ince we technically enjoyed the spring season during February, it seems strange to welcome you this month into spring 2017, doesn’t it? However, a little more green around GHÀQLWHO\ KHOSV JHW \RX PRWLYDWHG WR JHW RXW RI WKH KRXVH DQG PRYH around a little bit. 2QFH WKH WHPSHUDWXUH VWDUWHG WR KDQJ RXW SUHWW\ IDLWKIXOO\ DW WKH 65-to-70-degree mark, I decided it was time to start regularly walking the Beagles around the neighborhood. My oldest, Jackie, has QHYHU EHHQ RQH WR JR IRU D ZDON EXW VKH LV SUHWW\ JRRG RQ D OHDVK , MXVW KDYH WR ZDWFK IRU VTXLUUHOV DQG FDWV VKH PD\ WU\ WR EHIULHQG However, my youngest, Jo, is having an interesting time learning how to stay in a straight line and not tangle around my legs. Mandarin Orange Cake

In my very brief tenure in the Home Economics department during my freshman year in college, this was the only thing I learned. Everyone else mastered complicated three-course meals, and I mastered the Dutch Triple Treat cake and kinda/sorta dishwashing. I was allowed to watch but never touch. 5HPHPEHU , ZDV DGYLVHG WR ÀQG DQRWKer major, since they had never seen anyone as inept in the kitchen as I was. Needless to say, this cake recipe is super easy; and kids can make it because it does not require a mixer. Trust me; if I could make it when I was that age, anyone can do this!

DUTCH TRIPLE TREAT 1 box chocolate cake mix 1 box regular chocolate pudding 1 package chocolate chips ½ cup chopped pecans Cook pudding until thick. Add chocolate cake mix and mix well. Pour into a greased loaf pan. (I usually use a 8-inch-by-8-inch or 9-inch-by-9-inch pan and adjust the baking time.) Fold in nuts and sprinkle with chocolate chips. Bake at 350 degrees for 20 minutes.

This was my second venture into cake making. My sister-in-law gave me this recipe, and she was single and as interested LQ FRRNLQJ DV , ZDV DW WKDW WLPH , ÀJXUHG , could certainly tackle this cake and found it was easy. Maybe not quite as easy as the Dutch cake, but it is still easy.

CHOCOLATE RUM CAKE

When we lived in Monroe, Louisiana, back in the dark ages, this was “the cakeâ€? to make. As you can see, as time went on, I became braver and braver. It is a perfect springtime cake for a luncheon, tea, graduation party, bridal party, or just because. If you cannot Ă€QG WKH SLQHDSSOH SXGGLQJ \RX FDQ XVH FRFRQXW RU YDQLOOD LQ LWV SODFH

MANDARIN ORANGE CAKE 1 cup coconut For cake: 1 cup pecans, chopped 1 box Duncan Hines Butter Cake mix 1 package Jell-O Instant Pineapple Pud1/2 cup oil ding 4 eggs 1 large container Cool Whip (not the giant 1 can mandarin oranges, juice included size) For icing: 1 large can crushed pineapple *VTIPUL [OL HIV]L JHRL PUNYLKPLU[Z \U[PS Ă…\Ɉ` HUK WV\Y PU[V NYLHZLK HUK Ă…V\YLK round cake pans. Bake at 350 degrees for 20 to 25 minutes. Let cool. Sprinkle pudding mix over pineapple, add other ingredients, and spread between layers and on top. Refrigerate.

1 box yellow cake mix 4 eggs 1 cup sour cream 1 small package instant chocolate pudding 1 tablespoon vanilla 4 tablespoons rum 1/2 cup Wesson oil 1 cup nuts, chopped 1 cup mini chocolate chips 0U H TP_PUN IV^S TP_ [VNL[OLY [OL Ă„YZ[ seven ingredients. When well blended, fold in the nuts and chocolate chips. Pour into a NYLHZLK HUK Ă…V\YLK )\UK[ JHRL WHU HUK bake at 350 degrees for 45 to 60 minutes.


