ootball is a way of life in the South. When you are a part of a team as a player, FRDFK RU VWDII PHPEHU WKRVH PRQWKV RQ DQG RII RI WKH Ă€HOG WDNH SULRULW\ LQ your everyday life. For fans of the game, your team is your team. I can remember many arguments in high school and college over who should have won last Saturday’s game, why someone’s defense was better than others, and whose coach is the best in the conference. I guess since I did not attend an SEC school during college, I felt a little more of a disconnect from the “mud-slingingâ€? of fans; however, since I grew up being an /68 IDQ WKH Ă€JKW IRU \RXU WHDP LV VRPHWKLQJ ,¡P YHU\ IDPLOLDU ZLWK :KDW , ORYH about the game of football is that, while people may root for different teams, in the end, football brings fans of the sport together whether around a tailgate or in front of a big-screen TV. /LNH , VDLG IRRWEDOO LV D ZD\ RI OLIH LQ WKH 6RXWK DQG LW¡V WKDW WLPH RI \HDU DJDLQ +HUH¡V WR \RXU WHDP WKLV IDOO DV ZH NLFN RII DQRWKHU VHDVRQ along and beyond the Mississippi.

Engagement Party for Guido and Caldwell n Saturday, May 20, 2017, Kari Guido and Charles Caldwell were honored with an engagement celebration at Waverly Plantation, the home of Jeanie and Bazile Lanneau, in Natchez, Mississippi. Pizza for the Win A

ugust already is here and time for the NLGV WR KHDG EDFN WR VFKRRO $URXQG RXU house, it means that football is about to start; and we need to be ready to cheer on our 2OH 0LVV 5HEHOV , XVXDOO\ GR VRPHWKLQJ TXLFN and easy for the game; and this is one of our favorite meals—homemade pizza, salad, dessert, and an appetizer. This time, let’s go all Italian. For the pizza, I PDNH WKH GRXJK HDUOLHU LQ WKH GD\ DQG GR DOO WKH chopping and sautéing at the same time. Then, I

usually put it together so it will be ready to serve at half time or after the game. You don’t want fans eating the pizza during the game because you want them to savor every single bite. :H XVXDOO\ KDYH FRNHV WHD ZDWHU UHG ZLQH RU EHHU LFHG GRZQ DV D TXLFN UHIUHVKHU , KDYH changed up some of the recipes, so be sure to note the changes. No matter which team you are rooting for, this meal will be a sure hit. Some of the recipes are repeats, but they have been requested by readers for a second run.

This Pizza dip is a little different from the ones I have previously shared here. This one is from my daughter-in-law, Stacey; and it was used for her nieces’ and nephews’ birthday parties, beach trips, and Alabama tailgating.

PIZZA DIP 8 ounces cream cheese, softened 1/2 cup sour cream 1 teaspoon Italian seasoning 1/8 teaspoon crushed red pepper 8 ounces pizza sauce 1/2 cup pepperoni, chopped 1/2 cup mozzarella, shredded Corn chips Mix the cream cheese, sour cream, Italian seasoning, and crushed red pepper. Spread the cream cheese mixture in a greased 9-inch dish. Top with pizza sauce. Top with the pepperoni and cheese. Bake at 350 degrees until the cheese melts and is bubbly. Serve with corn chips.

Sue Purvis found this in a Southern Living issue quite a few years ago. It is a quick and easy appetizer recipe to use for tailgating or for viewing an at-home football game.

MUFFULETTA DIP 1 cup Italian salad mix, drained 1 cup salami, diced 1/4 cup parmesan cheese, grated 1/2 cup pepperoncini peppers, chopped 1 2-ounce can black olives, sliced 4 ounces provolone cheese, diced JLSLY` YPI ÄULS` JOVWWLK YLK ILSS WLWWLY ÄULS` JOVWWLK 1 tablespoon olive oil 1/4 cup fresh parsley, chopped French bread :[PY ÄYZ[ UPUL PUNYLKPLU[Z [VNL[OLY *V]LY and chill for 1 to 24 hours before serving. Stir in parsley just before serving. Serve on sliced and toasted French bread.

