ACCS 41st Beauty Pageant dams County Christian School, in Natchez, Mississippi, held its 41st annual Beauty Pageant on April 29, 2017. The twenty participants, representing girls in grades nine through twelve, were judged by three representatives of the Mississippi Association of Pageant Judges in categories of interview, dress, poise, and overall appearance. Ritz on the River itz on the River was held in Vicksburg, Mississippi, on Thursday, July 13, 2017, celebrating the twentieth anniversary of the Vicksburg Convention Center. This year’s theme was the Roaring Twenties. Guests enjoyed dinner by Palmertree Catering and danced the night away to the sounds of The Downtown Band from Nashville, Tennessee.

BEEF RIBS WITH SORGHUM GLAZE

This recipe came from my granddaughter Ramsey who made this while on a camp-out WKLV VXPPHU DW &DPS RI WKH 5LVLQJ 6RQ 6KH ORYHG LW DQG WKH\ KDYH Ă€[HG LW DW KRPH VLQFH It is appropriately called “Camp Stew.â€?

CAMP STEW 3 slices bacon 5 pounds ground chuck 3 8-ounce cans tomato sauce 3 16-ounce cans sliced potatoes 1 16-ounce can carrots 1 16-ounce can whole kernel corn 1 pound cheddar cheese, grated Salt and pepper to taste (or Tony’s Seasoning) Fritos 1 pinch dirt (optional, of course) Cook bacon in pan. Add ground chuck and brown. Drain grease well. Add tomato sauce, stirring well. Next, add all vegetables. Heat thoroughly. Finally, place cheese on top, allowing it to melt. Serve hot over Fritos.

4 -pound racks of beef ribs—back ribs (center-cut) 1/4 cup sugar 1/4 cup kosher salt 2 tablespoons ground black pepper 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon smoked paprika 1/2 teaspoon ground red pepper 1 cup sorghum syrup 1 cup apple cider vinegar 1 tablespoon coarsely ground black pepper Rinse and pat ribs dry. Remove thin membrane from back of ribs by slicing PU[V P[ HUK W\SSPUN P[ VɈ :[PY [VNL[OLY Z\NHY and next six ingredients. Massage sugar mixture into rib meat, covering all sides. Wrap ribs tightly with plastic wrap, and place in zip-top plastic freezer bags; seal and chill for twelve hours. Bring sorghum and next two ingredients to a boil in a three-quart saucepan over medium-high heat, stirring occasionally; reduce heat to medium, and cook, stirring occasionally, six to seven minutes or until mixture is reduced by half. Cool completely or about 30 minutes. Preheat oven to 275 degrees. Place lightly greased wire racks in two aluminum-foil-lined 15x10� jelly-roll pans. Remove plastic wrap from ribs, and place ribs on wire racks. Cover with aluminum foil to seal. Bake for two hours. Remove foil, and bake three more hours or until meat begins to pull away from bones, basting with sorghum mixture every thirty minutes. Increase oven temperature to 400 degrees, and bake ten more minutes or until ribs are browned.


These beans are delicious. I added more cider than called for and actually cooked it longer. I got this recipe from the October 2012 6RXWKHUQ /LYLQJ that focused on sorghum recipes.

CIDER BEANS 1 tablespoon dry mustard 3 cups dried pinto beans, rinsed and sorted 6 tablespoons sorghum syrup 3 cups fresh apple cider 1 teaspoon salt 8 ounces thinly sliced salt pork Hot water 2 small yellow onions, peeled Place pinto beans in a large bowl. Cover with cold water three inches above beans; cover and let soak for twelve hours. Drain beans, and transfer to a Dutch oven. Add apple cider; bring to a boil over medium heat. Gently boil uncovered, and stir occasionally for thirty minutes. Remove from heat; drain, reserving liquid. Layer four ounces of the thinly sliced salt pork in a two-quart Dutch oven. Spoon beans over salt pork; bury onions in beans. Cook dry mustard, sorghum syrup, and salt over medium heat, stirring often, for three minutes or until mustard and salt dissolve. Pour mixture over beans; top with four more ounces of thinly sliced salt pork. Add reserved bean liquid and, if necessary, hot water to cover. Bake, covered, at 300 degrees for three hours, adding hot water as needed. Bake two more hours or until beans are tender.

This is so good and does well on any sandwich. I found this recipe in the same 6RXWKHUQ /LYLQJ as above.

