’ve mentioned before that my dad came from a family with a love of the outdoors. I usually had a book in my hand while on the deer stand and looked forward to playing with our family Labradors in between fetching the latest kill. I can remember one particular dove hunt clearly. ACCS hosts A Night of Champions hen Adams County Christian School and Trinity High School held its football jamboree on Thursday, August 13, 2015, six former state champion football coaches were honored for their contributions to high school football in Natchez, Mississippi. Spearheaded by Jim Allgood and Coach David King of Adams County Christian School, families of the six coaches gathered to pay tribute to these champion coaches as they watched them all sign a football that will be on display during the city of Natchez’s Tricentennial celebration in 2016 at the Natchez Convention and Visitors Center. Coaches honored were Coach Ed Reed, South Natchez High School; Coach Bobby Marks, ACCS; Coach David King, Trinity High School and ACCS; Coach Jack Benson, Trinity High School Coach; Josh Loy, Trinity High School; and Coach Ron Rushing, Cathedral High School.

Little Girls’ Weekend A

That’s even more of a concern for families that are no longer LQWDFW 'DGV ZDQW WR JR WR WKH GHHU FDPS RU Ă€VKLQJ OLWWOH JLUOV KDYH VRIWEDOO DQG VZLPPLQJ WKH ER\V DUH ULGLQJ ELNHV DQG 0RP MXVW wants to get them out of the house long enough to get a break. The relationship between fathers and daughters can easily become weak when daughters don’t think that their dads care enough to go off and do something together with them. There is a wonderful ZD\ WR UHVROYH WKDW SUREOHP ,W¡V FDOOHG /LWWOH *LUOV¡ :HHNHQG DW WKH deer camp. )RU D QXPEHU RI \HDUV 5RGQH\ %XUNOH\ DQG *DU\ %ODFNZHOO have set aside a weekend to spend exclusively with their daughWHUV 1R ER\V QR PRPV QR SHWV QR WHOHSKRQHV MXVW OLWWOH JLUOV DQG their daddies. I was invited to come along several years ago with P\ GDXJKWHU DQG ZH KDG D PDUYHORXV WLPH 5RGQH\ DQG *DU\ KDYH D KXQWLQJ FDPS RQ 5RGQH\ /DNH LQ Jefferson County. It is about as remote as any camp I’ve been WR ZLWK PLOHV RI GLUW VDQG RU PXG URDG WR WUDYHUVH WR UHDFK LW )UHTXHQWO\ WKH 0LVVLVVLSSL 5LYHU Ă RRGV WKH URDG RU FDPS \DUG The camp is a three-room building with electricity and well water that is brown and smells awful. There is a bathroom if you want WR VKRZHU EXW IHZ FDQ JHW WKDW GHVSHUDWH $ JURYH RI SHFDQ WUHHV VKDGHV WKH \DUG DQG D ODUJH VSRW FORVH WR WKH KRXVH LV SHUIHFW IRU EXLOGLQJ D Ă€UH WR YLVLW DURXQG RQ EHQFKHV 2XWVLGH WKH FDPS \DUG Page 12 { September 2015 { Bluffs & Bayous

Usually a couple of gooseneck cattle trailers loaded with horses and saddles DUH EURXJKW DORQJ 6HYHUDO GDGV EULQJ DOO WKH Ă€VKLQJ JHDU WKH\ FDQ GUHGJH XS 2QH GDG SLFNV XS DOO WKH KRWGRJV GRQXWV PDUVKPDOORZV VRIW GULQNV DQG RWKHU DEVROXWH QHFHVVLWLHV (YHU\ERG\ EULQJV VOHHSLQJ EDJV DQG UXEEHU ERRWV /DVW RI DOO GDXJKWHUV DQG QLHFHV are piled into the trucks for the ride into the swamp. It usually takes about an hour and a half to de-program girls from civilized behavior and get them acclimated to their surroundLQJV (YHQ WKH PRVW Ă€QLFN\ FKLOG Ă€QGV WKDW LW LV DSSURSULDWH DQG HYHQ H[SHFWHG RI WKHP WR JHW D OLWWOH GLUW\ 7\SLFDOO\ D IRXU ZKHHOHU convoy is a good way to start. Dads and daughters are all loaded up together with the girls driving (or learning to). About ten miles DQG VL[ JDOORQV RI GXVW ODWHU ERQGLQJ EHJLQV WR WDNH SODFH 7KHQ it’s back to the camp for supper.


