Lacombe resident excels in horsemanship Jenna Salmon has competed in a variety of categories over the years

H

orse riding and showing are sports that don’t seem to get as much recognition as they could – especially when one considers the long hours, dedication and skill that is put into a horse show.

Jenna Salmon, 17, has given up countless hours, taking time away from friends, family and any spare time to hone her skills with her horse, Gina. “(Riding) teaches you a lot of responsibility. I’ve met a lot of my friends through this and they’re like my second family. It’s very time consuming and I’m away from home a lot, and miss a lot of school but it is definitely worth it.

“Keeping your nerves down and showing to your best is the hardest part. Also, being ready on time and not being stressed out.”

Salmon competes in a variety of categories. Those include showmanship, hunt seat, which is an English style with English saddle and attire, hunter under saddle which is a rail class so she is told what to do by judges, and another pattern class where she is taught a pattern and is to avoid cones for points.

She also competes in several western riding categories such as lead changes where she does patterns up and down an arena; trail, where she avoids obstacles; western pleasure, where she is directed by judges for what to show and western horsemanship which is a pattern.

Patterns mean a horse is to go from walking to jogging to loping all while executing precise turns and footing.

Recently Salmon took to the Westerner Grounds in Red Deer to compete in a youth all-around event and the Shannon Burwash Memorial non-pro western pleasure futurity, placing third in the non-pro futurity category. Her horse, Gina, won highpoint senior horse.

“A lot of people think showing horses isn’t a sport, but the hours we put into it – it’s such late nights and early mornings. It’s intense. People think that you’re just sitting there but you’re not,” said Salmon.

“You have to use your legs, and know what you’re doing and you have to sit properly, look like you’re presenting well. That’s what a lot of people don’t know – they think you just

sit there and it’s boring, but it’s not.”

Earlier this year, Salmon went to Texas for the Youth World Cup. “It was really cool and very different. It was different than any other horse show I’ve done. You don’t ride your own horse, you’re on a team with people you don’t know and the coaches are different,” she said.

“But, it was really rewarding because I learned a lot, and a lot of life lessons actually. In showmanship, I got sixth and eighth. The hardest part was not knowing the horses and only having a few days to get to know them before you show them.”

Youth Worlds were difficult for Salmon also because she was completely unfamiliar with the coaches and other members of her team.

“You have to go in there and you’re competing for your team, so you don’t want to let them down, yet you’re trying to figure stuff out for yourself on your own. It was a bit of a challenge but by the end of it we were all good friends.”

A lot of work goes into a show.

Setting up stalls, filling them with loads of hay, bathing, braiding and training takes up a lot of time. Horses have to be lunged – exercised – before they can be ridden and practiced with. If a horse gets dirty, it means another bath and braid session. At night, the horse’s legs have to be wrapped and receive a sort of pain medication rub so that they don’t get sore. Riders are up as early as 5:30 a.m. for shows at 7 a.m. and throughout the day have to change saddles, costumes and stances.

“We show all day long and when we’re done, we clean our horses up again and do it all again. It’s a whole big process. At the end, we pack everything back up and take down what we put up.”

Salmon loves what she does, but admits that sometimes it is hard, especially when people don’t realize how much of her time she dedicates to her sport.

Riding is one of the only times she can see her best friend and she often misses her family while on the road competing.

The life of an equestrian athlete, in all varieties of riding, is tough. Salmon is continuing to train and compete knowing that all of her hard work will eventually pay off in pride and accomplishment. kmendonsa@lacombeexpress.com

Lacombe school officials eager to start new year

BY KALISHA MENDONSA Lacombe Express Officials, teachers and students are getting ready for another year of school, with doors opening on Sept. 2nd.

Students and parents should be aware of a few changes in programs and curriculum focus for this year, including a new type of testing process that replaces provincial achievement tests.

This new format of student evaluation is known as SLAs for Student Learning Assessments. A major change is that these will be administered at the beginning of the year instead of at the end. This change rolls out for both the Catholic School Division as well as the Public School Division.

“The PATs were a summative test, which gave a snapshot of what the student learned during the year. These new tests will be administered at the beginning of the year and will allow the teacher, student and parent to asses areas to work on, opportunities and things like that,” said Kent Dixon, manager of communications for the STAR

Catholic Division in Central Alberta.

“It’s a very logical approach because you’re looking at knowledge at the beginning of the year, instead of looking back at what was learned and asking what could have been learned. It’s a big process to roll that out.”

