we go outside and play with boats?”

“Yes.” “Can you help me make them?”

And then our miniature shipyard would swing into action.

Grandad would open the walnuts with his penknife, taking care not to break the shells. He then emptied them and we ate the kernels. We made the sails by cutting pieces of colourful tissue paper and glueing them to sticks. Then came the most exciting part: we would light a candle and drip wax into the shells, taking care not to burn ourselves. When the wax began to harden, we would plunge the sticks into it to serve as our masts. And with that, our unsinkable little ships were ready.

We used to play with our walnut boats after heavy rain, when there were big puddles outside the house where our tiny fleets could float. In those magic moments, my cousins and I used to have so much fun racing them through the rainwater.

Mimmo ti accoglie fuori dalle mura della sua casa, che a sua volta è fuori dalle mura di Grottaglie e nel quartiere dei ceramisti, che a sua volta sembra fuori dal mondo, lì col mare di Taranto all’orizzonte. Con timidezza teatrale prende la parola davanti al grande portone, un gesto che compie verso tutti coloro che vogliono visitare Casa Vestita, la sua dimora-museo. E inizia a dire: «Questo posto l’ho sognato sin da bambino». E doveva destare sospetto quella camicia bianca e il

cappello panama portato con disinvoltura, come un García Márquez che traduce il realismo magico in pugliese.

Perché ciò che intende è letterale: «Sognavo i numeri. E poi sognavo il cortile di una grande casa, dove correvo e giocavo. Un giorno di vent’anni fa mi ci hanno portato e ho riconosciuto il luogo. E mi son detto: questa deve diventare casa mia». Non solo una dimora signorile: ma anche un “giardino segreto”. Come a Grottaglie ce ne sono qua e là: «A fine Ottocento

i ceramisti diventarono ricchi e cominciarono a costruire giardini murati per far prendere il fresco alle loro signore, nella totale discrezione. Questo è uno dei più belli».

Mimmo greets you outside the walls of his home, which is outside the walls of Grottaglie in the ceramics district. With the Taranto sea on the horizon, it, in turn, feels like somewhere outside this world altogether. With a theatrical show of shyness, he stands in front of the big gate and starts speaking. It’s how he welcomes all those who want to visit Casa Vestita, his home/museum. As he explains: “I dreamt of this place as a child.” His casually donned panama and white shirt should have been the first clue that he’s

like a Mediterranean García Márquez, translating magic realism into Puglian.

Because he means it literally: “I used to dream of numbers. And then I dreamt of running and playing in the courtyard of a big house. One day, 20 years ago, someone brought me here and I recognised it. And I decided it had to be mine.” The magnificent mansion also has one of the “secret gardens” that can be found dotted all over Grottaglie: “In the late 19th century, the ceramists grew rich and began to build walled gardens where the

women of the family could cool down away from prying eyes. This is one of the most beautiful ones.”

I soldi per comprare però non li aveva: possedeva le sue mani, la bottega di mastro ceramista con l’insegna Cosimo Vestita e qualche cambiale da firmare. Ma senza pensarci più di tanto, forse anch’ella proiettata nell’incantesimo, la signora ultranovantenne che da ragazza passeggiava nel giardino decise di venderla a lui.

A un prezzo irrisorio. Inconsapevole delle scoperte da Indiana Jones che il luogo aveva in serbo. Il portone si apre. Mimmo racconta: «Questa decorazione l’ho fatta coi cocci che trovavo durante la ristrutturazione», dice indicando un mosaico «Alcuni sono del secondo secolo dopo Cristo. Quelli verdi risalgono al Rinascimento».

Ogni passo è un nuovo racconto: in giardino troneggiano i capasoni, le giare di terracotta alte come un uomo e sistemate a falange, come fossero guerrieri. Testimoni di un’epoca in cui un artigiano poteva realizzare cento otri in un giorno soltanto. Nei grandi forni di Grottaglie, che come combustibile usavano la sansa delle olive: «E si cantava. E per ogni palata di sansa si declamava il nome di un operaio. E poi il nome dei tre patroni della città.

E infine l’inno a Ognissanti, per non scontentare in cielo nessuno».

