for picking up the winter edition of West Shore Life + Style. It’s hard to believe we are in 2020, and yet here we are. It made me wonder what the founders of our West Shore historic pubs would think about them still going strong well over 100 years later. You can read about them in “Explore the West Shore.”

We switched things up a bit in the classic car department and have a great feature on Clive Brown and his unique vintage motorcycles. We also changed up the art section to include music, specifically We3 , a local band that’s been getting West Shore folks up on the dance floor for a few years now.

Dale Collins of Prosperity Planning has a great back story and good advice on financial planning, no matter what your age. There’s our interview with Chef Todd Rozell of Balanced Meal Prep. Todd and his wife create delicious pre-made, nutritionally balanced meals to help busy people eat right for the season.

Mayor Rob Martin of Colwood had a chat with us over coffee, and gave us a peek into his political and personal life. Then there’s West Shore Developer Todd Halaburda of New West Development who gave us a tour of his award winning home build in Bear Mountain.

Finally there’s a delicious winter recipe courtesy of Chef Adam of the Prestige Inn. His West Coast Clam Chowder is perfect way to warm up on a chilly day.

Dale Collins: Helping Others Prosper

ALE COLLINS DECIDED TO BECOME A FINANCIAL PLANNER THE MOMENT SHE HEARD JIM AINSLEY DESCRIBE WHAT HE DID FOR CLIENTS.

“We were working at a credit union together at the time,” Dale said from her West Shore office. “I began taking courses at night and eventually moved over to the financial planning side of the business. After completing my Certified Financial Planning designation in 2005, I decided to start my own practice to ensure I had access to the best products for my clients.”

Dale bought and built her West Shore office space in the summer of 2014. She built the space adjacent to it the following year, securing the opportunity for the continued growth of her practice.

Dale was born in New Brunswick, lived in Calgary, and moved to the Island in 1991. She raised both her daughters on the West Shore. “I love working and living on the West Shore,” she said. “Hiking trails, parks and beaches are abundant. I spend a ton of time at Thetis Lake and Langford Lake walking with friends. East Sooke Regional Park, the Esquimalt Lagoon and the trails around Royal Roads are also some of my favourites.” / W I N T E R 2020 7

Another thing Dale loves about the West Shore are the people.

“Despite its growth, the West Shore still has a friendly small town feel about it. Local businesses really support each other.”

As an advocate for Youth Mental Health, in recent years Dale has been working closely with the Children’s Health Foundation, specifically focusing on the Foundry because of how they support youth in our community.

Another cause that is very close to Dale’s heart is the Heart and Stroke Foundation. “I was recently made aware of the research gap for women’s heart health. Two thirds of all research is done on men. Women are dying unnecessarily and we need to make strides to close the research gap.” Dale also

supports Ovarian Cancer Canada, having lost her sister to ovarian cancer in 2015.

The giving doesn’t stop there. Dale supports the BC Children’s Hospital Foundation, Goldstream Foodbank, West Shore Rotary, Soroptimist International, and many local sports organizations.

Part of Dale’s giving involves a life insurance policy on herself, with Victoria Hospice as the beneficiary. “Most people don’t know they can do this, and the premiums are tax deductible.

You can expand the gift you are giving with the same amount of money.”

When it’s time to unwind, you’ll usually find Dale outside. “I love spending time at Lake Cowichan out on the water paddle / W I N T E R 2020 9

boarding, and in the winter skiing at Mount Washington,” she said.

Dale also has a great sense of humour. “While sponsoring a local dragon boat team, they jokingly asked me to try and waterski behind the boat. I really didn’t think it would work, but I tried it, and actually waterskied behind a dragon boat!”

When it comes to financial planning, Dale has some sound advice for everyone, no matter what their age. “Start planning now, retirement is long! I have many clients living into their nineties.”

She also knows the importance of a good estate plan. “I can make it really easy for my clients to pass their wealth from one generation to the next. Family dynamics are complicated, and giving wishes may not always be equal,” Dale said. “A good estate plan can minimize taxes, and give you piece of mind knowing that your wishes will be followed. Another huge benefit to some pre-planning is the ease. People don’t realize how painful settling an estate can be if things are not set up properly. Usually the executor or executrix is a loved one, and in a lot of cases, the job can take years.”

Dale loves what she does and looks forward to going to work every day. “I love my job because I get to help people. Helping my clients plan for their life’s goals, like buying a home, retiring or leaving a legacy is a very fulfilling part of what I do,” she said.