This approach was implemented by Alberta Education and will affect schools across the province. As well, schools have begun a shift that focuses more on competency learning rather than fact-based learning.

Competencies such as critical thinking, problem solving, communication, digital literacy, innovation, life-long learning and social responsibilities are becoming the focus of learning, rather than fact recollection.

The focus is on student understanding and application of concepts.

“We’re always looking for opportunities to maximize – one of the big things inspiring education is about is working with the student with their own learning style, at their own pace. We’re looking for opportunities to switch to a more student-focused approached rather than content based learning,” explained Dixon.

From Kindergarten to Grade 12, studies are being shifted to evaluate student learning more frequently, and teachers are being encouraged to develop strategies that flow from one area of study to the next.

For example, a science class may use a variety of techniques to develop a concept, from multimedia videos, to hands-on experiments, to small group projects where students get creative together to find solutions and develop ideas.

Teachers will be learning alongside students this year as new curriculum developments continue to be handed down through Alberta Education.

“I often refer to starting school as starting a new life chapter and a new chapter in learning journey. Whether a student is moving a grade level, or switching schools, or starting school each year is full of excitement and opportunity,” said Dixon.

“That’s not just for students, it’s for staff as well.

They’re looking forward to helping older students or new students. It’s an exciting time of year for teachers and administrators and we’re really looking forward to it.” kmendonsa@lacombeexpress.com

Blackfalds Town council adopts Municipal Sustainability Plan

BY BRIAN VOSSEN Lacombe Express At a regular meeting earlier this week, Blackfalds Town council voted to adopt the 2014 Municipal Sustainability Plan after making a few revisions to the final draft.

The Plan is reviewed and revised as needed on an annual basis and following each municipal election, a community input process is taken. At the Aug. 26th meeting, Economic Development and Communications Officer Jennifer Hartigh presented council with recommendations for revision after public input.

The Town sought input through a number of avenues as part of its engagement process. Hartigh said the Town posted a survey

on its web site, invited comments through the Town facebook site and had a presence at the Blackfalds Farmers’ Market, Blackfalds Days, the Abbey Centre, Town office and library.

term hopes for Blackfalds were and how they can help to realize those goals.

Top answers to questions one and four were somewhat contradictory, with responses indicating residents valued Blackfalds’ size and its small town feel but also saying they would like to see continued sustainable growth without losing that small community feel.

“If you take a look at the things we are doing – the Abbey Centre isn’t something a small town has, those are kind of big town things,” said Councillor William Taylor. “Everybody I talk to wants to see the advantages of a growing community, they don’t want to see any disadvantages.” Hartigh agreed.

Administration still proposed rewording Section 6.4.1 of the plan to read, “To plan and implement sustainable Town growth with a focus on commercial and industrial development.”

Rather than the previous wording, “To balance Town growth from primarily residential development, by increasing commercial and industrial development.”

Councillor Richard Poole was unsure about how the change benefitted the plan, as no changes to strategies were recommended.

At the recommendation of Chief Administrative Officer Myron Thompson, the wording was changed to, “To balance sustainable Town growth from primarily residential development and focus on increased commercial and industrial development.”

Two other wording changes were made - one to include consideration for residents looking for more

accessible housing in terms of mobility and one to include support for small to medium enterprises as well as home-based businesses and services in marketing.

Prior to voting on the proposed revisions and adopting the plan, Mayor Melodie Stol voiced her support.

RCMP remind drivers of impaired driving consequences

BY KALISHA MENDONSA Lacombe Express As another long weekend approaches, citizens are reminded to be aware of drinking and driving legislation and to take caution on the roads.

There is no exact formula for what amount of alcohol will put a person over the limit – factors such as size, age, sex, weight and more all come into play. If there is concern that one might be over the limit, don’t take the chance.

“Ignorance of a law is not a defence,” said Cpl. Phil Penny of the Blackfalds RCMP. “I’ve dealt with people who say, ‘I had no choice’.

Call a friend, your parents or bring cash for a cab. I would say that it’s an active choice not too. It’s about having foresight and using proper judgement.”

Alberta legislation regarding drinking and driving is available all over the Internet. There is no excuse, police say. The Alberta web site has a section under transportation that lays out all of the legisla-

tion in an easy to comprehend format.

For people without access to the Internet, they can access any police station, in person or by phone, to find out exact penalties.

It is a citizen’s job to be aware of the legislation, police say.

