Buckeyes This recipe is so good that I double it whenever I make it. Makes an incredible hostess gift for something different. Real buckeyes are nuts that grow on trees and are related to the horse chestnut. Original recipe makes 5 dozen. Ingredients: 1 1/2 cups peanut butter 1 cup butter, softened 1/2 teaspoon vanilla extract 6 cups confectioners’ sugar 4 cups semisweet chocolate chips

Clafoutis with white chocolate & mixed berries Filling: • 1 cup white chocolate, chopped • 2 cups fresh or frozen mixed berries (e.g., raspberries, blackberries, blueberries, and/or strawberries) • 1 cup whipping cream • 7 tbsp butter • 2/3 cup sugar • 1 egg • 3/4 cups flour Pastry shell: • 1 cup flour • 1/4 cup sugar • 1/4 cup cold butter • 1 egg • 1/2 tsp vanilla extract • 1 tbsp water (for kneading) In a bowl, combine flour and sugar and cut in butter until butter resembles small peas. Make a hole in center of flour mixture and add egg and vanilla and mix until just combined. On a lightly floured surface, turn dough out and knead, adding water if needed. Return dough to bowl, cover in plastic wrap, and refrigerate for 1 hour. Remove from

Cut the meat into pieces and remove as much fat as possible. Cover with cold water in a large saucepan. Bring to a boil and skim. Peel and slice the carrots and turnips. Skin and dice the onions. Two-in-One Holiday Bars BASE 1 cup sugar 3/4 cup margarine or butter, softened 1 teaspoon vanilla 1 egg 2 cups all purpose or unbleached flour 1 cup candied fruit cake mix (16 oz.) 1/2 cup semi-sweet chocolate chips 1/2 cup chopped pecans

Heat oven to 350º F. In large bowl, beat sugar and margarine until light and fluffy. Add vanilla and egg; blend well. Lightly spoon flour into measuring cup; level off. Stir in flour; mix well. Spread dough into ungreased 15x10x1-inch baking pan. Sprinkle half of dough with fruit cake mix and other half with chocolate chips and pecans; press lightly into dough.

GLAZE 1 cup powdered sugar 1 to 2 tablespoons milk

Bake at 350º F for 25 to 30 minutes or until edges are lightly browned. Cool completely. In small bowl combine powdered sugar and enough milk for desired drizzling consistency; blend until smooth. GINGERBREAD BOYS 1 cup margarine 1 cup white sugar 1 egg 1 cup molasses 2 tbsp vinegar

Bake at 350 degrees, approx 8 min till lightly golden. Decorate when cooled, if you wish. Makes 5 dozen.

5 cups flour 1 1/2 tsp baking soda 1/2 tsp salt 3 tsp ginger 1 tsp cinnamon 1 tsp cloves Cream margarine and sugar together. Blend in egg, molasses and vinegar till smooth. Add dry ingredients in stages till all incorporated into a smooth ball. Chill in fridge at least 3 hours or overnight. Roll out to 1/8” thick and cut out the gingerbread boys.

Liver Dog Treats & Festive Dog Treats Liver Dog Treats Put the following four ingredients into a blender and purify: 1/2 to 3/4 of a pound of chopped/sliced liver 3 cloves of garlic 1 tbsp oil 2 eggs including the shells Pour the liver mixture into a bowl and add: 1 cup flour (all purpose, whole wheat, rice, bean) 1 1/2 cups of corn meal Mix everything together and grease a cookie sheet REALLY well or use parchment paper. Spread the mixture on the pan with a wet hand. Bake at 350ºF for 45 minutes or until medium brown. Cut into squares and return to the “off” oven to dry out for another 10 minutes. These treats must be kept frozen. Courtesy of Dog Utopia Retriever, Retriever pumpkin eater. Festive Pumpkin Dog Treats 2 eggs 1/2 cup canned pumpkin 2 tablespoons dry milk 1/4 teaspoon sea salt