“And there’s no better place to do that, than here on the West Shore.” WS 10

“I was raised by a single mom,” he said. “She taught my brother and I to make Shake ’N Bake. I liked helping out in the evening because that meant we had more time to spend together.”

When Chef Todd graduated high school, he took a job as a dishwasher to earn some money until he knew what he wanted to be.

“After being in the restaurant environment I realized I wanted to become a Chef. I washed dishes for a year and I’ve now been cooking for 27 years,” he said. “My first job, at Il Terrazzo, where I washed dishes, is also where I got my start in culinary and learned the basics. From there I worked with Troy Ashdown at the My Chosen Café. It’s one of the busiest kitchens I’ve ever been a part of. It was amazing watching him float through the busyness with ease. Nothing could shake him.”

Chef Todd has worked in various establishments throughout his career including: Laurel Point Inn, Parrot House, Cecconi’s, Fifth Street, and Lakeside Resort. “I feel my work experience has given me a well-rounded look at food; what works, and what doesn’t.”

Looking back, he appreciates what he learned from his instructors. “Chef Gilbert Noussitou at Camosun had a very direct and honest approach to cooking and learning. At Okanagan College, Chef Kathryn Nielsen made learning fun. She also challenged us by asking us to set a goal the first day. I set mine and qualified for the Provincial Cook off that year.”

Chef Todd, and his wife, Melissa, a fitness trainer, started Balanced Meal Prep, in 2016. As a nutritionist and a chef, he creates balanced, nutritious meals that are nut and gluten free and without added sodium. “All our products are fresh, not frozen,” Chef said. “We even have plant based protein options.”

Balanced Meal Prep’s menu varies from week to week so customers get the variety the need. “We want to help busy families eat healthy,” Chef said. “We also want to show people what a properly portioned meals look like and help them eat better. Our meals give them the fuel they (and we) need to chase after kids and still be healthy. We also wanted to deal with the amount of food waste people deal with on a monthly and weekly basis.”

Being a chef and creating meals for other families is something Todd looks forward to every day. “I get to create new dishes each day,” he said. “An added bonus is that we get to work around our kids’ schedule.”

One of the ironies of cooking for a living, is that he rarely gets a chance to cook at home. “We are so busy,” Chef said. “When I do have the time, I love to make Potato Crusted Salmon. It was the first meal I cooked for my wife.”

VELYN AND LORNE LOVED LIFE ON BEAR MOUNTAIN. IN 2016 THEY WERE ABLE TO PURCHASE A LOT OFF THE FIFTH TEE. IT HAD PERFECT SUN EXPOSURE AND WAS IN THE NEW CYPRESS DEVELOPMENT. IT WAS A DREAM COME TRUE, ESPECIALLY FOR LORNE, A MEGA GOLF ENTHUSIAST.

The couple then chose Todd Halaburda from New West Development to help them plan and construct their new home. It resulted in New West earning a Gold Care Award for the kitchen and one for the house, in the category of custom home over 2500 sq. feet.

Todd loves the result of the build. “This is more of a Hamptons style home with timeless, inviting qualities,” he said. “The street presence of the home makes it look like it was meant to be there.”

The collaborative efforts of the home owners, New West Development and Creative Spacez resulted in a home filled with comfort and charm. “We wanted a home that was welcoming, warm and cozy,” Evelyn said. “We achieved that by working with Tracey and Carley of Creative Spacez and Todd’s team. I can honestly say we love the entire house.”

Enter through the front door and you immediately see a wall of glass, a rounded transom and sliders that lead out to the patio. The light from the windows, added to the height of the ceiling gives the great room a spacious yet welcoming feel. The 7’ wide fireplace reaches the full 12’ height of the ceiling and is covered with a Travertine Split-face Silver Ash tile. The Rockport Grey walls compliment the Foggy Pine brushed oak engineered flooring and the fir beams above the great room.

Old world charm meets modern convenience in the kitchen where the coffered ceiling creates a feeling of home. The centerpiece of the kitchen is the 4’ x 9’3” island covered in Cambria Coastal quartz. The island also has a 2.5’ x 4.5’ raised bar with a built-in bar/wine fridge. Look closely and / W I N T E R 2020 15

you’ll notice the chiselled edge around the island and the bar.

A six-burner gas stove sits in front of a bank of windows that look out onto Mt. Finlayson. Placing a stove in front of a window is unconventional but the owners loved the look. “Most people don’t want a stove by a window, but I love looking out at Mt. Finlayson while I’m cooking,” Evelyn said.

The dining area, surrounded by windows, naturally draws the eye.

The north facing wall features a 36”round window. An east facing wall of windows overlooks a 10’ high mosscovered rock, left in place as a yard feature when they prepared the site.