“One of the things too is the public sometimes has a sense that they will have two drinks and be over a limit of .05. Normally, the response I will give is I can’t tell you how much or how little alcohol is going to put you over the limit,” said Penny.

“There are so many variables that contribute to a person’s alcohol level compared to how much they’ve consumed. We can’t say, ‘You can have four drinks and be fine, because there is too much else to think about’.”

According to the Criminal Code, a member of law enforcement is allowed to make a demand to someone that they suspect has alcohol in their system to provide a breath sample in a roadsidescreening device (RSD).

That helps an officer de-

termine whether a person has no alcohol in their system, or if they have some, in which case the officer then is aware of where they fall in terms of a criminal or provincial offence.

Drivers cannot decline the demand to provide a sample.

“The real basic answer is the authority comes from the Criminal Code. It is a demand – not a request. A request denotes the ability to say no. A demand, a person can say no, but then they carry the same punishment as blowing over the line,” explained Penny.

“We do not request, we demand it. If they are failing to provide a proper sample that can analyzed, that is an offence in and of itself.”

Penny reminds all drivers that at the end of the day, an offence will affect a person in multiple aspects of their life.

“There are impounding fees, court fees, lawyer fees.

A three-day vehicle seizure will cost you maybe $300 or $400 just to get your car back. Good luck travelling with a criminal record.

There are a lot of things

that ripple down the line that people don’t consider.”

Be aware of the penalties and consequences of driv-

ing under the influence.

Losing countless freedoms or the loss of a person’s life is not worth the risk of

OPINION Prentice’s promises Premier hopeful Jim Prentice wants to implement term limits for MLAs should he be chosen as the new Alberta PC Party leader next week.

Last week, Prentice announced that he would put a new rule in place barring MLAs from serving more than three terms as well as prevent the premier from serving more than three.

Of course, the move has already stirred controversy, with some people saying such term limits may not be constitutional.

Prentice argues that the idea is not only constitutional, but very democratic, pointing out it is already done in other democracies.

Indeed, Prentice is right that other democracies do instill such limits and his idea is not without sound reasoning.

Putting limits on the number of terms served by MLAs and premiers would ensure there was turnover in legislature, it would ensure there would be constant circulation of new blood with fresh ideas.

It would also make it easier to get rid of unpopular MLAs and premiers.

It would make it so parties would not get complacent so easily, as the PC party evidently has.

However, there are downsides to the idea of course too. Three terms for MLAs and two for premiers. Is

that enough time to get work done?

One could argue it might motivate MLAs to work harder and accomplish things faster. We can also argue whether or not MLAs currently make good use of the time they have to make policy.

In the last general election, several members of council in Lacombe and Blackfalds were elected for second and third terms, some more.

Many of them of them said that, not only were they happy to be able to serve another term, they were happy the length of a term had been extended to four years, because, “There is never enough time in one term to get things done.”

Indeed, each time a new term begins and a new council is formed, it takes some time to get accustomed to the new councillors before work can commence, many councillors have said. Can it be that different in legislature?

Furthermore, there is a reason that the veteran councillors currently serving were re-elected; we chose them to represent us.

Should Prentice become premier and enact these term limits, we would not be able to continue reelecting officials who we want to stay in office because they are doing a good job.

This is one of the many problems of politics.

When we like our elected offi-

cials, we want to keep them in office as long as possible.

When we dislike those in office, we can’t get them out of there fast

enough. It will be interesting to see what effect, if any, Prentice’s limits would have should he become premier.

Time to stop hiding behind ‘safety’ of social media Customer Service

If there is one thing that makes me crazy, it’s the delight some people take in slamming others on social media without the oldfashioned ‘hard work’ of having to either pick up the phone and talk to them directly, or even worse, going to meet the ‘offender’ in person to reason things out.

We had a recent incident of this at our sister paper the Red Deer Express, where someone in our editorial department was not only falsely accused of plagiarism on our web site, but also had their educational background questioned on facebook. Where do you begin to defend yourself ?

People like this are often just aching for a ‘war of words’ to be sparked on facebook or Twitter, so sometimes its best to take the higher road and ignore it. Or you can

respond in a concise, civil manner.

It’s just disappointing and really sad, in general, that people turn to social media to attack others period.

The scourge of cyber-bullying isn’t disappearing however.

And of course tragically, young people are particularly vulnerable to this as some teen suicides have been directly related to the harassment they have endured online.

But no matter how old you are, it hurts to see posted comments about yourself that either aren’t true or are just plain cruel.

