The Avenue Viera will host Wild About Nature from 10 a.m. to 2 p.m. Saturday, Sept. 16. Families can enjoy a free day of nature-related entertainment. Presented by Recycle Brevard in partnership with the Viera Voice, Wild about Nature will feature a live butterfly exhibit from Judi’s Butterflies, nature and animal exhibits, including ambassador animals from Brevard Zoo and adoptable animals from the Brevard Humane Society, food samplings, face painting, online pet contest, local green vendors, contests and prizes, a raffle for goodies donated by local organizations, live music by Deja, wild hair styling from Melanie’s Salon, Viera, and a live nature painting demonstration by Rockledge artist Eric LaMarr, who specializes in marine paintings and was commissioned to create art for Jimmy Buffett’s Margaritaville collection. Marcia Booth, president of Recycle Brevard, hopes the fun event also will raise awareness of nature’s plight and what the community can do to correct errors from the past. “The goal is to bring information about our natural resources and how people can help the environment on a daily basis,” Booth said.

Counselors enjoy Teen Summer Camp as much as children SPECIAL TO VIERA VOICE

Once school ended, it was fun to sleep in for a couple of days. After that, children around Brevard County were looking for fun things to do. The Teen Summer Camp at the Viera Recreation Center provided direction at times during the summer for as many as 26 campers ranging in age from 12 to 15. The camp counselors had fun as well. “This gives me more experience with what I want to do,’’ said Taylor Streeter, a Viera High graduate

who played football and competed in track and field for the Hawks before moving on to Harding University where he is studying psychology and getting ready for his junior year. “I wanted to work with the little kids. I remember looking back when I was a teen; it was a hard time.’’ Activities varied each day as the counselors utilized two vans to travel to different fun places around Brevard County and sometimes Orlando. We are their summer parents.’’ Gordon praised Streeter’s rapport with the children. “Taylor is friends with the kids, but they respect him.” At the outset, some of the children were shy. “Every summer we have a good time,’’ counselor Reggie Holladay said. “Some of the kids blend in right away and, for some, it takes two weeks to blend in.’’ V V

“Through this event, we want to create a fun environment for families to learn about nature, wildlife and actions that can be taken to conserve our natural resources and protect our animals and the environment.” Booth launched Recycle Brevard in 2011 after learning that only 30 percent of Space Coast residents recycled. The nonprofit aims to educate the community on the “3Rs” of recycling, reducing and reusing. A Climate Reality Leader with the Climate Reality Project and a member of the Space Coast Chapter of the Citizen’s Climate Lobby, Booth was recognized with the Recycling Award from Keep Brevard Beautiful in 2012 and 2014. Additionally, in 2014, Booth received the inaugural Charlie Corbeil Conservation Award at a dinner sponsored by the Viera Voice. Proceeds from Wild About Nature will benefit the Brevard Humane Society, a non-profit, no-kill shelter that finds homes for unwanted pets, as well as the Connect to Help Protect, an educational program series developed by the all-volunteer 3Rs and Beyond to help re-establish connections with nature so individuals can assume the role of protectors of nature. Holy Trinity football has young talent, promising future BY CARL KOTALA

Talk about a youth movement. This year’s Holy Trinity football team could feature as many as 11 freshmen and one eighth grader in the starting lineup this season. The good news for the Tigers, though, is that a lot of that young talent can really play. “It’s promising because these guys have a lot of talent,” Tigers coach Nate Hooks Jr. said. “We’re just in a situation where they have to play immediately as freshmen.” First-team all-state junior linebacker Sullivan Altman and senior defensive back/wide receiver Tyler Forde — who holds a scholarship offer from Kentucky — should provide the young Tigers with the kind of experienced leadership they need to grow. “We definitely have good athletes,” Altman said. “It’s just a matter of getting used to the high school level, which I think we will. They’ve just got to realize it’s a lot faster, a lot more physical.” Of course, one of the biggest storylines for the Tigers this offseason was the departure of running back Jashaun Corbin, who after garnering more than 30 scholarship offers and committing to Florida State, decided to transfer to Rockledge for his senior season. “He developed into one of the best all-purpose backs in the country. He’s a stud,” Hooks said. “It’s a head coach’s job to develop another one.”

