Frosty the Snowman Frosty the Snowman, was a jolly happy soul, With a corn cob pipe and a button nose, and two eyes made of coal.

Frosty the Snowman, is a fairytale, they say.

He was made of snow, but the children know he came to life one day.

There must have been some magic in that old silk hat they found, For when they placed it on his head, he began to dance around!

Oh, Frosty, the Snowman, was alive as he could be; and the children say he could laugh and play, just the same as you and me.

Thumpety thump, thump, thumpety thump, thump, look at Frosty go.

Pear and Cranberry QUINOA SALAD

INGREDIENTS • 1 cup quinoa • 2 cups water • 1/2 tsp. salt • 1/4 olive oil • Juice of 1 lemon • 1 garlic clove, finely chopped • Salt and pepper, to taste

• 2 pears, unpeeled, cored and thinly sliced • 2 cups spinach, washed • 1 cup fresh cranberries (washed), or frozen (thawed) • 1/2 cup nuts, your choice (pecans, walnuts, etc.)

DIRECTIONS Rinse the quinoa under cold water and drain well. In a frying pan, bring water and salt to a boil. Add the quinoa. Cover and cook over low heat for 13 to 15 minutes, until the quinoa has absorbed the water and is transparent. Let sit, covered, for 5 minutes. Transfer to a large bowl and let cool to room temperature.

In a small bowl, whip oil, lemon juice, garlic, salt and pepper to make the dressing. In a large salad bowl, gently mix the quinoa, pear slices, spinach leaves, cranberries and nuts. Add dressing, stir well and serve.

Asian Pork LETTUCE WRAPS Here is a recipe that is both easy and delicious. It’s a great idea for a casual appetizer to enjoy around a kitchen island. Everything can be prepared ahead of time; you’ll just have to warm up the meat mixture in the microwave before serving.

INGREDIENTS (For 12 rolls) • 12 lettuce leaves (iceberg or Boston) • 450 g ground pork • 1 tsp vegetable oil • 1 finely chopped onion • 2 tsp hoisin sauce • 1 clove garlic, finely chopped • 2 tsp fresh ginger, finely chopped or grated • 1 tsp rice vinegar • 1 tsp soy sauce • 2 green onions, finely chopped • Nuoc mam (Vietnamese fish sauce) as a condiment PREPARATION 1. Wash and dry lettuce leaves, taking care not to tear them, and set aside.

2. In skillet, brown pork in oil for a few minutes. Drain fat and set aside.

3. Return skillet to medium heat; add a little oil and fry onion until translucent but not browned. Return pork to skillet and add hoisin sauce, garlic, ginger, rice vinegar and soy sauce. Mix well and continue cooking for a few minutes. Remove from heat.

4. Place meat in centre of serving plate and surround with whole lettuce leaves. Put green onions in small bowl. Guests can help themselves to lettuce leaves, filling them with a little meat and green onion. Serve with fish sauce.

Lemon Cranberry MUFFINS INGREDIENTS • 2 cups all-purpose flour • 1 cup firmly packed light brown sugar • 1/2 tsp. baking powder • 1/2 tsp. baking soda • 1/4 tsp. salt • 1/4 tsp. allspice • 1/8 tsp. ground cayenne pepper • 1 1/4 cups buttermilk • 1/4 cup butter, melted • 1 egg, yolk and white separated • Zest of 1 lemon • 1 cup fresh cranberries (washed) or frozen (thawed) DIRECTIONS Heat oven to 205 °C (400 °F). Lightly grease a 12-cup muffin pan that’s roughly 6 centimetres (2.5 inches) deep. In a large bowl, combine flour, brown sugar, baking powder, baking soda, salt, allspice and cayenne pepper and mix until evenly blended. In a small bowl, add buttermilk, butter, egg yolk and lemon zest, and beat until mixture is smooth. In a third bowl, whip up the egg white.

Make a well in the centre of the dry ingredients. Pour in the buttermilk mixture and stir with a fork until all ingredients are mixed together. Add egg white and cranberries. Pour the mixture into the muffin pan, filling each cavity 3/4 full. Bake until a skewered tooth pick comes out clean, about 20 minutes. Remove the pan from the oven and let cool for 5 minutes. Using a knife, unstick the sides of the muffins and remove from pan.

Rudolph The Red Nosed Reindeer

Rudolph, the red-nosed reindeer had a very shiny nose.

And if you ever saw him, you would even say it glows.

loved him, as they shouted out with glee, Rudolph the red-nosed reindeer, you’ll go down in history!

All of the other reindeer used to laugh and call him names.

They never let poor Rudolph join in any reindeer games.

Pine Tree Parmesan BREADSTICKS INGREDIENTS: • 30 ml (2 tbsp) olive or vegetable oil • Cornmeal, if desired • 3 or 4 fresh rosemary sprigs • 12 frozen white bread dough rolls (from 1.5 l (48 oz) package), thawed • 15 ml (1 tbsp) grated Parmesan cheese

Let the kids put in the rosemary and sprinkle on the Parmesan – itʼs fun for them and less work for you.

DIRECTIONS: Brush 2 cookie sheets with olive oil; sprinkle with cornmeal. Roll each ball of dough into 23 cm (9 inch) rope. Place ropes about 1.25 cm (1/2 inch) apart on cookie sheets. Brush 30 ml (2 tbsp) oil over dough. Break 36 small clusters of rosemary leaves off rosemary sprigs. Using 3 clusters for each breadstick, insert stem end of each cluster 0.5 cm (1/4 inch) deep into top of breadstick. Sprinkle cheese over dough. Cover loosely with plastic wrap and let rise in warm place about 30 minutes or until almost double. Heat over to 175 °C (350° F). Bake 12 to 15 minutes or until light golden brown.