And knowing more and more of the person’s ‘friends’ are seeing it all just adds to the frustration.

The longer I am in the journalism business, the more examples I see of this. I have watched helplessly as I’ve seen myself – not directly but certainly by implication – be accused of things and blamed for things that in all honestly I had either nothing to do with or what is said is so misinformed it’s ridiculous.

Readers get one, usually wildly inaccurate side of the story with

many truths left out as well.

Social media, in my view, is not the place to engage in public arguments where honestly there is little hope for the parties to reason things out or come to an understanding. We all know how texts and facebook messages, like any typed message, lack any sense of context. We can’t ‘read’ the other person’s expression when they wrote it.

But words can indeed be powerful and cutting. As we all know, they can do a lot of damage whether they are typed, emailed, texted or spoken.

But thanks to facebook and Twitter, that damage of course escalates to a new level because hundreds more people are brought into something which most likely is none of their affair anyways.

I recently watched a program on CBC’s Doc Zone called ‘Digital Dummies’, which pointed out how the tidal wave of technological change over the past few years has revolutionized how humans interact – or don’t bother to interact – with each other.

We’ve also all seen people sitting at tables in restaurants, phones in hand, much more intrigued in what those little contraptions can do than what the folks around the table may have to say.

It’s time to put social media in its place.

We should be controlling it – not the other way around. We should also be using it responsibly and maturely – not as a forum for rude, misinformed, ignorant and hurtful comments.

Gone are the days when a lack of such technology meant people had to confront the person they disagreed with face to face.

Often, the sound of a voice or the expression on a face does much to soften even the harshest of disagreements.

There’s nothing to hide behind.

Humans seem to have a heightened ability to be brazenly unkind when they are behind a screen.

Face to face, however, common ground may be hard to find, but it’s more possible to find it, I believe, when we connect ‘in person’. editor@reddeerexpress.com.

BOLT Transit will make six round trips a day during the week and three round trips on Saturdays. This service has great potential to help riders save money though reduced parking, fuel and vehicle maintenance costs.

Our new low-oor buses are energy-eďŹƒcient and fully accessible, and can carry up to 38 passengers for a safer, stress-free commute.

The buses also have amenities like dual bike racks at the front of the buses, and free WI-FI access available on board.

The service is being cost-shared by Lacombe and Blackfalds, while Red Deer will operate the service – including maintenance and staďŹƒng – and recover costs from Lacombe and Blackfalds.

Two buses have been secured with capital funding of $900,000, including $600,000 contributed by The City of Red Deer, obtained through the Green Transit Incentives Program (GreenTRIP). The remaining $300,000 has been contributed by Lacombe and Blackfalds.

Public Notices Property Tax Penalties

If you have not paid your 2014 property taxes, then they are now overdue & penalties have been applied!

A penalty of 9 percent on the current year taxes has been applied on all City of Lacombe unpaid property taxes (which were due June 30, 2014). Any outstanding amounts on September 1st as well as November 1st will be subject to a 3 percent penalty on the current year taxes. If on January 1st, 2015 the taxes are still unpaid, a 10 percent penalty will be applied to the total outstanding balance.

New online garbage & recycling collection reminder widget Lacombe residents can ďŹ nd out their garbage and recycling collection day by visiting www.lacombe.ca/ garbage. Just type in your address in the space provided to see when your garbage and recycling will be picked up.

While on the page, residents can also sign up for garbage and recycling collection day reminders via phone calls, emails or texts by signing up through our new online widget. This free service will help you keep track of what days to put out your garbage and recycling for collection, especially during public holidays when pick up schedules can change. Simply type in your address in the box entitled “Collection Schedules and Reminders�, click on ‘Search’, and select the ‘Create a Reminder’ tab. You can also print that month’s collection calendar for your address, or search for another address in Lacombe.

SPORTS Softball player returns to Lacombe with gold medal

BY BRIAN VOSSEN Lacombe Express Rylee Frank can add a national gold medal to her collection.

Frank, who plays for the Red Deer Rage softball team, recently returned from the Canadian National Softball Championships where her team took gold in the Plate Division (2nd Division) and placed ninth overall.

Frank said it is an incredible feeling.

“It was pretty awesome, to say you got ninth in Canada is pretty cool,” said Frank.

At the start of the tournament, she said she and her teammates were a bit nervous, not knowing what to expect.

