T 'was the Night Before Christmas T'was the night before Christmas, When all through the house Not a creature was stirring, not even a mouse. The stockings were hung by the chimney with care, In hopes that St. Nicholas soon would be there. The children were nestled all snug in their beds, While visions of sugar-plums danced in their heads. And mamma in her ‘kerchief, and I in my cap, Had just settled our brains for a long winter’s nap. When out on the lawn there arose such a clatter, I sprang from the bed to see what was the matter. Away to the window I flew like a flash, Tore open the shutters and threw up the sash. The moon on the breast of the new-fallen snow Gave the lustre of mid-day to objects below. When, what to my wondering eyes should appear, But a miniature sleigh, and eight tinny reindeer. With a little old driver, so lively and quick, I knew in a moment it must be St Nick. More rapid than eagles his coursers they came, And he whistled, and shouted, and called them by name! "Now Dasher! now, Dancer! now, Prancer and Vixen! On, Comet! On, Cupid! On Donner and Blitzen! To the top of the porch! to the top of the wall! Now dash away! Dash away! Dash away all!" As dry leaves that before the wild hurricane fly, When they meet with an obstacle, mount to the sky. So up to the house-top the coursers they flew, With the sleigh full of toys, and St. Nicholas too.

And then, in a twinkling, I heard on the roof The prancing and pawing of each little hoof. As I drew in my head, and was turning around, Down the chimney St. Nicholas came with a bound. He was dressed all in fur, from his head to his foot, And his clothes were all tarnished with ashes and soot. A bundle of Toys he had flung on his back, And he looked like a peddler, just opening his pack. His eyes-how they twinkled! His dimples how merry! His cheeks were like roses, his nose like a cherry! His droll little mouth was drawn up like a bow, And the beard of his chin was as white as the snow. The stump of a pipe he held tight in his teeth, And the smoke it encircled his head like a wreath. He had a broad face and a little round belly, That shook when he laughed, like a bowlful of jelly! He was chubby and plump, a right jolly old elf, And I laughed when I saw him, in spite of myself! A wink of his eye and a twist of his head, Soon gave me to know I had nothing to dread. He spoke not a word, but went straight to his work, And filled all the stockings, then turned with a jerk. And laying his finger aside of his nose, And giving a nod, up the chimney he rose! He sprang to his sleigh, to his team gave a whistle, And away they all flew like the down of a thistle. But I heard him exclaim, ‘ere he drove out of sight, "Happy Christmas to all, and to all a good-night!"

Silent Night

Away in a Manger

Silent night, Holy night All is calm, all is bright Round yon virgin, mother and child Holy infant, tender and mild Sleep in heavenly peace, Sleep in heavenly peace.

Away in a manger, no crib for a bed, The little Lord Jesus laid down his sweet head. The stars in the bright sky looked down where he lay, The little Lord Jesus asleep on the hay.

Silent night, Holy night Son of God, love's pure light Radiant beams from thy holy face With the dawn of redeeming grace, Jesus, Lord at thy birth Jesus, Lord at thy birth.

The cattle are lowing, the poor Baby awakes, But little Lord Jesus no crying he makes. I love Thee, Lord Jesus, look down from the sky, And stay by my cradle till morning is nigh.

I'll Be Home for Christmas

Silent night, Holy night Shepherds quake, at the sight I'll be home for Christmas Glories stream from heaven above You can count on me Heavenly, hosts sing Hallelujah. Please have snow and mistletoe Christ the Savior is born, And presents on the tree Christ the Savior is born.

Be near me, Lord Jesus, I ask Thee to stay Close by me forever and love me I pray. Bless all the dear children in thy tender care, And take us to heaven to live with thee there.

Christmas Eve will find me Where the love light gleams I'll be home for Christmas If only in my dreams.

Sautéed Brussel Sprouts with Bacon & Pine Nuts Brussels sprouts are not everyones favourites because overcooking can give mixed results and a slightly bitter taste. However, this tasty and easy recipe is sure to please all your guests. The secret is in the blanching, which helps to preserve the beautiful bright green colour of the sprouts.