Supper is usually hotdogs cooked on FORWKHV KDQJHUV DURXQG WKH Ă€UH LQ WKH \DUG (YHU\ERG\ JHWV UHDO JRRG DQG VPRN\ DQG half the marshmallows get dropped in the Ă€UH EXW LW¡V QR ELJ GHDO 2QH RI WKH UXOHV RI *LUOV¡ :HHNHQG LV WKDW QRERG\ JHWV IXVVHG at for being dirty or making a mess. If the JLUOV ZDQW WR WDNH D VWLFN DQG SRNH WKH Ă€UH that’s why they came. Rarely is the admoQLWLRQ ´'RQ¡W GR WKDWÂľ VSRNHQ ,W¡V JRRG WR see daughters voluntarily sit next to dads DURXQG WKH Ă€UH LI WKH\¡UH QHZ WR WKH FDPS and need a little security. 6DWXUGD\ LV IRU KRUVHEDFN ULGLQJ DQG Ă€VKLQJ 2QH \HDU ZKHQ WKH ZHDWKHU ZDV EHORZ IUHH]LQJ 6DWXUGD\ PRUQLQJ IRXQG WKH HQWLUH WURXSH RXWVLGH LQ UXEEHU ERRWV DW VWRPSLQJ RQ IUR]HQ ZDWHU SXGGOHV EUHDNing the ice to see who could get the biggest piece. That was the same year that one of the horses wandered under the porch before daylight and ate the entire supply of donuts that were stockpiled for breakfast. Not to ZRUU\ -XQLRU +DUULV FRRNHG SDQFDNHV IRU DQ hour as dads waited tables for the girls. Some of the littlest girls tend to sleep a little later than others and aren’t so much RQ JRLQJ RXWVLGH LQ WKH FROG VR WKH\ VWD\ LQ the girls’ room and play hide-and-seek unGHU WKH FRYHUV %XW WKH ELJ JLUOV FRPH EDFN in and play big sister to the little ones and encourage them to follow along outside. $IWHU D ZHHNHQG RI FORVH DVVRFLDWLRQ LW¡V interesting to see how many kids refer to GDGV RI RWKHU JLUOV DV ´8QFOH 6R DQG 6R Âľ %XW WKDW¡V ZKDW WKH ZHHNHQG LV DOO DERXW Sunday is more of the girls doing whatever they want to do and getting ready for KHDGLQJ KRPH 2QH \HDU WKH ZHDWKHU ZDV so bad that the horses couldn’t be hauled out for fear of getting the trailers stuck. So the ten-mile ride out was the icing on the cake. (YHU\ERG\ GRXEOHG XS RQ IRXU ZKHHOHUV and horses and headed out. It was a pretty ORQJ KDXO EXW VKDULQJ WKH H[SHULHQFH WRJHWKer was something that the girls remember. $GPLWWHGO\ VSHQGLQJ D ZHHNHQG ZLWK D KRXVHIXO RI JLUOV UDLQ RU VKLQH VPRNH LQ \RXU FORWKHV LQ FRQGLWLRQV WKDW DUH QRW PXFK DERYH SULPLWLYH PD\ QRW EH HYHU\RQH¡V LGHD RI D JRRG WLPH %XW ZKHQ D JLUO becomes a woman and thinks back on times that her daddy took the time and wanted to VSHQG LW ZLWK KHU HVSHFLDOO\ ZKHQ KHU SHVN\ EURWKHU ZDVQ¡W DOORZHG WR FRPH DORQJ *LUOV¡ :HHNHQG ZLOO EH RQH RI WKH PHPRries that she’ll cherish. Spaghetti squash has become my very favorite vegetable since I use it instead of spaghetti. This is perfect for kids. Lari’s kids love it, and WKH\ ÀQLVK RII WKH GLVK LQ RQH PHDO 7KLV UHFLSH FRPHV IURP www.KalynsKitchen.com

LOW-CARB, MOCK SPAGHETTI SQUASH LASAGNA For the spaghetti squash: 1 large spaghetti squash (about 4 pounds) 2 teaspoons olive oil (for brushing squash) 2 teaspoons Italian herb blend (for sprinkling on squash before roasting) For the sauce: 2 teaspoons olive oil