A south facing sliding glass door leads out to a 16’ x 16’ fenced patio. Beyond that, down a short pathway through the garden, is a cozy 20’ x 20’ sitting area with gas fire pit.

Back inside, the area next to the great room houses a powder room, an entry to the garage and the multipurpose laundry room. Turn left and you enter a short hallway into the bright master suite. The bedroom features another wall of windows that look out over the garden and the fifth

The staircase leading to the upper floor is like a work of art. A softly lit feature wall using the same Travertine tile as the fireplace forms a backdrop for the engineered oak stair treads. “The stairs are complimented with powdered coated aluminum uprights, stainless steel rails and engineered glass panels,” Todd said. “Every other tread is underlit which provides visual safety and is esthetically pleasing, especially at night,” The upper floor offers a sitting/den area and office as well as two large bedrooms and a full bathroom. The slanted ceilings are reminiscent of farm homes from the early twentieth century.

Todd explained this unique feature. “The ceilings are built into the trusses to provide distinctive slanted angles and vaults within the rooms. By incorporating the ceilings within the trusses it adds to the exterior elevation too. It offers nice angular ceilings inside and keeps the roof heights down and adds to the proportions of the house.”

As some of the first occupants in the new Cypress neighbourhood, they have watched a friendly, warm, community grow and develop. Evelyn summed up the neighbourhood this way. “We all watch out for each other, at the same time being respectful of each other’s privacy: a true gift.”WS

HEY SAY MUSIC IS ONLY AS GOOD AS THE PEOPLE WHO PLAY IT. WESTSHORE’S WE3 ARE PROOF OF THAT. At

a recent gig, people were up and dancing from the first song and barely sat down for the rest of the night. It’s no wonder the band has a steady stream of bookings: people simply love them.

In June of 2017 Steve Lalonde (guitar and vocals), Roger Prive (drums and vocals), and Dave Donovan (bass and vocals) formed We3. It was, in Dave’s words, like magic.

“We feed off one another,” he said. “The gel and the groove was there and we have never looked back.”

All three members have fond memories of growing up with music. Dave played in a band when he was 15. He fell away from music in his younger years and came back to it when he turned 50. Roger played in a high school band, and like Dave, playing music faded from his life. At age 40, he picked up his sticks and started drumming again. Guitar player Steve, wandered into a piano teacher’s home when he was only five. The teacher took him home, and his parents bought him his first six-string guitar. He’s been playing ever since.

All members of We3 love it when they get in the zone.

“There’s no better feeling than when everything feels and sounds good,” Roger said. Steve added, “When you see people in the audience enjoying themselves, there’s a push to play even better.”

“Just do it,” Dave said. “There are no bad bands, just bands that are at different stages in their development.”

When the trio isn’t playing rock ‘n’ roll they are with their families or at work. Dave is a Senior Technical Analyst with the Provincial Government, which is where he first met Steve, who is a Technical Network Consultant. Roger is a store manager at Quality Foods.

Getting people up on the dance floor is easy for We3.

“Ballroom Blitz, is great for getting people up,” Dave said. “It surprises people as you don’t hear it often any more.”

For a three piece band, the group has a well-balanced sound. “We play a lot of B sides,” Dave said. “They aren’t the songs most bands play, but the audience recognizes them and they get up and dance.”

When it comes to making music, the trio have some words of encouragement for fellow musicians.

Roger believes that anyone who enjoys music can be a musician. “It all comes down to practice and more practice. Encourage kids to learn an instrument when they are young, even if they don’t stick with it. They will always have that musical knowledge and could pick it up later in life.”

Steve added: “Learn some basic music theory, then practice, practice, practice. Most of all, have fun.”

OLWOOD’S MAYOR, ROB MARTIN, HAS ALWAYS BEEN INTERESTED IN POLITICS. IN 2011 HE BECAME FRUSTRATED ABOUT “LOCAL SERVICE AREAS” BEING CREATED IN COLWOOD FOR SEWERS.

“I thought the best way to affect change was from within,” Martin said. “I realized the extent of municipal works and the importance of strong policy decisions.

As mayor, I’m one of seven equal voices at the council table, and have the responsibility to share council’s vision to a host of stakeholders within our community.”

Martin and his family moved to Colwood 21 years ago. “It’s a beautiful environment here: the ocean, the beaches, the forest trails,” Martin said.

“We still live in our first home. I love my neighbourhood where we actually know each other’s names. It’s not uncommon to see neighbours gathered and having conversations. We live a 5-10 minute walk from the trails at Royal Roads University and same for the ocean. I love it here.”