2 1/2 cups brown rice flour (or any flour of your choice) Optional: 1 teaspoon dried parsley  OR 1/2 teaspoon of cinnamon and/or nutmeg  Preheat oven to 350. In large bowl, whisk together eggs and pumpkin to smooth. Stir in dry milk, sea salt, and dried parsley (if using, optional). Add brown rice flour gradually, combining with spatula or hands to form a stiff, dry dough. Turn out onto lightly floured surface (can use the brown rice flour) and if dough is still rough, briefly knead and press to combine. Roll dough between 1/4 – 1/2” – depending on your dog’s chew preferences, ask first – and use biscuit or other shape cutter to punch shapes, gathering and rerolling scraps as you go. Place shapes on cookie sheet, no greasing or paper necessary. If desired, press fork pattern on biscuits before baking, a quick up-and-down movement with fork, lightly pressing down halfway through dough. Bake 20 minutes. Remove from oven and carefully turn biscuits over, then bake additional 20 minutes. Allow to cool completely on rack before feeding to dog. Courtesy of Dog Utopia

Classic Christmas Cake • 1 1/2 cups all purpose flour • 1 tsp apple pie spice • 1 tsp ground cinnamon • a pinch of salt • 2 2/3 cups golden raisins • 1 1/3 cups raisins • 1 1/3 cups ready-to-eat dried apricots, chopped • 2/3 cup glacé cherries, chopped • 1 cup slivered or chopped almonds • Finely grated zest of 1 unwaxed orange • Finely grated zest of 1 unwaxed lemon • 6 oz. unsalted butter, softened • 3/4 cup packed light brown sugar • 4 eggs, beaten • 4 tbsp brandy • 3 tbsp apricot jam • 2 tsp water • 16 oz. ready-made marzipan or almond paste • Confectioner's sugar, for dusting Icing • 3 egg whites • 3 tsp liquid glucose or glycerine • 4 cups confectioner's sugar, sifted • a deep 9-inch round cake pan, greased and lined with a double layer of parchment paper and with a double thickness of parcel paper tied around the outside of the pan Sift the flour, spices and salt into a bowl. Mix the dried fruit, cherries, almonds, and zests in a separate bowl and stir in half the flour. Set aside.

Cream the butter and brown sugar together in a large bowl until pale and creamy, then gradually beat in the eggs. Fold in the remaining flour mixture, then the fruit mixture. Stir in the brandy, mixing well. Spoon the mixture into the prepared cake pan and level the surface. Bake in a preheated oven at 300oF (150oC) for about 2 hours, or until a fine skewer inserted into the center comes out clean. Remove the cake from the oven and let cool in the pan for 30 minutes, then turn onto a wire lack and let cool completely. Wrap the cake tightly in wax paper and foil and store in a cool, dry place for at least a week. To make a glaze, heat the jam in a saucepan, with the water until melted. Bring to a boil, then simmer for 1 minute. Strain through a nylon sieve. Place the cake upside-down on a cake board and brush the top and sides with the glaze. Roll out half the marzipan on a surface dusted with confectioner's sugar to fit the top of the cake. Put the marzipan round on top of the cake, then smooth over and neaten the edges. Roll out the remaining marzipan into a long strip to fit the sides of the cake, then roll up, place one end against the side of the cake, and unroll to cover the sides and joins. Leave in a cool, dry place for 1-2 days, to allow the marzipan to dry. To make the icing, lightly whisk the egg whites and liquid glucose in a bowl. Stir in the confectioner's sugar until it forms soft peaks. Spread evenly over the cake. Let dry in a cool place for 24 hours, then decorate as desired.