Sotto il pavimento del piano nobile Cosimo Vestita ha trovato le cisterne che servivano da pozzo e da aria condizionata per la casa, in pietra di calcarinite (un tempo qui c’era il mare) e costellate di fossili di ricci e conchiglie. E poi, scoperta delle scoperte, la chiesa: «Prima apparve una colonna tortile, che simboleggia l’infinito. Poi delle nicchie, delle colombaie e un

However, Mimmo wasn’t exactly flush with cash: all he had were his two hands, the “Cosimo Vestita” master ceramist’s workshop and a few promissory notes to sign. The owner was a woman in her nineties who used to stroll in the garden in her youth. Perhaps the place had also cast its spell on her, because – without giving it much thought – she decided to sell it. For a paltry amount. Little did she know that it had some Indiana Jonesesque discoveries in store. The gate opens.

“I made this out of earthenware I found during the renovation process,” reveals Mimmo, pointing to a mosaic. “Some pieces are from the second century AD. The green ones date back to the Renaissance.” There’s a new story with every step. Centre stage in the garden is taken by capasoni: terracotta jars as tall as men, lined up in phalanxes like warriors.

They bear witness to a time when an artisan could make 100 wineskins in a single day. In the big kilns of Grottaglie, olive pomace was used as fuel: “And they would sing. And with every shovelful of olive pomace, they would call the name of a worker. And then the names of the town’s three patron saints. And finally a hymn for all the saints, so no one in Heaven was left out.”

Under the floor of the piano nobile, Cosimo Vestita found the cisterns that served as a water supply and air conditioning system for the house. They were made of calcarenite (this area was once under the sea) and dotted with fossilised sea urchins and shells. Then came the biggest discovery of all: a church. “The first thing to appear was a Solomonic column, symbolising infinity. Then niches, dovecotes and an oven for baking bread. But

«Per ogni grano che cadeva, era un figlio donato dal cielo». Succedeva il giorno prima delle nozze. Qui, nel giardino segreto.

There were also 300 coins with the Templar cross on them, showing how old they were.” Down there, everyone is quiet for a while. Meanwhile, Cosimo Vestita picks a pomegranate off the ground and throws it at a wall. He’s already onto the next story. He’s already in another room from his dream. “Young women used to do that,” he explains.

“They believed a child would be sent from heaven for every seed that fell.” They used to do it the day before a wedding. Here, in the secret garden.

Ma chi si avvicina al tavolo dei dolci per rubarne una – rischiando di attirare le occhiatacce di mamme e zie – non sempre sa che ha tra le mani un pezzetto di storia, una tradizione che attraversa i secoli e il Mar Mediterraneo.

But not everyone who sneaks one off the sweet tray – risking dirty looks from assorted mothers and aunts – realises that in their hands they have a piece of history and a tradition that spans the centuries and the Mediterranean Sea.

Le origini delle cartellate sono avvolte da mistero.

Si dice che risalgano all’antica Grecia. Vicino a Bari, sono state scoperte alcune pitture rupestri che raffigurano dolci sorprendentemente simili offerti in dono a Demetra, dea della natura e dell’agricoltura.

E il fatto che in greco antico kàrtellos potrebbe significare proprio cestino,, non è certo una coincidenza.

The origins of cartellate are shrouded in mystery. They’re said to date back to Ancient Greece. Near Bari, rupestrian paintings have been discovered showing remarkably similar food being offered to Demeter, the goddess of nature and agriculture. And it’s no coincidence that kàrtellos in Ancient Greek might mean “basket”.

Ma non è finita qui: durante le feste, sulle tavole di Creta, Karpathos e del Peloponneso si trovano dolci molto simili. Katina ed Elefteria, due signore pugliesi di origine greca, ricordano ancora le loro nonne che

Katina and Elefteria, two Puglian women with Greek roots, still remember their grandmothers rolling out extremely thin pastry flavoured with aniseed and mint,

stendevano la pasta sottilissima aromatizzata con anice e menta, la tagliavano in striscioline uguali che poi attorcigliavano con garbo. Una volta fritti, i cestini venivano immersi in uno sciroppo di miele e decorati con noci e cannella, trasformandosi in Xerotigani, preparati a Natale e in altre occasioni importanti.