5 links (19.5 ounces) hot turkey Italian sausage 3 cups marinara sauce (If using a jarred sauce, look for the one with the least amount of sugar.) 1 teaspoon dried basil 1 teaspoon Italian herb blend 1 teaspoon garlic powder

Preheat oven to 400 degrees. If desired, microwave the spaghetti squash for about 5 minutes to soften the skin so it’s easier to cut. Cut squash in half lengthwise, and scrape out the seeds. Brush the inside of each half with olive oil and sprinkle with ItalPHU OLYI ISLUK 9VHZ[ [OL ZX\HZO VU H ÅH[ baking sheet about 50 to 60 minutes or until the squash strings apart easily with a fork. While the squash cooks, heat the olive oil in a large non-stick frying pan. Squeeze the turkey sausage out of the casings; brown the sausage; and break it

apart while it cooks. When the sausage is browned, add the 3 cups of sauce, dried basil, Italian herb blend, and garlic powder; and simmer on low until most of the liquid has evaporated (about 30 minutes). Put the cottage cheese into a bowl, add the eggs and Italian herb blend, and mix with a fork until the egg is well mixed into the cottage cheese. Prepare grated Mozzarella and Parmesan. Spray an 8-inch by 11-inch casserole dish with non-stick spray. When the spaghetti squash is done, turn oven heat down to 375 degrees. Separate

For the casserole: 2 cups cottage cheese (regular or low-fat) 2 eggs 1 teaspoon Italian herb blend 2 cups mozzarella cheese, grated (regular or low-fat) 1/2 cup Parmesan cheese, coarsely grated

the squash into strands of “spaghetti.� Discard the skin. In the casserole dish, layer half the spaghetti squash, reduced sauce mixture, cottage cheese mixture, Mozzarella, and Parmesan. Repeat with another layer each of squash, sauce, cottage cheese mixture, Mozzarella, and Parmesan. Bake uncovered until the casserole is bubbling hot and the cheese is melted and lightly browned (about 40 to 45 minutes). Serve hot with additional Parmesan cheese to add at the table if desired.


The next recipe, once again, comes from my daughter Lari, who tested it on her family and found it to be a big hit. It is pretty enough to serve to company and is a different way to use squash. The recipe comes from www.BudgetBytes.com, which has lots of quick, easy, and economical recipes.

SUMMER SQUASH TIAN 1 tablespoon olive oil 1 medium yellow onion 1 teaspoon minced garlic 1 medium zucchini 1 medium yellow squash 1 medium potato 1 medium tomato 1 teaspoon dried thyme Salt and pepper, to taste 1 cup Italian cheese, shredded Preheat the oven to 400 degrees. Finely dice the onion and mince the garlic. SautĂŠ both in a skillet with olive oil until softened HIV\[ Ă„]L TPU\[LZ >OPSL [OL VUPVU HUK garlic are sautĂŠing, thinly slice the rest of the vegetables. Spray the inside of an 8-inch by 8-inch square or round baking dish with nonstick spray. Spread the softened onion and garlic in the bottom of the dish. Place the thinly sliced vegetables in the baking dish vertically in an alternating pattern. Sprinkle generously with salt, pepper, and thyme. Cover the dish with foil and bake for 30 minutes. Remove the foil, top with cheese, and bake for another 15 to 20 minutes or until the cheese is golden brown.

SHRIMP SCAMPI WITH SPAGHETTI SQUASH 1 small red Serrano chili pepper, minced (This is optional.) 1 pound shrimp, peeled and deveined 4 tablespoons olive oil 3 garlic cloves, minced 1 medium spaghetti squash, cook and separated 1 1/2 tablespoons lemon juice 1/4 teaspoon salt 1/4 teaspoon lemon zest 1/8 teaspoon black pepper, or to taste 4 tablespoons fresh parsley, plus extra for garnish In a small bowl combine the garlic, chili, parsley, lemon zest, salt, pepper and 1 tablespoon of olive oil. Pour about half of the parsley mixture over the shrimp and gently toss to coat. Marinate for 10 minutes. In a large skillet, heat two tablespoons of olive oil over medium heat. Add the shrimp along with the marinade and lemon juice to the skillet. Cook the shrimp for three to four minutes or until they have turned pink. Remove the shrimp from the skillet. In the same skillet add the remaining olive oil, remaining parsley mixture, and spaghetti squash pasta; and toss to combine. Cook for about one or two minutes; then add the shrimp and toss to combine. Season to taste. Divide among serving plates and garnish with chopped parsley. Serve warm.