Mayor Martin is very proud of Colwood and all it has to offer. “We have great natural assets in Colwood. We have 56 parks, over six km of ocean waterfront,

a federal historical site in Fort Rodd Hill, and a world-class university in Royal Roads. On top of that, there’s our outstanding recreational facility in Westshore Parks and Rec.” “People in Colwood are friendly,” he added. “They look out for each other. I see this every day in my staff who are very helpful and friendly in assisting residents.”

Martin’s first priority as mayor was to demonstrate to the development community that Colwood was a ready and willing partner in growing their community and economy.

“I think this council has done an outstanding job of that in year one,” Martin said. “Going forward we have four strategic priorities: mobility, prosperity, governance and vibrancy.”

Martin volunteers much of his time helping children. “I have a special place in my heart for children, youth and families. I spent over 10 years working for the YMCA and Boys and Girls Clubs of Greater Victoria. I celebrate the energy and enthusiasm of youth,” he said. “I have children from local schools come in for a

field trip to learn about the city. I believe the younger generation should get more involved learning about local politics.”

In the summer you’ll find Martin umpiring at Little League baseball games. “I’ve been umping for about five years. I appreciate the comradery of my long-standing fellow umpire, Jack Showers and watching the kid’s grow.”

Martin also reads to children in libraries and last October shaved off all his hair in support of Tour de Rock, to help raise money for cancer research.

Colwood’s Mayor also serves on several boards including the Board Chair for the Greater Victoria Public Library (GVPL) and is an active member of the Colwood Emergency Preparation Committee.

He was also Board Chair for Westshore Parks & Recreation (WSPR) from 2012 to 2016.

As for the future, Mayor Martin has no plans of going anywhere. “I think years from now my wife and I will still be living in Colwood. We have talked about this and we have every expectation to grow old in Colwood.” WS

RECIPE SEAFOOD CHOWDER

West Coast Seafood Chowder

INGREDIENTS Seafood Chowder 2 medium onions ¾ inch dice 3 medium sized carrots peeled ¾ inch dice 1 head celery ¾ inch dice ½ a leek ¾ inch dice 2 shallots ¾ inch dice 1.5 pounds Yukon Gold potatoes ¾ inch dice 2 cans clams with juice 8 prawns 8 mussels 4 large scallops 1-pound snapper preferably over 1 inch thick, (pinbones removed) 1 cup dry white wine 2 garlic cloves smashed 2 sprigs fresh thyme 2 dried bay leaves

Sauté vegetables in a Tbsp or two of butter (or olive oil) until they are al denté (slightly firm). Deglaze with white wine, stir in heavy cream. Add thyme, garlic and bay leaves. Stir, then simmer for 10 minutes While soup is simmering, create a roux with the rest of the melted butter and Channa flour. Slowly stir roux into the chowder. Garnish with fresh chives!

Once the chowder base is ready to plate, heat a pan with garlic butter. Add in prawns, scallops and fish, mussels and clams as soon as the edges of the butter look like they are about to brown. Deglaze with white wine once all are cooked. Season and arrange the seafood around or on top of the chowder.

1 liter of heavy cream Kosher salt and pepper ¼ lb Melted butter ¼ lb Channa flour (chickpea flour)

Serve with crusty bread or baguette.

with Iron Butt Association certificates, a few earned while riding his classic bikes.

“You must complete a 1,000 mile (1,600 km) in 24 hours ride, fully documented with receipts etc. with a witness to sign the paperwork at the start and end of the ride, before you do any of the extreme rides” Clive explained. “I think I have about 40 certificates, including numerous extreme and theme rides.”

Clive has always loved vintage motorcycles. “When I was six, I found my grandfather’s Rudge in the garage. I was in awe of all the controls. It was so big and huge and screamed adventure. I wondered what my grandfather did on that motorcycle; where he went and what he saw.”

When he was eleven, Clive’s dream of owning a motorcycle came true. “My older cousin gave me a Triumph Tiger Cub that didn’t run. He told me I could have it if I could fix it. We brought it home and pushed it up and down the streets for a month trying to get it started. It finally started when it was my turn to “ride” it. It must have been a fuel issue, as carburetors get gummed up. Once we got it started, my mother told me it had to go!”

At 14, Clive and his family emigrated from England to Alberta. To Clive’s delight he discovered being 14 meant he could get a motorcycle licence. He bought a Honda CB 100, then a 1976 Suzuki GS750.

