Seal Bay Farm: A FAMILY FARM...

Seal Bay Farm is a small family farm operated by Dennis and Maria Lightfoot that started when they met at agriculture college in Montreal. That was 1992, the same year that the Comox Valley Farmers’ Market started.

Before buying their own farm in 1995, the couple would help Dennis’s parents at their Kirby Road Farm. Len and Joan Lightfoot are charter members of the Comox Valley Farmers’ Market, and it wasn’t long before Dennis and Maria were joining them. Now their 14-year old son Douglas is part of the family tradition. He’s growing the zucchini, he built the farm website, and he helps manage the farm Facebook page.

INGREDIENTS: 2 zucchini 1/4 teaspoon salt 1/4 teaspoon freshly ground black pepper 2 ounces sun-dried tomatoes, packed in oil (about 24) 3 ounces water buffalo cream cheese (Natural Pastures) 2 tablespoons chopped fresh chives 2 tablespoons extra-virgin olive oil PREPARATION: 1. Slice zucchini into 1/4-inch-thick rounds. (You should have about 24 slices.) Lay out on large platter; season with salt and pepper.

2. Place a sun-dried tomato on each slice, then top each tomato with a pinch of goat cheese. Sprinkle tops with chopped chives, and drizzle with extra-virgin olive oil; serve.
