Elegant Sparkling Strawberries 1 14-ounce can sweetened condensed milk 1 3-ounce package strawberry-flavored gelatin 2 cups sweetened flaked coconut 1½ to 2 cups finely chopped walnuts or pecans 40 blanched slivered almonds 2 to 3 drops green food coloring ½ cup red decorator sugar, for rolling ¼ cup green decorator sugar for rolling 1. In a large mixing bowl, combine the milk and strawberry gelatin, stirring until well blended. Stir in the coconut and chopped nuts, blending well. Cover and refrigerate for 30 minutes to make the mixture easier to handle. 2. Place the almonds in a small plastic bag. Add the green food coloring to the bag. Seal tightly and shake until the almonds are tinted to resemble green stems. Remove the almonds from the bag and place them on paper towels to dry. 3. Pour the red decorator sugar into a small custard cup. Pour the green decorator sugar into another small custard cup. 4. Shape the milk mixture into small balls about 3/4 to 1 inch in diameter. Pinch one end of the ball between the thumb and index finger until it resembles a strawberry. Roll the bottom two-thirds of the strawberry in red decorator sugar. Dip the top end of the strawberry in green decorator sugar. Place a green almond into the green end of the strawberry to resemble a stem. Place on waxed paper. Repeat until all strawberries are shaped. Store in an airtight container in the refrigerator, separating each layer with a sheet of waxed paper. These candies may be refrigerated for up to 1 week or frozen for up to 1 month.
Cook’s note: It is often easier to work with a few strawberries at a time. Dip about 12 shaped strawberries into the red decorator sugar and place them on the waxed paper. When all 12 are coated in red, dip the ends in the green sugar, insert the stems and place them on the waxed paper again. Repeat until all the mixture is used.

Cinnamon Caramel Cheesecake Squares Makes 24 squares 2 2 1 2 ¾ 1 ½
8-ounce packages seamless crescent dough 8-ounce packages cream cheese egg teaspoons vanilla extract cup sugar, divided Flour for dusting tablespoon cinnamon cup caramel topping
1. Preheat oven to 350 F. Unroll one package of crescent dough into a shallow baking pan. Roll out the dough to edges. 2. Heat the cream cheese in a microwave-safe bowl, uncovered, on high for 30 to 40 seconds, or until softened. Whisk until almost smooth. 3. Add the egg, vanilla and ½ cup of the sugar to the bowl. Whisk until smooth. Spread over the crescent dough. 4. Lightly sprinkle the flat side of a cutting board with flour. Unroll the second package of crescent dough and roll it into a 13- by 12-inch rectangle.
5. Fold the dough in half from the short end; gently lift and place in the pan. Unfold and gently stretch the dough over the cream cheese layer; press the edges to seal. Cut off corners of dough hanging over and discard. 6. Bake 22 to 24 minutes, until golden brown. 7. Combine the remaining ¼ cup sugar and cinnamon in a small bowl. Place the caramel topping in a 1-cup measuring cup. 8. Remove the pan from the oven. Immediately pour the caramel topping over the cheesecake and spread to the edges of the crust. Sprinkle with the cinnamon-sugar mixture; let stand for 10 minutes. 9. Using a utility knife, cut into 4 x 6 rows to make 24 squares.

Blueberry Streusel Baby Bundts 2 dozen
A perfect homemade treat for unexpected holiday guests Directions: • Preheat the oven to 375 F with two racks positioned in the
upper and lower thirds of the oven. Lightly coat the baking pans with nonstick cooking spray or vegetable oil from an oil mister, then dust with flour, tapping out the excess.
• In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
• In a separate large bowl, use a mixer to cream the butter and CAKE PORTION 1 2/3 cups flour ¾ teaspoon baking powder ¾ ½ 4 ½ 2 1 1
teaspoon baking soda teaspoon fine sea salt ounces (1 stick) unsalted butter, at room temperature cup granulated sugar large eggs teaspoon vanilla extract cup sour cream

sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Add the vanilla and blend, then add the flour mixture in thirds, alternating with the sour cream.
• To make the streusel, stir together the brown sugar, walnuts and cinnamon. Measure out and set aside 1/3 cup of the mixture. Toss the remaining streusel with the blueberries.
• Divide 1/3 cup reserved streusel mixture among the wells of the Bundt pans (about 1/2 teaspoon each), then use a pastry bag to pipe in thin layers of the batter, alternating with layers of the blueberry mixture, filling each well no more than twothirds full and finishing with a batter layer.
• Bake 15 to 20 minutes, or until the tops of the cakes are
evenly browned and spring back when gently pressed with a finger, rotating the pans halfway through the baking time.
• Cool the cakes in the pans for 10 minutes before turning

Frosty the Snow Man Frosty the snowman was a jolly happy soul, with a corncob pipe and a button nose and two eyes made out of coal. Frosty the snowman is a fairy tale, they say, he was made of snow but the children know how he came to life one day. There must have been some magic in that old silk hat they found. For when they placed it on his head he began to dance around. O, Frosty the snowman was alive as he could be, and the children say he could laugh and play just the same as you and me.