Earrings for the Holiday Season Supplies you will need: • Roundnose pliers • Chain nose pliers • Jewellery cutter - 2 main beads approx. 8mm - this will be the main focus of your design - 2 medium beads approx. 6mm - 6 silver plated or sterling silver 2mm balls - 2 silver plated or sterling bead caps approx 8mm - 2 pairs of earwires - 2 2” headpins Step 1 - Take your 2 inch headpin and add 1 small 2mm silver plated or silver bead Step 2 - Add your main 8mm bead. Make sure you add the 2mm ball before so your main bead does not fall off the head pin. Step 3 - Add your bead cap over your main 8mm bead Step 4 - Add another silver 2mm ball over your bead cap. You want to do this so it breaks the beads up. Step 5 - Now add the 6mm bead then another silver 2mm bead over top. Step 6 - Now repeat the same steps on your second head pin. Step 7 - Now you are ready to close off your earrings.

You will see you have a bit of room left just showing the headpin. You will need to cut this down. You want to have approx. 8-10mm of the headpin left showing from your last small silver bead. - So having no more than 8-10mm of your headpin showing cut the remaining part of the head pin off with your jewellery cutters. - Now take your round nose pliers, holding your earring take your pliers and place the pliers at the end of the headpin. - Holding your earring turn your wrist with the pliers on the headpin down to the floor. - This will allow you to make a circle to close off your earring. - Now it’s time to add your earwires onto the circle you just made. - You will have to use your chain nose pliers to close the circle once you have added your earwires. - You can also use your chain nose pliers to straighten your earrings if they have bent a bit to the side. Cranberry Brie Appetizer Bites INGREDIENTS: 3/4 cup whole berry cranberry sauce 1 tsp lemon juice 1/2 tsp finely shredded lemon peel 24 wonton wrappers (3-1/4” x 3-1/4”) 18 ounce brie round

Cut brie into 24 cubes, about 3/4-inch each. Place 1 cube in each cup; place sheet of aluminum foil over each pan to prevent excessive browning. Return to oven. Bake 3 to 5 minutes longer or until brie is soft. Remove from oven; top each with about 1 teaspoon (5 mL) cranberry mixture.

DIRECTIONS: Place cranberry sauce in a saucepan. Cook over medium heat until hot, stirring occasionally. Remove from heat; stir in lemon juice and lemon peel. Meanwhile, heat oven to 350°F (180°C). Spray 24 miniature muffin cups with nonstick cooking spray. Press 1 wonton wrapper gently into each sprayed cup, allowing ends to extend above cups. Spray edges of wonton wrappers with nonstick cooking spray. Bake for 12 to 14 minutes.

Grandma’s Butter Tarts 1 cup white sugar 1 cup raisins 2 eggs Beat the above ingredients well. Then add: 1 teaspoon vanilla 1/3 cup butter 4 tablespoons milk Boil 3 minutes - stirring all the time. Put into unbaked tart shells. Add a piece of pecan on each tart before baking. Bake at 400 degrees for 10-12 minutes or until golden brown and bubbling. Makes 12+ tarts or 15+ mini tarts. Orange Drop Cookies 1/2 cup butter, softened 8 oz. cream cheese 1/2 cup sugar 1 egg 1 teaspoon orange zest 1 teaspoon vanilla 1 cup sifted all purpose flour 1/2 teaspoon salt 6 oz. semi sweet chocolate chips Preheat oven to 350o F. In large bowl mix butter, cream cheese, sugar, egg, orange zest and vanilla flavoring. Blend well. In a medium bowl, whisk salt into flour. Add flour mixture 1/4 cup at a time into wet ingredients until just mixed. Stir in chocolate chips. Lightly grease baking sheet and using a teaspoon drop mix on baking sheet about 1 inch apart. Gluten Free Blueberry Crisp Fruit crisp is so simple to make, and this blueberry one is a classic favourite for potlucks and family dinners. Double it to take to parties and share with friends. Makes 1 - 9x9” baking dish. 3 c washed blueberries (fresh or frozen) 1 Tbsp brown rice flour 1 tsp cinnamon 1/8 tsp salt 1 Tbsp water 1/2 c brown rice flour 1/4 tsp salt 1/4 c butter 1/4 c brown sugar 1/2 tsp vanilla 1/4 tsp cinnamon