I got this recipe from my daughters Lari and Jordan. It is perfect by itself, with added grilled shrimp, or as a side salad with pizza. Lari grills an avocado and adds to the salad. Jordan puts all of the grilled vegetables on a platter and lets each guest choose, but Lari mixes it together. They found the recipe on foodnetwork.com; it is one of Bobby Flay’s.

RATOUILLE PANZANELLA SALAD WITH HERB-PARMESAN DRESSING 1 yellow squash, halved lengthwise 1 cup fresh basil leaves, coarsely chopped 1 zucchini, halved lengthwise J\W MYLZO Ă…H[ SLHM WHYZSL` JVHYZLS` JOVWWLK Canola oil for brushing 1/4 cup red wine vinegar 1/2 loaf ciabatta, split in half horizontally JSV]LZ NHYSPJ Ă„ULS` JOVWWLK 12 cherry tomatoes, cored Kosher salt and freshly ground black pepper 2 ounces baby arugula or spinach 1/2 cup olive oil 1/4 cup Parmesan, coarsely shredded 1 Japanese eggplant, halved lengthwise (]VJHKV ^P[O SLTVU VY SPTL Q\PJL VW[PVUHS 1 medium red onion, unpeeled and thickly sliced 1 red bell pepper Heat a charcoal or gas grill to high. Put the basil, parsley, red wine vinegar, garlic, and some salt and pepper in a medium bowl. Whisk in the olive oil. Set aside. Brush the eggplant, onion, pepper, squash, and zucchini with canola oil on all sides and season with salt and pepper. Brush the cut side of the ciabatta with canola and season with salt and pepper. Remove the pepper to a bowl, cover tightly with plastic wrap, and let steam for 10 minutes. Put the tomatoes in a grill basket and grill covered, shaking the basket occasionally until charred and softened, about 5 minutes. Grill the ciabatta, cut-side down, until golden and toasty, about 3 minutes. Flip and grill 1 minute more. Transfer to the cutting board with the ]LNL[HISLZ :LLK HUK JOVW [OL ILSS WLWWLY" YLTV]L [OL WLLSZ HUK JVHYZLS` JOVW [OL YLK VUPVUZ" J\[ [OL a\JJOPUP ZX\HZO LNNWSHU[ HUK bread into 2-inch cubes. Combine the vegetables and bread in a large bowl, season with salt and pepper, and toss with some of the dressing. Mound the salad on a serving platter, top with some of the arugula or spinach, and drizzle with the remaining dressing. Scatter the Parmesan over the top, and serve immediately. For a fresh take on this salad, try grilling avocado. Cut the avocado in half lengthwise and remove seed. Brush the avocado with olive oil and drizzle with lemon or lime juice. Place the avocado face down on grill for about 2 to 3 minutes. Remove from the grill, scoop from skin, slice, and serve on the salad.

