This recipe is from Sissy Eidt who found it in the July issue of 6RXWKHUQ /LYLQJ this year. It is very simple; you just put all the ingredients in the crock pot and let it cook. Pairing it with the Grilled Sweet Potato Salad below, she served it to her grands from England; and they went back for more. I knew my grands would love it because, if I put anything in a tortilla, they will eat it.

BRISKET TACOS 2 uncooked bacon slices, cut into 1-inch pieces 1 medium-size white onion, chopped (about 1 cup) 2 teaspoons kosher salt 1 teaspoon freshly ground black pepper 1 3-to-3½-pound beef brisket, trimmed 1 cup reduced-sodium chicken broth 3 canned chipotle peppers with adobo sauce (3 peppers not cans; I added less.) 3 tablespoons adobo sauce from can 3 garlic cloves, peeled and smashed 1 tablespoon ground cumin 1 tablespoon Worcestershire sauce 1 tablespoon honey 1 teaspoon dried oregano 2 tablespoons apple cider vinegar [V PUJO Ă…V\Y [VY[PSSHZ ^HYTLK Place bacon and onion in a slow cooker. Stir together salt and pepper, and sprinkle over all sides of the brisket. Place brisket in the slow cooker. Process broth and next seven ingredients in a blender for 30 seconds or until smooth; pour mixture over the brisket. Cover and cook on low for seven hours or until brisket is fork-tender. Transfer brisket to a _ PUJO IHRPUN KPZO" JV]LY ^P[O HS\TPU\T MVPS [V RLLW ^HYT 7V\Y ZH\JL [OYV\NO H Ă„UL wire-mesh strainer into a medium saucepan and cook over medium-high heat, stirring occasionally, 15 to 20 minutes or until reduced to 1/3 cup. Stir in vinegar. Coarsely chop the brisket, and spoon over warm tortillas. Drizzle with sauce and Crunchy Slaw (recipe below).

CRUNCHY SLAW 1 cup diced peaches (fresh or frozen) 1/2 cup diced cucumbers 1 jalapeno pepper, seeded and diced 1 garlic clove minced Stir together and refrigerate.

3 tablespoons chopped fresh cilantro 2 tablespoons fresh lime juice 1/2 teaspoon kosher salt

This recipe comes from )DPLO\ &LUFOH in September 2014. It is another easy crock-pot meal. This would be great with the sweet potato salad below, warm potato salad, or just chips.

ROOT BEER PULLED CHICKEN 2 1/2 pounds boneless, skinless chicken thighs 2 teaspoons seasoned salt 1 12-ounce can root beer (not diet) 1 tablespoon vegetable oil 1/2 medium onion, chopped 1 cup ketchup 1/4 cup light brown sugar 1/4 cup molasses 2 tablespoons yellow mustard 2 teaspoons liquid smoke 10 seeded rolls, sliced Coat slow-cooker bowl with nonstick cooking spray. Sprinkle chicken with seasoned salt and place in slow cooker. Pour root beer over the chicken. Cover and cook on high for 6 hours. When the chicken is cooked, heat oil in a medium saucepan over medium-high heat. Add onion and cook for 5 minutes until golden. Stir in ketchup, brown sugar, molasses, mustard, and liquid smoke. Simmer covered for 10 minutes, stirring occasionally. Drain liquid from slow cooker, reserving half of a cup. Discard remainder. Shred chicken; stir in warm sauce, and reserved liquid. On each seeded roll, place half a cup of the chicken mixture and 1/3 of a cup of the Rainbow Slaw.

Then, fold in the slaw, cabbage, and snow peas. Cover and refrigerate until serving.

This recipe is absolutely fabulous and would be wonderful served with either the Root Beer Chicken or the Brisket Tacos. Sissy Eidt brought some to the studio, and we all sat right down and ate it. She found it on Facebook linked to the blog Barefoot and Boundless.

SOUTHWEST GRILLED SWEET POTATO SALAD 4 medium sweet potatoes, peeled and cut into 3/4 inch slices 8 tablespoons olive oil (4 for potatoes and 4 for salad) 1 package frozen corn, rinsed and drained 2 cans black beans, rinsed and drained 3 red peppers, diced 4 green onions, chopped 1/2 cup cilantro 2 avocados (pit and skin removed), chopped Juice of 4 limes 1 teaspoon Mexican seasoning Dashes chipotle powder or cayenne pepper Salt and pepper to taste Preheat your grill. Brush sweet potatoes with olive oil, and add salt and pepper. Grill the potatoes over medium-high heat until they can easily be pierced with a fork (about 6 to 8 minutes each side). In a large bowl, add the corn, black beans, red peppers, green onions, cilantro, and avocados. Once the sweet potatoes are cooked though, cut the slices into 1-inch pieces and add to the bowl. Add the lime juice, Mexican seasoning, Chipotle, olive oil, salt, and peppers. Toss to combine, and add more seasoning if necessary. Eat and enjoy!

CROCK POT CHICKEN, SAUSAGE, AND SHRIMP JAMBALAYA 1 pound chicken breasts or thighs, cut in one-inch pieces 1 pound Andouille chicken sausage or sausage of your choice, sliced 1 to 2 pounds shrimp, peeled and deveined 1/2 large onion, chopped 1 large bell pepper, chopped 3 to 4 cloves fresh garlic, minced 2 stalks celery, sliced 1 quart diced tomatoes (or a 28-ounce can, undrained) 1 cup chicken broth 1/2 cup dry white wine 1 teaspoon oregano, dried [LHZWVVUZ WHYZSL` Ă…HRLZ 1 teaspoon basil, dried 1 teaspoon Cajun seasoning (or less depending on your taste) 1 teaspoon everglades seasoning (or another Cajun seasoning) 1 teaspoon cayenne pepper Salt to taste Cooked rice Layer chicken pieces and sliced sausage in bottom of a sprayed crock pot. Peel and devein shrimp; keep refrigerated until ready to add. Combine onion, pepper, celery, and garlic; layer on top of meat. Combine tomatoes, broth, wine, and seasoning; pour over onion and pepper mixture. Set crock pot on high. Cook for 4 hours. Add shrimp during the last 20 minutes of cooking time. (You can cook on low for 8 hours if you would rather.) Taste test before adding the shrimp, and add additional seasoning if desired. Annual St. Jude Children’s Hospital Benefit n August 26, 2015, the staff of The Castle Restaurant in Natchez, Mississippi, volunteered their time as they served a three-course dinner to guests who came to raise funds for St. Jude Children’s Research Hospital. When Wray Eidt, father of Julia Eidt, shared his family’s story of Julia’s diagnosis and battle with leukemia, Malan Parks, manager for The Castle Restaurant, created this yearly fundraiser to help not only Julia but also other children like her. The event has become a sought-after evening where items are auctioned and a silver tray, engraved with Julia Eidt on the front, is bought and sold each year.