Cheese Thumprints with Hot Red Pepper Jelly Glaze Enjoy a burst of savory and spice this Christmas Season! 2 cups of shredded Mexican-style blend cheese 1 cup shredded Parmesan cheese 1 cup crumbled Feta 6 tablespoons cream cheese 6 tablespoons soft butter 2 cups gluten free (or regular) flour 2/3 cup hot red pepper jelly Either by hand mixer or food processor cream the butter , cream cheeses and cheeses and add flour until mixture forms a soft dough. Gather up dough and divide into 4 balls and roll until about 1 inch by 10 inch . Then wrap in wax paper and freeze about 40 minutes. Line cookie sheets with parchment and preheat oven to 400 degrees.

Remove dough and roll out small balls about 1 inch and place on lined sheets about 1 inch apart. Bake for 5 minutes. Remove and poke an indent or “thumbprint” in middle. The handle of a large wooden spoon works great! Place a 1/2 tsp of red pepper jelly into middle of each cookie so it overflows on the top. Bake for another 10 minutes until tops are lightly browned. Cool completely. Makes about 40 cookies. Store in refrigerator. Courtesy of Wave Dentistry

Peppermint Biscotti Ingredients: 1 cup sugar 1 tbsp hot water 3 eggs 1/2 tsp peppermint extract 1 tbsp instant coffee 2 cups flour + 2 tbsp for counter 3/4 cup unsweetened cocoa powder + 2 tbsp for counter 1 tsp baking soda 1/4 tsp salt 1-1/3 cups white chocolate chips 6 peppermint candy canes, crushed Instructions: 1. Preheat oven to 350 degrees, placing oven racks into two middle positions. 2. Using mixer, beat sugar, hot water, eggs, peppermint extract and instant coffee together until smooth and creamy. 3. Slowly add in 2 cups flour, 3/4 cup cocoa, baking soda and salt. Batter will be very sticky. 4. Line two cookie sheets with silpat or parchment paper.

5. In small bowl, mix 2 tbsp of cocoa powder with 2 tbsp flour. Sprinkle parchment with flour/cocoa mixture. 6. Divide dough in half, and with hands, press dough into two rectangles, about 4” by 10” and 1/4-inch high. 7. Place on prepared cookie sheets and bake for 20 minutes, rotating sheets between racks after 10 minutes. 8. Remove and let cool 10-15 minutes. 9. Slice rectangles into 1/2” to 3/4”-wide slices. Lay each slice on its side and put back in the oven (on the parchment lined baking sheet) for an additional 15-20 minutes. 10. Remove from oven and allow to cool completely on wire rack. 11. Melt white chocolate chips over low heat, stirring constantly. Once melted, remove from heat and let cool slightly. 12. Dip one side of each biscotti in white chocolate and then crushed candy canes. Allow to set, candy cane side up, about one hour. Makes about 18 large biscotti. Enjoy!

Chef Tony’s Giant Christmas Fruit Cake Deep Dish (approx 20” x 12” x 4” deep)

Cream butter and sugar together

• 3 lbs Raisins • 1 lb Crystallized pineapple • 1 lb Candied cherries red/green • 1 lb Citrus peel cut fine • 1 cup Grape juice • 2 cups Butter • 2 cups Sugar • 12 Egg yolks beaten • 6 oz Grape jelly • 1 square Unsweetened chocolate • 3.5 Cups Flour • 1 tsp Baking Powder • 0.5 lb Almonds • 1 lb Pecans • 12 Egg whites

Add egg yolks, grape jelly and melted chocolate to the above.

Soak Fruit in juice, pour a little flour over it and allow to soak over night.

