y a d i l o H s g n i t e e r G Amid the flurry of holiday activity, it is my pleasure as Acting Mayor to wish the people of Sooke a happy and safe holiday season. As a longtime resident of Sooke, I always look forward to spending the holidays with friends, family and neighbours in this wonderful town that I am proud to call home. The holidays are a time to reflect on the year past and to look forward to what is to come. This past year, we have seen many exciting improvements to our town, not the least of which is the addition of the roundabout on Sooke Road. One of Council’s top strategic priorities is to enhance community livability, with a particular focus on improving the Town Centre. Council looks forward to continuing improvements to the Town Centre in 2016. As I look back on the past year, I also wish to thank all of the organizations, individuals and volunteers who work hard throughout the year to make Sooke a better place to live. We are a town dedicated to caring for one another and I am filled with great pride to know that there are so many kind, hardworking people in our community. I am hopeful that each of you have a joyful and peaceful holiday and that as we turn to the New Year, we all look together towards a prosperous 2016. Thank you. Acting Mayor Kevin Pearson

Kahlua Pecan Brown Sugar Baked Brie Recipe from: Deb Stolth | Serves: 6-8
Ingredients 1 whole wheel of Brie (19 ounces) Costco sells one, President Brie is the best for this recipe 1 cup Kahlua 1 cup packed light brown sugar 1 cup chopped pecans (I do leave mine mostly whole for looks) Serve with Keebler Club crackers Directions Preheat oven to 350 degrees. Start by carefully slicing the rind off the top of the Brie wheel, but do not remove completely. Bake for 15 minutes. When the Brie is done baking, the top can be easily removed to expose the creamy cheese. While the Brie is baking, in a medium saucepan, bring Kahlua and brown sugar to a boil and simmer for 10-15 minutes, until a syrupy consistency is made. Throw the pecans in for 2 minutes at the end to warm them through and completely cover with the sauce. Remove the Brie from the oven (removing top rind) and pour Kahlua sauce over the Brie. Serve warm with crackers.

Tequila Bloody Mary Cherry Tomatoes w/Margarita Dipping Salt Servings: Makes about 4 cups tomatoes Ingredients 4 cups cherry tomatoes (about 2 standard pint baskets) 1 pound beefsteak tomatoes (about 2 large tomatoes) 1 large red onion , quartered 1 tablespoon kosher salt 3 large lemons 1/2 cup white tequila 1/2 cup plain or citron- or pepper-flavored vodka 1/4 cup cider vinegar 1 tablespoon Worcestershire sauce 1 tablespoon freshly ground black pepper 2 teaspoons sugar 1 1/2 teaspoon Tabasco sauce , or to taste Margarita dipping salt , for serving Directions
Margarita dipping salt Makes 1/2 cup Ingredients 1/2 cup kosher salt 1 teaspoon white pepper Zest of 2 limes Directions
Stir all ingredients together, working zest in with fingertips. Cover and store at room temperature.
With a wooden or metal skewer, puncture each cherry tomato with 5 to 10 holes; place in a nonreactive bowl. By hand, or in a food processor with knife blade attached, finely chop beefsteak tomatoes; transfer to a medium bowl. Finely chop onion; add to beefsteak tomatoes. Stir in salt; let stand 5 minutes. Strain mixture through a fine sieve, pressing hard on the solids (should yield about 2 cups liquid). Discard solids. Grate zest from 2 lemons. Squeeze enough juice from 3 lemons to equal 1/2 cup. Gently stir tomato water, lemon zest, lemon juice and remaining ingredients (except margarita salt) into cherry tomatoes. Cover and refrigerate, keeping tomatoes submerged in liquid, at least 3 days or up to 1 week. To serve, spear each tomato with a toothpick or wooden skewer. Put some of the liquid in a glass bowl or vase; place tomatoes in the liquid. Serve margarita dipping salt on the side.

Next Day Frozen Fruit Salad
1 can Pillsbury Ready to Spread Vanilla Frosting Supreme 1 c peanut butter 1/4 c butter 2 c graham cracker crumbs 1 can Pillsbury Ready to Spread Chocolate Fudge frosting Supreme
1 c sour cream or yogurt 250 mi cream cheese soften 1/2 tsp vanilla 2 c miniature marshmallows 2 c peach slices drained and crushed 1 1/4 c maraschino cherries drained reserve some for garnish 1 c crushed pineapple drained In a large bowl blend sour cream, cream cheese and vanilla
In a large bowl combine vanilla frosting, peanut butter and butter with a fork until well blended. Stir in crumbs until well mixed. Form into 1� balls and chill 1 hour. In a small saucepan melt chocolate frosting over low heat stirring occasionally. Dip chilled balls in melted frosting. Allow excess to drip off. Place on cooling rack over wax paper Let stand at room temp until dry about 6 hours Store in cool dry place Make 5 51/2 doz bon bons
Fold in remaining ingredients. Spoon into oiled 4 c decorative mold or 8x4 loaf pan. Freeze until firm about 2 hours. To serve unmold and cut into wedges or 1� slices Garnish with reserved cherries.

Forbidden Pleasures... Chocolate Ginger Cookies They’re heavenly! 3/4 cup shortening 1 cup white sugar 1 egg 1/4 cup molasses 2 cups flour 1/4 cup sifted cocoa 1 teaspoon baking soda 2 teaspoons crystallized ginger 1 teaspoon salt White sugar for rolling 1. In a medium bowl cream the shortening, sugar and egg until light and fluffy. Whip the molasses in. 2. Sift together all the other ingredients except sugar 3. Gradually add creamed mixture. 4. Shape into tablespoon-sizeed balls. 5. Roll in sugar and place on cookie sheet. Press and bake at 325 degrees for 10-15 minutes ** Watch carefully they tend to burn easily around the edges