I have had a lot of people ask me to put this recipe in again. This is my very favorite Italian Cream Cake because it is not dry at all but rather super moist. I found this on www.thecoersfamily.com. This cake would be perfect for Easter lunch.

ITALIAN CREAM CAKE WITH CAKE MIX For cake: 1 box white cake mix 4 eggs 1 1/2 cups heavy cream 1/2 stick butter, melted 1 3 1/2-ounce package instant vanilla pudding mix 1 cup pecans, chopped J\WZ JVJVU\[ ÅHRLK 0 \ZL MYVaLU For frosting: 4 tablespoons butter, softened 8 ounces cream cheese, softened 1 to 2 tablespoons heavy cream 2 1/2 cups powdered sugar J\WZ JVJVU\[ ÅHRLK 1 1/2 to 2 cups pecans to decorate (I added extra to the frosting.) Preheat oven to 350 degrees. Prepare two 9-inch-round cake pans with non-stick cooking spray. (I used Baker’s Joy.) In a large bowl, melt the butter and add cake mix. In a separate bowl, mix together the heavy cream and eggs. Pour eggs and cream into large bowl with cake mix and butter, add vanilla pudding mix, and beat with a hand mixer on medium high for 1 to 2 minutes, until fully blended. Fold in pecans and coconut. Divide batter between the two round cake pans, and bake at 350 degrees for 30 minutes or until done. A fork inserted into the middle should come out clean. Allow cakes to cool and prepare frosting. In a large bowl, blend together butter and cream cheese using a mixer. Add 1/2 cup of powdered sugar and 1 1/2 tablespoons of heavy cream. Mix until smooth. Add remaining powdered sugar, 1/2 cup at a time, blending after each addition until all 2 1/2 cups have been used. Fold in coconut, set aside 1 1/2 to 2 cups chopped pecans to decorate. Prepare cakes to frost. Carefully remove one cake from the pan, invert onto plate, and spread frosting on top. Place a second cake round on top of the frosted bottom layer, right side up this time. Frost the cake. Press small handfuls of pecans into the sides of the cake. Let sit, then enjoy!

My daughter Lari has always loved coconut; and on her birthday, she would want a coconut cake when we had birthday supSHU $OO WKH UHFLSHV , FRXOG ÀQG ZHUH IURP scratch and involved baking the coconut and cracking the coconut and shredding the coconut after peeling the coconut. I remember I got tired of trying to peel the skin off, so I decided just to grate it anyway. Well folks, that doesn’t work because it leaves hard little pieces in your coconut that people CAN taste. Then Susan Narran, a friend who has since moved, gave me this easy coconut cake recipe. Lari was happy; the family was happy; and I was delighted!

COCONUT SOUR CREAM CAKE

We have all made the basic chess squares, but this is a delicious chocolate version that Sue Purvis gave me. She has made this for years, and it has always been a huge success!

GERMAN CHOCOLATE CHESS SQUARES For topping: For squares: 8 ounces cream cheese 1 box German chocolate cake 1 stick butter 1 stick butter (softened) 1 1-pound box powdered sugar 1 egg 2 eggs 1 teaspoon vanilla extract 1 tablespoon vanilla 1 cup pecans, chopped Mix together the above squares ingredients, and press into a 9-inch-by-13-inch pan. For the topping, mix together the above ingredients and pour over the cake mixture. Bake at 350 degrees for 50 to 60 minutes.