The Tigers already might have that guy on campus. Freshman running back KeyShawn Spencer already has scholarship offers from Purdue and Kentucky — and he hasn’t even played a high school game yet. “He’s a freak athlete, insanely fast and strong — especially for his age,” Altman said of Spencer. Altman has also been impressed with the play of freshman linebacker Carlos Estronza. “He’s physical, mean, plays aggressive,” Altman said. With freshmen Rico Frazier and Andre Hutchinas on the end and senior Devin Braddock at the nose tackle, the Tigers will go with a fiveman linebacking crew that includes Spencer, Estronza, Altman, Trey Palmer and Larry Hill. Forde and transfer Lino Odenat will be the cornerbacks with freshman James BlackStrain at safety. Offensively, the quarterback duties will be handled by junior Preston Milo or freshman JaLon Hudgins. Spencer will be at running back with Hill and Estronza also seeing time there. Forde, BlackStrain and possibly Milo — if he’s not at quarterback — will be the top receiving threats. Up front, the Tigers have Frazier and Hutchinas at the tackles, Braddock at center, Altman at one guard spot and either Jared Benhase or Timmy Hill at the other guard position. “(Nearly) everybody on this team is pretty inexperienced,” Altman said. “So once we start playing more games, getting more used to the level of competition, we’ll definitely get a lot better. … If we continue to get better, anything’s possible.” VV

They’ve grown together as football players. They’ve grown together as young men. And now, as the Viera High football team kicks off the 2017 season, 23 seniors will strap on their helmets and make one last run together. “It’s real special because we’ve all been together for so long,” senior linebacker David Eaton said. “We’re a tightknit group. We do everything together. We just went rock climbing. It’s a real close team. We’re like a family.” With that many seniors, and 15 returning starters, the Hawks would certainly seem poised to claim what would be a fourth consecutive district championship and, potentially, another deep run into the playoffs. Led by returning firstteam all-state linebacker Brandon Mays — who recently committed to Army West Point — Viera’s defense should once again be among the best in the county. Second-team all-state pick Miguel Rodriguez anchors a defensive line that includes James Klaas on the other side

Viera volleyball boasts good mix of veterans, youth BY CARL KOTALA

As one of three seniors on this year’s Viera High volleyball team, Ali McLoughlin has been impressed with what she’s seen so far from the Hawks’ younger players.

“Our team is young, but it’s good because our younger players still have good experience,” McLoughlin said. “And then our older group … I’ve been playing here for four years. It’s a good variety. “As Coach (Sarah Wayne) says, you couldn’t form a team

That’s good for Viera volleyball.” McLoughlin, along with libero Emma Redmon and fellow outside hitter Maddie Day — who has committed to play at Caldwell University — will provide the leadership for a Viera team that will also feature four juniors and five sophomores. Tory Kolasky, Shaine Horvath, Taylor Jensen and Desiree Allen make up the junior class while the sophomores include Delaney Lott (who played for the varsity as a freshman), Madi Hintz, Makena Wagner, Isabella Rivera and Chloe Arellano. Although this year’s group doesn’t have the height of past Viera teams, Wayne isn’t worried. Expect the Hawks to speed up their offense and to concentrate on out-digging their opponents. “We’re going to try to play a little faster, we’re going to focus on defense and try to wear teams down,” Wayne said. McLoughlin said keeping an open line of communication on the court will play a big role for Viera as well. “We’re not as tall as we used to be in the past, so getting our conditioning up, having that agility and just

going after it and being loud (communicating well) is really going to be key. “We’ll be unstoppable that way for sure.” In addition to competing for the district title, the Hawks figure to be in the mix in the Cape Coast Conference, which has split into two divisions — north and south. Viera is in the South Division along with Melbourne, Satellite, West Shore, Bayside, Heritage and Eau Gallie. Another big game will come on Oct. 5 when Viera hosts Holy Trinity in the annual Pink Game with proceeds