I am repeating this recipe because I have had so many requests to do so. I have added some things to the original pizza, and you can add and subtract as you wish. This is Emeril’s pizza dough recipe. We add the oregano or you can leave it out. Either way, the pizza dough if fantastic! SICILIAN DOUBLE-STUFFED PIZZA 8 ounces sun-dried tomatoes, packed in oil 2 to 3 garlic cloves, peeled 2 tablespoons extra-virgin olive oil, plus more for brushing top of pizza and drizzling 1 small eggplant, cut into half-inch cubes 1 double recipe Oregano Pizza Dough (previous page) 2 tablespoons cornmeal 1/3 cup artichoke hearts, quartered 1/2 cup roasted red bell peppers, diced 1/3 cup Kalamata olives, pitted and halved 2 tablespoons capers, drained 2/3 cup grated feta cheese 1/4 cup Italian seasoned breadcrumbs J\W ÄULS` NYH[LK 7HYTLZHU *I add the following: VUPVU ÄULS` ZSPJLK HUK JHYHTLSPaLK 9LK HUK `LSSV^ ILSS WLWWLY ÄULS` ZSPJLK HUK JHYHTLSPaLK 8 ounces mushrooms, sautéed in olive oil Peeled and deveined shrimp, sautéed in olive oil Place sun-dried tomatoes, the olive oil from their jar, and garlic cloves in a food processor or blender. Process on high, slowly drizzling in extra olive oil if needed to form a thick puree. Set aside. Preheat oven to 400 degrees. Toss eggplant with 2 tablespoons of olive oil and place on a baking sheet. Roast in the oven for 20 minutes or until browned and tender. Cool slightly. Place baking stone on lowest oven rack, and increase temperature to 500 degrees. Place one of the oregano pizza dough circles on a baker’s peel or baking sheet sprinkled with 2 tablespoons of cornmeal. Spread about 3/4 cup of the sun-dried tomato pesto on the dough circle, leaving a 3/4-inch border. Place roasted eggplant, artichoke hearts, olives, capers, and feta cheese on top of pesto. *Also place onion, bell pepper, mushrooms, and shrimp if desired. Sprinkle breadcrumbs over vegetables. Moisten the edges of the crust with a bit VM ^H[LY" [OLU [VW ^P[O [OL YLTHPUPUN VYLNHUV WPaaH KV\NO JPYJSL WYLZZPUN [OL LKNLZ [VNL[OLY ÄYTS` *YPTW [OL LKNLZ decoratively if desired. Brush the top crust lightly with olive oil, then sprinkle with the Parmesan cheese. Cut 4 vents in the top of the crust to let the steam escape. Bake until the bottom crust is browned and the top and edges are golden, about 12 to 15 minutes.

Tiramisu is one of my favorite Italian desserts; but unfortunately, it can be time consuming to make. Lari made this recipe for her “Decades Club� supper party, and it was the hit of the meal. It is easy and tastes so good. We found this at the domesticrebel.com.

TIRAMISU POKE CAKE 1 box chocolate cake mix, plus ingredients on back of box 1 tablespoon espresso powder (Lari just \ZLK PUZ[HU[ JVɈLL ) 1 teaspoon ground cinnamon 1 6-ounce carton cafe au lait yogurt (Lari \ZLK JVɈLL `VN\Y[ ) 1 14-ounce can sweetened condensed milk 1/4 cup Kahlua 1 8-ounce container Cool Whip, thawed Cocoa powder and powdered sugar, for dusting Preheat oven to 350 degrees, and liberally grease a 9-inch-by-13-inch baking WHU ^P[O JVVRPUN ZWYH`" ZL[ WHU HZPKL Prepare your cake mix according to package directions. Stir in the espresso powder and the cinnamon to combine. Pour the cake batter into the prepared pan, and bake for 20 to 23 minutes or until a toothpick inserted near the center comes out clean or with moist crumbs. Cool the JHRL JVTWSL[LS` 6UJL JHRL OHZ JVVSLK poke holes in it using the handle of a wooden spoon, careful not to completely penetrate the cake all the way through. In a small bowl, whisk together the yogurt, condensed milk, and Kahlua until blended. Pour the mixture evenly over the top VM [OL JHRL JHYLM\S [V Ă„SS [OL OVSLZ HZ ILZ[ HZ `V\ JHU (SSV^ [OL JHRL [V ZP[ PU [OL MYPKNL MVY HIV\[ TPU\[LZ" [OLU ZWYLHK the Cool Whip on top in an even layer. Refrigerate the cake for about 4 hours or V]LYUPNO[ [V ZL[[SL HUK HSSV^ [OL Ă…H]VYZ to combine and absorb into the cake. Cut into squares and serve. Store leftovers covered in the fridge for about 3 days.