Clive’s love of classic bikes is entrenched into his life. “While I love super high-tech bikes, the appeal of the classics is that they aren’t high-tech. They have carburetors and points and if something happens to them I can fix them at the side of the road.”

While he has plenty of classic motorcycles to enjoy, there’s still one that he’d like to get. “My most desired motorcycle is a 1937 Rudge. It was prewar so it had a girder front end with a huge headlight. They’re so classic and unique in the way they were constructed and engineered. It had linked brakes which was unheard of until they were subsequently introduced in the Goldwing.”

Three classics Clive is particularly fond of are his: Jawa Perak, Chang Jiang and FZR250 Yamaha.

“The Jawa Perak has the best history,” Clive said. “The prototype was manufactured and 20,0000 km put on it during the Nazi occupation of Czechoslovakia during WWII. They weren’t allowed to work on anything that wasn’t related to the Nazi war effort. The Czechs, right under the noses of the Nazis, engineered this 250 cc dual exhaust port two stroke motorcycle. They got away with it by putting a fake SS licence

plate on the back. When stopped, they told the guards it was a secret SS project. They named the bike Perak, which has two meanings: mythical super hero or a cell of freedom fighters. The motor is a work of art, very art deco to look at. Gearheads see it as a thing of beauty. The bike was introduced in 1948 at the World’s Fair and took the gold medal.”

The Chang Jiang came to Clive partially restored. “These motorcycles are assembled in China from a huge inventory of parts. The Chinese government had set up factories to just have people make things. In many cases they were way overproduced. Once they stopped producing parts, some independents started purchasing them and putting motorcycles together.”

The actual manufactured year of Chang Jiangs are a grey area. “Mine is registered as a 1968 motorcycle, but it could have been put together a few years ago from 1968 parts,” Clive

explained. “The vast majority you will see are a compilation of parts put together by independent companies in China. The Chinese government has now put a stop to their export.”

The name Chang Jiang means long river and is named after the Yangtze River. “Most of them came with sidecars although some can be purchased without,” Clive said. “They have a reputation for being incredibly unreliable. However, I toured northern WA with my wife, fully loaded, and it never broke down. The key is preventative maintenance. You have to play with them. I spend two days checking everything and during the trip I check it again at least once a day.”

Then there’s Clive’s newest classic, the 1988 FZR250 Yamaha.

“This was a Japanese market motorcycle with an EXUP (electronically controlled) exhaust. This one still has that in pristine condition. It redlines at 18,000 RPM. It’s a race bike for the street.” WS

This 150-year-old Tudor style building in View Royal has been open since 1858 and has a dedicated local following. The combination of West Coast cuisine and old English rustic charm make this pub an ideal place for a pint of the Brewery’s own craft beer, or a scotch from their extensive list. While the building underwent repairs due to a fire, the brewery remained open. That means there will be plenty of beer for you for your next visit.

Tucked on the side of the road in Sooke, seventeen miles from Victoria City Hall, is the 17 Mile House Pub. Originally opening as a hotel in 1894, the Pub has acted as a temporary school, a church, and since the 1920s, after the then owner Mrs. Mary Jackson obtained a beer license, a brewpub. Given its extensive history, it should come as no surprise that 17 Mile House is well known for its supernatural occurrences. The most frequent being the hauntings of “Ma” Wilson, who owned the pub from the 1940s until her passing in the 1970s. Visitors can watch out for Ma while drinking a perfect pint of Guinness, as the pub won the Best Guinness Pour in Town, from Guinness itself.

Located six miles away from the heart of Millstream, 6 Mile House opened its doors in 1855 as a hotel. It’s been the heart of the community ever since. As British Columbia’s oldest operating pub, 6 Mile House offers an experience like no other.

The pub does not own a microwave oven, ensuring food is always made fresh to order. They also have their own apiary, and handmake their pasta, breads and sausages. This is a family pub, so well-behaved minors are always welcome.

Another famous “Ma” in the area, is the namesake for Ma Millers Pub, located in Goldstream. Originally opening in 1864 as The Goldstream Hotel (Inn), the pub only got its name in 1923, named after May Greening-Miller, aka Ma. She ambitiously wanted to run the pub during the post-prohibition era, a time where prohibition was still ongoing in other areas of the country. She successfully ran the fully licensed pub with her niece, despite opposition from the community. The original structure was lost in two fires, but the 1930s replacement still stands tucked away in the Goldstream Meadows, near Goldstream Park and Mount Wells.

Next time you’re driving around the West Shore, stop to check out one of these historic pubs. Not only will your thirst be quenched and stomach full, but you can learn about the roots of the area many of us call home. WS / W I N T E R 2020 29
