Peanut Butter Cookies
Have a joyful and peaceful Christmas
• 1 1/2 cups of all purpose flour • 1/2 teaspoon of baking soda

peanut butter 1/2 cup of white sugar 1/2 cup of brown sugar 1 egg, beaten 1 tsp of vanilla
Whisk together the flour, baking soda and salt. Cream together the butter and peanut butter until well blended and smooth, adding the sugar gradually to the mixture. Beat until the mixture is light and fluffy. Add 1 egg, well beaten and stir in the vanilla. When well mixed, add flour mixture, stirring until mixed. To avoid tough cookies, do not beat- stir only until mixed.

Hopscotch Cookies • 1/2 cup of peanut butter
• 6oz package of chips (butterscotch or chocolate) • 13.oz of chow mein noodles
• 2 cups of miniature marshmallows Melt together the peanut butter and the chips. Add the chow mien noodles and the marshmallows. Mix well. Drop by spoonfuls on to the waxed paper. Chill until set.

Shortbread Cookies
Prep: 20 minutes, Cook time: 15-20 minutes per sheet Makes about 2 dozen cookies. • 3/4 cup butter • 1/4 sugar • 2 cups all-purpose flour
Heat oven to 350F. In a large bowl, stir butter and sugar together until well mixed and no clumps remain. Stir in flour. If dough is crumbly, stir in 1 or 2 more Tablespoons softened butter. Don’t over handle dough. Roll dough 1/2 inch thick on a lightly floured surface. Use a floured wineglass to cut out circles, or use floured cookie cutters. Line a baking sheet with parchment paper and place cookies 1/2 inch apart. Bake 15-20 minutes. Cookies are done when the underside is very slightly browned, but the top and edges are still white. Immediately remove cookies from baking sheet and set to cool on a wire rack. *For the best results, allow butter to soften to room temperature overnight on the counter. Microwaving to soften can lead to flat cookies if butter is too warm.

Rudolph the Red Nosed Reindeer You know Dasher and Dancer and Prancer and Vixen, Comet and Cupid And Donner and Blitzen. But do you recall The most famous reindeer of all? Rudolph, the red-nosed reindeer had a very shiny nose and if you ever saw it you would even say it glows. All of the other reindeer used to laugh and call him names they never let poor Rudolph join in any reindeer games. Then one foggy Christmas eve Santa came to say: “Rudolph with your nose so bright won’t you guide my sleigh tonight?” Then how the reindeer loved him as they shouted out with glee (yippee) “Rudolph, the red-nosed reindeer you’ll go down in history.”

Coconut Macaroons
These macaroons are easy to prepare, with only a few ingredients. Kids will love making these ad most of the mixture will be eaten before the macaroons hit the oven! • 1 20 oz. can of pineapple chunks, drained
• 1 14 oz. can of sweetened condensed milk
Allow to cool 5 to 10 minutes before removing from the baking sheet with a thin spatula. If they stick to the pan, heat the pan slightly on the stove top to release them If edges too browned , they may be trimmed with kitchen scissors after they have cooled. Store in an airtight container ( best in the refrigerator).
• 1 14 oz. package flaked coconut • 1/4 tsp. salt
Drain the pineapple well. Put the pineapple chunks into a food processor and pulse several times for 1 second. Add remaining ingredients and process for 5-10 seconds
If you would rather not make these using a food processor, use drained crushed pineapple instead. If desired , a few drops of vanilla, almond or coconut extract( or coconut rum for the over 21 crowd!) may be added before baking. Makes approximately 4 dozen macaroons
Using two spoons for a cookie scoop create inch mounds of coconut on a well greased cookie sheet, about 1 inch apart. A sheet of oiled parchment paper of a silicone baking sheet will make the macaroons easier to remove. Bake in a preheated 325F oven until the tops of the macaroons are golden and toasted, about 20 minutes. Reduce heat if the macaroons are browning too quickly

Chewy Ginger Snaps • ½ c butter (soft) • ¼ c shortening
• 1 tsp cinnamon
• 1 egg
• 1 tsp allspice
• 1 tsp salt
• 2½ c all-purpose flour

Then using a spoon or small scoop, scoop out about a rounded Tablespoon of dough, and roll it into a ball.
• 1 cup brown sugar
• 1 tsp ginger
Roll the ball in the sugar to coat it, and place it on the baking stone/sheet.
• ½ c molasses
• 1 tsp nutmeg
Bake the cookies for 9-10 minutes. They will crack slightly and still be somewhat soft.
• 2 tsp baking soda
• Extra sugar for rolling
In a large mixing bowl, beat butter, shortening and brown sugar together until creamy. Beat in the egg and molasses. Stir in salt, baking soda, cinnamon, ginger, allspice and nutmeg, then mix in the flour. Be sure to scrape the sides of bowl to mix well.
Let them cool a couple minutes before removing from the paper, and let them cool completely. Using a couple sheets of parchment paper makes this job very easy. I just use one baking stone, and keep it in the oven. when one batch is done, I slide the paper and cookies onto a cooling rack, and using another rack, slide the next batch right onto the stone. While one batch is baking, I can be preparing the other. It cuts down the time that the oven is on. Enjoy!
Cover the dough with plastic wrap, or place in a bowl with a lid. Put it in the fridge, and chill 1 – 2 hours. Heat your oven to 350 degrees. Line your baking stone/sheet with parchment paper. Put some sugar in a small bowl, ½ a cup or so.