“The first game, we were all nervous,” said Frank. “You don’t know how all the other teams are going to play, if they are going to be really good and crush you or if it’s going to be a close game. So it was kind of suspenseful in that way, because you are so tense.”

Frank said keeping her mind on her game helped her overcome nerves and stay focused throughout the tournament.

“For me, it was just ball,” said Frank. “I was going up to play ball. I’ve never really been a nervous player.”

Despite nerves, the Rage was able to win the first game. Rage won one other game and lost two in the round robin to be placed in the Plate Division.

Then after another two round robin games, Rage made it to the gold medal game and was able to win to claim the Plate Division Championship.

Frank said she is more than pleased with how she and her team performed but added that, during the tournament, she cared less about how the team finished and was more concerned with how they played.

“I wasn’t so much worried about wanting to go all the way to the top,” said Frank. “I was more worried about being recognized as that team that never gave up.”

MILESTONE - Rylee Frank of Lacombe just finished her second season with the Red Deer Rage softball team where she was able to participate in the national championships and come home with a gold medal.

She said she first tried out for them last season at the encouragement of a friend.

Trying out for a higher competitive tier was a natural step for Frank. She said she was a strong player when she played in Lacombe and thought she would see how far it could take her.

“I’ve always been really competitive sport-wise,” said Frank.

In the Prairie Girls League Softball (GPLS), Rage played

seven other U16 teams in three different tournaments as well as a league final.

Frank said the Red Deer Rage improved with each performance and they weren’t the only ones.

“All the games got closer, all the teams were getting better.”

Frank said both leagues were very competitive and added that playing in a ladies league was a great advantage as it allowed Frank and her team to compete against some older, more experienced players.

Frank said the provincial championship, the qualifier for

nationals which took place midJuly, was a good experience for the team. She said that her team had grown strong over the course of the season and that strength allowed them to power through the tournament, finishing undefeated, even though they were down at times during the games.

“We had a really determined team and we worked really well together, we never gave up,” said Frank.

After getting gold at the provincial tournament, Frank was very excited about the idea of going to nationals.

Frank, who plays ringette during the winter, had the opportunity earlier in the year to go to ringette nationals as well and said she was interested to see how the experience would differ between the two sports.

Frank’s team was also excited.

She said that some had already made plans for the trip to Ontario and added that, even without going to nationals, being crowned provincial champions was a notable achievement.

Nakita Schaab takes gold at national wakeboard tourney

BY BRIAN VOSSEN Lacombe Express Nakita Schaab has proven she can ride with the best of them.

Schaab, a 15-year-old wakeboarder from Lacombe, recently competed in the Wake Canada National Championship and returned home with a gold medal.

Schaab has competed at nationals before. In fact she has competed the last four years running.

This is her first time placing first in any division. Each previous year, she returned home with a silver medal but was never quite able to make it to the top of the podium.

“I’ve worked really hard this year I think, so it was a big achievement to me,” said Schaab.

Earlier this year, Schaab spent six weeks in Orlando, Florida where she participated in a wakeboard training camp as part of the Canadian development team and also competed in her first ever international competition, where she placed third in the Junior

Women 14-18 division.

Schaab said that extra time spent in the water and on her board made the difference in the Canadian national competition this summer.

“I’ve pretty much been wakeboarding since March this year, as opposed to starting in June.”

This year, Schaab also competed in a higher division (Junior Women) than previous years at nationals.

On the younger side of this division, Schaab said this makes her first place finish even more significant to her as she proved she can compete against riders that are older and more experienced than her.

After her qualifier run, Schaab was ranked highest in her division, leaving her feeling confident going into the finals. It also meant Schaab would be the last to do her final run.

She added the advantage in going last is that competitors can see what all their opponents’ runs are like prior to making their own, but Schaab said she prefers to use the time to focus herself.

While Schaab won her division, she said the competition was very close. She added she knows her opponents

will continue getting better, so it is important for her to continue improving too.

“As I advance, they’ll advance,” said Schaab.

She out-rode seven other competitors to take first in the division and advance to the Open Women’s division.

She was also eliminated in the heats before making it to the Open Women’s final, but she was still more than happy with her performance as she was competing against some professional wakeboarders in the open

division and had already realized her goal of winning the Junior Women division.

More recently, Schaab competed in the provincial wakeboarding tournament at Alix Lake where she took second in her division.

Schaab also has an opportunity to go compete in the worlds, but said she will likely not attend that competition this year as she has had a fairly full summer of wakeboarding.