Serves 8 ½ cup dried apricots ½ cup dried cherries ½ cup dried figs 2 pork tenderloins (about 3 pounds total) 1 teaspoon salt 1 teaspoon freshly ground black pepper 1 cup crumbled blue cheese 2 tablespoons extra-virgin olive oil 4 tablespoons butter 1/4 cup honey, preferably sourwood honey 1. Mince the apricots, cherries and figs by hand or in a food processor. 2. Slice the tenderloins lengthwise, almost all the way through. Open them up and lay them flat. Place each tenderloin on a large piece of plastic wrap. Cover with another piece of plastic wrap and pound each piece of meat with a meat tenderizer until it is about 1/2-inch thick. Remove the top piece of plastic. 3. Season the surface of the pork with the salt and pepper. Divide the fruit mixture in half and spread evenly on the

the tied tenderloins, turning as each side is browned. Be careful when searing the open side, as some fruit and cheese might fall out. You are just trying to seal in the meat juices, not trying to cook the pork all the way through. 6. Combine the butter and honey in a microwaveable bowl and microwave on high for about 20 seconds, or until the butter is melted. Drizzle the butter over the tenderloins. 7. Place the tenderloins on a baking sheet. Bake for 15 to 20 minutes, or until the meat reaches an internal temperature of 150 F. Remove the baking sheet and allow the tenderloins to sit for at least 10 minutes before slicing. This will keep the juices in the meat rather than all over your kitchen counter. 8. Snip off and discard the strings. Slice the pork into 1-inch-thick pieces and serve.

Fig and Walnut Fruit Cake
Ingredients: Makes 12 servings Vegetable oil spray 1 pound walnut halves and pieces 1 pound dried figs, stems removed, quartered 3/4 cup all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon fine sea salt 1 cup sugar 3 large eggs, lightly beaten 1 teaspoon vanilla extract 1/2 cup diced candied orange peel 1/4 cup walnut brandy, such as Nocello
Directions: • Preheat the oven to 225 F. Coat the inside of a 9-by-13inch baking pan with the vegetable oil spray; set aside. Toss the walnuts and figs in a large mixing bowl; set aside. • Mix the flour, baking powder, salt, and sugar in a medium bowl. Toss 3 tablespoons of the dry ingredients with the nuts and fruit to coat. • Add the eggs and vanilla to the remaining dry ingredients and mix with a wooden spoon to form a smooth batter. Mix in the candied orange peel. Scrape into the nuts and fruit and toss with a rubber spatula until everything is evenly coated. • Scrape the batter-coated nuts and fruit into the prepared pan, wet your hands with cold water, and pack the nuts and fruit firmly into the pan. • Set in the oven and bake for 8 hours, until the top is golden brown and a skewer inserted into the centre comes out clean. (An instant-read thermometer inserted in the centre of the cake should register 215 to 225 F.) • Remove the pan from the oven and spoon the brandy over the top. Cool on a rack for 30 minutes. Run a knife around the edge to loosen, invert onto a rack, remove the pan, turn right-side up, and cool to room temperature. • Variation: You can “bake” this in a slow cooker; you will need a 1½ quart soufflé dish and a 6-quart or larger slow cooker. Once the batter is in the soufflé dish, put it in the slow cooker and cook on low for 6 hours.

Sweet Corn Crême Brûlée with Blueberries Directions:
Makes 8 servings Ingredients Custard 2 cups fresh corn kernels, scraped from 2 ears of corn 4 tablespoons unsalted butter 3½ cups half-and-half 1/8 teaspoon ground nutmeg 1 teaspoon vanilla extract 8 large egg yolks 3/4 cup sugar Topping 1 cup fresh blueberries 1/4 cup sugar
· Place the corn in a saucepan with the butter; cook for 3 to 5 minutes until corn is softened and fragrant; set aside. · Heat the half-and-half, nutmeg and vanilla in a saucepan until cream is bubbling slightly. Add the cooked corn to the half-and-half mixture and let steep for 15 to 20 minutes. · Place the mixture in a blender or food processor and blend until the corn is slightly pureed but not completely liquified. · Beat the egg yolks and ¾ cup sugar in a mixer until light yellow and thickened. Slowly add the corn mixture to the egg yolks, beating until completely mixed. · Pour into eight 1-cup ramekins, filling each almost full. Place the ramekins in a baking pan. · Pour hot water into the baking pan until it is halfway up the sides of the ramekins. Bake on the middle rack of the oven at 300 F for 35 to 40 minutes, until set. · Cool in refrigerator for 2 to 24 hours, covered lightly with plastic wrap. · When ready to serve, lightly sprinkle the tops of the custard with the remaining sugar. Heat a broiler and brown the tops of the custard for 3 to 4 minutes, just until the sugar melts and is golden. · Top each with 2 tablespoons of blueberries while the sugar is still warm. · Chill again for a few hours, until the sugar hardens.