The Holy Trinity volleyball team has some pretty lofty goals for this season … and it’s easy to see why. With eight players, including six starters, back from a team that went to its second consecutive regional final last season, the Tigers have a chance to make this season a special one. “It’s going to be a fun year,” Holy Trinity coach Peter Klonowski said. “We’re doing some really good things. Offensively, we should be very, very fast. Our defense is getting better. We’ve been working on our blocking. Hopefully, that will pay off.” Returning seniors Emily Vaught, Courtney Noe, Emily Tobkes, Bailey Vickers and Kaytee Castillo lead the talented group along with junior Laura Boos and sophomores Emily Noe and Kayla Burge. The Space Coast United Soccer Club has been honored by the Florida Youth Soccer Association (FYSA) for the fourth year in a row. One player and two coaches from SCUSC received recognition for their excellence and contributions

to the sport at the FYSA Awards Banquet last month. JJ Bryant, a member of SCU’s 1999 Girls Travel team, — and a senior at Viera High — won the FYSA Goal of the Year Award. Allie Goff was named FYSA Girls Recreation Soccer Coach of the Year. Cal Dixon received the FYSA Girls

Competitive Soccer Coach of the Year. Dixon’s U14 girls team won the U.S. Club Soccer’s Florida Cup and finished in the Elite Eight of the FYSA State Cup. According to a a club press release, Dixon’s coaching philosophy stresses “the importance of accountability, responsibility, team unity, discipline, self-confidence, sportsmanship, and a desire to compete fairly.” Goff, who went to Eau Gallie High and played at UCF from 2001 to 2004, has been coaching soccer since her playing career ended. “The way Coach Allie handles and balances her life as a coach, wife, mom, and career woman is not only admirable, but unbelievably impressive,” SCU parent Arlene Bruno was quoted as saying in the release. “Her love for soccer and her love for her team showed. She never missed a single game even though she was pregnant during the season. All the while encouraging, pushing, teaching, leading, and inspiring the girls to not only believe in themselves but also each other; as a true team should.”

Saying hello to new teachers and classmates while bidding goodbye to summer, Brevard students have been filling seats, parking lots and car loops with the excitement of a new year. At Suntree Elementary School, new principal Shari Tressler had been eagerly anticipating the start of school since summer began. “I started after the (last) school year ended, so it's great to have finally have kids in the building!” Tressler said. “The kids and parents were excited. (The first day) went smoothly. It was a great day.” As the Florida sun continued to smother Brevard in a blanket of heat, more than 73,000 students gathered school supplies, boarded school buses and navigated new schedules as they returned to class Aug. 10. Despite extra traffic and long car loops, new schedules and normal first day jitters, there were no major problems for Brevard’s 82 schools on the first day. Small changes as well as some bigger are in store for Brevard schools. “We are projected for 654 students however. We are a little higher than expected,” Tressler said. “And our new theme for this year is Suntree Super Heroes.” Tressler also referred to a more significant change: a new district

discipline policy intended to create more uniformity across the district. The newly implemented policy includes five levels of discipline with specific guidelines, with the goal of aligning each offense to an appropriate consequence. Evaluation of the new discipline policy will continue as the school year unfolds. At Viera High School, the parking lot was filled with cars, buses and golf carts during the first days of school. The guidance office was busy with students as they worked out schedule issues with the seasoned staff. Principal Mike Alba reported in his weekly email that the first week was wonderful. He also encouraged parents to meet their students’ teachers at Viera High’s open house and shared his Viera High mission: support, inspire and motivate. VV

Jennifer Wolfinger has been hired to fill the position of media and content coordinator for the Brevard County School District. The former NASA employee and elementary school teacher has combined both her love for communication with her passion for education into what she terms the ideal post. “I used to do communications for NASA from 2001 to 2008 in a similar position, produced mission products, annual reports and worked multimedia,’’ Wolfinger said. “I worked with small children doing a lot of communication education for NASA, as well as a lot of their communication outreach for STEM.” So, it became an easy leap to the school district with her English degree from the University of Florida to become an elementary school teacher when she returned to work a while ago after leaving NASA to tend to an ill family member. “I have always been passionate in education

