or too long restaurants have persecuted fries: treated them like second-class citizens, stuffed them with chemicals and preservatives, and forced them to share fryers with hot wings and corn dogs. Blake Lingle and Riley Huddleston, two dudes that coincidentally share the same birthday, founded Boise Fry Co. in the spring of 2009 to give fries their shot in the spotlight as a featured dish. They love fries—probably more than any humans should. At BFC, fries are served as the main course and burgers come on the side. Eight different types of potatoes and vegetables are available; they can be cut five different ways and served with over 10 different salts and dipping sauces. The fry combinations are nearly endless! The finest and freshest potatoes are obtained from M&M Heath Farms in Buhl, Idaho. Each potato is prepared with love and a strict regimen is followed to ensure that each fry retains its quality and flavor. All vegetables are fried in natural, GMO-free sunflower seed oil and left unsalted so that you can choose from any of the house-made seasonings and dipping sauces.

The Meraki Story W

hen the Kalatzakis Family recently moved to Boise, they did so because they knew it was the perfect place to call home. Aki and Farrah Kalatzakis also knew it was a great place to fulfill their dream of opening up their very own Greek restaurant. Although new to Boise, they were quite familiar with the city because they had been visiting family here (more and more frequently each year) over the last decade. They loved all that Boise had to offer, and one of their favorite things to do was to search for a great Greek eatery to call 'their spot'. However, each time they found a place that claimed to be offering real Greek food, they couldn't help but walk away feeling disappointed, and like something was just...missing.The gyro meat was salty and processed, the tzatziki runny and bland, and the pita bread anything but fresh and warm. It wasn't until they would travel back to Greece to visit Aki's family that they could finally satisfy that authentic gyro craving. But why should they have to travel so far to enjoy the true Greek experience? Was there a way to bring it all back home? And so the idea of Meraki Greek Street food was born, and the husband and wife duo have not looked back ever since. Equipped with the family recipes passed down from Aki's dad, Taki Kalatzakis, they knew that Boise would come to know and love what real authentic Greek food should taste like. GARDEN CENTER

M

y fondest memories of gardening were helping my grandmother Brown plant her garden every spring. I would plant 3 kernels of corn in every hole; one for the birds, one for the bees and one for the Browns. In August, it was my job to pick the corn, bag it in gunney sacks and sell it at our grocery store. It seemed to me that growing our own food & harvesting it was the best life. My garden roots grew further when my college job was at a small plant nursery, FarWest Garden Center. I learned all about plants that weren’t in my grandmother’s garden and how to design a yard with them while getting my BA in marketing at B.S.U. When my wife, Maya and I married we bought FarWest after college graduation and have been in the plant business for the past 32 years. The best part of working at FarWest is making friends and helping those friends be successful in their landscape and garden endeavors. It’s been fun to see their kids grow up and their yards become retreats for their families. Each day, I love working with my creative, enthusiastic co-workers. They are experienced gardeners and happily share their joy and design ideas with our clients. My team’s passion for people and plants truly makes our garden center rock! Some of our team community efforts include: Pollinator Garden in Garden City; Boise Valley Habitat for Humanity; Evening in the Garden; Zoo Boise Patas Monkey Exhibit; Idaho Botanical Garden We truly love working with our clients designing landscapes and gardens that become a relaxing retreat for their families. FarWest started as a small garden center and has grown into a seven acre plant oasis with a landscape design and installation team. My grandmother would be proud! Phil Harvey is the founder of the parent company and is well known as being one of the biggest suppliers of free condoms in the world. Re-POP Gifts is more than a store; it’s an experience. That has been the goal of Re-POP Gifts since its inception. Owners Millie & Barry Hilgert are self-proclaimed nerds. Their store reflects their passion for pop culture, nostalgia, local art, and their off-beat sense of humor.

Idaho’s Fandom & Pop Culture Headquarters

Millie is the artist behind the Miss Courageous line of products created in her studio in the rear of the store (think Lego, record vinyl, game tiles, etc). After ten years of vending at the Capital City Public Market and a lifetime of retail experience, the store has been a dream come true. Miss Courageous began as a studio in the basement, then became a studio in a nearly invisible little commercial space on Orchard St. That space eventually housed a tiny pop-inspired gift shop in front. When the store quickly took over, the Hilgerts knew it was time to expand and rebrand. With a move to State Street, Re-POP Gifts was born. Millie now also designs additional products for the store, ensuring you’ll find something you can’t get anywhere else. Barry is the prop guy. Knowing the store would need a dressing room, Millie asked her husband if he could build one that looked like the TARDIS. Not one to do things halfway, Barry insisted on finding the EXACT measurements and built a full-scale prop replica, complete with an interior mural and door handles ordered from the U.K. He also made the Stormtrooper armor that is on display, and on occasion he will make an appearance wearing it. When a room divider was needed to separate the studio space from the store, the Hilgerts were inspired by the hit Netflix series Stranger Things. They’ve created a lounge area replicating the Byers’ living room complete with the lights and alphabet to communicate with Will in the Upside Down. The latest prop replica that is nearing completion: Captain Kirk’s command chair from the original Star Trek series. The store is filled with an eclectic mix of pop culture goodness with an added measure of local Boise/Idaho love. Millie curates a mix of merchandise from over 30 local artists, several regional & national artists (including Justin Hillgrove’s Imps and Monsters), and she complements the handmade with commercial licensed products such as clever socks & bags from Blue Q, kitschy gifts from Archie McPhee, life sized cardboard cutouts of your favorite characters, and much, much more.
