Butter Tarts This is a very old, old butter tart recipe my Nanna passed down to me. It came from her mom and they made them all the time in England. The uniqueness in the recipe is the use of vinegar… Sue Heaton-Sherstobitoff, Castlegar city councillor
INGREDIENTS: 2 eggs 2 Tbsp vinegar 2 cups brown sugar 1 tsp vanilla ½ c of melted butter 1- 1/3 C currants, chopped raisins, dates, figs, or nutmeats
METHOD: Beat eggs only until whites and yolks are well blended. Beat in sugar and add vinegar and vanilla. Stir in the melted butter and the fruit. For best results, let the filling sit for at least 24 hours before filling the tart shells to allow raisins, etc. to puff up. Fill tart shells 1/2 to 2/3 full with mixture. Bake at 420 degrees for 10 minutes.
Reduce oven to 350 degrees and continue to bake for another 15 – 20 minutes.

Gerry Rempel, Fire Chief, City of Castlegar INGREDIENTS: 1 loaf french bread, sliced lengthwise 16oz cream cheese 1 Tablespoon finely minced garlic 1/2 cup cooked and chopped bacon 2 Jalapenos, thinly sliced 1 1/2 cups grated Mozzarella cheese
Recipe from Betty-Jane McLeod, Castlegar, BC INGREDIENTS: 4 ½ cups flour 2 tsp. soda 2 tsp. salt 2 cups butter 2 cups brown sugar 2/3 cup water (or a bit less) 5 cups oats
METHOD: Preheat oven to 375 degrees Fahrenheit. Microwave cream cheese for 1 minute. Stir until smooth, and add garlic and bacon pieces. Stir until well mixed. Evenly spread cream cheese mix over bread and top with mozzarella cheese. Place jalapenos evenly ever top. Place bread on foil covered cookie sheet and bake for about 15 minutes, or until cheese is melted.
METHOD: Cream butter and sugar together. Sift dry ingredients except oats. Add dry ingredients to butter/sugar mixture alternately with water. (Starting and ending with dry ingredients). Then stir in oats. Bring together into a ball with hands. Roll and cut out 1/8 to ¼ inch thick rounds. Put jam
in the middle of each round cookie. Cut out a second round for the top, making a small round hole in the middle of each top round for the jam to peek through. Crimp edges of top and bottom cookie together with a fork. Bake at 375 degrees for 12 to 13 minutes, with the rack one up from the middle of the oven. Makes approximately 85 to 90 filled cookies.
DATE FILLED COOKIES: Mix up cookie recipe as above and cut into rounds. Bake individual cookies without jam filling at 375 degrees for approximately 8 minutes. Fill when cool. DATE FILLING: 500 g dates ½ cup water 1tsp. vanilla Heat ingredients in pot over low heat until spreading consistency. Fill cookies using one top and one bottom cookie with date filling in the middle.

1 tin coconut milk (or sweetened condensed milk) 1 1/2 cups mixed dried fruit 125g hazelnuts, crushed (or your favourite nuts) 90g (3oz) glace (candied) cherries, halved
METHOD: 1. Preheat oven to 300F. 2. In a large bowl, stir everything except the coconut milk. 3. Add the coconut milk and mix thoroughly. 4. Dollop teaspoonfuls of the macaroons mixture on to a non-stick baking tray.
Bake for 145 C (300 F) until slightly golden — about 25 minutes. Macaroons burn easily, so watch them for the last five minutes. 6. Turn off oven and leave the macaroons in oven for another half an hour. (That stops them from going soggy.) . 7. Leave the macaroons on the baking tray to cool before transferring to a cooling rack.

This is one of our favourite Christmas recipes. It’s easy and delicious. Dan Rye, Castlegar City Councillor This dish can be made the night before which makes it so great. Makes 8-10 large servings.
INGREDIENTS: 16 slices white bread with crusts removed 1 cup green and/or red pepper (finely chopped) Enough slices of back bacon or ham (to cover the bread) 1-2 tsp Worcestershire sauce Enough slices of cheddar cheese (to cover the ham)

In the morning, dot with butter and cover with the crushed corn flakes. Bake uncovered 1 hour @ 350. Let sit for 10 minutes before serving. Leftovers heat well.

My favorite Christmas events are ones that include an evening of appetizers, as opposed to a sit-down dinner, as they encourage mixing and mingling. One of my appetizer go-to’s is the Belgian Endive Appie found in KSCU Cook It: Eat It: Love It cook book that was published a couple of years ago. The endive is a
fabulous healthy alternative to the cracker, and can be topped up with anything: endless possibilities! Ali Grieve, Director RDKB, Trail, BC INGREDIENTS: 1/2 cup sugar 1 tsp chili powder 2 cups pecans
1/4 cup butter 1 8-oz package cream cheese 8 oz blue cheese or gorgonzola 1-1/4 lb endives (approx 10) Cluster of red grapes METHOD: Warm cheeses to room temperature. Mix together sugar and chili powder. In skillet, over medium heat, combine sugar/chili powder mixture, pecans and butter. Stirring constantly, slowly brown until sugar has melted and nuts are golden. Turn onto wax paper
line cookie sheet, spereading to avoid clumps. Let cool. Break into small pieces. Combine cheeses in mixing bowl until smooth. Cut ends off endives, separating leaves. Spread bottom third to half of each leaf with cheese mixture and arrange leaves on platter. Garnish each leaf with pecans. Wash grapes and separate into small bunches or single grapes. Arrange grapes in centre of platter. Makes about 70-80 pieces but can easily be scaled down for smaller amounts.