JAMES COLE’S BBQ SHRIMP 4 lemons, sliced 5 pounds shrimp, with shells 1 medium bottle Wishbone’s Italian dressing 4 sticks butter Several dashes Worchester sauce Black pepper to taste (Remember, the seasoning must go through the shell.) Mix all together, pour into a large Pyrex dish, and bake at 350 degrees for half an hour.

GERMAN CHOCOLATE UPSIDE DOWN CAKE 1 cup coconut 1 stick butter 1 cup pecans, chopped 8 ounces cream cheese 1 box German chocolate cake mix 1 pound confectioner’s sugar Mix coconut and pecans, and put in a greased 9-inch by 13-inch pan. Mix cake mix according to package direction. Pour the cake batter over the coconut and pecans. In a saucepan melt the butter and cream cheese. Heat until the mixture is warm enough to stir in the confectioner’s sugar. Spoon over the top of the cake mix. Bake at 350 degrees for 45 to 50 minutes. Cool the cake in the pan on a rack. (Be sure that the cake has cooled before you cut it.) To serve, cut into squares; and use a spatula to remove the cake from the pan. Flip cake onto plate with the coconut and pecan side up. This scenario is most often played out where you see grandparents raising grandchildren without a court order. +RZHYHU 0LVVLVVLSSL FRXUWV UHFRJQL]H another doctrine termed “natural parent SUHVXPSWLRQ Âľ ZKLFK VWDWHV WKDW D ELRORJLcal parent’s rights to custody are superior to that of any third party. :LWK WKLV OHJDO EDFNJURXQG OHW¡V MXPS LQWR WKH IDFWV RI WKH FDVH RI Waites vs. Sanford. A boyfriend (Scott) and his

steady girlfriend (Amy) get pregnant. 8QEHNQRZQVW WR 6FRWW $P\ KDV D RQH night stand with T. J. about the same time she gets pregnant. FROM THE CAMP’S KITCHEN VENISON RAGOUT 3 pounds venison steak, cubed 2 yellow onions, chopped coarsely 3 beef bullion cubes 2 cans cream of golden mushroom soup 2 large cans of mushrooms, drained 1 package Lipton’s onion soup mix Tony Chachere’s Creole seasoning to taste Combine all ingredients in a large crock pot. Cook on medium heat for six hours or until the venison is tender. Best served over smashed potatoes.

SMASHED POTATOES 10 pounds russet potatoes 1 stick butter 1 package grated cheddar cheese 8 ounces sour cream Italian dry seasoning mix Boil all of the russet potatoes until tender. Smash them with a potato ricer along with Italian dry seasoning mix, butter, grated cheddar cheese, and sour cream. Combine all ingredients, and enjoy!

FROM THE CAMP’S KITCHEN T.G.’S CORNBREAD IV_ 1PɈ`»Z JVYUIYLHK TP_ 3/4 can beer of choice 1/3 cup jalapeños, sliced 1/2 package grated cheddar cheese 1/2 package bacon Combine all ingredients and set aside. In a cast iron skillet, cook the bacon until almost done. Do not drain, and add cornbread mix. Bake in a 350-degree, preheated oven for 45 minutes or until golden brown. You can also add grated cheese to top as soon as it comes out of oven.

On the soMRXUQ +XOO FDSWXUHG WKH RXWdoor world around her: fauna OLNH PDFDZV SHDFRFNV DQG EHDUV Ă RUD OLNH WKH ZLOGĂ RZHUV and yucca plants of Texas and WKH DXWXPQ OHDYHV RI 0LFKLJDQ and landscapes of all varieties that emerged on her horizon. Allowing for this travel were newly constructed roads conQHFWLQJ D 1DWLRQDO 3DUN V\Vtem that had expanded under 3UHVLGHQW 7KHRGRUH 5RRVHYHOW an avid outdoorsman. I read all types of poetry but was especially seized by those poets who told us to buck up and get on with life.