With a mother, father and sister who already are doctors, it could be said that choosing a career path in medicine would only come naturally for Viera High senior Nivetha Aravind. That’s what made this summer so special. The 17-year-old spent seven weeks at the University of Florida taking part in the 59th annual Student Science Training Program. The residential research participation program is designed for academically-talented upper-level high school students interested in pursuing a career in the STEM field. “Basically, what I did was I was able to conduct research in a real laboratory under a principal investigator,” Aravind said. “That was a really cool new experience.” Working under the

supervision of Dr. Arun Srivastava in the UF College of Medicine, Aravind worked on a research project titled “Potential Gene Therapy of Human Liver Cancer with Recombinant AAV3 Flp-FRT vectors.’’ “Basically, what we’re trying to do is there is a virus that’s nonpathogenic, meaning it does not cause disease in humans,” Aravind said. “We’re using that virus to deliver therapeutic DNA to liver cancer. That way, just the liver cancer cells are affected and the normal cells are unharmed. “It’s not necessarily new, but for this particular virus and this particular cancer we’re treating, it’s a new way of doing it.” The study specifically targeted a type of liver cancer known as hepatocellular carcinoma. Aravind

said it usually is diagnosed late and patients are given up to a year to live. “I just worked on one part of (the project), which was trying to insert a certain gene sequence into the liver cancer cells,” she said. “For about every one million that we inserted, about 150 got integrated into their genome, which doesn’t necessarily seem like much. But since we were expecting zero, 150 is a lot.” Should the gene therapy ultimately prove to be successful, Aravind said it could have a huge impact on not just cancer, but for any disease caused by a genetic mutation such as Sickle Cell Anemia, Muscular Dystrophy or Huntington’s disease. Aravind, who plans to go to medical school, found the UF Student Science Training Program, and especially the project

she participated in inspiring. “That was an awesome experience, just to know I was a part of that,” she said.

“To know that this could go on to help so many people have a longer life, and a better quality of life was really rewarding.” VV

Viera High adds computer programming course BY CARL KOTALA

With the computer programming job market continuing to grow, Viera High now is offering a class that could help fill that niche. The class, called Foundations for Programming, is being taught by Jeff Dohmen and will teach students how to program using Java. They will program Windows-based applications using Java and they will also do some programs where they are reading and writing to and from files. Students will also get a brain teaser every week that they have to work through to not only test, but help expand their skills.

“It’s for beginners,” Dohmen said. “No prior knowledge of programming is expected. I start from the very beginning and we go … really, rather far into the concept. It’s amazing how far the curriculum is going to go. They’re going to learn a tremendous amount.” The class already is quite popular. Dohmen said he has 28 computers in his classroom and all four classes he teaches are full. And this could be just the beginning. Viera principal Mike Alba wrote in an email that the intention is to provide a three-year progression of classes for students that would include web design applications and the

opportunity to take an AP Computer Sciences Class. Dohmen, who previously taught at Lockmar Elementary School in Palm Bay, has a degree in computer information systems. He said his goal is to help Viera’s students be already equipped with computer programming skills by the time they get to college. “The skill set they will acquire from this one-year class can be transferred into so many fields,” Dohmen said. “It’s just astounding what they can do with it. Reed earns Eagle Scout honor

For his Eagle project, Reed designed, secured the materials and led the construction and installation of eight bat houses in Viera parks to help promote bat population growth and a natural reduction in the mosquito population. He was assisted by 37 other scouts, leaders and friends. During the ceremony, Reed thanked the Viera Company, Viera area homeowners associations, Eric Byrd of Fairway Property Management and the administrators for Viera public spaces for their cooperation during his work on the project. Cobb settles into her role as Holy Trinity's new president BY CARL KOTALA

The first few days of school were a whirlwind, but they were also an indication of something else: Katherine Cobb is feeling right at home. “I’m so happy I made the decision to come here,” said Cobb, Holy Trinity Episcopal Academy’s new president. “There’s a lot to learn. There’s a lot going on here. I’m still learning names and about programs. I’ve been constantly amazed.” Cobb, of course, is no stranger to the Holy Trinity community. Not only did she and her husband, Mark, put two children through the school, she also served three separate stints as a member of the Board of Trustees (1989 to 1993, 2003 to 2009 and 2012 to 2014). But as the first president in the history of the school — which is celebrating its 60th anniversary this year — she is now the face of Holy Trinity. And from the time she began her position last April to the start of the new school year, Cobb has been struck by the devotion of the Holy Trinity staff to creating the perfect educational environment. “What’s impressed me the most is the dedication of the employees,” she said. “They’re all in. They want the best for everybody here. At the end of last year, I was coming in on a couple of Sundays to catch up and get myself organized and there were faculty members here Sunday afternoons, helping students. “That, to me, was very impressive.” Though the Board of Trustees sets the overall strategic plan for the school, two of Cobb’s biggest goals are to improve the school’s athletic facilities and to continue to increase enrollment. Holy Trinity was at 860 students at the start of the school year, an increase of 35 from the year before. “We’d like to expand to where each grade is at full capacity,” she said. “We’re there at some grades, and some other grades have a little bit of room. But for the most part, we’re very thrilled with the enrollment this year. We’re not going to rest until every grade level is full. Cobb would also like to continue some of the programs established by her predecessor, James Landi, who introduced a number of initiatives including bringing

