Get Together Baked Beans Christmas is a time to get together with family and Saanich Peninsula Hospital Foundation board member Shelley Mann, is from a big peninsula family! When all 52 of the Tidmans get together it’s Shelley’s mom’s baked bean dish that is always one of the favourites. Judy’s classic dish, whether with a big ham or just burgers on the barbeque, never has any leftovers! Enjoy the gift of time with your family and long-held traditions this holiday season. From our family to yours, Merry Christmas!
Ingredients:
Method:
1 pound of white navy beans 1/4 pound bacon or salt pork, cut up 1 cup chopped onion 1/2 cup molasses or maple syrup 1/4 cup brown sugar 1 teaspoon dry mustard 1/2 teaspoon salt 1/4 teaspoon pepper
Rinse the beans and soak overnight in a covered pan with 8 cups of water and a pinch of salt. Bring beans to a boil and reduce heat to simmer for 1 hr or until tender, stirring occasionally. Drain beans and reserve the liquid. In the bean pot combine the beans, bacon and onion. Stir in 1 cup of the reserved liquid, molasses or maple syrup, brown sugar, dry mustard, salt and pepper. Bake, covered, in a 300 degree oven for about 2.5 hrs or to desired consistency, stirring occasionally. If necessary add additional reserved bean liquid.