Truffles Ingredients: • 1 kg Semi-Sweet or Bittersweet Bernard Callebaut Chocolate (2.2 lbs) • 0.5 Litre of whipping cream (2 cups) • 0.2 kg of unsalted butter (6 oz) cocoa powder, icing sugar, or anything light Directions: 1. Melt the Semi-Sweet or Bittersweet Bernard Callebaut Chocolate over a double boiler. 2. Warm the whipping cream and melt the unsalted butter in the cream. 3. Add the melted Chocolate, to the cream while you stir. Add flavoring if you wish. 4. Pour mixture in baking trays (1 inch thick). Let cool in fridge till the mixture is hard. 5. Scoop small pieces with a melon-baller or a coffee spoon. Roll pieces by hand into round or oval shapes. 6. Bourbon Balls (Makes 50-60 balls) Ingredients • 1 cup pecans or walnuts • 1 box vanilla wafers (12 oz) • 1 cup confectioner’s sugar (plus extra to roll balls in at the end) • 2 tbsp bittersweet cocoa • 1/2 cup bourbon • 1.5 tbsp honey Instructions 1. Eat a vanilla wafer to make sure they are good :) 2. Pulse vanilla wafers in a food processor until they are crumbs. 3. Toast nuts either on the stove top in a dry skillet (watching so they don’t burn) or in the oven until fragrant (about 4 minutes at 400*F).

4. Pulse nuts, sugar and cocoa in with the wafers to combine into a nice crumb mixture. 5. In a large bowl, combine the bourbon with the honey, then add the crumbs. Use hands to combine. 6. Roll into bite-sized balls. This recipe makes about 50-60 balls, depending on the size. 7. Optional: Toss balls in extra confectioners sugar to lightly coat them. 8. Place in airtight container or Christmas tin for serving.

Goat Cheese Appetizers Have goat cheese on hand for the holidays and you can put together a delicious appetizer in no time that’s sure to impress! Option #1 goat cheese (oven toasted or room temp, your preference) Drizzle warm honey over the goat cheese In a pan, reduce about 1/2c of balsamic vinegar to half, or until it sticks to the back of your spoon Take a package of dried figs (fresh don’t work very well) and slice them in half lengthwise. Lightly sauté figs with about 1 tbsp. of the balsamic reduction. Place figs on top of goat cheese and honey. Drizzle some of the remaining balsamic reduction on a plate for a pleasing presentation If you can’t find figs or you don’t like them, use blueberries.   Serve with your favorite cracker (rosemary crackers add a really nice herbal touch).   Option #2: goat cheese (oven toasted or room temp, your preference) Take two heads of garlic and slice off the top. Place in muffin tin drizzled in olive oil.

Cover in tin foil and bake in oven at 400 until golden and soft Plate warmed goat cheese with roasted garlic cloves and serve with an onion jam (make your own or purchase ) or a chutney( a fig and ginger chutney is lovely or a cranberry chutney is festive). You can purchase some very good chutneys at your local grocery store in the Deli or Specialty foods section)   Serve with toasted (garlic) naan bread or crackers. Don’t forget the rice crackers for your gluten free visitors!

Magic Santa Bars 2 cups graham crumbs 3/4 cup butter, melted 1 can Eagle Brand milk 1/2 cup pecans, chopped 3/4 cup white or semi-sweet chocolate chips 1 cup dried cranberries 1 cup coconut 1 cup mini marshmallows Combine crumbs and butter and press into 9x13 pan Pour 2/3 can milk over crumbs Sprinkle pecans, chips, cranberries, coconut and marshmallows over that. Press down firmly. Pour remaining milk over top. Bake 325 degrees for 25-30 minutes till lightly browned. Cool. Cut into 24 bars. Store loosely covered at room temp.

Mini Almond Flour Blueberry Muffins (gluten free) Ingredients 2 Cups Almond Flour 2 Eggs 2 Egg Whites 1/4 Cup Honey or Maple Syrup 1/2 Tsp Baking Soda 1 Tbsp Apple Cider Vinegar Dash of Salt 1 Tsp Vanilla Extract 2 Tbsp Coconut Oil 1 Cup Fresh Blueberries Directions: Step 1 Pre-heat oven to 350 F. Step 2 Place all ingredients excluding blueberries into your food processor and blend until very smooth.