Children’s Advocacy of Brevard joins special walk to fight sexual abuse SPECIAL TO VIERA VOICE

Sen. Lauren Book, who represents District 32 in Florida, takes a special walk each year that is quite personal. This year, she will pass through Brevard County on Thursday, Sept. 14 during her annual 1,500mile Walk in My Shoes journey across the state of Florida. Book, the founder and CEO of Lauren’s Kids, was the victim of childhood sexual abuse for six years by the family’s female nanny. Walk in My Shoes honors the survivors of sexual abuse in its quest to end child sexual abuse and help survivors heal on its trek from Key West to Tallahassee. The Children’s Advocacy of Brevard and the Women’s Center will walk with Book during the Brevard portion of her journey to Tallahassee. Book, a nationally recognized child advocate, has successfully advocated for legislative changes to protect sexually abused children, support their rights as survivors and enforce tougher penalties for offenders.

There is a story behind the new Charlie Graingers Suntree restaurant, and there is another story behind that story. But first, there is the food. Charlie Graingers serves four main dishes: gourmet hot dogs, house-made beef brisket, pulled pork and turkey salad. Slow-cooked throughout the night, the smoked brisket and pulled pork arrive directly from a North Carolina smokehouse. “We do not use fryers or prepare the food with any grease,” co-owner Karey Yarborough said. “This enables us to keep a very clean kitchen and dining area. Yarborough and husband Spencer Yarborough describe the Charlie Graingers menu as an intersection of aristocracy and bohemian. The 19 hot dogs feature chili, onions and cheese toppings. Sides for house sandwiches include baked beans, cole slaw, potato salad and turkey gumbo. The simple menu is enhanced by the restaurant’s soothing atmosphere, with dark wood tables and counters surrounded by brick walls displaying photographs. It all feels very friendly — because it is.

Dr. Frederick Ho has proudly served patients in Brevard for the past 30 years, and he has no plans to stop anytime soon. During his tenure as an ophthalmologist, Ho has provided eye care to thousands of Brevard residents. Is plant-based plastic the answer? Everything works best at a balance. The universe, our planet, the world around us, as well as the world inside us rely on balance to keep functioning well. In a perfect world, that balance would never be disturbed. In the real world, changes occur and sustainable solutions, which take into account people, the economy and the environment, are necessary to avoid. According to Packaging Digest, it is estimated that up to 129 million tons (43 percent) of the plastic used per year is disposed of by landfill or incineration, and approximately 10 to 20 million tons of plastic ends up in the oceans. Despite those numbers, Tom Szaky of TerraCycle writes, “manufacturers and consumers alike are now accustomed to products and packaging made lighter, less costly and more convenient by plastic” so there is resistance in moving away from plastic. To replace or reduce the use of petroleum-based plastic, manufacturers created a plant-based plastic, or bioplastic, that uses biomass such as corn or sugarcane. Given that from

all oil consumed in the U.S. about 10 percent is used to produce plastic, this type of change would help reduce our reliance on fossil fuel. Besides that, this change incorporates the positive aspect of using more natural, non-toxic (BPAfree) ingredients which derive from renewable resources and require less energy to produce, release less greenhouse gases in the process and, under the right conditions, might be biodegradable or compostable. But, it might not be that environmentally friendly. Since it is sourced from plant material, more land will be needed to grow crops and more crops will be needed to satisfy demand. That might result in an increase in deforestation. Most plant-based products also can’t be recycled. Two companies have tried a unique approach.

