PINE CONE CHEESE BALL Ingredients

2 - 8oz pkgs 4 oz

2 cups 1 tbsp 3 cups 1/2 1 1/2 1 1

cream cheese, softened sharp cheddar cheese, finely grated 3 tbsp chopped parsley 1 tbsp dill 1/4 to 1/2 tsp cayenne pepper, to taste 1/2 tsp granulated garlic 1/4 tsp each salt, ground pepper whole almonds rosemary sprigs

Directions Combine all ingredients (except almonds & rosemary) until well blended. Turn mixture out onto serving platter; form into tapered oval shape to resemble a pine cone.

Starting at the tapered end, press almonds into the cheese mix so that the pointed tip of the almond is facing out and down. Continue layering almonds to top of cone, overlapping. Once cheese cone is completely covered, add rosemary sprigs at the top to resemble pine needles.

long grain rice olive oil chicken broth onion, diced stalk celery sliced thin green pepper, diced jalapeno pepper, finely chopped tomato seeded and chopped salt and pepper 1/2 tsp each ground coriander and cumin 1 clove garlic, minced 1/2 cup chopped cilantro 1 16 oz can black beans, rinsed and drained

Directions In medium saucepan, saute rice in oil for about 3 minutes over medium heat. Add onion and celery, stir fry until onion is transparent. Add remaining ingredients. Bring to the boil. Cover, reduce heat and cook 20 minutes. Garnish with sprig of cilantro and serve with a dollop of sour cream.

GRINCH KABOBS

green grapes large banana cut into 24 slices (or as needed) hulled strawberries, tips removed miniature marshmallows toothpicks

Directions Drizzle banana slices with lemon juice to prevent browning.

Thread 1 grape, 1 banana slice, 1 strawberry (narrow end pointing up) and 1 marshmallow onto each toothpick.

Keep chilled until ready to serve.

Directions Blanch washed kale in boiling salted water just until wilted, about 30 seconds. Drain well, and squeeze out as much moisture as possible.

Roughly chop the leaves and set aside.

In a large bowl, combine all remaining ingredients using a blender on medium speed. Mix in the kale leaves, cover and let stand at room temp for an hour, or refrigerate 4 hours or more to maximize flavours.

Serve with breadsticks, crackers or veggies.

CREAMED SPINACH & PARSNIPS Ingredients

4 tbsp 2 tbsp 2 pounds 1/2 1 cup 1 tsp 1 pound 2 tbsp 2 cups

In a deep skillet, heat oil with 2 tbsp butter. Add parsnips and stir fry over medium-high heat, about 6 minutes. Add the onion and continue cooking until transparent. Add the broth and thyme and bring to a boil. Salt and pepper to taste. Cover and simmer over low heat until parsnips are tender. Remove from heat.

Blanch spinach in boiling water just until wilted about 10 seconds. Plunge in ice bath to stop cooking, then drain very well. Squeeze out any remaining moisture and then chop the blanched leaves. Stir into parsnip mixture.

In a medium saucepan, cook remaining 2 tbsp of butter over medium-high until lightly browned, about 4 minutes. Whisk in the flour and cook for 1 minute. Whisk in the milk and season to taste with nutmeg, salt & pepper. Cook while whisking until sauce has thickened, about 2 minutes.

Stir the sauce into the spinach mixture and bring all to a simmer. Transfer to a bowl for serving.

carrots small turnip or rutabaga (or half a large one) parsnips Yukon Gold or ‘new’ potatoes onion fennel seeds garlic dill salt and fresh ground black pepper olive oil butter

Directions Preheat oven to 375F. Wash and trim veggies; cut in pieces according to density so that all will cook evenly. Brush oil on bottom and sides of large baking dish. Add veggies and spices, toss or stir to coat evenly. Dab butter all over veggies. Cover with lid or foil, and bake for 30 to 45 minutes until desired doneness is reached.

Excellent served with roast chicken.

PARMESAN BACON BRUSSELS SPROUTS Ingredients 1 kg 1/4 cup 1 1/ 2 tbsp 1/4 tsp 1/4 tsp 4 tbsp

Brussels sprouts coarsely crumbled cooked bacon olive oil cayenne pepper black pepper grated Parmesan

Directions Preheat oven to 425F Trim and halve sprouts, arrange on large baking tray. Drizzle with oil and sprinkle with cayenne and black pepper. Toss lightly, or mix to coat well.

Roast in oven for 10 - 12 minutes, until sprouts begin to brown, then sprinkle with Parmesan and bacon crumbs, and roast another 15 minutes. When ready, sprouts will be tender and cheese golden.

Preheat oven to 375F.

eggs whole milk or light cream salt black pepper crumbled cooked bacon; or cubed ham; or chopped sausage fully cooked leftover potatoes, cubed finely diced red pepper green onion, diced fresh spinach, shredded sliced black olives grated cheddar

Liberally spray bottom and sides of 10 inch cast iron pan with non-stick spray.

In large bowl whisk eggs; add milk/cream, salt, and pepper. Combine well. Add remaining ingredients, except cheese. Pour mixture into prepared pan and heat over medium heat, scraping bottom with spatula as you would for scrambled eggs, to prevent bottom from cooking too quickly.

When partially cooked (approx 7 minutes) sprinkle cheese on top and put pan in oven to finish cooking, 15 - 20 minutes. (Actual cook time will vary depending on size of pan and ingredients used.) Frittata is ready to serve when centre is set.

Variations: Meat, cheese and veggies can be omitted/changed to suit your tastes. Ingredients will not cook very much with the eggs, so should be pre-cooked and drained as well as possible before adding to egg mixture.

EASY CHOCOLATE FUDGE

Line a square pan with foil, with ends extending over edges of pan.

Preheat oven to 300F.

Heat chocolate and milk in double boiler, (or bowl over hot water), stirring until chips are melted.

Blend in vanilla.

Spread into prepared pan. Sprinkle candy cane crumbs on top.

Refrigerate until firm.

Transfer onto cutting board, using foil edges to lift from pan. Remove foil and cut to serve.

Cream butter with electric mixer on medium high speed for 5 minutes, until light and fluffy.

Add sugar and continue beating 2 to 3 minutes, until completely combined.

Sift flour and cornstarch into a separate bowl.

Add to butter mixture and mix with electric mixer on low speed, just until combined.

Drop by tablespoons onto parchment-lined baking sheets, about 2� apart. Top with red or green sugar sprinkles, or glace cherry slices, if desired.

Bake 20 to 25 minutes or until bottoms are just beginning to turn golden. Remove cookies from sheets and cool completely on wire racks before storing in airtight container.