For cake: 1 box white cake mix J\W WSHPU Ă…V\Y 1/3 cup powdered sugar [LHZWVVU JVJVU\[ Ă…H]VYPUN 1/3 cup cooking oil For frosting: 1 pint sour cream 1 1/2 cups granulated sugar 2 packages frozen coconut 1 9-ounce Cool Whip Mix cake according to directions on box and add remaining ingredients. Mix well and bake at 350 degrees in greased-andĂ…V\YLK SH`LY WHUZ \U[PS KVUL 3VVR H[ KPrections on the back of the box.). Let cool. (She used 3 pans, but I used two pans and split each cake in half to have 4 layers.) Reserve half of the coconut. Mix remaining coconut, sour cream, and sugar together. Stir until the sugar has dissolved. Reserve 1 1/2 cups of this mixture and spread remainder between cake layers. (I usually put the mixture in the refrigerator [V Ă„YT \W ;OLU 0 \ZLK [OPZ HZ [OL Ă„SSPUN IL[^LLU [OL SH`LYZ Ă„YZ[ [OLU HKKLK JVVS whip to remainder. I wanted to be sure I OHK LUV\NO Ă„SSPUN ILMVYL 0 HKKLK [OL JVVS whip.) You then add cool whip to the 1 1/2 cups of the mixture and any extra you might have (be sure not to make it too runny) Spread on the tops and side of cake HUK ZWYPURSL YLZLY]LK JVJVU\[ VU [VW ;OPZ JHRL ^PSS RLLW PU [OL YLMYPNLYH[VY PUKLĂ„UP[LS` or you can freeze the cake.


This cake has been making the rounds lately and is oh, so good! Kay Jinkins sent me this recipe that was Frances Killian’s. I made it at home, and it was devoured quickly.

FRANCEY’S BEST EVER WINE CAKE For cake: 4 eggs 1/4 cup white sugar 1/4 cup brown sugar 2 teaspoons cinnamon 1 box Duncan Hines yellow cake mix 1 box instant vanilla pudding mix 3/4 cup oil For glaze: 1/2 cup dry white wine 1 cup white sugar 1 stick butter Preheat oven to 350 degrees. Mix the above cake ingredients and pour into a greased Bundt pan. Bake for 2 hours. For the glaze, melt one stick of butter into 1 cup white sugar and dry white wine. Pour V]LY OV[ JHRL *VVS HUK ÅPW V\[ [V ZLY]L You need no topping with this; it is so good just as it is.

Now we have all eaten carrot cake at one time or another; and even for QRQ FDUURW ORYHUV LW LV TXLWH JRRG =XFFKLQL LV RIWHQ XVHG LQ YHU\ WDVW\ EUHDGV RU PXIÀQV 1RZ squash is getting its turn. This recipe came to me from Jackie Passbach who got it her from her aunt, Mary Ruth Maier. The original recipe came from an old 1DWFKH] 'HPRFUDW column The Kitchen Scientist by Tara Hayes. The column focused on different ways to have children eat vegetables. Whether you are an adult or a child, this cake is quite good.

GOLDEN LEMON CAKE Non-stick cooking spray 1 box lemon cake mix 1/3 cup oil 2 eggs 2 cups summer squash, grated and unpeeled 3/4 cup unsweetened crushed pineapple, well-drained 1/2 cup almonds, sliced Preheat oven to 325 degrees. Spray a 9-inch-by-13-inch pan with cooking spray and set aside. In a large mixing bowl, beat together the cake mix, oil, and eggs at low speed for two minutes. Do not over mix. Fold in squash, pineapple, and almonds. thoroughly blending all ingredients. Pour into prepared pan, and bake 45 to 55 minutes. Cake is done when a toothpick inserted in the center comes out clean. Frost with cream-cheese frosting or dust with powdered sugar.

NACHS Christmas Fundraisers n December 10, 2016, at Green Leaves in downtown Natchez, Mississippi, the Natchez Adams County Humane Society hosted two events to help raise money for the local animal shelter and even find homes for some of its residents. In the afternoon, a Christmas Teddy Bear adoption party was held for children to come and enjoy a visit from Santa. Later, a Christmas Taste of Natchez was held for adults to gather and raise money for the shelter. Photography by Bill Williams