Schaab added she will face very stiff competition

at worlds and so wants to expand her trick repertoire before heading to that competition.

“I need a few more tricks to be able to do well,” said Schaab. She added that, while she is done the majority of her big competitions for the season, she doesn’t plan to get out of the water just yet.

Victoria-based singer/songwriter performs this weekend Sam Weber includes two dates in Red Deer on his multi-city tour

BY ERIN FAWCETT Lacombe Express For Victoria, B.C. based singer-songwriter Sam Weber, the road is just beginning with the announcement of his debut LP Shadows in the Road, set for release in early September.

A compilation of songs written over the past six years of touring and recording, 21-year-old Weber has created a collection of 13 original tracks conveying a powerful entanglement of emotion that encompasses the setbacks and uncertainties of life’s journey.

Weber is set to play in Red Deer at Fionn MacCool’s Aug. 29th and Aug. 30th.

Already an acclaimed guitarist and producer in western Canada, Weber is no stranger to the Canadian music scene, sharing the stage with the likes of The Tragically Hip, Current Swell, Stars and Sam Roberts. “(Playing with those bands) doesn’t feel deserved. I feel too young to be included with those guys. But they are all overly cool, so it makes me feel good,” he said.

Weber’s musicality came at an early age as his dad and brother were involved in music as well.

“I have a very musical family and I played with my dad and brother when I was younger. Then I started teaching guitar when I was in music school and I have always stayed really active in music.

Everything I do right now is pretty musicfocused and I’m really stoked about it.”

In 2010, Weber was awarded a summer scholarship to Berklee College of Music in Boston where many Shadows in the Road tracks were inspired. After being offered a full-time scholarship, he decided to stay true to his craft and return home to Canada to pursue music on his own terms.

Weber’s instinctive move led him to be featured in Guitar Player Magazine, becoming one of the youngest people to ever be covered in this esteemed magazine, at just 19-years-old.

Weber’s soulful and impassioned songwriting takes life throughout the album with songs such as Don’t Hurt and the opening track Shadows in the Road. The record’s feature track August lures fans in with an enduring love story paired with

As for where he gets his inspiration for his music, especially for Shadows in the Road, Weber said it comes from his everyday experiences.

“I basically just write from my own perspective and things that are going on with me. I write in a pretty introverted kind of way and things that go on in the world kind of seep through into what I am writ-

ing about as well.”

Recently signed to Cordova Bay Records, Weber is getting ready to cast a shadow on the road in western Canada to celebrate the release of his debut record. Kicking off the tour in Victoria this tour will see Weber performing 16 dates throughout Manitoba, Saskatchewan, Alberta and B.C. Weber added he loves being on tour and experiencing new things.

“You are hard pressed to find someone who doesn’t just love road tripping, so being on tour for me is a really nice working vacation and partying with your friends.

It’s a lot of good times and a lot of fun with

a lot of good people.”

As for being on stage, Weber said it’s an incredible feeling.

“It’s amazing how much the energy transfers. I go on stage and I hope people get stoked enough to really get my energy.

If their energy level comes up then mine comes up. I’m always drawn to that excitement and I always want to find that.”

At the end of the day, Weber has truly found his passion and loves what he does.

Does too much salt cause autoimmune disease?

For years doctors have linked excessive salt to high blood pressure and cardiovascular disease. Dietary guidelines suggest no more than 1,500 milligrams (mgs) of salt daily. But the majority of North Americans consume 4,000 mgs daily. Studies show one in two North Americans over the age of 65 suffers from hypertension.

Moreover, the Framingham study in the U.S. reported that, at age 75, nine out of 10 people have high blood pressure.

A high salt diet has also been linked to the risk of stomach cancer. Salty foods may affect the stomach lining making it easier for the bacterium, H pylori, a cause of stomach ulcers and cancer, to infect tissues. And too much salt has been proven to increase the amount of calcium excretion in the urine. Calcium

During a meeting at The Harvard Medical School in Boston, Dr. Vijay K. Kuchroo, professor of neurology and an expert in immunology, reported a high salt diet may increase the risk of autoimmune diseases such as multiple sclerosis, Type 1 diabetes and psoriasis. Autoimmune diseases occur when the body’s immune system, the TH17 cells that normally help the body clear infections, start to attack normal cells.

It’s as if soldiers, rather that shooting the enemy, suddenly decided to shoot themselves.

But the big question asked by Dr. Kuchroo is why there’s been such an increase in autoimmune disease.