BACON MARMALADE 1/2 cup chicken broth 1/2 16-ounce package thick hickory-smoked bacon slices, diced 1 bay leaf 1 cup sorghum syrup Kosher salt and cracked pepper to taste 1 1/2 cups cider vinegar Cook bacon in a skillet over medium-high heat, stirring often, about four minutes or until just dark golden brown; drain on paper towels. Wipe skillet clean; return bacon to skillet. Add sorghum; cook, stirring constantly, about one minute. Add vinegar; cook, stirring often, HIV\[ LPNO[ TPU\[LZ VY \U[PS SPX\PK PZ YLK\JLK I` OHSM (KK IYV[O HUK IH` SLHM" JVVR MVY Ă„]L TPU\[LZ VY \U[PS ZSPNO[S` [OPJRLULK (KK ZLHZVUings. Cool for 30 minutes.

No family outing is complete without V¡PRUHV :H GURS PRUH PDUVKPDOORZV LQ WKH Ă€UH WKDQ DFWXDOO\ HQG XS RQ WKH FUDFNer, but the kids have a wonderful time. This requires adult supervision regardless of the age, but the memories are well worth it. This particular recipe came from allrecipes.com.

S’MORES 1 large marshmallow 1 graham cracker 1 1.5-ounce chocolate candy bar Heat the marshmallow over an open ÅHTL \U[PS P[ ILNPUZ [V IYV^U HUK TLS[ Break the graham cracker in half. Sandwich the chocolate between the cracker and the hot marshmallow. Allow the marshmallow to cool a moment before eating.

A ceramicist and painter, she is employed as a multi-media designer at Vanderbilt Medical Center. She is the granddaughter of the late Mr. and Mrs. Charles Swindell, Ms. Cheryl Taylor, and the late Mr. William J. Barrett. A graduate of Cathedral High School in Natchez and Appalachian State University in North Carolina, the groom-to-be is a farmer at Bells Bend Farms in Nashville. He is the grandson of James W. Overton, the late Mrs. Bethany L. Overton, the late Mr. Waldo Lambdin, and the late Mr. and Mrs. Peter Burns, Sr., all of Natchez. Grand Opening for The Aspen n Thursday, July 20, 2017, a ribbon cutting and grand opening reception were held at The Aspen, an assisted-living facility in Brookhaven, Mississippi. Chamber of Commerce representatives there hosted community members, residents, and potential residents with a spread catered by The Aspen’s in-house chef; and members of the staff conducted tours of the area.

Retirement Party for Judge Owens n June 17, 2017, the Honorable Windell Richard Owens was honored with a retirement party at the home of his sister and brother-in-law, Denise and Bill Mounger, in Vicksburg, Mississippi. Judge Owens recently retired as Administrative Law Judge with the Social Security Administration after twenty-one years of service. DAR Coastal Plains District Summer Workshop he Mississippi State Society of Daughters of the American Revolution held the 2017 Coastal Plains District Summer Workshop at the beautiful campus of Southwest Mississippi Community College in Summit, Mississippi. Ramsey Celebrates Ninety-Nine auline (Polly) Ramsey celebrated her ninety-ninth birthday surrounded by friends and family on Wednesday, July 26, 2017, at her home in Natchez, Mississippi. Born in 1919 on the Mississippi Gulf Coast, Ramsey remembers the depression, World War II, and many world events. She taught sixth grade in Jackson and Hancock counties and was married to Dr. B. L. Ramsey of Bay St. Louis. Following Hurricane Katrina, she relocated to Natchez where she had childhood friends. She became very involved with Jefferson Street United Methodist Church and has made “church family friends,” as well. Her birthday party was hosted by her niece and nephew, Dr. Colleen May of Alexandria, Louisiana, and Dr. James May of Shreveport, Louisiana. The birthday cake was decorated to depict highlights of her life: the beach, magnolias, Belhaven Mortar Board, and teacher supplies.

eptember is the opening month of the fall hunting seasons. Dove hunts are the highlight of the month; and the after-hunt gatherings are PXFK DQWLFLSDWHG E\ WKH KXQWers, their families, and guests. <HDUV DJR %XVWHU KRVWHG a dove hunt on Smithland or %OXH &DQH DQG WKH KXQW ZDV IROORZHG E\ D ELJ EDUEHFXH $W WKDW WLPH , ZDV WKH EDFNXS cook who did all the side dishes that went with the meat of WKH GD\ , FRPH IURP D ODUJH IDPLO\ VR FRRNLQJ IRU WKLUW\ people did not daunt me. We DOZD\V KDG SOHQW\ DQG QR RQH ZHQW KRPH KXQJU\ ,W ZDV XVXDOO\ KRW ZHDWKHU VR , VWD\HG LQ WKH VKDGH DV much as possible.