Order of First Families of Mississippi Spring Gathering he Order of First Families of Mississippi hosted its spring luncheon Saturday, June 3, 2017, at The Carriage House in Natchez, Mississippi, with Bertram HayesDavis, the great-great-grandson of Jefferson Davis, as the speaker. Hayes-Davis delivered an informative presentation on Davis’s extraordinary and eventful life. Prior to the luncheon, members enjoyed a morning social at The Towers; and on the preceding evening, a casual, social dinner was held at Rolling River Bistro for members and guests from Natchez and for those who had arrived a day early. In addition to Saturday’s luncheon presentation, the organization elected and installed new officers. Insurance Loopholes? I

UHFHLYHG D FDOO D IHZ ZHHNV DJR IURP D FOLHQW RI PLQH ZKR KDG D UXQ LQ ZLWK KLV LQVXUDQFH FRPSDQ\ DQG DVNHG PH WR ORRN LQWR this issue, which I agreed to do. He owns a large commercial building, which received substantial wind damage to its roof in the spring of 2017. My client and his father had maintained insurance on the building for over forty years with the same insurance company. However, WKH SUREOHP ZDV WKDW ZKHQ KLV IDWKHU Ă€UVW WRRN RXW LQVXUDQFH RQ the building, the whole building was worth only $200,000.00. My client stated that they received a bill every year for the premium, which, of course, went up in price from “time to timeâ€?; but at no time, did anyone from the insurance company tell them that they needed to increase coverage on the building as the building increased in value. When the storm occurred, the entire roof of the building was damaged. A call was made to the insurance company, and an adjuster came out and adjusted the damage. The damage and amount WR UHSDLU WKH HQWLUH URRI RI WKH EXLOGLQJ DPRXQWHG WR according to the insurance company’s adjuster. That is a lot of roof damage! :HOO KHUH LV WKH UHDO NLFN LQ WKH JXW WKH DGMXVWHU DGYLVHG P\ client that the roof, being old, had to be depreciated, which is understandable. The amount of depreciation was approximately $40,000.00 (seems fair); but the adjuster went on to explain that Page 26 { August 2017 { Bluffs & Bayous

under the “co-insuranceâ€? portion of the policy, there was a penalty applied; and this was due to the building’s being ´XQGHU LQVXUHGÂľ E\ QHDUO\ Ă€IW\ SHUFHQW ,Q RWKHU ZRUGV WKH insurance company said that the building was now worth $400,000.00. My client, who had no idea of this, had never increased the building’s coverage (for the updated total value of the building) but rather continued to pay the premium for a building value of $200,000.00. Once the insurance company applied the depreciation and their “penalty,â€? the amount the insurance company would pay was $64,000.00; and the client would have to come up with WKH DGGLWLRQDO RXW RI KLV SRFNHW WR Ă€[ WKH URRI )UDQNO\ , KDG QHYHU KHDUG RI VXFK D SHQDOW\ LQ LQVXUDQFH policies. As my client pointed out, he was never advised by the insurance company that he needed to increase the building coverage. I read the language of the policy, and nowhere does if refHUHQFH DQ\ ´SHQDOW\ Âľ 7KHUH LV KRZHYHU ODQJXDJH WKDW WDONV about a reduction based on the current value of the building. The insurance company’s position is that if you, for example, are paying to insure the building for only one-half its fair marNHW YDOXH WKHQ ZKHQ D FODLP DULVHV WKH LQVXUDQFH FRPSDQ\ LV only going to pay one half of the value of the claim. The bottom line is that under Mississippi law the language RI WKH SROLF\ LV JRLQJ WR FRQWURO WKH PDWWHU , IUDQNO\ WKRXJKW that the language of the policy was very ambiguous. The title “co-insuranceâ€? is misleading to the normal person buying an LQVXUDQFH SROLF\ $IWHU ORRNLQJ LQWR WKLV PRUH FORVHO\ , DGYLVHG P\ FOLHQW WKDW WKH RQO\ ZD\ , NQHZ WR EHDW WKH LQVXUDQFH company on this was to have his building appraised; and if his DSSUDLVDO ZHUH VLJQLĂ€FDQWO\ ORZHU WKHQ , FRXOG QRW JXDUDQWHH a win. My client ultimately chose to accept his losses.