Step 3 Once mixed, empty into a bowl and fold in blueberries. Step 4 Spray a mini muffin tin with coconut oil cooking spray (or use muffin liners) Step 5 Evenly scoop batter into each muffin tin. Jennie’s Sausage Stuffing 2 loaves of bread cut into 3/4 inch cubes 1.5 lbs. sausage meat, Italian and or Bratwurst 2 medium onions, finely chopped 3 celery ribs, finely chopped 1 large carrot, finely chopped 3 large garlic cloves, very finely chopped 1/4 cup finely chopped sage leaves 1/3 cup finely chopped flat leaf parsley 2 eggs 2 tbsp olive oil salt and pepper to taste

Toast the bread cubes until golden brown. Brown sausage meat in the olive oil, breaking it into bite size pieces. Add the vegetables and cook until soft. Combine meat and vegetable mixture with the bread, eggs, herbs and season to taste. Clancy’s Fancy Sugar Cookies • 2 cups butter (soft/room temperature) • 2 cups white sugar • 4 eggs • 2 tsp vanilla • ¾ cup milk • 6 cups flour • 2 tbsp baking powder • ½ tsp salt Preheat oven to 350 degrees. · Cream butter, eggs, sugar, vanilla in large bowl · Add flour and other dry ingredients, alternating with milk, to the butter and egg mixture · Pack into a ball, cover tightly with plastic wrap and put in fridge overnight (or at least 2 hours). You can also freeze dough (in a freezer bag) at this point to use at a later time. · Flour your working surface and roll out small portions of dough, to about ¼ to ½ inch thick. Cut with your favourite holiday shapes.

Let cool on baking rack (at least 30 minutes) and then ice with royal icing ( 1/3 cup meringue powder, 3 ½ cups icing sugar and 1/3 cup of water – mix for 3 to 5 minutes). Divide up royal icing into 4 bowls, use red, green, blue food colouring and also keep one white. Pick a colour and gently spread icing on the top of the cookies and decorate with sprinkles! SALI’s Farm is a safe haven for at-risk children and rescued animals to bond, learn and heal with one another.

In 2012, Badger became our first rescue animal at SALI’s farm. Badger had a tough life as a baby horse and is now lame in both front feet with severe navicular. SALI’s Farm has helped Badger heal from his abuse and he now works with at-risk children to show them they too have hope to heal from their abuse.

Badger, the rescue horse, wishes you a very merry Christmas!

Brie with Sun-dried Tomatoes 4 oz. sun-dried tomatoes in oil -finely chopped 3-4 garlic cloves, minced 6 oz brie cheese, chopped, keep rind on. 2 tbsp fresh parsley, chopped Small oven-proof casserole dish or brie baker. Mix tomatoes and garlic and pile generously on diced brie. Heat in oven at 350 degrees for a few minutes until the cheese is soft. Serve with bagel chips or crackers. Very simple recipe and works out perfectly every time!

Christmas S’mores 12 chocolate graham crackers 3/4 cup butter 3/4 cup firmly packed brown sugar 3 cups miniature marshmallows 1 cup red and green M&Ms Preheat oven to 350ºF. Line a 15x10x1 inch jelly-roll pan with aluminum foil leaving a 1 inch overhang on ends; spray foil with no-stick cooking spray. Place graham crackers onto foil so sides touch. Melt butter and brown sugar in 2 quart saucepan over medium heat, stirring constantly, until smooth and mixture just comes to a boil (4 to 6 minutes). Pour evenly over crackers. Bake for 5 to 6 minutes or until bubbly. Remove pan from oven; sprinkle with marshmallows.

Continue baking until marshmallows begin to soften (2 to 3 minutes). Sprinkle with M&Ms. Cool completely. Lift from pan using foil and cut into bars.