Bakeys (bakeys.com), an Indian company founded in 2010 by Narayana Peesapaty, supplies edible cutlery and chopsticks made from natural ingredients. Designed out of Peesapaty’s concerns about shortage in water supplies, unsustainable agricultural processes and the growth of single-use plastic discards, the product line follows a from dirt to dirt principal and, if not eaten, it will easily decompose. Saltwater Brewery (saltwaterbrewery.com) created biodegradable, edible six-pack rings. Located in Delray Beach, the company makes rings from a byproduct of the beer-making process that can be chewed off and eaten. The goal is to avoid harming marine life if the rings end up in waterways. Both companies realized that plant-based plastic falls short as a solution to combating the negative impacts that plastic has on the environment but, even though eliminating plastic all together would be best, switching to plant-based plastic still sounds like a good compromise. Red fox thrives in Florida with athleticism, intelligence The red fox belongs to the family Canidae, which includes the domestic dog, coyote and wolf. It prevails in various habitats, including pastures or suburbs. Weighing up to 15 pounds, it is the largest of true foxes. Stunning fur coloration ranges from light to dark orange. Mutations include brown, silver or black — a rare silver variation. Since both the red fox and gray fox display red and gray fur, confusion exists. However, their tails are distinctive. The red fox usually has a whitetipped tail; conveniently, the gray fox exhibits a blacktipped tail. The male fox is called a dog and the female a vixen. A female reaches maturity at 10 months — the male slightly later. In the fall or winter (depending on the region), the male mates with one female or sometimes more. He also might breed outside the family group. The prospective mother might excavate more than one natal den — in case the original is disturbed. A vacated one, such as a gopher tortoise burrow, is sometimes enlarged. A den might measure 20- to 40-feet long and 3- to 4-feet deep with multiple entrances. Occupancy sometimes spans generations. Spring welcomes litters encompassing two to 12 kits (also called pups and cubs) with dark coats. The male does not inhabit the maternity den, but he provides nourishment for his family. Other females and offspring assist with kits. When not breeding, the fox prefers living in the open. The bushy tail, a “brush” and onethird of its length, is commonly wrapped around the nose to stay warm. Still, a den protects against inclement weather. Basically nocturnal and solitary, this omnivore does not hunt in packs. It relies on night vision, hearing and smell. Often apprehended are rabbits and rodents, thus controlling the population. The fox can hear a rodent moving underground or a mouse squeaking 330 feet away. It readily smells garbage and pet food.

For survival, it can jump more than 6 feet and run 30 miles per hour in an effort to escape. Beneficial is barking to announce intruders. Foxes do not chorus howl like wolves or coyotes. To overrule during conflict, the fox may “dance" by standing on hind legs, with forelegs on the opponent’s shoulders, and mouth open — thus the fox trot. The “fox in the henhouse” outrages the farmer. It might frantically kill 30 birds, but keep only one. It also might store some in an underground food cache. Innovative fencing controls this occasional pest. Precaution is crucial with the fox, a vector for rabies. In England, training hunting packs for fox hunting originated in the late 1600s; the fox hunt is now controversial there. In the United States, this sport is often called “fox chasing,” with no intent to kill. Conceivably, the traditional red fox is pursued in its natural setting. If the cunning fox “goes to ground” (hides in a hole), the hounds are withdrawn. However, in some areas, the coyote, a competitor for fox habitats, is fair game. Tally-ho! Actually, the demand for fur has declined through activism. Therefore, the wild fox population is improving. Plus, fur farming is ongoing. In the United States, fur production used to be prevalent. Presently, China is extremely competitive in the market. Though not native to Florida, the red fox has adapted and does not require assistance for survival — a naturalized species. Seven-year-old Alannah Arrieta is determined to help the “Army men.” That’s what she said when asked what she wanted to do with money she could make from selling a picture she painted for a Brevard Schools art program. It all started when her grandmother, Katherine Harris, showed the child’s