Turkey Rice Salad INGREDIENTS • 1 1/4 cups brown rice • 2/3 cup wild rice • 2 red dessert apples, quartered, cored, and chopped • 2 celery sticks, coarsely sliced • 115 g seedless grapes • 3 Tbsp lemon or orange juice • 2/3 cup thick mayonnaise • 12 oz cooked turkey, chopped • salt and freshly ground black pepper • lettuce leaves, to serve PREPARATION

INGREDIENTS • 2 pounds (about 1 kg) Brussels sprouts (at room temperature) • 6 slices bacon • 1/2 cup pine nuts (crushed walnuts also work well) • 1 onion, thinly sliced • 1 clove garlic, finely chopped • Salt and pepper PREPARATION 1. Trim Brussel sprouts and slice them very thinly. Using a mandolin will give uniform thickness. 2. In a large pot, bring salted water to a full boil. Add Brussels sprouts and carefully monitor the cooking, which should only take 2-3 minutes. The goal is for sprouts to be cooked but still crisp and bright green. 3. Immediately transfer sprouts to a bowl of ice water to stop the cooking process. Drain and spread sprouts on a cloth to remove excess water. These steps can be done before your guests arrive. 4. In large frying pan, cook bacon slowly until crisp. Remove and crumble. 5. In same pan, sauté onion in bacon fat over medium-low heat for a few minutes until translucent, about 5 minutes. Add garlic and walnuts and cook for 2 minutes. Be careful not to burn garlic. Add sprouts and crumbled bacon to frying pan. Salt and pepper to taste. Mix well to heat evenly and serve immediately.

1. Cook the brown and wild rice in boiling salted water for 25 minutes or until tender. Rinse under cold running water and drain. 2. Turn the well-drained rice into a large bowl and add the apples, celery, and grapes. Beat the lemon or orange juice into the mayonnaise, season with salt and pepper, and pour over the rice. 3. Add the turkey and mix well to coat with the lemon or orange mayonnaise. 4. Arrange fresh lettuce leaves over the base and around the sides of a warmed serving dish and spoon the rice on top. Rudolph The Red Nosed Reindeer Rudolph, the red-nosed reindeer had a very shiny nose. And if you ever saw him, you would even say it glows.

Then all the reindeer loved him, as they shouted out with glee, Rudolph the red-nosed reindeer, you’ll go down in history!

All of the other reindeer used to laugh and call him names. They never let poor Rudolph join in any reindeer games. Then one foggy Christmas Eve Santa came to say: “Rudolph with your nose so bright, won’t you guide my sleigh tonight?”

Wish you the very best of the holiday season! Thank you for your business, see you again in the new year!

Joy to the World

10

Joy to the world, the Lord is come! Let earth receive her King; Let every heart prepare Him room, And Heaven and nature sing, And Heaven and nature sing, And Heaven, and Heaven, and nature sing. Joy to the world, the Savior reigns! Let men their songs employ; While fields and floods, rocks, hills and plains Repeat the sounding joy, Repeat the sounding joy, Repeat, repeat, the sounding joy. No more let sins and sorrows grow, Nor thorns infest the ground; He comes to make His blessings flow Far as the curse is found, Far as the curse is found, Far as, far as, the curse is found. He rules the world with truth and grace, And makes the nations prove The glories of His righteousness, And wonders of His love, And wonders of His love, And wonders, wonders, of His love.

Mary's Boy Child Long time ago in Bethlehem So the Holy Bible say Mary's boy child, Jesus Christ Was born on Christmas Day. Hark now hear the angels sing A king was born today And man will live for evermore Because of Christmas Day. While shepherds watched their flock by night, They saw a bright new shining star they hear a choir sing song The music seemed to come from afar. Hark, now hear the angels sing, A king was born today, And man will live for evermore, Because of Christmas Day. Joseph and his wife, Mary, Came to Bethlehem that night, They found no place to bear her child, Not a single room was in sight. Hark now hear the angels sing, A king was born today, And man will live for evermore Because of Christmas Day By and by they find a little nook In a stable all forlorn, And in a manger cold and dark, Mary's little boy was born. Hark, now hear the angels sing, A king was born today, And man will live for evermore, Because of Christmas Day.
