Jim Long, President – CEO, Genesus Inc. What will be consumer resistance to GMO – GMO Edited Pork? We are struggling already for 25 years with a flat line per capita Pork consumption. Our lack of profitability is affected by our inability to get paid for Pork anything close to Beef. I.E., Beef cut-outs 3 times Pork. In an Iowa State University around 60% of women surveyed said they would be unwilling to eat and purposely avoid gene-edited foods. A red flag in our opinion of not going nd down a path to total demand destruction. If we look at some of the issues and hindrances we believe in the marketplace for GMO – Gene Editing, it is frightening. We already see massive price issues in our industry, how could this type of pork further hurt rt our industry if consumers don’t accept it and purchase it?

gene-edited pigs at Washington State University. The FDA waives some fees for non-profits like universities, but by the time the process was completed, Oatley’s team had spent two years and hundreds of thousands of dollars. • Oatley said the regulatory system makes it nearly impossible to reach commercial scale for production. “It’s not that it’s a totally negative experience, but it’s an experience that tells me that as long as the regulations and regulatory landscape exists as it does now, we will never be able to get geneapplications in a commercial editing ap oduction setting,” Oatley said. produc “It’s just way too expensive, “It and it’s too long and it’s an too cumbersome.” Gene Editing and Taste: • Despite some hesitation about gene-edited foods, taste trumps everything, according to a Washington ac Statte University-led survey of U.S. consumers.

Below are some key points in regard to GMO – Gene Edited food: WSU Gene Edited Pork: • The FDA authorized Washington State University with the first regulatory approval for a group of five gene-edited hogs to be approved for human consumption. The 2-year-old pigs were processed at the WSU Meat Lab. The university highlighted that the pork from the hogs was used to make German-style sausages. • Jon Oatley, a professor in the School of Molecular Biosciences in WSU’s College of Veterinary Medicine led the project on

• “In general, the biggest thing they cared about is taste, the flavor-related attributes,” said Karina Gallardo, a WSU economics professor. GMO - Genetically Engineered Salmon: • Grocery retailers representing a vast majority of the total grocery business in Canada have stated they will not sell GMO Salmon including Walmart, Costco, Loblaw Companies, Sobeys, Metro, etc. Salmon GMO technology is legal but multiple retailers won’t buy. Can we afford to produce GMO – Gene Edited Pork that no one will buy?

Ingredients: Canola oil for frying, 1 tablespoon chopped chives, 1/4 cup minced pickled jalapenos, 1 shallot minced, 1 tablespoon minced garlic, 1/4 cup white wine vinegar, 1 1/2 cups whole-grain mustard, Salt and freshly cracked black pepper, 2 lbs. pork loin cut into chunks, 1 1/2 cups buttermilk, 1 egg, 2 cups all-purpose flour, 2 tablespoons smoked paprika, 1 tablespoon cayenne Preheat a heavy-bottomed pot, with enough canola oil to come halfway up the sides of the pot, to 375 degrees F. In a medium-sized bowl, mix together the chives, jalapenos, shallots, garlic, white wine vinegar, and mustard. Season with salt and pepper, to taste. Set aside. Season the pork with salt and pepper, to taste. In a mediumsized bowl, whisk the buttermilk and egg together. In a large bowl, combine the flour, paprika, cayenne, salt and pepper, to taste. Coat the pork on all sides in the buttermilk. Drain the pork from the buttermilk and add the chunks to the flour. Toss the pork in the flour insuring all of the pork is coated evenly. Shake off excess flour. Working in batches, deep-fry the nuggets until cooked through and crisp, about 3 to 4 minutes. Remove the pork from the fryer to a paper towel lined platter to drain. Transfer the pork to a serving platter and serve with jalapeno mustard.