My Take: Insurance policies are very complicated documents. I have seen many lawyers disagree about what certain language in a policy actually means. 0RVW RIWHQ ZKHQ ZH EX\ LQVXUDQFH ZH VLPSO\ SLFN XS WKH SKRQH and tell an agent that we need “coverageâ€? (whatever that means). The agent quotes a price, we pay it, we get a copy of the policy that we don’t really understand, but we feel better being “insured.â€? The SURFHVV RQO\ WDNHV Ă€IWHHQ WR WKLUW\ PLQXWHV \HW ZH DUH WU\LQJ WR SURtect the material value of our lives. I confess that I don’t read insurance policies when I purchase insurance. However, when you buy home, automobile, commercial, or liability coverage, you should VLW GRZQ DQG UHDG DQG Ă DJ HYHU\WKLQJ LQ WKH SROLF\ WKDW \RX GR not understand. Then, go sit down with your insurance agent; and get him or her to tell you exactly what the language means. Then, ZULWH RXW EHVLGH WKH ODQJXDJH ZKDW WKH H[SODQDWLRQ LV DQG NHHS WKDW document. It may save you a lot of money one day. After all, this is what you are paying an agent for; and if your agent can’t explain things to you in a simple understandable way, then you may need to change agents. Lucien C. “Samâ€? Windsor Car, Truck, and Motorcycle Show he second annual Windsor Car, Truck, and Motorcycle Show took place on Saturday, June 10, 2017, in downtown Port Gibson, Mississippi. A total of 53 classic vehicles registered for the show. In attendance was a very special guest, Chris Taggart, who brought two drag-racing cars—White Zombie and Swamp Thing—that have been featured in Street Outlaws New Orleans on the Discovery Channel. hen school starts this August, our little JG will be entering NLQGHUJDUWHQ , MXVW KRSH KLV URRP KDV D ELJ GHVN QH[W WR KLV GHVN VR WKDW &ODLUH DQG , FDQ WDNH WXUQV VLWWLQJ ZLWK KLP Well, not really; but all of us who have gone through sending the little one out into WKH ZLGH ZRUOG NQRZV WKLV IHHOLQJ -* KDV JRQH WR GD\FDUH D FRXSOH RI GD\V D ZHHN since he turned three so that he could have some time to play with children his own DJH 7KLV ZD\ WKH VHSDUDWLRQ DW NLQGHUJDUWHQ WLPH ZRXOGQ¡W EH VR VKRFNLQJ DQG VFDU\ for him or his mama and his Emma. Woodrow started to school in 2013; he rode the Jonesville bus to Temple Academy LQ -HQD DORQJ ZLWK DERXW WKLUW\ RWKHU NLGV IURP -RQHVYLOOH -RULH DQG , WRRN KLP WR WKH EXV VWRS WKDW Ă€UVW PRUQLQJ DQG KDG WR ZDWFK KLP Ă€UVW DSSURDFK WKH EXV DQG WKHQ WXUQ DURXQG WR JR KRPH /XFNLO\ IRU DOO RI XV GDG $DURQ ZDV WKHUH DQG KH SLFNHG WKH OLWWOH JX\ XS DQG WRRN KLP EDFN WR WKH EXV Jorie and I were in a ridiculous state of weeping and couldn’t have been counted on to do anything reasonable. The same thing happened with Holly on KHU Ă€UVW VFKRRO EXV ULGH VKH JRW RQ WKHQ turned around to get off. I was there and Mr. Tumpy King was the bus driver; and between the two of us, we got her to stay. I can still see her little self, her hair in braids, ZHDULQJ D UHG FKHFN VKLUW WXUQLQJ DURXQG for Mama. Of course, I followed the bus WR WRZQ WR PDNH VXUH