Road to Rockin’ River Talent Search offers the chance to open for country music’s biggest stars Picture this: standing onstage in front of a cheering crowd and belting out a couple of hit country songs ahead of your favourite band. Applications for the second annual Road to Rockin’ River Talent Search are now open, giving aspiring BC vocalists the chance to make that dream a reality. The eight-week province-wide singing competition will be hosted at various venues throughout BC until June 30, before finalists go head-tohead on August 3 for the top spot and ultimate prize: opening for The Band Perry and Brett Kissel on August 5 at the Rockin’ River Music Festival in Merritt.

For each qualification night there will be three independent judges, including Becca Hess from Rockin River, Curtis Pope from 107.1 Country FM, and local music fanatic Tom Richardson. The judges will

base their scores on vocal ability, song choice, stage presence and rapport with the audience. This year, the competition is also open to duos and trio vocalist groups.

“Although the audience will not be casting a vote, by cheering loud for their favourite artist, they can definitely influence our judges,” says Paul Esposito Jr., of Finnegan’s Pub Abbotsford.

DIRECTIONS: 1. Mix the ricotta and Parmesan cheeses, fresh basil and lemon zest together, add ½ tsp. salt and and a good dash of pepper.

2. Season the salmon fillets with salt and pepper to taste, lay them down with the skin side up (skin now removed). Top with the ricotta mixture, three spears of asparagus and starting with the wide end, roll them up and place them on a parchment paper lined baking sheet with the seam side down.

3. Bake in a preheated 425F until the salmon is just cooked, about 1014 minutes.

4. Meanwhile, add diced shallot and broth or wine to a shallow saucepan and simmer until all liquid is almost completely reduced, approximately 2 tablespoons or so of liquid left. Take off the heat and add butter cubes, one at a time until melted before adding the next one. If necessary, return pan to lowest heat until butter is all incorporated but swirling in the cold butter will naturally thicken the sauce. Squeeze half a lemon into the sauce, and add salt and pepper to taste.

It’s BC Wild Salmon season and these beautiful rolls stuffed with local asparagus are a delicious treat to serve at a dinner party, yet easy enough to make for a weeknight dinner. Don’t fear the stuffing and rolling, it comes together very easily and a little filling oozing out of the sides only adds to it’s rustic appeal.

INGREDIENTS:

Zest of half a lemon

4 (5 ounce) BC Wild salmon fillets, skins removed (this is a great way to use the tapered tail end)

1/2 pound asparagus, pencil sized spears, trimmed slightly longer than width of fillet (3 per fillet)

Salt and pepper to taste

1 small shallot, finely diced, about ¼ cup

1 ¼ cup ricotta cheese (about 375 gm)

½ cup white wine or chicken broth

1/2 cup freshly grated Parmesan cheese

4 Tbsp. cold butter, cubed

2 tablespoons fresh basil, chopped

Juice of half a lemon

778-240-5951 We have all come across the term “Gluten-free” while grocery shopping or dining out - the occurrence is widespread. So what is gluten and what is all the hype around going gluten-free?

Gluten is an insoluble protein composite consisting of two proteins (glutenin and gliadin) and is found in certain grains particularly wheat, barley, and rye.

It has been well documented for years that a gluten-free diet has been recommended for people with wheat allergy and Celiacs disease (an inherited disease in which gluten consumption may cause inflammation of the lining of the small intestine, leading to gastrointestinal discomfort, nutrient malabsorption and bone loss). New research is showing that a large population of people can now become sensitive to gluten without having Celiacs disease. People with ‘Non Celiac Gluten Sensitivity’ may also experience bloating, digestive disturbances, fatigue, headaches and joint pain after gluten is consumed.

We are all aware of the gastrointestinal side effects after eating gluten. Recent research has now focused on the effects of gluten consumption on the brain.

Partially digested gluten forms proteins (called gliadorphins – also known as gluteomorphins), which react with opium receptors in the brain mimicking the effects of opiate drugs like morphine and heroin. These compounds affect the temporal lobe area of the brain associated with speech and hearing comprehension.