According to the Ameri-

can Diabetes Association, Type 1 diabetes increased 23% between 2001 and 2009.

The incidence of psoriasis has also doubled. And according to Dr. Kuchroo pediatric multiple sclerosis, virtually unheard of 20 years ago, is now being seen more and more. So how could an increased intake of salt trigger autoimmune disease? Researchers discovered that mice, with the gene SGK1, were predisposed to developing a form of multiple sclerosis when fed a high salt diet.

But mice without the gene, when fed the same diet, showed a lesser form of the disease. Other researchers at Yale performed experiments on human immune cells and mice and found the same results.

Dr. Kuchroo says more research is needed, but the solution may be due to the

SGK1 gene present in the gastrointestinal tract and kidney, which helps to regulate absorption of salt.

So will hiding the saltshaker make a difference in developing rheumatoid arthritis, CroÙ’s disease and other autoimmune problems? It may be some people have a susceptibility to these diseases so it’s prudent to limit salt intake.

Remember what I’ve said in the past, that too much of anything is rarely a good idea. This is why one study showed those who frequent fast food restaurants had elevated levels of TH17 cells, the ones that attack their own normal cells.

Today excessive salt intake has become a way of life. Restaurant meals and packaged foods are loaded with salt. But don’t hold your breath waiting for TV ads to warn about the

dangers of excessive salt.

Pharmaceutical companies make billions warning us about the hazards of cholesterol. But there’s no pill to correct this salty problem. Rather, you have to be a smart shopper and read labels. Dr. Kuchroo’s talk brought back memories for me. It was 68 years ago I sat in the same amphitheater listening to my first lecture at The Harvard Medical School.

What changes in surgery, medicine and immunology since that time! I learned Harvard researchers have now cured cancer using immunological tecÙiques.

This means chemotherapy may become past history.

If you have an electric stove, you may choose to purchase a flat-bottomed wok, but even better would be to purchase a metal wok ring that sits over your electric burner and cradles a round bottom.

Unless you’re cooking for just one or two, you will get more value out of a larger wok. A larger wok will help to keep the food contained more easily as well.

I also don’t find non-stick or electric woks are the best option. Non-stick coatings are almost always smooth,

there are health concerns about emitting gases from non-stick coatings over high heat, and they don’t last as long as they should.

Electric woks, I find, don’t heat up enough.

For traditional high heat wok cooking, one needs to be aware that many pots and pans on the market will also warp over high heat.

Make sure you read the manufacturers’ use recommendations before purchasing to be certain.

Always hand wash only (no scouring pads as they will remove the seasoned surface) and dry thoroughly to prevent rusting. The downside of a thin carbon steel wok is they also lose their heat quickly as well.

If you insist on buying a non-stick wok, there are cast aluminum options that are non-stick and designed to resist warping.

Accessories you may consider would be a lid, curved bottom utensils, bamboo

steamers, hand-held wire strainer and a bamboo scrubber for cleaning. To season your new carbon steel wok, wash with soap and a scrub brush, dry, and place the wok over high heat. When it is very hot and the steel has changed colour, turn the heat to medium-low, add a tablespoon of oil and use a compacted paper towel held with tongs to coat the entire cooking surface with the oil.

Let it sit on the medium low heat for approximately 10 to 15 minutes. Allow the wok to cool and repeat as many as three times.

This ‘seasoning’ process is only meant for carbon steel woks, not stainless steel or other types of woks.

Life is too short to worry about perfection It is with sad hearts that our company mourns the loss of one of our co-workers after a year-long battle with cancer. Our store is quiet today and I don’t think much work is getting done but it has inspired me to write as I always feel better when I put ‘pen to paper’. A time of reflection is always positive whatever the circumstances and I feel like we have all been hit with a giant wake up call.

We work, spend and consume and then wake up and do it all over again. We spend hours and thousands of dollars perfecting our homes and yards, keeping our spaces cleaned to flawlessness only to judge the imperfection. We find a myriad of excuses for not having friends or neighbours into our home when the reality is they are longing and waiting for an invitation.

My house was not clean and my bathroom floors needed to be scrubbed; I couldn’t possibly have company, especially a houseful of interior designers! My co-worker Cindy said to me, “People who come to judge your house shouldn’t be invited.” So true! Thankfully another gal here in the office cleaned her bathroom and the party was on. The happy truth is that we didn’t care what her house

looked like and all commented that it had been too long since we had been together.

