Celebrate this Summer with quick, easy and delicious recipes in the LifeStyle Report
After such a strange and stressful past year, I intend to celebrate every day of summer this year! Now, I have to admit, I will still be aware of what we have all gone through (I think I have pandemic PTSD), I am not hanging all of my masks up just yet and will keep most everything outdoors but I am ready for family, friends, fun and food. I feel sure many of you feel the same way so I figured I’d share a couple of my Mamaw’s best summertime recipes. She always knew how to make the yummiest foods that could feed an army…here are some of her quick and easy “go-to” crowd pleasers.
No Bake Chocolate Éclair “Cake”

Ingredients: Whipped Topping Vanilla Instant Pudding Graham Crackers Milk Chocolate Frosting Directions: First, mix pudding mix and milk. Fold in whipped topping and stir well to combine. Set aside. Cover the bottom of a 9 x 13 pan with a layer of graham crackers, “Brick-layer” style. Next, spoon half the pudding mixture over the graham crackers and gently spread into an even layer. Top with another layer of graham crackers. Add the remainder of the pudding mixture and spread evenly. Add a 3rd and final layer of graham crackers. Microwave the chocolate frosting for 25 seconds to make it easier to spread. Stir well. Pour chocolate frosting over the top of the cake and spread into an even layer. Cover and refrigerate overnight, or for at least
6 hours. (The longer you give the graham crackers to soften up the better.)