picture and what she would do with the money, she wasn’t too surprised by the response. “‘I would like to give it to the Veterans Memorial Center,’ Harris said the child told her. “‘I asked her why and she said, ‘Because grandpa Jack and other Army men fight for us so we should help them.’” Alannah’s 91-year-old great grandfather, John William Harris, is a Navy veteran of World War II, Korea and Vietnam. His portrait hangs in the Brevard Veterans Memorial Center, where his account of WWII was recorded for inclusion in the Library of Congress Veterans History Project. Harris said Alannah is selling raffle tickets for $1 each and will hold a drawing September 9 for the watercolor painting. The money collected will be donated to the Brevard Veterans Memorial Center. Donating to a worthy cause is not new to Alannah. Instead of presents for her sixth birthday, she asked to donate cat and dog food to the Brevard County Humane Society. Alannah’s mother, Christina Arrieta, said her daughter drew the picture with pencil and then painted it in watercolor while she was in kindergarten. Viera hunter John Lisbeth has the perfect recipe to help the environment while helping himself to some seriously tasty meals. When he has the hankering for the lean, mean taste of wild hog, he goes hunting for the invasive creatures on the west side of Lake Okeechobee. “The meat is very tender and tasty,” Lisbeth said. Lisbeth’s hunts help the environment by decreasing the wild hog population. Wild pigs were introduced to Florida in the 1500s when some of the livestock of Spanish explorers escaped and made their way across the state. The creatures, which can reach a weight of 150 pounds and be as long as 6 feet, wreak havoc in all 67 counties in the Sunshine State. Their omnivorous habits leave areas looking like plowed fields. When Lisbeth was stationed by the military out west, he hunted pronghorn antelope and coyote. When he retired to Viera, he decided to give hog hunting a try. Every couple of months, he gets up at 3:30 a.m., gun and cooler in hand, to head to Okeechobee where a dune buggy will take him to the hunting grounds as sunrise approaches. Then, the sitting begins. “You sit there for hours, nice and quiet, because hogs can hear very well,” Lisbeth said. “You sit there and you watch the deer, bobcat and the other wildlife. Just seeing a hog is very hard to do.” Should the hogs not cooperate, Lisbeth’s guide will let loose the hounds that will try to track and corner a hog in the brush for Lisbeth to shoot.

When Viera hog hunter John Lisbeth goes to the west side of Lake Okeechobee to hunt, he takes a custom-made vehicle to the hunting grounds.

“Unless I get a good, clean shot, I won’t shoot,” he said. When everyone in the hunting party has bagged their hog, guides skin and quarter the animals. “I finish butchering it back home,” Lisbeth said. His favorite hog recipe involves onions, spices and the meat slowly cooked in a crock pot for 12 hours. A fullgrown hog will feed Lisbeth for months. Beyond the thrill of the hunt and the chance to spend

Fresh local produce soon will be available at the new farmer’s market at Viera Regional Park. As drivers pass the park between 11 a.m. and 4 p.m. Sept. 15, they can stop by to shop for produce, specialty foods, art work, body products and other items. Opening day at the Viera Park Market will feature tables loaded with delicious cuisine, a smorgasbord of sauces and fresh produce. Everything is produced by local food and handcrafting businesses. “We are very excited for opening day,’’ said Karen Shea, the co-owner of TCS Foods. “The farmer’s market will have lots of organic and nonorganic produce, gourmet olives, hand-crafted items and organic body products. We will also have local honey, baked goods, organic and goat’s

Shea's weekly downtown Melbourne farmer’s market has been popular for the past five years. In addition to the delicious food, pottery, organic dog treats, herbs and plants, 35 vendors will be at the market to discuss their products with customers. The Shea's crock style cheese spreads, produced in Suntree, will be available, as well as herbal teas, gourmet muffins, olives, olive oils and infused vinegars. “We started our business by building a kitchen and producing the cheese and selling it here,” Shea said. “It became popular very quickly. Sharing the kitchen and helping others get rolling evolved due to job losses.” The Sheas operate the successful TCS Foods’ commissary kitchen in Suntree, which serves as a

production facility for more than 25 local companies. The Shea's commissary has housed fledgling businesses for 11 years, aiding with the intricacies of the food business. “We help tenants with packaging, marketing, licensing and adhering to regulations of the food industry,” Shea said. “We are proud that we have been able to help so many local businesses. Some make it, some don’t, but we are there to help them. Our vendors call us mom and dad.” Viera Park Market will be held at 2300 Judge Fran Jamieson Way, which is adjacent to the Viera Regional Park Recreation Center. The TCS kitchen is located at 3280 Suntree Blvd., Suite 105, in the Suntree Business Center. VV