Egg Nog Fudge INGREDIENTS • 500 ml (2 cups) sugar • 250 ml (1 cup) refrigerated eggnog • 2 Tbsp butter • 2 Tbsp light corn syrup • 50 g (1/4 cup) chopped pecans, toasted • 50 g (1/4 cup) slivered almonds, toasted and chopped • 65 g (1/2 cup) chopped red candied cherries • 1 tsp vanilla extract PREPARATION 1. Line an 8’’x4’’ loaf pan with aluminum foil; butter foil and set aside.

2. Combine first 4 ingredients in a 4-quart heavy saucepan.

Cook over medium heat, stirring constantly, until mixture comes to a boil. Wash down crystals from sides of pan using a pastry brush dipped in hot water. Insert a candy thermometer into eggnog mixture.

3. Cook, stirring occasionally, until thermometer registers 114˚C (238˚F). Remove pan from heat and cool sugar mixture, undisturbed, until temperature drops to 88˚C (190˚F), about 15 to 18 minutes.

4. Stir in pecans and remaining 3 ingredients; beat with a wooden spoon until fudge thickens and just begins to lose its gloss (5 to 8 minutes).

5. Pour candy into prepared pan. Cool completely; cut into squares.

Caesar Salad with a Twist The secret to this recipe is in the presentation: choose a long, narrow serving dish that is close to the same width as the length of the “boats” (about 10 cm). Allow three boats per person for a small appetizer that’s sure to please your guests. Everything can be prepared in advance and assembled just before serving.

INGREDIENTS (For 3-4 people) • 12 romaine lettuce leaves (trim both ends of the head of lettuce to the desired length to enhance the presentation on your serving plate) • 1 slice white bread • 6 slices bacon, cut in half • 1 cup grated Parmesan cheese • 1 cup of your favourite Caesar dressing • A little olive oil PREPARATION 1. Heat oven to 350°F (180°C).

2. Brush both sides of bread with olive oil. Remove all four crust edges. Cut remaining bread into 12 equal sticks.

3. Place bread sticks on non-stick cookie sheet lined with a silicone baking mat or parchment paper and place in oven. After about 10 minutes, or when sticks are golden and crisp, remove from oven and set aside.

4. On same cookie sheet, use spoon to push grated cheese into 12 narrow fingers about 10 cm long. Place in oven and carefully monitor as you cook for about 12 minutes. Carefully remove crispy cheese fingers from pan and set aside.

5. Place slices of bacon on same cookie sheet and bake until crisp, about 15 minutes. Remove from oven and set aside.

6. To serve, pour a little Caesar dressing over each lettuce leaf; add a stick of bread, a slice of bacon and a Parmesan finger.

Pour a few drops of dressing over top. Place boats on serving plate to make an attractive presentation.

This dish tastes best when eaten with your fingers. Enjoy!

And then, in a twinkling, I heard on the roof The prancing and pawing of each little hoof.

As I drew in my head, and was turning around, Down the chimney St. Nicholas came with a bound.

He was dressed all in fur, from his head to his foot, And his clothes were all tarnished with ashes and soot.

A bundle of Toys he had flung on his back, And he looked like a peddler, just opening his pack.

T'was the night before Christmas, When all through the house Not a creature was stirring, not even a mouse.

The stockings were hung by the chimney with care, In hopes that St. Nicholas soon would be there.

The children were nestled all snug in their beds, While visions of sugar-plums danced in their heads.

And mamma in her ‘kerchief, and I in my cap, Had just settled our brains for a long winter’s nap.

When out on the lawn there arose such a clatter, I sprang from the bed to see what was the matter.

Away to the window I flew like a flash, Tore open the shutters and threw up the sash.

The moon on the breast of the new-fallen snow Gave the lustre of mid-day to objects below.

When, what to my wondering eyes should appear, But a miniature sleigh, and eight tinny reindeer.

With a little old driver, so lively and quick, I knew in a moment it must be St Nick.

More rapid than eagles his coursers they came, And he whistled, and shouted, and called them by name!

"Now Dasher! now, Dancer! now, Prancer and Vixen!

On, Comet! On, Cupid! On Donner and Blitzen!

As dry leaves that before the wild hurricane fly, When they meet with an obstacle, mount to the sky.

So up to the house-top the coursers they flew, With the sleigh full of toys, and St. Nicholas too.

His eyes-how they twinkled! His dimples how merry!

His cheeks were like roses, his nose like a cherry!

His droll little mouth was drawn up like a bow, And the beard of his chin was as white as the snow.

The stump of a pipe he held tight in his teeth, And the smoke it encircled his head like a wreath.

He had a broad face and a little round belly, That shook when he laughed, like a bowlful of jelly!

He was chubby and plump, a right jolly old elf, And I laughed when I saw him, in spite of myself!

A wink of his eye and a twist of his head, Soon gave me to know I had nothing to dread.

He spoke not a word, but went straight to his work, And filled all the stockings, then turned with a jerk.

And laying his finger aside of his nose, And giving a nod, up the chimney he rose!

He sprang to his sleigh, to his team gave a whistle, And away they all flew like the down of a thistle.

But I heard him exclaim, ‘ere he drove out of sight, "Happy Christmas to all, and to all a good-night!"