Life is short everyone! Sit on your front porch and say hi to your neighbours and be friendly to everyone you see. If you have the gift of hospitality, go for it and invite people into your beautiful home. Don’t wait for the perfect set of circumstances to open your home to others. Spending time in others homes is a true gift, even if it’s just for tea and conversation. Days turn to weeks and suddenly you are wondering where all the time and opportunity has gone. People will not care if your grass is trimmed and will be thrilled to be in your backyard for an impromptu barbecue.

Wherever you are in life, take a chance today. Find a groovy new restaurant or paint your house orange. Ruts are tricky to break free from but the reward is often worth it.

My dear co-worker lived her short life to the fullest and was not hesitant about travel, food or new experiences and we always said that she lived more in 31 short years than most people do in a lifetime.

I’ve decided to take off and finally see San Francisco and drool over the fabulous architecture that is so abundant in that lovely city. After years of wishing and dreaming it is time to do and to see and to be inspired by structures that have stood the test of time, another stroke off of my bucket list. The time for bravery and adventure is now and I encourage you to jump into your life with a bright pink inner tube around your waist as you reach out and challenge yourself with a big adventure or a simple coffee with a new friend.

Exploring the many wonders of Alaska Why after the winter we had would anyone want to journey to a destination where wearing layers is recommended? Journey to a destination where you’re more likely to experience rain and chilly temperatures then to be treated to sunshine. I myself wasn’t overly enthusiastic about this destination, until I had the chance to experience it firsthand after longing for a trip that was different from the average sunny destination.

Due to my cruising experience, I would recommend if there is only one cruise you are going to take, do an Alaskan cruise. There are many reasons for this but most of all it’s the isolated villages, the natural surroundings and just the general area on earth that this beautiful state exists in.

Villages like Juneau and Ketchikan are in such an isolated area that unless you were to float plane it in, cruising takes you to them as well.

There you can see how people live and once lived decades ago without any luxuries of today’s technology. Tours in the area can educate the history of these locations by the locals who have been there their whole lives.

The food that comes out of the restaurants and local kitchens is authentic and unique. It’s mindblowing how people live so happily, not realizing that many of us could never survive without vehicles and cell phones. It is humbling to learn different ways of living. It is truly eye opening.

As I woke up to enjoy my cup of coffee on my balcony, I couldn’t help but realize one major thing - you don’t have to be a nature enthusiast to enjoy a pod of humpback whales swimming in their natural environment. I can’t explain to you the feeling of excitement after seeing a tail, after witnessing a litter of waterspouts across the ocean. Of course there

I could just reminisce on my porch at home with the same cup of coffee and in hopes I could bring back the sounds and smell of Alaska’s natural surroundings. It seemed that all I heard during my cruise was how lucky and fortunate we were.

The temperature was unseasonably high, the sun was warm and delightful, and not a drop of rain fell and the wildlife sightings were in abundance. However I doubt, no matter the environmental forecast and without any marine activity, while sailing in Alaska will you need a reminder how blessed you are to be on such

a grand adventure.

Never in my life has my vocabulary seemed as inadequate as now, when I would love to pour out a description worthy of this exquisite journey. Sailing into Tracy Arms was overwhelmingly breathtaking.

I have never been surrounded by so many people, on the top forward deck and experienced such peaceful silence. There wasn’t one person that could not be caught gazing at the Sawyer glacier in awe. Jeweled green water littered with ice surrounding our ship as trickling waterfalls cascade over towering mountains. Your eyes are overwhelmed with the exquisite beauty of Mother Nature’s

artistry in this State of Alaska.

You wander from starboard to port side, forgetting to capture the magical images through a lens. Almost always choosing to drink in the miraculous sight first hand. It seems senseless to try to describe the panoramic vision, for it evokes such a strong reaction of emotion.

It was so quiet, and yet I felt neither small nor alone, but instead it was like being emerged in tranquil serenity. Time seemed to be suspended or perhaps frozen, just so you could create this peaceful memory.

At some point, I caught an image of a face scuffed into the rugged terrain which gently re-

minded me I should snap a picture or two because no one was going to believe me when I had to recount the bountiful wonder I had just absorbed into my being.

I doubt no picture taken could adequately capture the totality of this experience, just like no words could describe it. To someone that hasn’t been there, the picture would appear to be just another picture of a mountain. In my eyes it is a miraculous picture that creates a flood of memories that return and bring a smile to my face. A full-embodied memory of what will always be the best cruise I have every sailed on.
