Justina was kneading two loaves at a time, one with each hand, rounding them into shape. She set them onto a flat sheet, picked up her scoring knife, and concentrating fearfully, started carving Chinese ideograms into the top of each loaf. —The hell is that? said Bourke, annoyed that Justina was taking so long. The clock was ticking and the next batch of bread was raising. Bent over her work, Justina puffed hair out of her face with the side of her mouth, and said:

think they’d make cool tatoos? You know, one on each arm? Justina struck a pose, flexing her biceps, then painted the loaves with eggwash and set them to rise.