Tornando in Puglia, anche Tiziano Mita, il pasticcere di Borgo Egnazia, mantiene vivo questo legame con la tradizione. Dalla sua Ceglie Messapica ai laboratori dove ha affinato la sua arte, rielabora i grandi classici della sua terra con un tocco personale e contemporaneo. Ma quando si parla di cartellate, non può che tornare alle origini, raccontandoci come prepararle secondo la ricetta tradizionale. Eccola.

then cutting it into identical strips and deftly rolling them up. The little pastry baskets were fried, then dipped in honey syrup and decorated with walnuts and cinnamon to make “Xerotigani”, which people eat at Christmas and on other big occasions.

Coming back to Puglia, Tiziano Mita is the pastry chef at Borgo Egnazia and he also keeps ties to tradition alive. From Ceglie Messapica to the kitchens where he honed his craft, he adds a personal, contemporary touch to great classics from his homeland. However, when it comes to cartellate he feels the need to go back to their roots. He told us how to make them, following the traditional recipe. Here's how it goes.

farina 00 500 g vino bianco 125 g olio extravergine d’oliva 100 g un pizzico di sale vincotto o miele aromatizzato noci fichi secchi chicchi di melagrana

La preparazione è molto semplice. Fate la classica fontana di farina con un buco al centro, dove verserete tutti gli altri ingredienti: olio, vino e sale. Impastate fino a ottenere un composto liscio.

Dopo un’ora di riposo, arriva il momento cruciale: stendete l’impasto sottilissimo con il matterello, perché solo così, durante la frittura, spunteranno le bolle tipiche delle cartellate.

Con una rondella dentellata tagliate la pasta stesa in strisce larghe 3-4 cm e lunghe circa 30, che vanno poi pizzicate ogni 3 cm e arrotolate a spirale creando dei cestini perfetti per trattenere il condimento (il principio è lo stesso delle orecchiette).

Cartellate are very easy to make. Make a well in the flour and put the oil, wine and salt into it. Knead it until it’s smooth.

Leave it to rest for an hour, then it’s time for the crucial part: roll out the pastry with a rolling pin until it’s very thin, in order to ensure distinctive bubbles form on the cartellate when they’re fried.

Use a pastry wheel with teeth to cut the rolled pastry into strips that are 3-4 cm wide and around 30 cm long.

Pinch them every 3 cm and roll them into spirals to make baskets that are perfect for holding plenty of toppings (the same concept is behind orecchiette).

Leave the baskets to rest overnight, then fry them in hot oil.

Fate riposare i cestini per una notte prima di friggerli in olio bollente. Concentratevi bene sull’odore che sprigionano una volta tirate fuori: è una promessa di bontà.

Una volta pronte, tuffate le cartellate nel mosto cotto o nel miele aromatizzato con bucce di mandarino o rosmarino, proprio come si faceva una volta. E per finire, una spolverata di noci, fichi secchi e chicchi di melagrana.

Ed eccole pronte: profumate, appiccicaticce, con quel perfetto equilibrio tra amarognolo e dolciastro.

Dalla Grecia alla Puglia, che siano ricoperte di miele o vincotto, hanno il sapore delle feste. E sono buone, semplicemente buone.

Smell them when you take them out and you’ll realise what a treat you have in store.

When they’re ready, dip the cartellate in cooked grape must or honey flavoured with mandarin peel or rosemary, just like in the old days. Sprinkle walnuts, dried figs and pomegranate seeds over them to add the finishing touch.

Striking a perfect bittersweet balance, they're fragrant, sticky and ready to enjoy. From Greece to Puglia, whether they’re coated with honey or vincotto, they’re full of festive flavour. And they’re absolutely delicious.

The trulli town is famous for the groups of conical roofs in its skyline. During the festive season it looks like a nativity scene, with light displays and people in costume telling the Christmas story.

Nelle gnostre, i piccoli cortili condivisi del borgo, si accendono le luci e si espongono gli addobbi di Natale. In questa atmosfera magica si passeggia tra bancarelle che offrono cartellate, caldarroste e vino e scene emozionanti di presepi viventi. Sempre nello stesso periodo, infatti, la città ospita anche Presepi di Spaccanoci, una grande mostra di presepi artigianali che rappresentano scorci e bellezze del borgo.

Christmas decorations and lights fill little shared courtyards called gnostre. There’s a magical atmosphere as people wander past stalls selling cartellate, roast chestnuts and wine, as well as entrancing live nativity scenes.