HYHU\WKLQJ ZDV RND\ then I turned around and came home to wait for the evening bus run. When Jorie DQG &ODLUH VWDUWHG WR VFKRRO , MXVW WRRN them; and they rode to school every morning with my sister, Helen. Bus anxiety avoided for all of us. 0\ Ă€UVW GD\ RI VFKRRO ZDV VR WUDXPDWic that I cried every morning for two years when I had to go to school. Everything was so big, and there were so many people, and some of them were mean and hateful to little children. I couldn’t believe my mama ZRXOG PDNH PH JR WR GHDO ZLWK WKDW QLJKWmare every day. I couldn’t believe that I ZRXOGQ¡W EH DW KRPH WR WDNH FDUH RI P\ OLWtle brothers, Nub and Doug. What would happen to them without me to tell them what to do? Oh, it was misery, I tell you. I wasn’t the only little country child unhappy to be sitting in D FODVVURRP -DFNLH 5HHYHV LV RQH youngster who comes to mind when it came to escaping the FRQĂ€QHV RI WKH VFKRRO -DFNLH¡V mother, Dorothy, was a war bride from England. She had married Jep Reeves at the end of the war and come to America with him. When we started school, she was the mother of four, three daughWHUV DQG -DFNLH %HLQJ (QJOLVK VKH GUHVVHG -DFNLH RULJLQDOO\ DV any little English boy would have GUHVVHG VKLUW WXFNHG LQ VKRUWV ZLWK NQHH VRFNV DQG ORDIHUV :H KDG MXVW EHHQ LQ Ă€UVW JUDGH IRU D IHZ GD\V ZKHQ -DFNLH climbed up to the window sill on D ZLQGRZ DERXW Ă€YH IHHW IURP the ground and jumped to freedom. Naturally, he was retrieved DQG SXW EDFN LQ KLV GHVN VHDW but I’ll never forget him jumping out that window, trying to JHW EDFN KRPH <RX KDYH WR UHDOL]H WKDW -DFNLH and I and many others lived relatively isolated lives as far as crowds were FRQFHUQHG :H ZHUH IDUP NLGV XVHG WR having acres to explore, trees to climb, animals to play with, and only our little brothers and sisters for playmates. Being thrust into a school with hundreds of people was just plain scary to us and certainly not the place we wanted to be. When my brother, Nub, started to school, Mama said I calmed down and quit crying every morning. By then I was in the third grade and becoming slowly acclimated to my lot in life. At home, we ZHUH DOO WUHDWHG NLQGO\ DQG ZLWK ORYH , couldn’t get over how mean some people were and how hateful they would behave to each other. We would have been roundO\ VSDQNHG IRU VRPH RI WKRVH NLGV¡ EHKDYiors if our mama had caught us acting in such a mean way. So, all this is to say that I have great sympathy for the little ones going to school IRU WKH Ă€UVW WLPH ,W LV D PDMRU VWHS LQ WKHLU OLWWOH OLYHV DQG WKH Ă€UVW PDMRU EUHDN IRU

VRPH SDUHQWV WRR ,W DOPRVW DOZD\V ZRUNV RXW ZHOO LQ D ZHHN¡V WLPH 7KH NLGV DGDSW TXLFNO\ DQG WKH SDUHQWV Ă€QG RXW WKDW DQ H[tra bit of free time is rather nice. ,W ZRXOG EH JUDQG LI NLGV QRZ FRXOG VWDUW WKH GD\ ZLWK D SOHGJH WR WKH Ă DJ DQG WKH /RUG¡V 3UD\HU EXW , UHFNRQ WKDW WKRVH two acts have been pushed off the schedule as far as public schools are concerned. 7KDW¡V ZK\ NLGV KDYH SDUHQWV WR WHDFK them these important rituals at home.