At the same time of year, Noci also hosts the big Presepi di Spaccanoci fair, where beautiful sights and views from the town can be seen in artisanal nativity scenes.

«Cortili aperti a Natale» è la rassegna che apre al pubblico alcuni luoghi segreti della città il 30 dicembre. Dall'1 al 26 dicembre c’è anche la Fiera dei Pupi nell’ex convento dei Teatini: qui si comprano figure per il presepe fatte a mano, in cartapesta e terracotta.

Cortili Aperti a Natale (Open Courtyards at Christmas) on 30 December provides a chance to visit places not normally seen by the public. Meanwhile, handmade terracotta and papier-mâché figurines for nativity scenes are sold at the Fiera dei Pupi (1-26 December) in the former Theatine monastery.

È un caos carico di vita, un disordine che crea connessione, una confusione che unisce, specialmente a Natale, quando il gibillero pugliese raggiunge vette spettacolari.

Tenetevi forte.

It’s a hectic hubbub and a commotion that forges connections. Il Gibillero is a Puglian term meaning hustle and bustle that brings people together and it reaches a spectacular crescendo at Christmas, so hold tight.

Come molte parole del nostro dialetto, il gibillero ha radici profonde. Deriva dalla parola Giubileo, la grande ricorrenza religiosa che, nell’antichità, portava un flusso straordinario di pellegrini e di celebrazioni.

Like many words in the Puglian dialect, il gibillero has deep roots. It comes from Giubileo (“Jubilee”), a big religious occasion which involved a host of celebrations and huge crowds of pilgrims many years ago.

Il gibillero è confusione, sì, ma con uno scopo festoso, quello che rende il tutto allegramente ingestibile. È il chiasso assordante del trombone della banda che passa a un centimetro dalle orecchie, è il vortice di voci che accompagna una piazza gremita di bancarelle natalizie o il brulicare vivace delle vie strette del borgo antico, tra fedeli in cerca di un po’ di pace in chiesa e ritardatari in cerca dell’ultimo regalo.

Il Gibillero might mean making a hullabaloo, but it also means making merry, as everything gets joyfully out of control. It can take the form of an ear-splitting trombone as a band brushes past, the uproar in squares crammed full of Christmas stalls, or the people swarming in the narrow streets of old towns and villages, some seeking peace and quiet in church and others hoping to pick up the last of their presents.

In Puglia, il gibillero lo trovi ovunque: nel chiacchiericcio animato delle signore che si scambiano consigli per cucinare il capitone, nel caos organizzato di una fila in attesa della focaccia, nei piccoli drammi familiari di chi non ricorda la tradizione della Vigilia: pesce o digiuno? Nel dubbio, scelgo il primo. È quel momento in cui il mondo sembra esplodere in frammenti di vita e tutto, paradossalmente, trova il suo ordine.

In Puglia, you can find il gibillero everywhere: in the lively chatter of women swapping tips on how to cook eels, in the organised chaos of people queuing for focaccia, in the small-scale dramas that unfold as families try to remember if it’s traditional to eat fish or fast on Christmas Eve. If I weren’t sure, I’d opt for the former. Il Gibillero is a time when our whole lives seem to burst into a thousand pieces and – paradoxically – everything falls into place.

Chi vive il gibillero, lo ama. Ma chi conosce l’anima della Puglia sa che senza non c’è storia: ad esempio, non sarebbe Natale senza la lattina dell’olio che si sfonda inondando il pavimento della cucina poco prima dell’arrivo dei parenti, o la mamma che corre a togliersi i bigodini all’ultimo istante prima di accogliere gli ospiti, o se le uniche paste rimaste sono quelle senza crema.

To experience il gibillero is to adore it. Those who know Puglia deep down realise things just wouldn’t be the same without it: for example, it wouldn’t be Christmas without a tin of olive oil spilling all over the kitchen floor just before the family arrives, or your mum rushing to take her rollers out just before she greets the guests, or finding the only pastries left are the ones with no cream.

Quindi, la prossima volta che vi trovate in Puglia, se il disordine vi sembra troppo non temete: il gibillero è semplicemente di famiglia. È il segno che a Natale siete nel posto giusto. Qui, dove il caos è sinonimo di casa, e a tavola non è mai un intruso, ma sempre il benvenuto.

So if things feel a little unruly next time you’re in Puglia, just remember that il gibillero is part of everyday life here.
